Trunk OR Treat Service Advisor Ashley McMillen and Parts Manager Dan Calvin participated in the Sidney Trunk or Treat. They decorated the back of the Parts truck and handed out Halloween candy to all the trick or treaters. All the Chamber Businesses park and all the kids can walk through and trick or treat safely. Due to the wind our letters fell off! Yes we do know how to spell !!!! Pictures are of the parts truck and Service Advisor Charles Shenkel and family.

We exist to support the commercial transportation industry. It’s our way of helping our families and communities prosper. Our company has grown because we take pride in our work and each other. However, over this past Thanksgiving one individual took this a step further. Josh took it upon himself to on Thanksgiving day to stay late and help out one of our customers. Kudos to Josh!

Belgrade Christmas Convoy

The Belgrade Community Coalition put on the first ever Christmas Convoy as the normal Festival of Lights was canceled due to Covid. We went ahead and put our stock Western Star transfer truck in it and Ben Hartmann volunteered to decorate and drive it! He had help decorating from his family, and employees Duane Vincent, Curt Owen, Grant Nehman, and Keaton Albretsen. It was a big success with packed streets throughout town.

Easy Sweet Chili to Warm You up this Winter

Taste This

INGREDIENTS 1/2 cup warm water 1/2 cup honey 1/4 cup rice vinegar 1 and 1/2 Tablespoons cornstarch 2 teaspoons minced garlic 2 teaspoons crushed red pepper 1 teaspoon Sriracha 1 teaspoon salt 4 skinless boneless chicken breasts, cut into 2 inch pieces Sesame seeds and green onion for garnish

Difficulty: Prep time: 15 min Cook time: 30 min Servings: 4 20

DIRECTIONS

Preheat oven to 400°F. Lightly spray a baking pan with nonstick spray– I use a 10-inch casserole dish. Anything around this size works. Combine the water, honey, rice vinegar, cornstarch, garlic, crushed red pepper, Sriracha, and salt together in a small saucepan over low heat. Bring to a simmer while whisking occasionally. Allow to simmer for 3 minutes. It will begin to rapidly thicken. Turn off the heat and set aside. Arrange chicken in the prepared baking pan. Spread sauce on top, then turn the chicken over to make sure every inch is coated in the sauce. Bake uncovered for about 30 minutes or until the chicken is completely cooked through. For extra color, I switch the oven to broil for the last few minutes. That is optional. Sprinkle sesame seeds and green onion on top and serve the chicken with sauce from the pan. Store leftovers in the refrigerator for up to 5 days.

I like to camp anywhere as long as I can stay in my camper. I also enjoy doing some pheasant hunting and deer hunting in the Fall. I really enjoy cooking for my wife LeAnn and our two sons, Bryce and Colton. They really like this chicken chili rice bake (the secret ingredient is honey or brown sugar to sweeten it up)

My last adventure lead Prairie and I to drive from Gillette, WY to Isabel, SD to rescue my husband when he totaled his Kenworth after hitting a deer and then we had to go pick up a different truck from Murdo, SD so he could keep running. We ended up staying in Murdo, which is a wonderful small town. We made a mini vacation out of it, strolling from our motel to eat at a cute small restaurant, enjoying each others company amid the chaos of the situation. We would love to go back with all the kids and check out their Automobile Museum that was unfortunately closed by the time we had gotten there.

WHAT ARE LEANNA’S HOBBIES? • Spending time with my 4 month old baby girl, Prairie. • Sewing and being crafty. • Collecting goats. I have five right now. (They are pets and service no purpose but to be fed and loved on.) • Camping and hunting.

LEANNA’S RECIPE? Kielbasa Tacos (Feeds 3 People, Double recipe for more) • 1 Kielbasa Sausage, cut into strips. • 1 Green Bell Pepper, cut into strips. • 1 Yellow Onion, sliced and then cut in half Throw kielbasa and green pepper into a skillet on med-hi and fry until green pepper is almost tender, stirring occasionally. Add onion and fry mixture until onion is tender, stirring occasionally. Serve with tortillas. Top with hot sauce, cheese, and sour cream. 23

What was your last adventure? My family and I went to a haunted bed and breakfast in Georgetown, CO. and participated in a paranormal investigation. What are your hobbies? I enjoy spending time with my husband Chad, my daughter Carli and our pets. We love to go camping in the Black Hills every summer. We have hiked Black Elk Peak several times as well as participating in the Volksmarch, hiking to the top of Crazy Horse Monument. Carli and I try to attend a concert every year, usually in Colorado. I enjoy reading and bird watching as well as cooking. I love to watch scary movies and shows about the paranormal. I love animals of all kinds and have 2 dogs and cats.

Cowboy Meatloaf

Prep time: 30 min Bake time: 20-25 min

INGREDIENTS 1 lb. Lean Ground Beef 3/4 Cup Finely Chopped Onion 1/3 Cup Breadcrumbs 1/4 - 1/2 Cup BBQ Sauce 1 Egg, lightly beaten 2 Tsp. Chili Powder 3/4 Tsp. Salt 1 Pkg. Ore-Ida Steam n’ Mash Potatoes seasoned to taste 2/3 Cup Canned Evaporated Milk 1 TBS. Butter 1 Cup Cooked Bacon Crumbles or Packaged Real Bacon Bits 1/4 Cup Canned Crispy Fried Onions 2/3 Cup Shredded Cheese

Servings: 6-9

DIRECTIONS Preheat oven to 375 degrees. Coat 9x9 backing dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, BBQ sauce, egg, chili powder and salt. Press into bottom of baking dish. Bake uncovered for 20-25 minutes. Remove from oven and pour off any excess fat. Meanwhile make potatoes according to package instructions. In a large bowl, mix together potatoes, milk, butter, and seasonings to taste. Stir in bacon and fried onions. Spread on top of beef mixture and sprinkle with cheese. Bake or broil until cheese is melted. Serve with additional BBQ sauce if desired. NOTES

I have used instant potatoes or made my own mashed potatoes, they work just fine as a substitute.

Chile Verde (Green Chili)

Difficulty:

Prep time: 30 min Cook time: 2-4 hrs

INGREDIENTS 1 cup jalapeno 4 lb pork shoulder/butt trimmed and cubed. Season with Salt +Pepper 1 lb tomatillo 6 cloves garlic 1 cup fresh cilantro about half a bunch

1 medium onion diced 1 tbsp cumin 2 cups chicken stock no sodium/ unsalted preferred Tbsp oregano Mexican oregano preferred, optional

DIRECTIONS Set your oven to broil. Take the tomatillos and jalapenos, rub them with oil (any oil is fine) and place in oven. Flip them when they are toasted to your liking and do the other side. While peppers are roasting, brown your pork on high heat. Work in batches to avoid crowding. Once all the pork is browned, move it to a plate and set aside. Be sure to use a timer so you don’t forget about the peppers roasting. Once the peppers are done, put them in a Ziploc bag to steam for 10 minutes. Transfer the tomatillos along with cilantro, garlic, and a little salt to a blender and set aside. Once you are done browning the pork, reduce heat to low and cook your onions. When the onions are translucent, add the cumin seeds and continue cooking for another 2 minutes. Add the pork, all accumulated juices on the plate, and the chicken stock. Remove the peppers from the bag and peel them. It’s not necessary but highly suggested that you also seed them with a small spoon. Once the chiles have been peeled and seeded, put them in the blender and puree. Once the salsa verde is pureed to your liking, combine it with the rest of the ingredients, mix well, and simmer for 2-4 hours. In the last 1/2 hour of cooking, taste the chili and adjust seasoning, and if you are using oregano, add it in now. Serve with cilantro, tortillas, and rice, or just enjoy by itself.

What are your hobbies? When I am not working, my hobbies are mostly involved with the outdoors, I love hunting, fishing, and camping. When it gets to cold outside, I love to go to the indoor rodeo every other weekend. If I’m not outdoors, I’m usually doing some sort of remodel to our house, or trying to think of a new marinade for my wild game meat. I have recently found a new marinade for my elk steaks, it sounds a little weird but trust me, its delicious.

What was your last adventure? It was on New Years Eve, I had purposed to my best friend of 2 1/2 years at the indoor rodeo. (She said yes!) 30


Taste This Elk Steak Marinade 1 can of beer (doesn’t matter on kind, I use Busch light) 1/3 cup sweet Thai chili 1 tbsp. Worcestershire 1 tbsp. sriracha 1/3 cup minced garlic 1/3 cup brown sugar 1 tbsp. Montreal steak seasoning 1 tbsp. Lemon pepper Mix all together in a large bag (or bowl) place your steak in and let sit over night. 31
