Rain, rain, go away. I think we have all had enough of the rain. My thoughts go out to any one that has had flooding and hope it didn’t do too much damage. Here’s hoping the snow stay’s away.

And it’s about to get worse! Lenders now have to contend with New Rules introduced by the Regulator, which means that Compliance Officers will be poring over every new application to ensure they are not in breach, causing even more delay, confusion – and Decline!

A proper Mad Hatters’ Tea Party, & as he himself remarked “You’d have to be half mad to dream this up” and, of course, he was right – or, perhaps, not!

Creamy Mustard Chicken You need: 8oz of spaghetti, 4 thin-sliced chicken breasts 1/2 tsp garlic powder 1/2 teaspoon salt, 1/2 teaspoon freshly ground pepper, 1/4 cup all-purpose flour 3 tbsp extra-virgin olive oil, 1 large shallot, finely chopped, 1/2 cup dry white wine, 1/2 cup water, 1/4 cup reduced-fat sour cream 2 tbsp Dijon mustard, 3 tbsp chopped fresh sage

Bring a large saucepan of water to a boil. Add pasta and cook according to package instructions. Drain.

Meanwhile, sprinkle chicken with garlic powder and 1/4 teaspoon each salt and pepper. Place flour in a shallow bowl and coat both sides of the chicken, shaking off any excess. Reserve 2 tsp flour; discard the rest.

Heat 2 tbsp oil in a large skillet over medium-high heat. Cook the chicken, turning once, until golden brown and cooked through, 3 to 4 minutes per side. Transfer to a clean plate.

Reduce heat to medium and add the remaining 1 tbsp oil to the pan. Add shallot and cook, stirring, until beginning to brown, 30 seconds to 1 minute. Add wine and cook, stirring occasionally, for 1 minute. Combine water with the reserved 2 tsp flour. Add to the pan and cook, stirring, until thickened, about 1 minute. Remove from the heat; stir in sour cream, mustard, 2 tablespoons sage and the remaining 1/4 tsp each salt and pepper. Return the chicken to the pan and turn to coat with the sauce.

Help Combat Loneliness, become a Befriender Over half (51%) of all people aged 75 and over live alone. Half of all older people (about 5 million) say the television is their main company. 36% of people aged 65 and over in the UK feel out of touch with the pace of modern life. (source, Campaign to End Loneliness)

The Befriending Scheme, led by the Castle Point Association of Voluntary Services, is an initiative operating within the Castle Point and Rochford / Rayleigh areas to combat isolation and loneliness.

The service helps change the lives of many residents by pairing them with a trained volunteer Befriender to provide companionship and support. A cup of tea, a walk to the shops or a trip out just once a week can make a huge difference to somebody’s life. We also provide information relating to NHS services and are able to signpost to organisations to suit their needs. Such has been the success of the scheme and recognising that weekends and evenings can be an especially lonely time for many people, we have extended the scheme to cover those periods too.

Since conception of the scheme in April 2012 we have Befriended over 150 lonely or isolated people across Castle Point & Rochford. To ensure the continued success of this popular free scheme it is vital that we have enough volunteers.
