Your career in hospitality began years ago, leading you to manage iconic venues on the international scene. Looking back, what are the milestones, even unexpected ones, that have truly marked your career?

My career has been an exciting journey, full of challenges and bold choices. One of the decisive steps was undoubtedly my arrival at Forte Village in the 1990s. But before that, there were moments that, in hindsight, proved to be crucial: my experience in Canada as a young man, where I discovered my vocation, my years in Lau-

sanne, and my work in London and Africa. Each of these stages, even the most difficult ones, taught me something. I remember with emotion the management buyout of Forte Village, which finally allowed me to have managerial autonomy. It was a pivotal moment: from there, I was able to set a clear direction for the resort, building a vision that has become an extraordinary, world-renowned reality, recognised for its excellence and innovation.

Under your leadership, Forte Village has established itself as a global benchmark in luxury tourism. What is the vision that guides you every day, and how do you manage to combine innovation and continuity in a context where excellence is the rule?

My vision is clear: to offer an authentic, multi-sensory luxury experience, where guests feel unique and special. I have never been satisfied with the “standard”. My idea of luxury is not just about comfort, but about a genuine and growing emotional involvement. Innovation means surprising, knowing how to change, integrating new technologies, wellness, and sustainability, without ever altering the identity of the place. Continuity, on the other hand, lies in preserving the soul of Forte Village, its connection with Sardinia, its nature and its culture. It is a delicate but essential balance.

Your professional signature is excellence. But for you, on a personal level, what does beauty really mean?

Beauty for me is harmony. It's something that goes beyond aesthetics. It is when form and substance merge naturally. It is what elicits emotion and leaves a profound and lasting memory. True beauty is never artificial. It is something you instantly recognise and find hard to describe since it enthrals you, sometimes to the point where you are left breathless and speechless. It is elegance without ostentation, truth without artifice.

After such an intense and rich career, what would you say today to a young person who dreams of entering the world of luxury hospitality? Is there any advice that no one has ever given you, but that you have learned the hard way?

It's a wonderful job, but not an easy one. It takes dedication, passion, and a commitment to sacrifice. No one ever admits it, but to excel in this world, you have to work hard, day after day, learn from every mistake and always keep your curiosity alive. I wish someone had told me that you have to be patient, that success doesn't come right away, that you need to invest time and effort in building quality relationships. This profession does not forgive superficiality; it rewards authenticity.

Over the years, you have witnessed profound changes in the very concept of luxury. How do you interpret this today, and how does Forte Village manage to keep up with this evolution?

Luxury today is significantly different from what it was twenty years ago. It is no longer ostentation: it is authenticity, intimacy, personalisation. It is silence in a perfect place, it is time for oneself, it is the feeling of being welcomed with sincerity. At Forte Village, as at Palazzo Fiuggi and Palazzo Doglio, despite the significant differences among the three properties, we have transformed this concept into reality: we focus on unique experiences, privacy, and well-being. Each guest enjoys a tailor-made stay. Above all, we are committed to making this luxury sustainable and conscious, with respect for the territory and the people who enjoy it and work there every day.

Your job is to anticipate the desires of others, often before they are even expressed. Do you have a desire of your own, perhaps unspoken or never realised?

Unconfessed, no, but still alive, yes. I would love to one day build a small hotel of the highest standard, entirely surrounded by nature, where I could express an even more intimate and refined idea of hospitality. A place where every detail speaks of essence and understated exclusivity. Perhaps it is a dream that I will pursue in the future, when the time is right. But it's there, and I know that sooner or later it could become reality.

Is there a detail, perhaps imperceptible, that you think makes the difference between a pleasant stay and a memorable experience?

Yes, and that's intuition. That rare and valuable ability to understand what a guest wants before they even express it. It is not a matter of protocols, but of sensitivity. A spontaneous gesture, a sincere smile, a word spoken at the right moment... these are invisible details that transform good service into an unforgettable memory. True luxury is making someone feel truly seen and heard.

Nowadays, travel and holiday experiences must address issues such as sustainability, environmental responsibility, and mindful consumption. How are you addressing these challenges without compromising the level of service and unique experience that sets you apart?

Today, it is no longer a choice, it is a duty. At Forte Village, Palazzo Fiuggi, and Palazzo Doglio, sustainability is not a trend; it is part of the DNA of each individual destination. We invest in renewable energy, biodiversity protection, and resource reuse, but without ever compromising on the excellence of the experience. And it was at Forte Village, where local identity interacts with excellence, that we had the privilege of exploring his approach, between metamorphosis and new perspectives on taste.

Your dishes always strike a balance between tradition and innovation. What guided you on your journey from the Venetian cuisine that represents your origins to the world stage?

I have been fortunate enough to work in a variety of settings, each of which has taught me something. Piedmont, Franciacorta, France, Florence... and then Milan, whose international and cosmopolitan soul has deeply enriched my vision. Travel has been fundamental: exploring new ingredients and new traditions is the part I love most about my job. This is what constantly fuels my curiosity.

W hat does it mean today to be an Italian chef in the world? What is the secret to staying authentic while evolving?

W hen I am called upon to represent our country abroad, it is always a great honour. The aim is to raise awareness of the unique products of our land, even the lesser-known ones, which often conceal incomparable potential.

T hroughout your career, you have witnessed (and experienced) significant changes in Italian taste. Is there a specific moment that you consider a turning point?

Yes, meeting Master Gualtiero Marchesi. That was a real revolution for me. With him, every gesture, every step in the creation of a menu took on a different, almost sacred meaning. It was a lesson that left an indelible impression on me.

Sardinia is not only a magical island, but also a place of culture and traditions. What impressed you most in terms of cuisine?

Last year, I was lucky enough to take a wonderful trip to Cabras, where I made some extraordinary discoveries. I was impressed by the bottarga and the great Vernaccia, two excellent products that speak of a proud and generous territory.

W hich of your famous dishes could be named "Sardinia" for its aromas, flavours, and techniques?

It might be a dish from our past tasting menu: avocado, kiwi, and bottarga. At first glance, it may seem untypical of Italy, but it is the exact opposite. All ingredients are grown in Italy and embody the new agricultural trends and climate change we are experiencing. It is an unexpected dish, just as Sardinia is unexpected every time you visit it.

Behind every garment, every seam, every choice of fabric, there is a precise philosophy, made up of harmonious contrasts: strength and lightness, rigour and spontaneity, tradition and avant-garde. Ermanno Scervino, co-founder of the fashion house, takes us on a journey through insights and landscapes, visions and sartorial details. Your garments embody various dichotomies, such as structure and fluidity. If your fashion were a sensation, what would it be?

Fashion is a fleeting moment, something that triggers a deep emotion. A feeling of freedom, beauty, excellence. An emotion that arises from the balance between strength and lightness, between rigour and spontaneity.

Nowadays, true luxury is authenticity. What is the detail, the sartorial gesture that makes an Ermanno Scervino creation unmistakable?

Quality, relevance, dreams. Every garment reflects my obsession with detail. True luxury is something that does not clamour loudly, but is perceived deeply. Details make every creation unique, authentic, and instantly recognisable.

Fashion is made of instincts, intuitions, and visions. Is there a specific moment when an idea takes shape and becomes a collection?

Intuition is the moment when magic takes shape. It often happens suddenly: an image, a detail, a woman crossing the street. Inspiration comes from a fragment of life, but it is in the atelier that it takes shape.

If you had to associate your style with an Italian landscape, which one would it be and why?

A sunset over the sea: magical, languid, full of nuances. But if I think of a place that truly represents my style, I would say Florence. That is where art, architecture, and craftsmanship coexist. Florence is elegance and roots, a perfect balance between culture and craftsmanship. A cradle of excellence that reflects my vision of fashion.

The world of fashion is always on the move. Is there a place, real or imaginary, where you always go back to find inspiration?

A nook in my home, when I manage to pause and truly feel. London too: a vibrant city, rich in energy and influences. It is a real place, but also a mental one, where ideas move faster. I go back there whenever I want to see the world from a new perspective.

Craftsmanship and quality are the mantras of Made in Italy. What is the biggest challenge in preserving it with-

out sacrificing innovation?

When craftsmanship is clear, so is the concept of luxury. True luxury comes from expertise, recognisable in slow, precise gestures handed down over time. The biggest challenge today is to keep alive the value of the human touch and the time dedicated to tailoring, even in an age dominated by speed and digital technology. Innovation, yes, but without losing that deep identity that makes us unique in the world: a heritage of craftsmanship to be cherished and passed on with care. It's a bit like what we do in our garden, in the heart of Chianti: we collect and cultivate Italian fruit plants that are becoming extinct, often forgotten because they are considered uneconomical or simply no longer fashionable. Yet it is precisely these fruits that offer a precious biodiversity for both the environment and humanity. Passing on biodiversity, like tailoring craftsmanship, is a source of deep pride for us—almost a mission. Biodiversity and craftsmanship: two treasures to be preserved and passed on with love to future generations.

The future of fashion is being written with new technologies and innovative materials. Is there an unexplored idea that particularly fascinates you?

I am fascinated by the idea of “intelligent” garments that can adapt to the body. But what intrigues me most is the combination of technological innovation and sensory emotion. The future cannot be just about technology: it must remain deeply human, authentic, and capable of stirring the senses.

With a commitment rooted in 1972, the resort has adopted cutting-edge practices to protect natural resources, reduce environmental impact, and promote the growth of local communities, creating a green model that goes far beyond the ordinary.

WATER, A PRECIOUS RESOURCE

Forte Village has always focused on saving and recycling water, purifying 800 cubic metres of water every day for reuse in irrigating its vast gardens, which cover 50 hectares of greenery. In just three days, enough water is optimised to fill an Olympic swimming pool, equivalent to approximately 660,000 litres. In addition, a 54 sq m dam collects and stores 353,242 cubic metres of rainwater, equivalent to 141 Olympic swimming pools. We have

expanded our commitment to water sustainability with a desalination plant that will convert 600 m³ of seawater per day into fresh water, reducing pressure on local water resources.

These innovative systems are just a few of the many examples of how Forte Village considers water not only as a resource, but as a treasure to be protected for future generations.

THE SUN IN COMMAND: THE FUTURE IS RENEWABLE

Since 2022, Forte Village has ushered in a new era of sustainability, moving towards energy self-sufficiency with the installation of photovoltaic systems in various areas. Since 2016, the roofs of three hotels have been providing energy for water heating, but this is just the beginning. Forte Village is charting a tangible path towards a greener future. The use of biodegradable materials, such as bamboo straws and glass bottles, is constantly expanding. This commitment to the environment is much more than an added value: it is a mission shared by everyone involved in the life of the resort. This is complemented by the Fishing for Litter project, carried out in collaboration with local fishermen, which has enabled 1,000 kg of marine litter (approximately 1 tonne) to be collected and removed, restoring the sea to its unspoilt beauty.

WATER THAT HEALS, A STORY THAT ENCHANTS

A journey through the ancient virtues of Fiuggi water, combining science, legend, and wellness.

In the green heart of the Ernici Mountains, flows water with extraordinary properties. It is a spring known throughout the world: Fiuggi water, an invaluable natural resource, a symbol of healing and well-being, which consistently attracts visitors due to its unique characteristics.

The secret of its healing properties lies in its unique composition. Classified as oligomineral, its mineral content is just 145 mg per litre, a surprisingly low value that nevertheless maintains a presence of minerals, giving it remarkable diuretic properties. During its journey through the layers of volcanic rock of the Ernici Mountains, it naturally absorbs calcium

bicarbonate and magnesium while maintaining minimal levels of sodium, characteristics that make it particularly effective in dissolving uric acid and treating kidney stones, with therapeutic effects known since ancient times and appreciated by local populations.

But the appeal of Fiuggi water goes beyond science. The historical figures who recognised its benefits have also contributed to its almost legendary status. Pope Boniface VIII, in the late 13th century, was a great admirer of it: suffering from kidney disease, he appreciated it so much that in 1299 he granted a tax exemption to the village that now bears the name of Fiuggi. A rare gesture, a sign of gratitude and appreciation for a spring that restored his health.

A few centuries later, it was Michelangelo Buonarroti's genius who benefited from it. In a letter dated 1549 to his nephew Leonardo, the master spoke of water "capable of breaking stone,” so powerful that it alleviated the pain that threatened his creative output. It is said that, thanks to that treatment, he returned to his projects with renewed energy, leaving to posterity some of his last masterpieces.

Medical and historical records, papal documents, and archaeological evidence suggest that this water was already known in Roman times. However, it was only in the early 20th century that the town of Fiuggi became a true capital of European spa tourism, with the construction of elegant resorts and the emergence of a tourism industry dedicated to health and relaxation.

Absolutely. Today, the demand for butlers

How many students have you trained, and how do you support them in finding employment?

Every year we train around 50 students, and in 25 years of activity, between main and additional courses, we have trained around 15,000 professionals. There is very high demand for our courses.

W hen it comes to placement, we offer support in two ways: we help our students find employment, and at the same time, many clients come to us directly for assistance in finding highly qualified butlers. Since our clients and students come from all over the world, we operate internationally, guaranteeing a vast network of professional opportunities everywhere.

W hat are the essential qualities of a good butler?

UA good butler must understand that his role revolves around what he can offer others. This does not mean giving up your personality, but rather knowing when to take a step back and when to take the initiative, adapting to the needs of the moment. The ability to interpret situations and respond with discretion and professionalism is essential. Other essential qualities include physical stamina, honesty, and a continuous desire to learn. The hospitality industry is constantly evolving, and a butler must always be ready to improve, keeping up to date with new techniques, trends, and customer expectations. Only with this mindset of continuous growth can a professional keep pace with the challenges that every working day can present.

Speaking of the partnership with Hotel Business School at Forte Village, what is the shared vision between the two schools?

T he collaboration between The International Butler Academy and Hotel Business School at Forte Village is a mutually beneficial partnership that enriches both organisations. For our part, we train butlers who frequently travel to manage events or properties in various locations. The training offered by Forte Village is essential in preparing them for these situations, simulating real assignments in a luxury setting, where every detail is taken care of with precision.

For Forte Village, our experience enriches their educational programme, exploring fundamental aspects of formal service, such as etiquette and mise en place. This exchange takes place in sessions lasting approximately four or five days, which are repeated three times a year, involving new students in each cycle. Thanks to this collaboration, both schools can offer their students an even more comprehensive education that is in line with the needs of a constantly evolving sector.

Filippo Grandulli is a name that evokes class and creativity, a subtle thread that links Sardinian sartorial tradition to the world's most exclusive catwalks . With his atelier in Cagliari , the Sardinian designer has managed to maintain a deep connection with the roots of his homeland, without ever compromising on the modernity and international flair of his work.

Your career has taken you all over the world, but you have always maintained a base in Cagliari. How do you balance the authenticity of Sardinia with the demands of a constantly evolving global market?

The decision to keep a base in Sardinia has not been a limitation, but rather the true strength of my brand. In an increasingly standardised and fast-paced fashion world, the decision to stay here has made my story unique, different from all the others. My roots in Sardinia have never meant isolation. My collections have travelled the world to cities such as Paris, Tokyo, Los Angeles and many others, bringing with them not only the value of craftsmanship, but also a constant dialogue between cultures. It is this balance between tradition and global vision that makes my work distinctive.

W hich aspects of Sardinian land and culture most influence your designs?

Sardinia is much more than just a place where I live: it is a visual code, a way of understanding time, matter, and beauty. Sardinian costume tradition was one of my first sources of inspiration, but I never saw it as something static, to be replicated. I observed it with modern eyes, I grasped its strength, its geometry, its symbolic weight. I let these elements interact with my language, transforming them into new structures, into details that recall history but bring it into a contemporary dimension. The time I have spent here also plays a

profound role in my creations. Sardinia offers you a different pace of life compared to the big cities that absorb you: here, time is not your enemy, but your ally. It gives you the space to observe, to experiment, to build something authentic. And then there is the sea, with its waves and ripples that have become volumes, textures, drapes. Each collection carries with it a fragment of this land, translated into form and matter.

Your showroom in Paris and the corner inside Forte Village are tangible signs of your success in the luxury market. What challenges did you face in achieving a prestigious position in such a competitive industry?

The results I have achieved are the result of years of dedication, experimentation and, above all, unwavering passion. My initial goal was not necessarily to position myself in the luxury market, but simply to make my work known and give voice to my creative vision. The market recognised the value of my approach and placed me in a segment that matched my aesthetic and values. There have been some challenges, of course. As a young designer, the first major challenge was financial: gaining access to important spaces and platforms requires considerable investment. The Paris showrooms were a crucial step, a sort of testing ground to prove that my work deserved attention.

Moreover, there's the need to create a distinctive identity in a highly competitive sector. I had to refine my stylistic language, maintain consistency and evolve at the same time, without ever losing touch with my roots and my inspiration. The corner inside Forte Village represents a significant achievement for me. Being selected to be part of such a prestigious, world-renowned organisation is a source of immense gratitude.

T he concept of "modern craftsmanship" is central to your work. How do you interpret this concept at a time

when industrial production is becoming increasingly widespread?

For me, modern craftsmanship is the perfect balance between tradition and innovation, between skilled hands and a contemporary vision of design. Although it has its roots in ancient techniques, its value today is more relevant than ever: in an era dominated by industrial production and fast fashion, craftsmanship represents a conscious choice, an alternative to mass production and standardisation. Nothing in my creations is left to chance: every detail, every stitch, every asymmetry is designed to enhance the value of craftsmanship and raw materials. Fast fashion has accustomed the market to soulless garments, made to last a season and then disappear. On the contrary, I want to create pieces that have a story, that carry with them the value of time, of careful workmanship, of lasting quality. For this reason, every label accompanying my garments always specifies that any minor imperfections are not defects, but distinctive signs of the uniqueness of a handcrafted product.

W hat trends are you exploring for your upcoming collections?

Trends are a reflection of the times we live in, a continuous change in tastes and aesthetic directions. I observe them with curiosity, but I don't pursue them. My work is in a niche market, where identity and stylistic consistency are more important than fleeting trends. I believe that the true strength of a brand lies in its ability to build a unique image without getting caught up in the frenzy of constantly chasing the latest trends. My trend, if you can call it that, is to tell a story with each collection, to follow a logical path that has a soul and a meaning. My true direction is creative freedom, the ability to express an aesthetic without constraints imposed by the market. As long as I can keep it, this will be my greatest strength.

In an era in which social media and self-appointed gurus dictate food fashions, Professor Giorgio Calabrese , a doctor specialising in food sciences, a university professor and scientific consultant to the Italian Ministry of Health gives us the scientific foundations of a truly healthy diet. His many decades of experience have led Calabrese to affirm that the Mediterranean diet is still the most effective dietary model in the world and it helps us adapt to the rhythms of modern life, both everyday routines and holiday eating, with a strictly scientific approach at all times.

The notion of “eating well” is replete with misunderstandings. What are the cornerstones of a truly balanced diet?

The figures are clear: Italians and Japanese have long been the world’s most long-lived peoples. Medical excellence, hospital management and air quality aside, Italians’ longevity is primarily a matter of the Mediterranean diet. It’s not a one-size-fits-all model but one which adapts to the individual. Its large quantities of fruit, vegetables, pulses and cereals are guarantees of plenty of plant fibre, low saturated fats and a preference for unsaturated and mono

unsaturated fats, together with the right quantities of animal and plant proteins. It’s an approach which has produced extraordinary results. In the 1970s Italian life expectancy was 64. Now it’s 89.

How can we tailor the Mediterranean diet to our increasingly digital and sedentary lifestyles?

Many people now prefer intermittent fasting whose sole objective is weight loss, achieved by cutting out meals and reducing calories. I don’t agree: I advise five meals a day. Breakfast, a mid-morning snack, lunch, an afternoon snack and dinner. This is the best way to manage our levels of insulin, the hormone produced by the pancreas which burns sugars.

The sedentary lifestyle issue is that it increases insulin resistance, leading to diabetes, obesity, high blood pressure and heart problems. All this is the result of insufficient exercise and too many calories and sugars. Small but frequent meals mean we’re not too hungry at mealtimes, avoiding insulin peaks.

W hat is your healthy diet advice for holidaymakers?

Our routines and time frames inevitably change when we’re on holiday. People who normally get up at 6.30 for work get up later and have longer breakfasts. This should not encroach into our everyday lives, however. A tasty breakfast might include semi-skimmed milk, coffee, toast with jam or rusks, orange juice and fresh fruit to stimulate the metabolism. For those who prefer a savoury breakfast, bread with ham and vegetables is also fine. At the seaside fresh fruit like watermelon, cherries or apricots are a great mid-morning snack, as are nuts like walnuts, hazelnuts and almonds whose chewiness is a good appetite reducer. If there’s a buffet lunch always start with vegetables to give you that full feeling, then fish, white meat or cured meats

with vegetables and toast and finish up with fresh fruit.

S omething cold like fruit ice cream or yoghurt is good in the afternoon. Dinner is the most important meal, starting with rice salad or fish pasta and then vegetables again, as we’ve already had our protein at lunch. A fruit salad, or a lemon or fruit ice cream is a good end-of-dinner treat. And if you’re in company, a square of dark chocolate (at least 75%) after dinner is fine. This is a pleasant, satisfying reasonably sacrifice-free diet.

O urs is an era in which social media often dictate trends in the dietary field too. How can we tell good advice from a passing fad?

W hen you go to a biologist or nutritionist who isn't a doctor and doesn’t understand all the complexities of metabolism, there’s one simple question that needs asking: “If I was ill would you be able to help?” The answer is “no”. The notion underlying it all is metabolism looked at as a whole. What is needed is a full medical check-up, a diagnosis, anthropometric measurements, objective liver, pancreas, heart, lung and kidney check-ups and other more specific tests afterwards. It’s a process which has to be managed by specialist doctors because the risk of mistaken diagnoses is very real.

A nd that's without getting onto the subject of what are known as health gurus. I’ve talked to people on TV who claimed to be exponents of Italian cuisine abroad with no qualifications whatsoever. We must be wary of such people because losing weight is one thing, and keeping healthy while we do it is quite another.

Let's talk about dietary education. What is food culture lacking at a social level?

In-depth nutritional education is lacking at school. The last government put

forward a law which I would like to get back on the table: getting dietologists or dieticians into school, at early as nursery age. The efforts made by teachers to fill this gap where possible are in any case praiseworthy.

Working on this is essential because in the world we live in people are buying less and less fruit, vegetables and pulses. Increasing our consumption of fibre would change our metabolism, our absorption of sugars and fats, preventing many illnesses.

If you could sum up the legacy you’d like to leave in a few words what would they be?

It’s a simple message: let’s get back to listening to specific, qualified people. If I have acute appendicitis I don’t go to a guru. I go to a surgeon. If I have a metabolic problem because I’m a diabetic I go to a diabetologist. If I’m overweight I go to a dietologist. There are no intermediate figures with the skills to deal with these. We must choose the best, the highest quality, including by consulting a doctors’ body to check qualifications and make an informed decision. The solution is specialists with the experience needed to perform these delicate tasks. You cannot improvise with your health.

There was nothing accidental about the choice of Sardinia as the stage for the High Fashion, Fine Tailoring and Fine Jewellery collections. Domenico Dolce and Stefano Gabbana’s journey gets down deep into the island's cultural roots, drawing inspiration from its rich artisan heritage

The journey began with a Fine Jewellery collection presentation in a Piazza Luisa radically made over into an exquisite set consisting of golden ears of wheat lit up by an evocative play of light. The star of the collection's show was undeniably Sardinian filigree,

one of the island’s oldest and finest jewellery techniques with its intricate gold and silver threads worked entirely by hand. The two designers melded this ancient tradition with another cultural symbol whose roots go deep in Sardinian identity: Su Coccoi, its traditional votive bread made in elaborate artistic forms. A symbiosis between sacred and profane, food for the spirit and the body which breathed life into unique jewellery creations.

This Sardinian culture narrative was followed by a High Fashion collection presentation in the enchanting archaeological town of Nora, just fifteen minutes away from the Resort. Here creations

celebrating the island's extraordinary textile traditions paraded through the mirror installations of Nora Mirage by Californian artist Phillip K. Smith III

Precious textiles such as moiré, lace and velvet, sophisticated floral decorations and fine handmade details paid homage to Sardinia’s unique artisan heritage. The show shone the spotlight in particular on the pibiones technique, a traditional weaving style featuring relief bunches of grapes, an ancestral prosperity symbol which conjures up the cycle of nature.

The culmination of this celebration of Sardinian identity took place at Forte Arena with the presentation of the Fine Tailor-

ing collection. Inspired by the historic Sant’Efisio procession, a Cagliari fixture from 1 to 4 May since 1656 in honour of the saint who freed the island of the plague, Dolce&Gabbana recreated a parade of 700 people in traditional costume accompanied by carts dragged by oxen dressed up in flowers and majestic horses. The men’s costumes were reinterpretations of those typically worn by the head herdsmen, like the mastruca, the voluminous wool coat also worn by the Mamuthones during the beautiful Mamoiada Carnival. Every single garment from the collection was conceived as a celebration of the hand-made, a philosophy which is the beating heart of the Fine

Tailoring collection and which is visible in its meticulous attention to detail, its precious embroidery and its choice of the finest fabrics.

As Lorenzo Giannuzzi, Managing Director and CEO of Forte Village underlined: “The unique nature of this event undoubtedly contributed to its virtuous cascade effect on the image and reputation of the island as an absolutely top class destination. Maurizio Zanella , founder of C a' del Bosco

Visionary, rebel, pioneer: Maurizio Zanella is not simply the founder of Ca' del Bosco . He’s also one of contemporary Italian wine’s greatest exponents. An approach which melds cultural depth with innovation has transformed a dream born in the midst of the Brescia hills in Erbusco into an internationally famous wine estate. In this interview Zanella speaks passionately of Ca’ del Bosco’s origins, his vision for the future of Franciacorta and the indissoluble bond between wine and art .

Ca’ del Bosco was born of passion for wine. Tell us about the first steps in the creation of one of Franciacorta’s most iconic estates.

It was all a bit of an accident. My family had bought a small piece of land in Erbusco to grow vegetables and fruit on, in the countryside near Milan. It was a farm with orchards, producing a few eggs and vegetables and also a rather vinegary wine. In the early 1960s I was still at high school but I got caught up in the university student protests and effectively missed out on two years of schooling. So I went to work in the UK for six months and when I came back my parents sent me off to manage the Brescia estate. I’d travelled in Burgundy and Champagne and could see the qualitative difference between French and Italian wines. That was where my passion was born. It was Luigi Veronelli, who took me under his wing as a father figure, who taught me culture and a rebellious spirit, to think outside the box. Veronelli also passed onto me his total intolerance for mediocrity in quality-product making. That’s how Ca’ del Bosco came about, from a slightly crazy dream: if they can make extraordinary wine in France why shouldn’t we be able to do the same, or even better, in Italy? That dream came

true and if it hadn't been for Veronelli it might not have done.

Ca’ del Bosco’s approach to winemaking has always focused on excellence, with ongoing innovation to perfect your wines. What is the greatest challenge to this continuing?

You can never rest on your laurels. If I was to come up with a phrase to sum up Ca’ del Bosco it would be “perennial dissatisfaction”. Luckily right across the board in the company hierarchy the spirit is that improvement is always possible. Ca’ del Bosco has a unique winemaking patrimony in terms of location, site and lands at altitudes of up to 580 metres above sea level. The key to it is quality grapes. We are also one of only a few certified organic estates.

Sustainability is now one of the cornerstones of winemaking. What strategy is Ca’ del Bosco using to combine end product quality with environmental friendliness?

Sustainability is not simply a marketing tool for us. It’s an ethical commitment. Our starting assumption is that organic certification is not a grape quality factor. Being organic is primarily about respecting the local area. Those who publicise organic grapes often do so on the basis of the belief that it’s a recipe for good wine. I don’t agree with this because at these altitudes it’s not necessarily synonymous with quality. In rainy and damp years grapes go mouldy and, if the optimal atmospheric conditions are not there, making a good wine can be difficult. On a marketing and communication level, we don’t even mention organic on our labels and only talk about it on request. If people want to know more, the certifications are there on our site together with all the tests done across the chain on our vineyards.

Ca’ del Bosco is synonymous with innovation and the avant-garde. If you had to choose one aspect of your winemaking that you see as an especially radical departure from traditional winemaking standards what would it be?

We have five or six important patents but one of them has been especially high impact. When we went organic we discovered that the grapes’ aromas were less interesting, as a result of the copper residues on them. So we brought in a process which verges on the blasphemous in winemaking: washing and drying the grapes. This is common practice in the fruit transformation industry but was a radical new departure in winemaking, a break from the past because as well as getting rid of the copper and improving fermentation it also reduced the sulphur and helped to conserve all the elements, including the lees. The result was purer and more fruity wines. It was an extraordinary innovation in 2008 which was extended to all our wines in 2013.

Franciacorta is now considered one of the world's best sparkling wines. What are the next markets to explore?

There are two names in the sparkling wine world which everyone has heard of: Champagne and Prosecco. The Consortium is working to ensure that a third category is added to this. Franciacor-

ta is a category only in Italian-speaking Switzerland and Tokyo. That’s why we’re investing in making it a category worldwide, especially in the US, the primary international market, where we also partner with Michelin. Ca’ Del Bosco exports to 68 world markets and is a benchmark for sector professionals, sommeliers and others, but not for consumers. This is the good part because there's still a great deal to be done.

The wine-art relationship is a theme which is especially close to your heart. How did this synergy begin and what added value does it bring to the estate?

My first introduction to art was in 1982 when I realised that the language we need when we talk about wine was completely different from the one used in the past because then it was seen simply as a primary food need. I decided that contemporary sculpture and photography could both be of interest in attracting the attention of the world of culture, with its historic and cultural values. We got some of the most important photographers in the world involved in taking wine photos “through their eyes” for exhibitions at the Milan Triennial, Paris’s Photography Museum and the Tokyo National Museum of Modern Art. In the same way, we’re proud of having a collection of sculptures designed directly with the artists, who have made work

specially for us. Three years ago we set up our Ca’ del Bosco Sculpture Prize for artists under 40 years of age which we fund in full. Its jury is made up of the greatest experts in the sector, critics and gallery and museum curators. The winner gets a cash prize and their sculpture is also added to the Ca’ del Bosco collection. We’ll be presenting the second edition of the prize at the Venice Biennial. This shows the extent of our belief in art’s ability to leverage the art-quality wine relationship in a way which has something of art patronage in it.

If you were to imagine Ca’ del Bosco in ten years’ time what key elements would be the same and which would be different?

The intolerance for mediocrity that Veronelli taught me would definitely remain the same. It’s difficult to plan ahead in our work because we often come up against the pranks of a sometimes mischievous “partner”, the Eternal Father. This marks it out because wine and other agricultural produce get more magical every year. Planning is possible in every sphere of life, as is calculating the costs and time frames of a new product. No other product is ten years in the making. A bottle can take us even longer than that to make. Time and the unforeseen make our work extraordinary and unrivalled.

There was plenty of curiosity in 2019 when a very young Jannik Sinner lifted his trophy on the Tennis Club court at Forte Village Resort . But even before Sinner those courts had seen champions such as Matteo Berrettini , Stefanos Tsitsipas and Casper Ruud begin their careers. And there were the women's tennis champions, too: think of the Olympic doubles champion Jasmine Paolini , who trained here in 2016. They’re names which speak volumes about the importance of the Santa Margherita di Pula ITF Combined tournaments for tennis players the world over.

And the 2024 edition was no exception: nearly 800 matches played, 298 players from 41 nations and five continents . It’s an event which goes beyond sport and promotes the area as a whole : Forte Village is not simply an elite athletics stage but also a place in which sport, nature

and hospitality meld into one in an unrivalled experience.

But there’s more to life than tennis. For years now the resort has had pride of place for triathlon lovers too. Challenge Forte Village Sardinia is now a date for triathlon specialists and the 2025 edition on 25-26 October promises to be yet another adrenalin - and picture-postcard-landscape -packed event.

SARDINIA IN A SINGLE BITE

Carasau bread mille-feuille with plum tomatoes, sheep’s milk cheese and Cabras fish roe

In the heart of a Mediterranean suffused with myrtle and salty breezes Andrea Putzu has made Sardinia his unmistakeable trademark . Chef de Cuisine at the Le Dune restaurant, he is one of the most authentic exponents of the island's cuisine, with his carefully chosen ingredients and visionary approach to dish composition. At Forte Village, where he leads his team with passion and precision, he has turned Sardinian traditions into stylish culinary creations which tell a story with every bite.

One of his most iconic recipes is his Carasau bread mille-feuille with plum tomatoes , sheep’s milk cheese and Cabras fish roe , a dish which is crunchy, creamy and savoury all in one, in a perfect harmony of contrasts. It is a homage to Sardinia in which each single ingredient is a fragment of identity.

S ERVES FOUR:

• 250 g Carasau bread

• 400 g plum tomatoes

• 200 g mature Sardinian sheep’s milk cheese, grated

• 200 ml full fat milk

• 100 ml fresh cream

• 500 ml vegetable broth

• ½ onion

• 1 clove of garlic

• Basil

• 1 filet of Cabras mullet roe

• Extra-virgin olive oil

• Salt

METHOD

1. Make a tomato sauce by frying the onion and garlic in oil and adding the tomatoes and basil and a pinch of salt. Blend the sauce and squeeze it through a cloth for a smooth consistency.

2. Make the sheep’s milk cheese with milk, cream and 150 grams of sheep’s milk cheese. Turn down the heat.

3. Grease a tin and make up the mille-feuille by alternating layers of Carasau bread with hot broth, sauce, basil, sheep’s milk cheese cream and grated sheep’s milk cheese (6 layers).

4. Bake at 180°C for 8 minutes.

5. Serve on a sheep’s milk cheese cream and dress with basil and flakes of roe.

An exclusive stage under the stars

S et in the pristine landscape of Santa Margherita di Pula , Forte Arena is much more than an amphitheatre. It’s an exclusive space which melds art and beauty, turning each single show into a one-of-a-kind sensory event. Framed by the Sardinian hills and suffused by the stars, every year it hosts top level shows from opera to pop and ballet Every performance here encompasses an intense emotional journey amplified by perfect acoustics and an enchanting landscape.

T his open-air theatre has been hosting big stars since 2016 , including Anastacia and Renzo Arbore, followed by legends such as Andrea Bocelli and Fiorello. It has brought us the magic of Albano and Romina, Il Volo, Charles Aznavour and extraordinary shows such as Mamma Mia! and Jesus Christ Superstar , and then Sting and Shaggy, Vittorio Grigolo, as well as Tom Jones

and the musical Grease , musicians such as Eros Ramazzotti and Luis Fonsi and the Russian Classical Ballet with S leeping Beauty .

A fter the Covid-19 hiatus, 2022 was the year of the return of spectacular shows such as Mika al Microfono and Notre Dame de Paris and Grease by Compagnia della Rancia.

A nd the shows have continued and been consolidated, with fun, never-dull shows, comedy by Checco Zalone, songs from Tiziano Ferro, Renato Zero and Pooh and musicals like Beauty and the Beast and Peter Pan – The Musical .

O n July 12th 2025, the stage at Forte Village hosted a major event featuring the legendary Duran Duran. W hat more could you ask for? The stage is currently being readied to host Gianna Nannini and her one-of-a-kind concert on 9 August 2025 .

one. Great music has found a home here with Mogol, Giovanni Allevi and extraordinary gospel voices including Ella Armstrong, JNR Robinson and Wesley Semé. Jazz from Paolo Fresu and performances curated by Milan’s Blue Note with Nick The Nightfly and Matthew Lee have added an international note, while a Queen tribute and Candlelight concerts – paying homage to Morricone, Coldplay and Einaudi – have made the atmosphere even more evocative.

But Teatro Doglio also stages great stories ranging from musicals such as The Addams Family, Home Alone, Harry Potter to Raffaella Carrà, as well as the best loved fairy tales like Frozen, Oceania and Grinch. The theatre scene has welcomed writers, critics and intellectuals of the calibre of Massimo Recalcati, Gianluca Gotto, Sandro Cappai and Pierluca Mariti, as well as the Lei Festival meetings featuring names such as Umberto Galimberti, Massimo Cacciari and Paolo Crepet.
