Saturation refers to the degree of purity of the color. Less saturated colors contain more gray or black, for example. Steel blue is less saturated than true blue.

Sunlight, space, plants and flowers make people feel more relaxed and less anxious in their homes. It’s no coincidence that these are all natural elements. Ancient feng shui teachings celebrate shapes and textures that represent the natural elements of earth, water, wood, metal and fire. THE GENUINE SWISS ALPINE PALETTE

Davos – the very name spells the ultimate in Swiss luxury and I was fortunate to visit this renowned mountain destination a year back, courtesy of a FAM Tour organised by Swiss Air that took us to destinations like Geneva, Basel, Zurich, and of course Davos.

Ihad heard of Davos being a venue for prestigious international conferences and I was pondering onboard the Swiss Air flight what ethereal beauty this Alpine settlement holds for the global business honchos and the movers and shakers of the world that compels them to head for Davos year after year.

We landed in Zurich airport and from there drove by road to Davos, passing through the magnificent Alpine panorama and the Swiss countryside. This two and a half hour road journey is forever etched in my memory, being probably the most scenic drive I have ever experienced.

Swiss Air had made elaborate arrangements for our stay at Davos’s outstanding Arosa Kulm hotel. The surroundings here are stunning with undulating ski slopes and snowy hiking trails that can be accessed directly from the doorway. The hotel’s outstanding location at 1,835 meters offers unobstructed exquisite views of the Grison Alps. ›

Davos has indeed come of age as an in ternational Alpine holiday destination – its impressive set of congress resorts, relaxation avenues and a plethora of winter sport activities have catapulted Davos into a much preferred Swiss vacation spot.

We were informed by the Resident Manager

that twelve classic resorts belonging to the European Alpine region have joined together for better brand marketing: ‘Best of the Alps’ (BOTA), which includes Chamonix Mont Blanc, Cortina d’Ampezzo, Davos, Garmisch- Partenkirchen, Grindelwald, Kitzbühel, Lerch Zürs am Arlberg, Megève, St.Anton am Arlberg, St. Moritz, Seefeld, and Zermatt.

They signify the most prestigious summer and winter tourist destinations.

The ‘Best of the Alps’ resorts are considered to be the epitome of rich Alpine tradition and superb hospitality offering the discerning international visitor a variety of accommodation options, ranging from the homely hostel to a super luxury hotel. ›

Davos is not all nature. This bewitching Swiss town also offers a colourful cultural palette – often in a quietly premeditated contrast to the more recognisable scenic attractions. We were lucky to appreciate The Davos Festival ‘Young Artists in Concert’ that draws talented young musicians from across the globe. For the culturally inclined, a visit to the historic Kirchner Museum will be very

rewarding. Here, the great collection of the renowned Swiss expressionist, Ernst Ludwig Kirchner is carefully preserved.

The evolution of Davos as an international high-altitude health resort (1860 - 1930) began in 1853 and is intimately linked with the name of Alexander Spengler. He was sentenced to death by the Germans for his participation in the March Revolution of 1848 and sought

asylum in Davos. As a qualified doctor, he quickly recognised the beneficial effects of a highaltitude climate and in 1868, Spengler and Dutchman, Willem Jan Holsboer together founded the Kuranstalt SpenglerHolsboer health clinic. Later on Holsboer also established the Rhaetian Railway and, thanks to his pioneering initiative, the Landschaft Davos set up its first railway link with the lowlands back in 1890.

Thereafter, the development of Davos as a much sought after health resort was quick to evolve. Hotels, sanatoriums and villas sprang up from nowhere, almost overnight. If statistical records are anything to go by, at the beginning of the 20th century, an annual 700,000 overnight bookings were recorded!

With the passage of time, visitors to Davos’s many sanatoriums also introduced both summer and winter sports to this town. Renowned British author, Sir Arthur Conan Doyle – creator of Sherlock Holmes – contributed a great deal on this front. The introduction of Europe’s first T-bar ski lift at Bolgen and the construction of several mountain railway projects played pivotal roles in generating the skii boom in these areas.

Newer scientific methods in

treating tuberculosis led to a gradual decline in the volume of patients coming to Davos, and the number of long-term guests in the sanatoriums dropped remarkably, as a result of which, elegant buildings were converted into contemporary hotels. However, the town gradually evolved as a centre for medical expertise and today there are a number of research centres based in Davos. With the construction of the magnificent Congress Centre in 1969, Davos truly established itself as a seminar and congress venue.

Davos boasts a long skiing tradition. During the early 19th century it was mainly the British, who together with the local people introduced Alpine ski sport. The world’s first ski lift became operational at Bolgen in 1934. This lift is now on display at the impressive Davos Winter Sports Museum. ›

Very few visitors are aware of the fact that Davos was one of the first resorts to recognise the importance of snowboarding as a sign of the times rather than just a passing fad. In the early 1990’s, the localty had gained a tremendous reputation as a Mecca of snowboarding, a reputation that has been reaffirmed with every passing year. Today, Davos is a

wonderful example of old traditions blending with the new. Cross-country skiing remains a perennial favourite in the Landwasser Valley. There is also a spectacular 75 km network of trails stretching from Davos Wolfgang flanking the scenic lake towards Davos Glaris. The Flüela run in particular has been standardised by the FIS and today serves as a traditional

World Cup course for the planet’s top ranked crosscountry skiers.

I was stupefied by the sight of Davos’ ice rink. Europe’s largest natural ice rink (over 1,800m2) comprising an outdoor artificial ice rink and a state-of-the-art ice stadium that are much sought after venues for ice hockey, ice skating, speed skating, curling

and ice-stick shooting. Davos hosts numerous prestigious competitions like the International Speed Skating Championships, the much-hyped HC Davos Ice Hockey Championship matches and the one-and-only Spengler Cup, which happens to be the most important international ice hockey event, held annually in Davos between Christmas and New Year.

If you aren’t a ski buff, there are numerous other wonderful options for spending your winter days. For instance, the 97 km long winter-walking paths around Davos-Klosters offer an irresistible temptation to discover the Swiss countryside and there are also amazing trails for Nordic walking. ›

I have seen many visitors to Davos try snowshoe trekking, an innovative way to unwind in the Swiss Alps. Toboggan runs on Schatzalp, Rinerhorn, Madrisa and Parsenn totalling around 22 km of tempting valley runs extend a bewildering array of snow thrills.

Whoever knows Davos, would

testify to the fact that the après-ski is extraordinary! Refreshing entertainment is on offer at a host of Alpine ski huts that are close to the ski slopes, at rugged Swiss bars near the valley stations and in Davos town itself. Many visitors also go to the cinema followed by happy hours at the Casino. A welcome change from the

If you are a business magnate, Davos should be on your priority list as a conferencing centre. Today it has carved out a niche identity as a successful and competitive international congress venue. In the world of conferences, there is a saying that Davos is blessed with a special ‘congress climate’.

The most highly acclaimed international congress is the annual meeting of the World Economic Forum (WEF) which has been held in Davos since 1970. Every year in the month of January alone, Davos is host to over 200 high-flying guests from the worlds of politics, finance, business, science, technology, and civil society.

IN THE OLD TOWN REOPENS ITS DOORS

Last year, it was pretty exciting to hear that one of Marbella’s most emblematic buildings, La Fonda, was undergoing renovations with a view to launching a luxury boutique hotel. Its main entrance would be in the stunning Plaza de Santo Cristo, home to one of the most beautiful 16th-century old Churches in the Old Town: Santo Cristo de la Vera Cruz. The La Fonda Heritage Hotel has now opened and the results are clearly worth the hard work (and the €7.5 million investment). This is undoubtedly an exciting new era for a building that has hosted the who’s who of national and international celebrities and has been an essential meeting point for intellectuals and artists.

At the helm of La Fonda Hotel is Victor Krensler, its charismatic General Manager. Victor, who grew up in Marbella, has honed his craft at some of the Coast’s leading luxury hospitality and food establishments. The new, 20-room hotel, he says, is “the first Relais Châteaux Hotel in Andalucía” – something to

be excited about indeed, since the hotels under this brand are known for their elegance, design, and unforgettable élan.

A RICH HISTORY

La Fonda Heritage Hotel comprises three buildings that date back to the 16th century. It was originally a private residence, but also served as a church, a school, and (in the 1960s) a

hotel, designed by no less than Jaime Parladé and Duarte Pinto Coelho. In the late 1980s, it became Marbella’s first Michelinstarred restaurant. Throughout its colourful past, La Fonda never had the ambience of a typical hotel. It was a home with many stories to tell, thanks in no small part to the glitterati who gathered together within its walls.

Currently, most of the original buildings still stand, as do the two high towers with 360º views of Marbella. Quality materials such as stone, brick, and wooden beams abound and the eye is enamoured by magnificent archways, high ceilings, artistically tiled rooms, stately columns, painted walls, tapestries, and ancient trees. ›

THE ROOMS

The rooms are accessed by covered passageways that look over the courtyards. No two are alike and some have spacious terraces that are nestled amidst the branches of 200-year-old trees. The interiors are airy and light-filled. They are graced with stylish bespoke furniture, tall ceilings, and stunning metalframed, floor-to-ceiling glass doors and white wooden-beamed ceilings.

Victor says, “We have equipped

all our rooms with state-of-theart gadgets such as Marshall Bluetooth speakers and Loewe smart TVs with inbuilt Chromecast so our clients can mirror their phones to the screens (for Netflix, Youtube, HBO, Disney +, and more). Each room also has powerful Dyson hairdryers.

Our beds, pillows and bedsheets are all made with the finest materials and each room has three standard pillow types (goose feather, memory foam and cotton pillows), plus an

additional pillow menu.”

Safety and rigorous hygiene standards are given due importance in the post-COVID age. “All rooms have Dyson air purifiers, which can eliminate 99.95 per cent of all pollutants from the air, including odours and dust for clients with allergies,” Victor assures me. ›

La Fonda has two restaurants and a sky bar. Victor says, “The night restaurant, JANE, will be open every evening from 7pm until after midnight. The food concept marries local and Mediterranean products with cooking techniques and flavours from around the world.”

JANE is divided into three main areas: an

interior dining zone with a signature cocktail bar and lounge, a Garden Patio, and the interior of the 16th century Hermitage of San Sebastian. “This hermitage was ‘lost in construction’ as the Old Town began to expand in the 18th century. It was almost completely forgotten for 200 years, and was rediscovered when the renovation works started five years ago.” ›

The lush Garden Patio is the external area that combines the three historical buildings which make up the hotel. Victor states, “This area has an outdoor bar that specialises in Champagnes, signature cocktails, and fresh, healthy juices. It will host DJ nights, creating a lively vibe which, alongside the antique surrounding walls and beautiful old town settings, will be unlike anything else in Marbella.”

JANE boasts a large open fridge with freshly-caught fish on display, as well as a barbecue and Josper oven (which delivers unique, authentic smoky flavours to meat and lends it an incomparable juiciness).

For breakfast and lunch, the

place to be is Los Patios de La Fonda, which serves one of the best breakfast buffets in town and lavish high tea service.

La Fonda’s sky bar is called La Cima (‘The Summit’). From this elevated position, you can enjoy raw food, juices, smoothies, cocktails, and Champagne, while losing yourself in the beauty of the Old Town and its rooftops.

La Fonda Heritage Hotel is an excellent choice for discerning travellers in search of a hotel with a unique appeal; one surrounded by architectural wonders and the hustle and bustle of city life. Sophisticated design, topof-the-range gastronomical

The year 2023 promises to be a big one for weddings and glamour. Full-scale receptions and luxury jewellery are back with a vengeance. Marisa Cutillas presents just a few engagement ring trends that may inspire you if you are planning a magical proposal to your beloved.

Engagements have always been a momentous occasion for couples who are madly in love, but today’s proposals differ vastly from those in the 20th century. Not only are they more customised and creatively planned (think Flash Mob, helicopter, or deep sea engagements) but they are also more elaborate. Wedding Pro reports that nearly one quarter of all proposers feels the pressure to come up with a unique moment, about one in three engagements take place during a romantic trip, and one in five proposers are

relying on the expertise of photographers, events organisers, and other professionals who can add a touch of sophistication to the moment.

Things have also changed when it comes to wedding rings, which are no longer the objects of surprise they once were. Around three quarters of people being proposed to help choose their ring or indicate the style or brand they prefer. Moreover, although the average expenditure on rings has gone down by about $2,000, luxury engagement rings are still highly valued, with an average sales price of around $13,500. ›

This ability was certainly innate in Giacomo, as he had the astounding capacity not just to pass himself off as what he was not – an aristocrat – but was also gifted with a silver tongue that made him loosen the purses of

Wnobles and weaken the morals of otherwise chaste women. By the time he had reached full adulthood, Giacomo Girolamo Casanova, had become the soon to be infamous man we to this day associate with womanising and macho pursuits. He is said to have bedded hundreds of women in his life, and survived it – quite a feat in an age of rampant venereal disease and limited medical answers to such problems. In fact, the bon vivant Casanova reached the ripe old age of 73, outliving many of his conquests both financial and amorous. Though his life was rich in all manner of adventure – he is, after all, officially defined as an adventurer –Casanova’s undying fame, or infamy, stems from his ability to

captivate the fairer sex.

A HANDSOME FACE AND SLIPPERY TONGUE

Casanova was by all accounts a handsome man, endowed with bundles of confidence, bravado, daring and of course a slippery tongue and quick wit. His dashing charm and charisma, not to mention his mischievous sense of fun and excitement, made him irresistible to the ladies, and it is for this skill set that we remember him to this day. The fact that he had intercourse (of the intellectual kind) with cardinals, dukes, kings and also contemporary geniuses such as Voltaire, Mozart and Goethe, is all but forgotten today, overshadowed by an altogether different kind of communion. ›

For a long time now, the very name Casanova has been synonymous with that of a womaniser. In his earlier years, he was above all a man to be admired for his seduction skills – an example much envied by other hotblooded men – but

perhaps the ladies were a little less sure. In them, the name Casanova seems to have instilled a contradictory combination of anger and awe. Not so the younger generations, though, for in today’s world so obsessed with political correctness and focused

upon newly defining genders, let alone gender roles, there is no ambiguity to the man: he is a scoundrel and a criminal. Were it not for the fact that he seems to have also preyed upon what we would now call vulnerable and under-age females, one could have debated the point.

THEN AND NOW

But people act according to the prevailing mores and customs – not to mention penal codes – of their era, and in his day what Casanova did was more shocking to the church’s morals than it was in breach with laws or even traditions. You see, back in the 18th century there was no clear stance on under-age people engaged in such adult endeavours as working 12hour days or having sex. This is still the case today in large parts of the world, but the fact that it isn’t in the West blurs our vision of almost everything that went before. By today’s standards, Casanova would be in prison, clear and simple, but in his day he was a dashing cad. Then again, his was an age of undeniable macho chauvinism and exploitation of the poor and vulnerable.

What Casanova did, however, was to exploit the wealthy, bored and feeble, for he moved in high circles and preyed upon man and woman alike, albeit in different ways. He was more of an imposter when securing coin or position with men in high positions than when courting the ladies, as this was where his true nature lay. Voracious he might have been, but Giacomo Casanova was no brute, and in an age where alcohol and violence were rampant in malefemale relations he stood out as a gentleman who time and again came to the rescue of a damsel in distress. Herein lay both his modus operandum – a deep-seated desire to save the

object of his desire and win her gratitude – and his appeal to women.

THE LEGEND OF CASANOVA

There are of course rumours about the extent of his endowment and of him consuming 50 oysters every morning to fuel his crazy sexual escapades. What is clear, however, is that he was an accomplished person whose gentlemanly demeanor accorded him an entry into the upper echelons of society.

Today, the legend of Casanova lives on, and while modern mores look leniently upon a drug dealer or those who break

into your house, they uniformly condemn a man who was no saint but lived in an altogether different era. Casanova was a lover not a hater of women, but what can modern men take away from such a figure? We would certainly not want them to follow in his footsteps, but it has to be said that in an age where maltreatment was common, he was characterised by kindness and flirtation. e

Though the term futurology originated in the 20th century, the concept of visionaries predicting the future goes back even further. Who were the most inspired futurologists and did they get it right?

There were those, such as Nostradamus, who made cryptic predictions built upon visions received in dreams or discerned from other sources considered to be rather magical and mysterious. Futurology, on the other hand, is based on more rationalised ideas of how the world will evolve in the medium to long-term, and it has often been associated with science fiction, and formed the inspiration for it.

Futurology is by nature visual, as it involves painting an unfamiliar picture of the

world we live in. Visionaries of this kind, who had the ability to look beyond their contemporary environment, imagined how mankind would develop, and this involved describing new technologies, future cities and homes, forms of transport, exploration and other advances. Jules Verne was perhaps the most visual of all, and one of the early pioneers of futurology.

THE WORLD JULES VERNE DESCRIBED

French author Jules Verne painted a very clear picture of a future world that had audiences

in the 19th century transfixed. In his Voyages Extraordinaires adventure series – written from the 1860s to the early 20th century – he laid out the foundations of a world where technological advances would allow mankind to travel to the depths of the ocean (Twenty Thousand Leagues under the Sea) in a sophisticated submarine, venture to the moon in a rocket (From the Earth to the Moon), live in A Floating City, explore the inner depths of the earth (Journey to the Center of the Earth), or travel Around the World in Eighty Days. ›

For millions around the world, it was the clarity of his futuristic visions that captured the imagination, accompanied by evocative illustrations which gave shape to his ideas. It was an imagined world of space rockets, submarines, floating cities, balloons and wondrous machines that opened up new dimensions to humanity. Jules Verne got it pretty much spot on, but how could he have envisaged so many things so well, writing in many cases 50 to 100 years before they actually became a reality? The answer lies in the visionary abilities of a futurologist, which rest not so much in mysterious visitations of the future, as in a power to analyse the present

and project developments further ahead.

Leonardo da Vinci had done much of the same, drawings and all, but from the technical perspective of an inventor/ engineer. His concepts for a moving fortress (tank), advanced pieces of artillery, helicopters and more have immortalised him as one of the greatest intellects of all time, and in many ways, he was one of the first true futurologists, even though only a handful of his outlandishly avant garde ideas actually made it off the drawing board. The mere idea of having ideas so far ahead of his time marks Da Vinci as a true genius and visionary.

H.G. WELLS –TRAVELLING IN TIME

By the turn of the 20th century, futurology had become an increasingly serious pastime among intellectuals, scientists and engineers. The previous century and a half had been characterised by rapid technological development, leading up to what is called The First Machine Age, an era in which machinery was notably impacting human society, life expectancy, travel and fastevolving economies, paving the way for a level of prosperity not seen before. It is within this environment that Britain’s very own H.G. Wells explored the more distant future, maybe even as far ahead as 2023!

Like those before him, he foretold a world populated with tanks, aircraft, space exploration and devastating weapons of the kind we know as nuclear missiles. He even described something akin to satellite television and the Internet, not to mention biological engineering and aliens. At the birth of the 20th century, he wrote The First Men in the Moon, which came out shortly after The Invisible Man and The Time Machine, in which he showed great understanding in the origins and evolution of human societies. The War of the Worlds dealt

with alien invasions from Mars, and in so doing became one of the earliest works of science fiction, and in The Shape of Things to Come, H.G. Wells penned a future history of the world that would end in 2106 – not so very far from now. ›

THE DYSTOPIAN VISIONS OF GEORGE ORWELL

If H.G. Wells was mostly hopeful of a good outcome for humanity in The Shape of Things to Come and not The Time Machine, then his fellow social and political thinker George Orwell wasn’t. Having lived through the experiences of the Spanish Civil War, followed by World War Two, this futurologist predicted a rather more sombre future. Even though he fought on the

side of the Left in Spain, in the seminal book Animal Farm, he very neatly summed up the inherent failings of communism, or any similar system. It is, however, 1984 for which he is best known, and this work makes some very chilling reading in the present moment.

Now-famous terms such as ‘Big Brother’, ‘Thought Control’ and ‘Newspeak’ come from this novel, for which he drew inspiration from Hitler and Stalin’s regimes to outline a

future technocratic dictatorship where citizens were monitored, recorded and controlled with the use of technology. If it sounds familiar that’s because there are already elements of our modern-day life which resemble those described in the book, and if you live in China anno 2023 then you would be tempted to think Xi Jinping resembles Big Brother – the omnipresent leader of dystopian 1984 who is always ‘watching you’. For your own good, of course...

FROM SCIENCE TO FICTION… TO REALITY

In reality, science fiction was born in the late 19th century, but it became more popular as the 20th century progressed, reaching a fevered peak in the 1950s, when the future looked rosy and everything seemed possible. From children’s programmes such as Thunderbirds to Marvel’s many creations and the writings of Isaac Asimov, Robert A. Heinlein and Arthur C. Clarke, the idea of a socially and technologically advanced utopian world in which people would fly to work, have robots (a phrase termed by Czech

futurologist Karel Čapek) perform their menial tasks, and space travel would be an almost normal thing.

No specific timeframe was usually given, but surely by 2023 all the above would be a reality and life would be both sweet and easy. Gene Roddenberry, another celebrated futurologist, made his fame with the futuristic Star Trek series, which projected into a more distant future, while George Orwell believed his pessimistic visions would have become a reality by the mid-eighties, yet might only have been roughly half a century off. In futurology, it is not so much the accuracy

of your timing, which is after all a guessing game, as the ability to accurately foretell trends both technical and scientific as well as societal and political.

Some writers and thinkers also predicted climate change, social trends, technologies and political developments with unnerving accuracy, and while hindsight is a deceptive tool in analysing the true futuristic vision of claims made many decades before, it cannot be denied that some people just have an almost otherworldly ability to get it right. Take Alvin Toffler, who in his focus on future technologies divined the digital and communications revolutions, complete with the now-familiar concept of ‘information overload’. In a similar fashion to George Orwell, Aldous Huxley pencilled a dystopian control state in Brave New World, a term that like many other futuristic descriptions has become part of our modern vocabulary. ›

Even if your positive outlook on life rejects the negative predictions of Aldous Huxley, his early recognition of such features as sleep learning and psychological conditioning place him well ahead of his time. The fact that it takes all kinds of futurologists to cast light on the future is shown by the visionary architect and industrial designer, R. Buckminster Fuller, who took the avant-garde notions of Frank Lloyd Wright and Le Corbusier a step further to come up with truly sci-fi designs that were fifty to one hundred years ahead of

the curve. The futurologists of the past decades and centuries have predicted many details and scientific inventions with uncanny accuracy, but the big question is: is the world of today, and tomorrow, as they predicted?

In futurology, as in most things, there seems to be several schools of thought, with a prominently positive and a prominently pessimistic leaning. Looking at the world in the 1960s, the enthusiastic vision of the future might have been considered the more likely one to have won out, but in the

present climate one is tempted to accredit the pessimists with having got it right.

No-one knows exactly what the future will bring, but there are those among us with the capacity to look around them, analyse what is going on and create a picture of what might very well lie ahead. Some use these talents to predict consumer, economic or marketing trends, while others turn to science, fiction or even warnings of what lies in store if we don’t guard our freedoms. In all cases, it serves us well to pay heed to their predictions. e

HISPANO SUIZA

CARMEN HYPERCAR

It’s always exciting to see a fabled nameplate revived and such is the case with Hispano Suiza and its Carmen electric hypercar. Though it was a top choice of royalty, movie stars and celebrities back in the 1920s and 30s, Hispano-Suiza may not be a name that’s familiar to newer generations of motoring enthusiasts. Back in the day, Hispano-Suizas (the hyphen has now been dropped) were owned by such luminaries as Albert Einstein, Pablo Picasso and Coco Chanel. The company has a long and distinguished (and complex) history that goes all the way back to 1904 and operated out of Spain and Switzerland, hence the name. Ultimately, the company became a solely Spanish operation. Car production ended in 1946.

Interestingly, the first car that can be traced used electric power but it wasn’t long before internal combustion engines were adopted. The company grew rapidly and eventually would produce aircraft engines and armaments in addition to cars. Hispano Suiza always had roots in Barcelona

and that’s where the new carmaker is headquartered. The current proprietors are descendants of the founding family, the fourth generation to be involved with the cars. The Carmen is a stunning looking car and seems to draw no inspiration at all from rival hypercars. It’s highly original design is distinguished by a distinctive

teardrop profile. There’s a familiar looking Hispano grille up front but the rest of the car features all kinds of fascinating styling touches like rear wheel spats 1930s style. The back window tapers to follow the curvaceous rear bodywork and looks as though it may not provide very good visibility. ›

The doors open upwards and access is quite good for a car in this class. The bodywork is fabricated from carbon fibre and is thus exceptionally rigid and light. This helps minimise overall weight, always a challenge with any EV with its battery packs.

The Carmen uses four electric motors, two at each rear wheel, which may not create the wondrous sounds of a vintage Hispano V-12, but certainly provide massive levels of power. The

basic car, if such a term is appropriate for the Carmen, develops 1,005-horsepower and an uprated Boulogne variant offers an additional 94-horsepower. A lithiumion battery unit is located behind the two seats. Hispano Suiza has built five of the cars so far and they’ve been displayed all over the world from Monterey Car Week to the Goodwood Festival of Speed. The factory is located close to the Circuit de BarcelonaCatalunya and the chosen

constructor has a history of building successful Formula E racing cars. Right now, a production run of 19 Carmens is planned. The interior design team did not go quite as wild as the people who penned the bodywork, but that’s not to say that it isn’t a very luxurious and original cockpit. As might be expected of a car priced in the millions, customers can opt for all kinds of materials and exotic woods for the trim. ›

The hip-hugging seats are superbly trimmed by Spanish leather artisans and look as good as anything you’re ever likely to encounter – even at this price. It’s good to see four round air vents ranged across the dash and not some fiddly-to-operate hidden units. The digital instrument panel in front of the driver is a delightful mixture of vintage and modern

with an ‘engineturned’ aluminium appearance rather like a Hispano Suiza from the early 1920s.

The Carmen is a bold effort to say the least and hopefully will spawn other cars bearing the fabled nameplate, perhaps at more affordable prices. One thing’s for certain: if you ever see a Carmen out on the road, you’ll never mistake it for anything else. e

It’s always been hard for audiences to get a fix on Christian Bale. The handsome Welshman has invested himself in so many diverse roles that he escapes traditional star image-making.

CHRISTIAN BALE

VERSATILITY PERSONIFIED

Bale is a chameleonic performer whose work will run the gamut from a homicidal maniac in American Psycho, to the emaciated insomniac in The Machinist, to his embittered crimefighter in the Batman trilogy, to an ambitious magician in The Prestige, and even a U.S. navy pilot facing torture as a Vietnamese POW in Rescue Dawn. And that’s before we’ve even discussed Thor, Dick Cheney and Ford v Ferrari

What’s interesting is that none of Bale’s films give us a consistent picture of the man behind his various masks. So, while he doesn’t find ease or comfort in playing any character, the 49-year-old Welshman admits if there is one type of persona he thrives off most, it’s a villain.

That makes his recent turn in the Netflix drama The Pale Blue Eye all the more interesting. He switches dynamic, taking on the role of a detective who is looking to find answers to the murder of an army cadet, yet is met with a wall of silence.

Does the taking of this role,

and the embracing of the period comedy thriller vibes of Amsterdam – in which he plays war veteran Burt Berendsen –signify a change of tact for the actor as he arrows towards his half-century?

You’ve shown a fair amount more diversity in recent roles than you are perhaps renowned for – is this a conscious shift?

I think it’s easy to fall into a way of viewing genres, making films and acting, and when you are fully on that path it’s difficult to move to others.

Like most things in life, when you do begin to take in other ideas and influences, it does then become somewhat simpler to explore that area. They say familiarity breeds contempt, but it also provides comfort and confidence.

You don’t come across as someone who has ever lacked confidence?

All actors are incredibly fragile underneath [laughs]! We all require constant reassurance and affirmation that what we’re doing is the right thing and worthwhile.

You may have a string of performers who are at the point

where they really don’t care what people think; though those same performers are probably knocking out content that no-one wants to watch anyway.

It’s a bit like adrenaline on a sports field. Even the very best and more experienced athletes have it, and if they didn’t have it, they wouldn’t be as good as they are. For actors, what keeps a lot of them coming back is the fear of not being invited back. That element is pretty terrifying, no matter how rich you are or how long you’ve been in the business.

What is the thing that truly connects you with a role?

I guess it’s the ability to be what I would call an intense idealist. I’m someone who likes to push myself to extremes and enjoy the ride for all it’s worth because there’s an incredible purity to being part of that process. I need to throw myself into my work that way because that’s where the fascination lies. I want to experience the raw emotions that come with certain characters and their experiences which go way beyond anything you would normally be confronted with in life. ›

Ultimately, that means I am lured and wired more towards controversial characters… and controversial characters are usually wrongdoers, or those who have some dark or rebellious element within them.

Has it always been this way for you?

I have an extremist sensibility. It’s my way of raging against the machine and releasing some of the negative energy that builds up inside us that maybe we ourselves don’t even know we’re accumulating.

That must mean you need to throw yourself into characters?

I need to find the clarity that comes with being that character and separating myself from everything else that might be going on in my life or in the world for the time I’m inhabiting his world. I don’t mean that I’m walking around all the time pumped up like Patrick Bateman in American Psycho, but you

want to enjoy the beauty of being able to reach a level of intensity and dedication.

It’s an incredibly freeing and stimulating experience for me and I take pride in being able to say that I achieved something when I’m looking back on certain films. A lot of the work just doesn’t take you there.

It must be a relief to your loved ones that you can play out this side for pretend, and that it doesn’t permeate your normal life… at least, the assumption being made here is that it doesn’t permeate it? No, I am pleased to say you are correct in that assumption. At home, I crave a normal, relaxed life, so I save all my inner rage for work. My wife prefers it that way!

Ever since my children were born, I’ve learned that it doesn’t make much sense to be gloomy when you have such beauty and wonder in your life. My

wife also understands my occasionally obsessive streaks and she’s able to just laugh and tell me, ‘You’re crazy!’, and I’ll just laugh right back.

You must have felt you were perhaps stepping away from that a bit with Batman?

It doesn’t make any difference. I’m doing other roles, all the time. I do non-Batman so I don’t get pigeonholed as Batman, and I do Batman so I don’t get pigeonholed in serious drama. It cuts both ways. What I enjoyed with Batman, and was very surprised and thankful for, was that I got some bloody polite people come up and say they enjoyed the work and what I did with it. I did not find myself radically altering my life, thank God, simply because I had more money to spend or that I got recognised more often.

Even now, I like to live very quietly, very privately, and don’t like to let the public get to know me too well.

Why is that?

I’d rather be a mysterious figure than one of those celebrities whose lives are an open book. I find it easier to appreciate the work of a painter or musician when I know very little about their private life or history.

It’s not important when it comes to the work, is it? So, I think the less people know about my private life the more

they can appreciate seeing me in different roles.

Do you wish you could have done a fourth Batman movie?

The discussion never happened. It was a great chapter in my life, but I was happy to move on.

And playing baddies is most fun, ultimately?

I can understand why people like to see me that way, but the truth is probably just that I like the chameleonic aspect of an actor’s career – experiencing new things in

life and challenging myself and learning something knew about life or about myself under certain situations. That’s the kick for me.

I can safely say that my more recent projects have been just as satisfying without that sinister, dark element. I had a lot of fun in Amsterdam which, along with The Pale Blue Eye, offers a diversion from the norm in trying to do good. It’s a refreshing take on life and the fact I’ve enjoyed it so much has made me feel a little peculiar [laughs]… like I’m letting someone down or cheating!

Do you agree that villains seem to be more likely to land big awards?

I’m not sure that’s true. I think villains and heroes, in equal measure, attract attention by very nature of the fact they are away from the norm. ›

Awards are a funny one, anyway. Awards, filmmaking… it’s all very subjective, isn’t it? It’s all opinion, it’s all conjecture. To say a performance is the best of that year, it’s tricky. How can you really say that?

You’ve always been quite practical when it comes to your career…? Practical, how?

In the way you’ve spoken about movies that haven’t done so well or that you weren’t too happy with. Has that attitude served you well, do you think?

Sure, maybe, but that’s any actor’s career. That’s anyone’s career. I mean, put my hands up, I made some bad choices. Some I thought had legs before I went in and others I thought, ‘fucking hell, I’m an actor and I

need a fucking job’.

Now, I’m at a stage in my career, very gratefully, where I can decide when and where and be very methodical in my thinking, but I still remember very vividly needing a job, needing a job to survive, needing a job so my house wasn’t repossessed, needing to pay the bills for my family.

I remember hating the job, especially when I was young. I felt trapped in it and that made me want to shut down… and that’s maintained a realism in my attitude because I’m always aware that, at any moment, I could be back there.

What’s the best advice anyone has ever given you about the business? So much advice is useless, but Robert Duvall told me

something when I was 17. He told me not to have my life revolve around movies and acting. Live life properly, have friends who have nothing to do with it. Don’t drift into this circle of competitiveness and just associate with other actors. That’s when life becomes really dull.

Nobody wants to see actors who all they know is about acting. It’s easy to become this kind of artistic, divaish, precious person in this business, because people treat you automatically as if you’re something special. Our work might enable us to achieve something artistically interesting and vital, but as far as our personal lives are concerned, we aren’t necessarily that interesting. e

LEADS THE WAY IN RESPONSIBLE TOURISM

At a time when the focus has shifted to the environment and developing sustainable ways of living and working, the hospitality industry has pledged to be carbon neutral by 2050. It’s an ambitious target, but not as bold as that of Spanish hotel group Iberostar, which is taking action to be carbon neutral by 2030 – 20 years ahead of schedule!

In November last year the hospitality sector came together at COP27, the climate change conference at Sharm El-Sheikh in Egypt, and committed itself to becoming carbon neutral by 2050. A resolve of this kind is a big undertaking, but the Iberostar hotel group headquartered in Palma de Mallorca has gone a step further and decided to achieve this gargantuan task 20 years ahead of the global timeline – by 2030.

To achieve this, the chain will implement a host of initiatives across its more than 100 hotels in Europe and the Americas that will enable it to reduce its Scope 1 and 2 emissions by 85%, and Scope 3 emissions by 50%, thereby cutting its CO2 emissions by almost 600,000 tons per year. Driven by the principles of responsible tourism, the company will also apply nature-focused solutions to the green zones in and around its resorts. ›

GOING A STEP FURTHER

Most businesses around the world struggle to meet the environmental requirements currently being placed upon them, but Iberostar has voluntarily gone a step further to develop a strategy accredited by the Science Based Targets Initiative (SBTi). As the Vice Chairwoman and Chief Sustainability Officer of Iberostar, Gloria Fluxá says, the firm is keen to show that you can build a successful business model that also respects, protects and restores the natural environment.

“Real progress demands bold, immediate actions such as those we’re practising at Iberostar. The Iberostar roadmap is based on science, data and strong corporate leadership.” It is this combination of factors that sees the group investing in the energy-efficient systems and protocols that will reduce consumption by 35%, partly also by replacing electric appliances with other solutions, including artificial intelligence.

Fossil fuel use will be replaced by electric options and renewable energy sources, which along with waste reduction and recycling complement a trend towards

smarter, cleaner buildings, gardens, lighting and internal F&B, cleaning and entertainment systems. To achieve this, the entire supply chain has to be analysed and, where necessary, adapted, replacing ‘dirty’ materials with clean, recyclable ones and optimising efficiencies in water, light, heating/cooling, transport and many other related fields.

ELIMINATING WASTE

Iberostar is declaring war on waste, be it in the field of heating/cooling, lighting, irrigation, water usage and catchment, landscaping, architectural design, energy and even food. The company is investing in Winnow AIbased technologies that will

eliminate food wastage. It will extend this to its suppliers and collaborators, including airlines, car hire firms, etc. Ultimately, the decarbonisation roadmap will lead to a circular business model that is free of producing waste.

In the case of food alone, this will result in the avoidance of upwards of 1,600 tons of food dumping in the first year, rising to more beyond. Iberostar committed itself to such targets in 2020, as issues such as food wastage are an important contributor to CO2 emissions. Taken together with detailed staff training, the initiative will save the equivalent of 618,000 meals per year, as well as over 1,000 tons of CO2 per year. ›

AI systems designed by Winnow

APPLYING TECHNOLOGY

By analysing in detail what is consumed and what is thrown away, the AI systems designed by Winnow will soon develop a clear picture of consumption trends and begin to optimise the logistical supply of the ingredients in question. Though it is primarily focused on reducing the environmental impact and involves a serious investment, the system will eventually improve efficiencies to a point where they also reduce costs.

Smart technology is now also making its

way into the restaurant kitchen, creating hitherto unheard of efficiencies and up-todate data flows possible. But the process goes further, extending to also include the use of natural and environmentally friendly materials, new slow-cooking culinary approaches and health-based options.

By focusing on the well-being of their guests and nature alike, Iberostar is bringing a hopeful future closer to the present.

The L’Oréal Group, whose revenue amounted to an impressive €35 billion in 2022, was founded in 1907 by Eugène Schueller, the son of pastry shop owners from Alsace. » Skipping meals – A lighter type of fasting that simply involves giving your digestive system a break by occasionally skipping meals.

» One 24-hour fast a week –This type of fasting involves fasting for one full day a week. ›

Intermittent fasting is fast gaining popularity across the world, with around 24% of people surveyed in a YouGov poll saying they have tried this system to lose weight or improve their health. Around 50% reported that it is either very effective, while 37% classed it as somewhat effective.

DOGS VALUE THEIR RELATIONSHIP WITH HUMANS

Research conducted by scientists at Emory University has shown that dogs deeply value their relationship with humans. Given the choice, they prefer to receive praise from their owners over food rewards. The research debunks previous theories, which saw dogs as ‘Pavlovian machines’ that deemed their owners to be little more than a means to obtaining food. The more current view of their behaviour, said the scientists, is that “dogs value human contact in and of itself.”

DOGS UNDERSTAND HUMAN EXPRESSIONS

Numerous studies have shown that dogs are clued into human emotions. A 2018 study published in the journal Learning & Behavior, for instance, indicated that dogs are perfectly capable of understanding how people feel. Moreover, they tend to react with specific body language. For instance, if a dog turns its head to the left, it could be sensing that you are

fearful, angry, or happy. When they sense a look of surprise, they tend to turn their head to the right. Finally, their heart rates go up when they notice someone has had a bad day. Interestingly, some 150 years ago, Charles Darwin proposed that the similarities in human and non-human emotional responses suggests shared evolutionary roots.

CATS ARE SECURELY BONDED TO THEIR OWNERS TOO

Cats have a reputation for being aloof and independent but most cat owners feel a strong connection to their kitties, and the Internet is awash with photographs of cats accompanying their humans at work, sleeping in their arms, and purring with happiness. A 2019 study published in the journal, Current Biology, found that cats’ social abilities and the depth of their attachment to human beings has been sorely underestimated. In fact, much like children and dogs, most pet cats are securely attached to their owners, seeing them as vital sources of support.

ENHANCING YOUR RELATIONSHIP WITH YOUR PETS

To improve your relationship with your dog and/or cat, observe them. Scientists agree that the most important secret to getting closer to your four-pawed friend is simply doing things your pet enjoys. Additionally, you can aim to:

» Make time for play every day.

If you have a dog, aim to spend at least an hour with them outdoors, playing games like fetch and hide-and-seek. Cats can also play hide-and-seek and gentle tug-of-war. Many also enjoy running after toys and playing with cat puzzle feeders.

» Offer your pets treats. Entice your dog with natural snacks like bananas, watermelon, cooked sweet potatoes, and apples. If you have cats, reward them with snacks like dried liver and small pieces of lean meat.

» Give pets enough space so that they can be alone and rest quietly when they wish to.

» Respect your pet’s needs for affection. Not all canines and felines enjoy being caressed. Some simply want to be near you, while others enjoy a good massage. For cats who love being petted, concentrate on areas such as their forehead, face, and behind the ears. Dogs, meanwhile, like to be rubbed on the chest, and massaged behind the ears, the back of the neck, and the lower back (close to the tail). Of course, every pet has individual tastes. Some hate being touched on their paws, for instance, while others don’t mind a gentle toe rub.

When Eric Muller and Paula Tempelaar moved to Marbella in 1996, they struggled to find the kind of property they were looking for. “The homes here were charming and, in many ways luxurious, but they lacked the kind of up-to-date amenities and design references we were used to,” says Eric, so after an exhaustive search the couple decided to buy a plot and build their dream villa in Marbella themselves.

Little did they know that this was the beginning of an unexpected new turn in their careers, for the villa became a design reference that spurred many others. Eric and Paula

eventually sold their home and built others, always finding people eager to buy them, and so they’ve become boutique villa developers with more than 20 luxury homes to their name over the past 25 years, including award-winning designs such as ‘Best Villa in Spain’ by the International Property Awards.

“We originally didn’t come from this field, but discovered a hidden passion and talent for design, development and

decoration that has been a joy to unfold and evolve,” says Paula, who relishes the creative process. Together, they started a small specialist villa development firm that as one of the pioneers of modern design in Marbella has become synonymous with it.

Ilanga, an investment fund specialising in ‘alternative hospitality assets’, has signed an agreement to purchase the Incosol resort, with a view to converting this emblematic site into a world-class wellness and clinic resort. The deal will boost investment and create stable employment, deseasonalising demand and marking Marbella as a standard-bearer in the health and wellness sector. The renovation works and fitting of equipment alone will generate over 500 direct jobs, plus additional indirect ones. Some €150 million has been invested in the project. Casino Marbella recently presented its new artistic mural, created by the Malagueño painter, Curro Leyton. The launch was attended by the artist, as well as Javier Burgués, Director of Casino Marbella. Palo Alto Makes Donation to Cáritas

SPANISH TAXATION IN 2023

HOW DO THE CHANGES AFFECT YOU?

There are a few tax changes to be aware of, both regionally and nationally. The key ones are the surprise announcements we had in September, when Andalucía suddenly abolished wealth tax and the State introduced a new solidarity tax.

The good news, though, is that the solidarity tax only affects very wealthy individuals, and Andalucía is now one of the most tax-attractive regions in Spain.

ANDALUCÍA WEALTH TAX ABOLISHED

Residents of Spain are assessed for wealth tax each year. If your total worldwide assets exceed the allowances, you are subject to this annual extra tax.

Last September, however, the Andalucía government began

applying a 100% relief for wealth tax – which means residents no longer pay this tax. This applies from 2022.

Taxpayers with wealth over €4 million will however pay solidarity tax for two years (see below).

OTHER ANDALUCÍA TAX REFORMS

Andalucía also modified its general income tax scale rates and most taxpayers should see a small improvement in their tax bill. The 'mínimo personal y familiar' increased to reduce the tax burden for lower earners.

Over recent years the local government also reduced the succession tax liabilities for residents, particularly for immediate family.

STATE INCOME TAXES

Likewise, the State budget included measures to ease the income tax burden on low earners for 2023 and 2024. At the same time it increased tax on higher levels of savings income by adding two tax bands. Your savings income (interest, dividends, capital gains, etc.) will be taxed as follows:

» Up to €6.000 19%

» €6.000 to €50.000 21%

» €50.000 to €200.000 23%

» €200.000 to €300.000 27%

» Over €300.000 28%

SOLIDARITY TAX

The new, but temporary, ‘solidarity tax on large fortunes’ was approved at the end of December and applies for the 2022 and 2023 tax years (when it will be reviewed). 2022 labilities will be due between April and June this year.

Autonomous communities cannot amend this state tax, so it affects wealthier taxpayers in Andalucía. People living in other regions can deduct the amount paid in wealth tax from their solidarity tax liability.

IN SUMMARY

» It only applies to net wealth above €3 million (worldwide assets for residents).

» The progressive tax rates are 1.7% for wealth over €3

million, then 2.1% for wealth over €5.347.998 and 3.5% for €10.695.996 upwards.

» Spanish tax residents get a general €700.000 allowance plus €300.000 against the main home. Therefore, solidarity tax only really affects those with wealth over €4 million.

» A taxpayers’ combined solidarity, wealth and income tax liability cannot exceed 60% of the sum of the personal income taxable bases. If it does, the tax liability will be reduced until the 60% threshold is reached (maximum reduction of 80%).

THE START-UP LAW –DIGITAL NOMADS AND THE BECKHAM LAW TAX REGIME

After years of negotiation, the law for the promotion of the start-up ecosystem companies has been approved. It aims to attract and retain investment and talent in Spain and the key new features relate to immigration and taxation. A new ‘digital nomad visa’ has been created and the ‘Beckham tax regime’ (which originated when David Beckham was playing for Real Madrid) modified.

This special tax regime can apply to individuals who become resident because of working in Spain and has been expanded to include teleworkers and entrepreneurs.

If you meet the requirements, you can be taxed as a nonresident for your year of arrival and following five years.

You can now apply if you were not tax resident here the previous five years (it used to be 10) and is available to those on a non-EU/EEA employment contract and non-EU/EEA nationals who obtain the residence visa for teleworkers.

The rules are detailed and complex, so if you think you’re eligible seek personal advice.

It is sensible to review your tax planning regularly in any case, but more so following tax reforms. While Andalucía compares very favourably to the rest of Spain, you still need to understand how the changes affect you personally and make sure you are making the most of the local tax regime. As with all wealth management, your tax planning needs to be structured around your personal situation and objectives and take your estate planning wishes into account.

NEW CONTRIBUTIONS BY THE SELF-EMPLOYED (AUTÓNOMOS)

From January 2023 onwards, Royal Decree-Law 13/2022 comes into force affecting those self-employed contributing to the public (social security) system and registered on the general regime (RETA). It does not apply to the self-employed contributing to private schemes or on other public regimes (such as sea workers or members of the Catholic church).

Until now, the self-employed enjoyed great freedom to choose the base income upon which they wanted to contribute, at a 30.60% rate. This changes under the new system. The starting point is an estimate of the worker’s average monthly real income, derived from all their professional, business or commercial activities. They may then choose to contribute at any base rate within the bracket corresponding to their estimated real earnings. The following table applies for 2023:

So, suppose a person has an estimated average real monthly income of €3.000. They would be in bracket 8, and hence could choose to contribute for any base-value between €1.143,79 and €3.190,00, for example, €2.500,00. They would apply the 30.60% rate to €2.500 and pay a social security contribution of €765.

As said, the system will be implemented gradually, with the minimum base values rising every year. As a result, the minimum payable contributions of 2023, 2024 and 2025 will be:

Continuing with our example, while in 2023 our worker could choose to pay social security taking the minimum base value of €1.143,79, in 2024 the minimum base they can opt for is €1.176,47 and in 2025 its €1.437,91. This means the minimum monthly cost goes from €350 to €360 in 2024 and jumps to €440 in 2025, an annual cost of at least €1.080 more. For the lower incomes, however, the cost is reduced or remains constant.

The system is mandatory for the self-employed persons on the public general (RETA) system, included partners in a company, and whether they are above or below the minimum income. Even in the case where no income is declared, a selfemployed person will have to pay contributions taking

as reference a minimum theoretical monthly income of €1.166,70.

Real incomes are calculated taking taxable net income, adding social security cost to that and deducting 7% for general expenses (3% for partners in companies).

The mechanics are as follows: contributions are paid as until now at the end of each month, at the going rate of 31.60% of the provisional estimated monthly income. This estimate may be varied every two months to adjust for fluctuations in real income. The first provisional estimate must be communicated to Social Security before the 31st October 2023. If no notice is given, you will carry on paying the same, but risk facing a penalty.

In September 2024, once

personal income tax has been declared, the Tax Office (AEAT) informs Social Security of the real incomes each worker obtained. If you paid below the applicable bracket, you receive a bill to be paid in the following two months; if you paid according to the right bracket, nothing happens; and if you paid above the maximum in your bracket, the excess is reimbursed before the 30th April 2025, unless you choose to renounce it.

The law also includes a series of new benefits, among others a flat €80/month rate for new (not working in the two previous years) selfemployed. It lasts for one year, extendable by a further two years and up to five if you have a disability or are a victim of domestic violence or terrorism. e

Danish winemaker, Peter Sisseck is the mastermind behind world-famous Pingus.

Constantin Lagemann, who was previously the General Manager of Las Dunas Healthouse Hotel and Hotel Villa Padierna,has rejoined forces with JeanPierre Decque, who served as the M aître at the famed Las Félix Bistro. Carlos Padilla, the former Executive Chef of Inch completes this trio who are very serious about their new venture but still manage to inject a lot of fun into the proceedings.

A NEW JAPANESE CONCEPT FOR THE COAST

Izakaya is the Japanese word for a tavern, typically found throughout Japan, serving a variety of smaller dishes which patrons can mix and match and this is the concept they have set their sights on. The menu at this taberna features a good variety of very reasonably priced tasty dishes and just perusing it will cause your mouth to water. Coupled with weekly specials, repeat visits are going to be a joy

for regular customers. The restaurant itself is compact and inviting, with an open kitchen running down the left hand side, adjoining a bar facing the seating area. The pièce de résistance is the heated covered terrace, where both the roof and sides can be opened according to the weather. It was to this latter that we repaired on a recent lunchtime visit, where we found ourselves spoiled for choice when deciding what to order. ›

When the ideal team comes together, it is felt throughout every facet of the business, from the pride involved in uniting their expertise to the excellence of the service received by the clients. Such is the case at recently opened Izakaya+81, where a group of gourmet stalwarts have gelled, and you can sense it from the moment you step through the door.

This is a nice problem to encounter, accompanied by a cool Japanese beer – there are even three of these to choose from.

FOOD THAT IS GUARANTEED TO ENTICE YOU BACK

After some amount of deliberation, we opted for the Aubergine Miso and KFC, Korean Fried Cauliflower to start. Both apt for vegetarians, the former was a delicious mix of Aubergines sautéed in Miso sauce with toasted Sesame Seeds. The KFC meanwhile

was a revelation – battered and deep fried Cauliflower florets with Korean Barbecue Sauce –showing how a fairly innocuous vegetable can be transformed into a very addictive snack! The Laksa – Singapore Curry Soup with Chicken and Prawns – a special of the week, was a welcome addition to the above delights.

These were followed by succulent meat cuts served on wooden skewers of Guayu Entrecôte with Asparagus and Kimchi, Glazed Meatballs with Pickled Radish, and Asian BBQ Pork Rib with Pickled Cucumber

– all three accompanied by Rice with Sesame. We also sampled Katsu Sando, a homemade Japanese bread sandwich containing battered Beef Tenderloin and Tonkatsu Sauce, as well as a special dish of the week – a flavourful Bao with Duck Confit. ›

It’s worth pointing out that this is not a sushi restaurant, but you will not miss it with the delicacies created at the hands of Carlos, who is of oriental descent and has travelled widely in the Far East and Japan. Vegetarians will also find plenty of welcome dishes on his menu and some Japanese dessert options will delight those with a sweet tooth, such as Mango Togarashi and Pastel Húmedo de Yuzu. We could have tried the Chef’s Gyozas – there are three varieties – the Japanese Salad, Shiitake Mushrooms or other options with Prawns, Calamares, Salmon or Octopus. Particularly appealing was the Tuna plate, consisting of Almadraba Tuna with Ponzu Sauce, Wasabi, Wakame and Sesame Oil, and the tempting bowl of Ramen, so we resolved to return again soon on another occasion. e

“Evolution is our revolution” is the motto of Kaleja: the newest recipient of a Michelin star in Málaga. Marisa Cutillas shares the scoop on this restaurant and its Chef, Dani Carnero.

MICHELIN-STARRED JEWEL IN THE HEART OF MÁLAGA

When you hear the words ‘Michelin Star’ and ‘Andalucía’, your mind may immediately travel to conjure up iconic establishments such as Skina (two stars), Nintai (one star), El Lago (one star), and Messina (one star). For many years, the capital city of Málaga had just one star, that of José Carlos García Restaurant. In November 2022, a second restaurant was added to the list: a minimalistic gem in the historic centre of Málaga called Kaleja.

‘Kaleja’ is a Sephardic word meaning ‘narrow street or alley’. Indeed, the establishment is ensconced in a tiny street in

Málaga’s ‘judería’ (old Jewish quarter), opening out onto a stunning plaza that overlooks the Moorish Alcazaba.

At Kaleja, Chef Dani Carnero surprises diners by working with embers in a traditional ‘cocina de candela’. This heating system is elongated and able to produce large quantities of food. It fills the ambience with a subtle, smoky aroma that is an indicator of what’s to come. Carnero remains true to the candela to rescue the flavours he first encountered as a child and to recreate a myriad of traditional Andalusian dishes he is striving to save from oblivion.

The name of the two tasting menus on offer (Memoria y Gran Memoria – Memory

and Great Memory) also let you know where the Chef’s heart is. All his dishes bear a fascinating story related to the Chef’s life or the unique part of the world we live in. Gran Memoria comprises four starters, nine savoury dishes, and three desserts. Carnero calls it the “star of the house,” as every item is made with market-fresh produce. Memoria is a smaller menu that allows you to savour the essence of Carnero’s inventiveness in a shorter time frame. It contains four starters, six savoury dishes, and three desserts. Both menus can be accompanied by Armonía, a selection of wines that has been specifically selected to complement key dishes.

As is the case with other savvy Andalusian restaurateurs, Carnero is by no means keeping all his embers in one oven. He owns two other restaurants – La Cosmopolita and La Cosmo, which serve more informal, traditional fare. La Cosmopolita is known as a ‘guiso bar’, the result of over 40 years’ experience in cooking over embers. As is the case with Kaleja, market produce dominates and dishes are the product of adapting to the present moment.

La Cosmo is Carnero’s newest venue, launched a little over a year ago in pursuit of “fluidity rather than formality.” In the chef’s view, Málaga is

in need of restaurants which “lend the city its identity.” La Cosmo’s menu takes diners back to the past through Malagueño recipes that were once forgotten. Here, you can tuck into tempting bites like a classic steak and mollete ‘a la candela’, meatballs with Caesar sauce and aerated cottage cheese, and Iberian ham croquettes. Many dishes are served with bread by the famous artisanal bread house, Juanito Baker.

In Málaga, Carnero is known for his war cry: “Guisa que te guisa María Luisa,” which can be loosely translated as “Keep on cooking, María Luisa.” The words are emblazoned on the

facade of La Cosmo and they can also be found on Kaleja’s website. The chef knows that his goal of highlighting and enhancing the gastronomic memory of Málaga is no mean feat and hard work is ultimately what will bring him closer to success. His clientele at Kaleja may mainly hail from abroad, but he is and always will be “un cocinero de Málaga y para Málaga” – a Chef who lives and breathes to restore and share the magic of some of his most cherished culinary memories.

hy Sisseck decided to work in the Ribera del Duero region of Spain is not clear, although his uncle was in the wine business and suggested he visit the area while he was waiting to take up a job in the US. One version relates that he ran out of petrol in Peñafiel, and ended up as technical director of Hacienda Monasterio, an excellent bodega just outside the official Duero Denomination of Origen region. Be that as it may, Sisseck decided that he was in the best area and was soon embarking on a project in an old four-and-a-halfhectare vineyard near Burgos. This would turn out to be the

Wbirthplace of the legendary Pingus, the 5,000 bottles of which started with grapes from those long-established vines. Even the early vintages must have been outstanding, as wine critic Robert Parker tasted the first Pingus in 1995 and awarded it 95 points, at that time the highest Wine Advocate score given to a Spanish wine. Pingus has changed over the years, owing to Sisseck’s original love affair with new oak losing traction. The current vintages are matured increasingly in used oak barrels, resulting in a less spectacular first taste but one more in keeping with current consumer trends. If you are lucky enough to find a bottle (nearly all online distributors show it

as agotado (sold out)), it will cost you around €1.150 for the 2017 vintage and €1.550 for the 2014. There is a less expensive stablemate, which by any standards is a superb wine, Flor de Pingus, of which ten times the quantity is made, enabling it to be sold for around €115 for the 2018 vintage. Yes, a very high price by any standards, but it is probably among Spain’s 10 best red wines. Even if you only taste it once in a decade, you may understand what the fuss is all about. Sisseck’s third project is arousing great interest, known as PSI, aimed at getting local growers to concentrate on old vines on small land holdings and focused on the Garnacha grape. Once again, finding a bottle takes patience. ›

If the name Peter Sisseck does not ring a bell, then you may have heard of Pingus, one of Spain’s premium wines and possibly the flagship Ribera del Duero of all time. Sisseck is from Denmark, a country where they have only been making wine since 2009. He attended Copenhagen and Bordeaux universities and studied agriculture and enology.

Sisseck’s life has not been free from tragedy. Apart from the accidental death of his 20-year-old daughter in a traffic accident, the first cargo of 30,000 cases of his new wine sent to the US went down in a shipwreck in 1997. After a divorce he changed the colour of Pingus labels from blue to black, which they remain today. Sisseck

works hard and is continually involved in new projects. With an interest in biodynamic growing techniques, he would like to teach people how to grow crops sustainably. One example is his commitment to use natural fertilisers and horses in the vineyards instead of machines.

Out of respect for his contribution to Spain’s winemaking community, Sisseck has been appointed to the Ribera del Duero Regulatory Council. He also consults for a Catalan bodega, and part-owns a Bordeaux vineyard. Perhaps his reputation was confirmed when royals Federico and Mary of Denmark visited Ribera del Duero, hosted by Sisseck, a visit since repeated. But what has recently caught the interest of wine lovers has been his new-found interest in Jerez wines. Sisseck made the accurate observation that the solera system, the basis of sherry maturing, is one of the wonders of the wine world. ‘Fino sherry is Spain’s best

white wine, although worldwide it is not recognised as such. It is a forgotten wine or maybe little understood.’ Having successfully produced one of Spain’s best red wines, he will make Spain’s best white wine. The produce from each of the two plots Sisseck has acquired with his partner, Carlos del Río González Gordon, will remain independent and unblended. The result is a ‘Fino de Pago’ like Pingus. There are several young idealists, notably Willy Pérez and Ramiro Ibáñez, working on similar projects aimed at demonstrating that wines of character can triumph over the traditional varieties. Another perhaps not unexpected development is Sisseck’s cheese business, which produces a classical Manchego-style hard ewe’s cheese which is distributed by the same wholesalers that distribute Pingus.
