Sarda Formaggi was founded by the Mura and Saba families in 1963. Today, they collect milk directly from the shepherds in the mountainous Northeast of Sardinia, making and maturing a range of traditional cheeses. Herds range from as few as 30 sheep to up to 300.

PECORINO ROMANO DOP
This cheese is named after the central northern region of Sardinia, Goceano. Despite the name “Pecorino Romano,” Sardinia is the region with the most significant production because of its famous sheep milk production.
The wheels and label bear the trade mark of the Consorzio per la Tutela del Formaggio Pecorino Romano. This means that the cheese has been produced according to strict rules, meets quality standards and is, therefore, a true Pecorino Romano DOP.
It has a characteristic hard texture and a sharp and salty tang but also more nuanced flavours of high quality mountain milk.
It is most often used as a hard-grating or shaving cheese. It is the cheese to be used in the classic Roman pasta, Cacio Pepe. Nothing else will suffice.

Valserena Parmigiano Reggiano Solo di Bruna is the very pinnacle of the world’s most famous PDO cheese. In other words, it’s the best of the best.
Valserena is the oldest Parmigiano Reggiano dairy in Parma, one of only four members of the Consorzio di Sola Bruna (Brown Cow Consortium) and one of the last true farmstead producers of Parmigiano Reggiano.
From both an animal welfare and flavour point of view, this is a huge deal.
The rare Sola di Bruna cows (brown cows) produce far less milk than other dairy cows, however it has a unique quality being far richer, creamier and higher in protein. This results in a deep, rich flavour and a unique sweetness.
Valserena make only 14 wheels per day and are in very high demand around the world. We are absolutely delighted to have secured an allocation for Australia.
A rich variety of aromas in complete balance and harmony, the 24-month is the classic age profile.
With bold umami flavours and characteristics of Italian pastures, notes of fresh milk are still present. Tyrosine crystals are prominent due to proteolysis.
The extraordinary balance between sweet and salty and the straw-yellow crumbly and grainy texture makes it ideal for all traditional Italian dishes and excellent with medium-bodied wines.

Visually the cheese appears drier and more compact, with a more uniform and hard structure.
The traditional straw-yellow colour becomes brighter and tinged with warm gold. It is crumbly and grainy to the touch and the scent is intense.
Bitterness and sweetness are homogenous and harmonious. The flavour is deeper and more complex with marked flavours of spices, dried fruit and hazelnut.
