We are a specialty food wholesaler that takes great pride in selecting the finest artisan produce, both locally and abroad.

For us it’s simple - if it’s not delicious, we’re not interested.

All these products have been very carefully selected and are exclusively imported into Australia by Fino. They represent some of Spain’s most respected artisan producers and important custodians of deep culinary traditions. They are sought after locally and found in premium delicatessens and kitchens around the world.

We’ve visited many times to learn and explore. We’ve shared meals, conversations and many a late night Gin Tonic. They’ve become friends, colleagues and fellow travellers in our quest to share the joy of great food.

ARROZ EL CAZADOR

ALGINET, VALENCIA

Founded in 1957, Arroz El Cazador is a family-owned company based in the town of Alginet, close to the renowned Albufera of Valencia.

Since the beginning, Arroz El Cazador has been dedicated to producing the highest quality rice. They achieve this through a strict grain selection process, sourcing rice exclusively from the Valencia region.

This commitment has earned Arroz El Cazador a certification of the Denomination of Origin Rice of Valencia, guaranteeing consumers rice of the highest quality.

Known as the King of Paella Rice, Bomba Rice absorbs up to three times its own volume of liquid and thus is able to absorb the flavours and aromas of a Paella stock.

JEREZ DE LA FRONTERA, ANDALUCIA

Arvum was founded in 1997 by the third and fourth generations of a prestigious wine and vinegar producing family.

Their wealth of knowledge has been passed down through the family to produce exceptional quality vinegars in the Andalucian city of Jerez, a place renowned for its sherry wines.

These are naturally barrel aged vinegars from a family who has been making wine and sherry since 1867.

Arvum means cultivated land in latin, which echoes the traditional wine and sherry grape growing and production.

JEREZ (SHERRY) VINEGAR DOP RESERVA

This vinegar is an exceptional example of the quality found in the vinegars of the Jerez region. It is made with 100% palamino grapes, produced using the Solera ageing process. This traditional system of ageing sherry vinegar consists of 500-litre oak barrels (which previously contained sherry wine) stacked three or more levels high, with the oldest vinegar stored in the bottom row of barrels (the ‘Solera’).

The oak barrels are placed in vast, wellventilated structures called ‘bodegas’ where they are exposed to fresh air and warmth, which aids the vinegar maturation process.

Aged for a minimum of 2 years.

PEDRO

Made from a combination of sherry vinegar and rich, late-harvest Pedro Ximenez grapes, Arvum’s Pedro Ximenez Reserva Sherry Vinegar has a touch of sweetness and a full, rich flavour.

Two years of ageing in oak casts has earned this vinegar the Reserva distinction. It adds a fruity rich flavour to marinades and dressings, and is great as an ingredient for sauce reductions or when used as a base for zesty demi-glacé.

Aged for a minimum of 2 years.

ARROPE GRAPE MUST REDUCTION

Arrope is produced by reducing the juice from grapes used to make sherry - palomino and muscatel grapes - to a deep, rich syrup. Beautifully dark in colour and sweet in flavour (similar to that of a vintage Pedro Ximenez), Arrope can be used to add depth to sauces and dressings and is excellent when paired with Spanish blue and sheep’s milk cheeses such as Valdeon and Manchego.

We’d also recommend use in desserts. It has similar properties to vincotto and may be used wherever vincotto is called for.

A well known, high quality producer of sherries of the MontillaMoriles DOP.

Toro Albalá has always made vinegars for their own household and local production, but in recent years have started to release these as a regular product. We’re lucky they did because these are some of the most complex vinegars we have in our portfolio. They have the flavour characteristics that only long, slow aging can deliver. These vinegars represent decades of aging and over a century of wine making experience. Use, not just for Spanish dishes but for anywhere you need a truly great, traditional vinegar.

A soft, sweet vinegar.

Produced with old Oloroso wines and a Pedro Ximénez grape must reduction. Very fruity with remarkable raisined grape and oak wood notes.

This perfectly balanced sherry vinegar has an intense, dry and aromatic fragrance with notes of oak and walnuts. Excellent with blue cheese, meats, salads and strawberries. The minimum age of the vinegar in the Solera is 15 years but it contains vinegars dating back many decades before.

Caprichos Del Paladar have been preserving vegetables for over 20 years. Flor de Alcachofa are Spanish Artichoke Flowers of the Blanca de Tudela variety grown in Murcia in South Eastern Spain. They are internationally renowned for their flavour, texture and aroma. By growing the artichokes slowly, the number of petals inside the flower increases, giving the artichoke its iconic blossom. After harvesting, the flowers are carefully trimmed and then preserved in oil on the same day to retain maximum quality and flavour.

The flower is carefully trimmed and then confit in oil.

They can be served directly onto the plate but in our opinion are best gently pan-seared.

An elegant Pedro Ximenez vinegar crafted with refined PX must and matured for 12 months in American oak.

Sweet and sour, complex and long. The combination of sweet PX must and its aging process makes this balsamic a unique ingredient.

The unmistakable aroma and flavour of this Reserve Sherry vinegar comes from its 2+ year traditional Criaderas and Soleras-style aging in American oak casks.

An exotic, rosé-coloured vinegar with a very elegant herb aroma.

Espelette Pepper's unique quality comes from its terroir, a specific region in the Basque Country. This terroir gives the pepper its distinctive aromas of tomato, sweet pepper, and other nuanced flavours.

Espelette Pepper can be used in various dishes, such as cakes, quiches, omelettes, muffins, sauces, marinades, and braises.

Its vibrant colour and distinct aroma make it an excellent garnish sprinkled on soup, raw vegetables, grilled meat, and fish.

Its mild heat and fruity flavour also pair well with fresh or stewed fruit, shortbread, and chocolate for a unique taste.

Produced by Bipia, in the town of Larressore, this Espelette Pepper is free from colourings, additives, and preservatives and is made only from peppers grown on Bipia’s farm.

With an orange to dark reddish-brown colour and an intense aroma with fruity, grilled, and hay notes. It is spicy but not overly hot, with a sweet fruity note.

In the northwest of Spain lies Galicia; dotted with little bays, small fishing fleets and home to family-owned conservas company, La Narval.

La Narval represents everything we love about artisan Spanish producers. The seafood is caught just outside the factory door, meticulously cleaned and packed by hand. Their sauces are made to family recipes using local ingredients, and the flavours are exceptional.

Seafood conservas is the perfect bar food; a bag of crisps, a tin of mussels and toothpicks. Spanish sardines are popular on café menus as a healthy, high protein option for breakfast. A slice of sourdough, sardines and away you go. Mix through pastas, salads, sandwiches - the lot.

MEJILLONES EN ESCABECHE (MUSSELS IN SPANISH SAUCE)

Mussels from the Galician coast prepared in an authentic Spanish Escabeche sauce (pimentón, vinegar, oil, garlic and bay leaves). The mussels are lightly fried with meticulous temperature control in order to keep them from losing their structure.

Olasagasti anchovies and tuna are produced by a fishing family that’s been devoted to the traditional, artisan ways of producing and preserving the highestquality fish from the Cantabrian Coast since the 1920s.

Fished in small boats from tiny fishing ports in the Basque country near San Sebastian, when each species is at their peak, the tuna and anchovies are then prepared by hand using traditional methods and served in the best tapas bars throughout Spain.

Pimentón de la Vera is a smoked paprika from the La Vera region, celebrated for its distinctive smoky flavour and deep red colour. Made from peppers smoked over oak wood, this spice is a cornerstone in Spanish cuisine.

Finca La Barca’s DOP certification protects the integrity of the pimentón, supports local farmers and guarantees an authentic taste and consistency.

While this is not an expensive or fancy product, its quality is undeniable. An essential ingredient in traditional dishes like chorizo, paella and patatas bravas.

We seek out only the best seasonal white anchovies for our Fino own-label boquerones.

We have directly sourced these boquerones from Doña Dolores, a traditional family-owned producer, who have been processing boquerones from fish caught in the Cantabrian Sea since the 1950s.

Made by traditional artisanal methods, these anchovies are hand-packed with sunflower oil, vinegar, water and salt.

BOQUERONES (WHITE ANCHOVIES)

Sustainably harvested white anchovies from the Cantabrian Sea.

These anchovy fillets have a slightly salty, mild flavour, with a fleshy and soft texture.

Enjoy wrapped around an olive and skewered with a piquillo pepper. Or, serve with salted potato chips for a tapas style Fish & Chips!

A family owned company now in its fifth generation, Blazquez is extremely well regarded in Spain, as a producer of top quality Ibérico hams.

One of the things that makes Blazquez unique is that they control all aspects of the production; everything from owning the land and the fields, the abattoirs, to the curing and maturation rooms.

Everything is designed to promote the well being of the animal and to ensure that it lives a stress free life in the most natural environment possible.

Each piece is expertly cured with just salt and no preservatives whatsoever. The resulting product one of the finest and most iconic food products in the world.

Eating it is a completely unique sensory experience.

JAMÓN IBÉRICO DE BELLOTA

Jam ón (Dry Cured Leg Ham) Ib érico (Black Iberian Pigs) de Bellota (Acorns).

Expect a dark crimson meat with a white fat.

It has a rich, buttery and nutty aroma which carries through to the flavour.

High quality Bellota is transformed by the pig’s diet of acorns and melts at a low temperature, meaning it transmits to our palate extremely well.

Aged for a minmum of 36 months and often up to 48 months.

Simply slice and serve.

PALETA IBÉRICO DE BELLOTA

Paleta (Dry Cured Shoulder) Ib érico (Black Iberian Pigs) de Bellota (Acorns).

Beautifully marbled shoulder meat that has been deboned and cleaned.

Due to the muscle structure and a higher concentration of fat, Paleta has a more intense savoury flavour than the jamón.

Blazquez age the shoulders for a minimum of 24 months and often up to 30 months.

With a smaller size and lower price, Paleta is a great introduction to high quality Bellota.

Jam ón (Dry Cured Leg Ham) Ib érico (Black Iberian Pigs) Cebo (Raised Outside the Bellota season) de Campo (Free Range).

This is the highest quality Cebo available, due to the fact that the pigs are completely free range and forage for a significant part of their diet.

This gives the ham a well-developed muscle and fat and a more complex flavour than other Cebo on the market.

Aged for a minimum of 30 months. For when you want jamón without the intensity of flavour and expense of Bellota.

Vegetable preserving is as much a part of food tradition in Spain as the preservation of jamón and seafood. It’s all about taking the very best seasonal produce and locking in that quality for enjoyment throughout the year.

Our vegetable conservas comes from La Catedral de Navarra, Spain’s undisputed leader in this field. They’re located in Mendavia near the town of Logroño, famous for its pinchos and Rioja wines.

In this region, vegetable production is as important as growing grapes. These vegetables boast an outstanding, fresh flavour and can be served straight from the jar or used in cooking.

Spanish chickpeas of a good size with deep grooves, pale in colour with a buttery texture.

Perfect for use in all kinds of stews, in salads, or to make the perfect hummus.

Kidney-shaped, short and flat medium-sized beans from Spain.

Plancheta Beans are ivory white in colour and smooth and creamy texture. They have a unique flavour and a thin skin that makes them very pleasant on the palate.

Perfect for stews and excellent texture in salads.

JUDION BEAN (GIANT BUTTER BEAN)

The Judión, also known as the “Giant of the Granja,” is a large, tender, Spanish bean with a kidney-like shape. Judions have a buttery texture, enhanced by a thin skin that dissolves on the palate. They are tender without being mushy. After cooking, season with salt and use in salads, breakfast dishes or with proteins.

Small Pardina lentils with a round, flat shape, earthy brown colour and reddish hues. Once cooked, they have a fine skin and a pleasant texture. Serve with all kinds of vegetables, with rice or in a salad. Also in traditional stews accompanied by meat, chorizo or black pudding.

This Jamón Ibérico Cebo is made using the leg of Iberian pigs that were fed on a diet of cereals and raised in semi-wild conditions. Matured for 24 months using traditional curing, salting and drying methods and has been polished by removing the skin.

Deep red colour due to the Iberian breed of pig, it has a pronounced flavour and a sweet aroma. The fat is beautifully marbled throughout, making a very pleasant eating experience.

VALDIVIESO ARTESANO MANCHEGO DOP

A true farmhouse cheese made with raw milk from a single herd of La Mancha sheep.

Exhibits a subtle, lactic tang which is complemented by earthy, nutty flavours of the high quality sheep’s milk.

In February 2024, Queso Valdivieso was one of only two producers to be certified by the DOP as Manchego de Granja

Manchego de Granja means that, not only is the cheese made from raw milk, but also that is it made on the farm with only their milk.

Black truffles (Tuber Melanosporum) are layered through the cheese during the mouldfilling process.

This produces striking layers through the centre of the wheel and natural truffle flavour with every mouthful.

PICOS DE EUROPA

POSADA DE VALDEÓN, LEÓN

Valdeón blue cheese is made to the northeast of León in the heart of the Picos de Europa mountains. It is made with cow and goat’s milks and is naturally cave aged. Each wheel is wrapped in dried maple and walnut leaves, originally used to protect the cheese as it was transported across Spain.

Valdeon presents beautifully in deli cabinets and reads interestingly on a menu. You might notice blooms forming on the outside of Valdeon as it ages, which adds to the presentation and flavour of the cheese.

An incredibly stable cheese made by a highly skilled manufacturer. It is one of the most highly recommended blues in our portfolio.

VALDEÓN IGP - MAPLE LEAF WRAPPED

Valdeón is made in the beautiful Picos de Europa mountains and is perhaps Spain’s most famous blue cheese.

Made throughout the year with cow and goat’s milks, Valdeón IGP has a soft texture and pale yellow colour, full of small cavities where white and greenish-blue moulds are concentrated. Each wheel is wrapped in dried maple and walnut leaves, meaning it presents beautifully in a deli cabinet or on a cheeseboard.

The flavour is mildly spicy and salty with a buttery texture.
