Dear guests, One more summer has arrived, but this one feels – and is – special. It is the summer of freedom, of mindfulness and of new connections with nature. More or less, the past few months have changed us all, each in their own way. Yet, on a collective level, it is easy to see those seismic shifts. No matter if we had to lay low or continue to fight for a better tomorrow, we made some decisions. What did you promise yourself? Was it that you will learn to appreciate life more? That you will make every opportunity to live in the moment? That you will reconnect with those you lost touch with, forming bonds stronger than ever? Despite already being an avid traveler, I (and I am sure many others) centered my decisions about my new normal all around traveling. And true to my word, I have already started. And so have you. We are so fortunate to find ourselves once again in one of the most beautiful locations in the world, eager to take in the best that they can offer us with newfound thirst. At the Kanava Hotels & Resorts in Paros and Santorini, hospitality is holistic. Let us pamper all five of your senses against the iconic blue of the Aegean sea, with a focus on mindfulness, nature and serenity. As a Kanava guest, you have at your disposal a wide range of amenities and exceptional facilities, including superb spa suites and exquisite restaurants. As you enjoy your sunny Greek getaway, I want to urge you to remember the promises you made to yourself, and to live every day to the fullest. These inviting properties, and these renowned destinations, will see to it. Welcome. I hope you have a splendid summer. Elsa Soimiri Editor in Chief

Name three things that make Santorini unique. The ancient city of Thera, a historical landmark, the Assyrtiko grape variety and the wine made from it, and the island's unique volcanic black soil. If you were welcoming a loved one to the island from across the world, what would you show them first? Certainly a walk around picturesque Oia, featuring the Caldera, blue-domed churches and chapels and beautiful sunset views. As soon as I set foot on Santorini, the first thing I’m inspired to do is… Enjoy lush seafood at Ammoudi Fish Tavern, right on the surf in the north of Santorini. The secret of exceptional hospitality at Kanava Hotels & Resorts is… Love. We really love all our destinations and our properties. It is a genuine passion that all our guests can sense – and it’s contagious.

If you were welcoming a loved one to the island from across the world, what would you show them first? We would head straight to Imerovigli for a sunset walk. My very favorite spot is Agios Antonios church – secluded, remote and unique, overlooking the Caldera. THE LEGEND OF ANDREAS MAKARIS

THE GREEK ISLANDS, like so many other islands all over the world, have the uncanny ability to provide the ultimate backdrop for creativity. Perhaps it is the resilience needed during the winter months or the solitude that island life can provide. Whatever the case may be, Santorini is no exception and award-winning, fifth generation Greek potter Andreas Makaris is a true example of a creative whose craftsmanship and creativity make him a very original artisan indeed. Born in Athens in 1951, Andreas’ first pottery lessons began at the pottery wheel of his grandfather Christos: “I was born in a pottery studio…. I was raised with clay”. Later graduating from the School of Ceramics in Athens where he also taught for the next 6 years, Makaris’ talent garnered him 5 awards at the annual Greek National Pottery Exhibition.

34 . KANAVA JOURNEY

Tiring however of life in the capital city, Makaris remarks that at “…the age of 32-33, I had a desire to leave Athens and go somewhere else.” Lured by the desolate beauty of Santorini’s cliff sides, black volcanic sand beaches and cubist white washed buildings, he outlines the idyllic life he has created on the island since moving there: “It’s been 36 years. Since then we have lived here and worked here; we have our own vineyard and chickens.” Working from his workshop and studio “Chroma kai Nero (Earth and Water) Art Pottery Studio” in Megalohori, he conveys a timeless image of the countless generations of potters who lived on the Greek islands before him. Inspired by Santorini’s mythical light and wild beauty, Makaris began by experimenting with replicating prehistoric Cycladic pottery, refining the technique to produce exact, full-scale reproductions of ancient theraic vessels. about his process, he conveys that “When you hold the clay, you can’t speak because you need to also hold your breath. Many times I hold my breath for two minutes.” As he sits at his wheel he explains that “Clay, or mud, is a beautiful creation that many are disgusted by. Many don’t even want to touch it — but it can become a masterpiece.” Testament to this fact, are his other sought after works, more modern in scope, however always using traditional techniques. Just like so many masters in their craft, Makaris is a natural teacher who was clearly destined to pass on his knowledge to the next generation. However, as he explains: “It’s a job that requires strong hands, the mind to work well, the eyes to work well. Everything’s difficult in pottery, it’s a difficult art,” Remarking on his teaching on the island, he relays how, “I started accepting students as soon as I came to Santorini. There are four workshop studios on the island. I

have students not only from Greece but also from abroad.” As to his legacy, he is optimistic: “I believe I am leaving a good heritage behind me… Good students who will become better than me.” Ultimately, the potter however believes the high quality of Greek pottery comes down to “The sun! The Greek owns it as a memory’, it’s in our DNA …. Even when we dug for the metro there were pottery vessels everywhere,” he explains of the pottery treasures discovered under the streets of modern Athens. “They are part of Greek life. We were eating yogurt in ceramics; even the water we were drinking was in ceramics.” Whatever the case may be, for Makaris, sheer talent, culture, history and the influence of the beauty of the island are undeniable factors that make both him and the sought after works that he produces truly original, just like the island of Santorini…. •

FLAG OF GREECE: ONE SYMBOL 200 OBJECTS

Marking the landmark 200th anniversary of Greece’s independence, the “Flag of Greece: One Symbol – 200 Objects” exhibition takes viewers on an artistic journey spanning from the late 19th century through to the present day.

SANTORINI ARTS

THE NATIONAL FLAG OF GREECE, referred to as the “blue and white” or the “sky blue and white”, consists of nine horizontal stripes of blue alternating with white with a blue canton in the upper hoist corner bearing a white cross. Officially adopted by the country’s first national assembly in 1822 in Epidavros, following the beginning of the Greek War of Independence against the Ottomans beginning in 1821, the flag symbolizes the 200th anniversary (1821-1921) of Greece’s independence. The non-profit organization Flag of Greece is celebrating this landmark anniversary with its first round of exhibitions which will showcase 200 objects from its collection to the general public for the very first time. Standing by its objective which is the research and safeguarding of art, collectibles and historical documents, all related to the Greek flag, the audiovisual exhibition “Flag of Greece: One Symbol - 200 Objects” will be hosted on the island of Santorini this summer. On display from August 1st to September 30th, at the Gallery Marinera, located in the island’s capital Thira, the caldera location provides the perfect backdrop with which to showcase the 200 objects from the collection. Drawing on Greece’s freedom and the Greek flag as a source of inspiration, the collection on display in the “Flag of Greece: One Symbol - 200 Objects” exhibition promises an artistic journey highlighting the country’s history and artistic expression. Starting from the 200th anniversary of the independent Greek nation 1821-2021, through to the present day, the exhibition represents an important touristic and cultural reference for visitors to the island of Santorini. Investigating historical, cultural and artistic references through a variety of audio and visual mediums, the non-profit organisation’s safeguarding mission is evident in the field of visual arts, music, fashion and design. Showcasing a number of posters, placards, magazines and postcards created by unknown creators from the World War I period, interwar period toys, collectible commemorative editions of stamps, pins and medals spanning the last century, to contemporary paintings, ceramics and photography, as well as sculptures by modern artists, the exhibition promises a commemorative journey in Greek history focusing on the artistic interest of the blue and white of the national flag. UPLIFTING SANTORINIAN ART Maybe it is the majestic beauty of the island or the wonderful life it offers artists; whatever the case, Santorini has become synonymous with its very own, buzzing art scene.

SANTORINI ART GALLERIES

IT REALLY SHOULDN’T be surprising that the island of Santorini has come to be known as the island of artists. Stimulated and inspired by Santorini’s incomparable ambience and out of this world landscapes and vistas, acclaimed photographers, painters and all sorts of artisans have descended upon the island to define a local vibrant art scene that is constantly evolving. To name but a few of some of the most exciting art happenings taking place this year, we have chosen a handful that stand out: Established in 1990 in Fira by internationally acclaimed artist Yorgos Kypris, leading art gallery MATI is known for promoting contemporary Greek art; indeed, some of his own creations have become iconic throughout the island. His extensive artworks inspired by sea life are currently on display. In Oia, the Oia Treasures gallery’s wonderful interiors showcase inspired collaborations and ground-breaking artists who have received international awards and distinctions, with this season showcasing the Sonic Sculpture

Irini exhibition by Aggelika Korovessi. Although not a linguist, the artist has sensed the power of the vibrations of Greek words and transformed them into her own sculptural vocabulary. Despite her works being quite complex, they maintain a directness and simplicity in carrying their message across. Also in Oia, Mnemosyne Gallery is a unique space dedicated to fine art photography and minimalistic handmade jewellery. Documenting Iraq under embargo mainly in Baghdad and Basra, the photographs of Andrea Motta are on display with the “Iraq After the Storm” show which received the Best of Photojournalism award at PND Photo Annual 2000, and the Director’s Award in the Project Competition at the Santa Fe School of Visual Arts, also in 2000. Finally, Grigoris Kouskouris’ Messaria’s SMAG – Spira Marble Art Gallery – an interesting space in its own right, sees Kouskoris’ dynamic marble based creations take centre stage. •

HIDDEN SANTORINI

Tiny chapels hide in plain sight and doors lead to caves inside the rock.

THE SECRETS OF A REMARKABLE ISLAND For a destination famous the world round, Santorini still has a surprising lot of secrets to reveal to those in the know. Presenting the island’s most authentic, remarkable and memorable.

HIDDEN SANTORINI

EVERYTHING IS SPECIAL ABOUT SANTORINI. AND FOR THOSE WHO TAKE THE TIME TO KNOW IT BETTER, THE ISLAND HAS SO MANY SURPRISES YET. WHERE IS THE HIDDEN side of the iconic Greek destination that has been lauded as the “best island in the world” on so many occasions? It’s still here for anyone interested in discovering it, for Santorini maintains an authenticity and uniqueness that has stayed constant despite its prominence. APPROACHING THE FABLE OF ATLANTIS

Some attribute the unmistakable energy of Santorini that feels almost magical to the fact that it just might be what remains of the fabled lost city of Atlantis. Mentioned by Plato as a prosperous utopia that was forever lost after a natural destruction, Atlantis has been a mystery since the Ancient Greek era, with hundreds trying to locate it, be it by travels or research. One of the most prominent theories is that Atlantis was, in fact, Santorini before the ancient volcanic eruption that caused more than half of the island to be submerged into the sea. Visit the archaeological findings at Akrotiri from the 17th century BC to catch a glimpse of that distant past – and then head north to Megalohori to visit Lost Atlantis Experience, an interactive, high-tech exhibition dedicated to that legendary possibility. BEYOND THE BLUE DOMES

For a slice of traditional life far from the crowds, less wellknown settlements deliver intrigue, history and beauty in the peaceful sunlight. Emporeio is a medieval hinterland town where the Kasteli – a traditional castle with tall walls and winding paths – used to protect islanders from the pirate raids and still stands tall today, providing shade in the summer sun. It is a very different side to a well-known island and even features gorgeous marbles and evocative shell mosaics in its local churches. A visit to the traditional kafeneio café is a great idea, to be treated to a timeless haunt for locals with its unique smells and flavors. Another gorgeous spot many overlook is the Gialos, the old harbor tucked away next to the sea at Fira. It is a complex of houses and buildings chiseled into the rock that looks like it has popped straight out of the pages of a Mediterranean fairytale. LIGHTING THE PATH

Lovers of the ocean have a very special place in their heart for lighthouses, and the one on Santorini is an exceptional spot to watch the sunset from – and it is highly recom-

mended as it is as beautiful as it is off the beaten path. The view is truly breathtaking, with the Aegean stretching as far as the eye can see as the sun goes down over the horizon with the white, dignified mass of the lighthouse imposing in the foreground. Utterly romantic, it has to be visited at least once. Meanwhile, for the more classic Santorini sunset experience, Oia is at the other end of the island, its northwest. This is the quintessential spot from which to observe the sky change myriad colors as the night approaches – just get there early to beat the crowds during high season. A more laid-back alternative would be to simply stay put at one of the terraces of Mystique, a Luxury Collection Hotel to enjoy the sunset colors reflected at the infinite expanse of the Aegean archipelago with a drink or meal – or even opt for a Private Dining experience at sundown, for even more romance. THE DARLING OF THE AEGEAN

If the island seems popular now, one should point out that it has always been. Since the beginning of history, human civilization flourished here. Beyond the aforementioned sites, Minoan antiquities and housing have been found at the Red Beach. Later came the Dorians, the Phoenicians, the Byzantines... all the way to the Venetians and Turks, and to Modern Greece, who reintroduced Santorini to the world. Near Kamari, the ruins of Ancient Thira date to the 9th century BC, while an archaeological museum in Fira features artifacts from the Dorian, Hellenistic, Roman and Byzantine periods. Another museum to visit is the Museum of Prehistoric Thira. As for its Venetian heritage, there is a castle at Akrotiri. The capital under the Venetians was Skaros, now an interesting rock projecting outwards from Imerovigli, on the precipice of the cliff. The island’s dozens of churches, chapels and monasteries span centuries – and range from the 19th century St. John the Baptist Cathedral with its unique color palette to the well-known Panagia Theoskepasti, which is perched on the edge of a cliff. Climbing the steps from there leads you to the ruins of a 13th-century Byzantine fortress that is just as atmospheric and has amazing views of the Caldera. History, beauty and inspiration are ever-present on Santorini. The best way to find authenticity is to follow your instinct and let your heart show you the way. •

Painted paths will lead you to charming chapels, amazingly colorful bougainvillea flowers, delightful shops selling handmade local delicacies... Order a Greek coffee, take a moment, and the island will reward you with memories for a lifetime.

VEDEMA, A LUX URY COLLECTION RESORT

ENCHANTING CYCLADIC ELEGANCE

A distinctive hotel in perfect harmony with its surroundings delivers deluxe service at the site of a 400-year-old winery.

Designed as a village within a village, Vedema Resort is located at the traditional Megalohori.

THE ART OF LIVING • SANTORINI

THE SIMPLE BEAUTY of the bougainvillea. The dome of the Cyclades sky, which feels as if it were larger and more majestic than anywhere. The smiling concierge. The interplay of sunshine and shadows. The emblematic Greek olive tree. The whitewashed walls and blue domes that feel so inviting. These are all snapshots of Vedema Resort, an exceptional getaway for seasoned travelers looking for truly special experiences. The medieval village of Megalohori has a history of wine, merchants and pirates. Respectfully preserved and full of elegance, this historic settlement stays true to character with labyrinthine alleys, majestic bell towers, and those short vine nests in the fashion of the traditional Santorini grape-growing technique known as the kouloura dotting the landscape. Driven by a fondness for this distinctive location, Kanava Hotels & Resorts carefully and respectfully transformed a 400-year old winery into a Luxury Collection property that has won the heart of many a traveler from the world over. In fact, this is where it all started; the very first Kanava Resort, a passion project for the hospitality group’s founders, who sought to elevate the Santorini experience without compromising its authentic beauty and elegant feel. It was an instant hit with cosmopolitans, jet-setters and anyone who appreciates uniqueness. The goal of Vedema, a Luxury Collection Resort, is to distil the essence of what Santorini is truly about and let you enjoy it in an environment that is as well-appointed as it is true to its heritage. The service is personable yet discreet. The decor, sleek yet effortless. The vibe, unmistakable. You can choose from six alluring accommodation options inspired by Ancient Greek tradition, which span four types of comfortable suites and two villas giving off mid-century Athenian elegance, with vintage details and an indulgent vibe. They often come with private pool or jacuzzi, superb views and beautiful outdoor spaces, delivering exceptional service to every guest. When it comes to common spaces, Vedema Resort envelops you in a graceful air of luxury that remains inviting and distinctive throughout. The main pools are complemented by the delights of the open-air jacuzzi, as well as with beverages, snacks and meals available at the pool bar. Wining and dining at Vedema Resort means choosing from refined Greek cuisine served alfresco at Pergola – with a focus on local and seasonal – or making memories at the truly spectacular hall of Alati Restaurant. Its meat-focused gourmet menu, created by Executive Chef Olivier Campanha, is served inside the imposing old wine cellar, with traditional stone walls, evocative lightning and vintage furniture. What’s more, the Canava Wine Bar oc-

Last but not least, the brand new Circe Bar features wellnessinspired, low-proof cocktails, traditional Greek flavored drinks and nibbles that transport guests on a culinary journey around the world. As any member of the Kanava family, Vedema Resort is not just a remarkable space but a complete hospitality experience, satisfying your every sense. Elios Spa holds the key to rebalancing, stimulation and rejuvenation from the inside out. Within this sanctuary of serenity, traditional techniques meet natural products and modern inspiration, all in the service of your body, mind and soul. From exceptional massages to specialty treatments, it is well worth visiting. There is also a fitness center for your convenience. Such an unforgettable vacation property deserves a private beach that befits it. The black sand of Perivolos beach is mere minutes away. It owes its picture-perfect color to the volcanic explosions that shook Santorini in ancient times, which also submerged part of the island, forming the caldera. This world-shattering catastrophe from millennia ago ultimately birthed one of the most beautiful and unique locations in the world. With the raw beauty of Santorini in the background and your toes satisfyingly dipped in the black sand, you can bathe in the sunshine – or the Aegean sea – for hours on end. There are sunbeds and umbrellas as well as food and drink, from snacks to vibrant cocktails. And when the sun is about to kiss the horizon, prepare for the fiery color palette of the world-famous Santorini sunset to take your breath away. Perhaps the most captivating element of this wonderfully unique hospitality property is the way it speaks to your very soul, feeling as much a living part of Santorini’s heritage as the most iconic of the island’s buildings and that very golden sunshine. Welcome to Vedema Resort.•

To make the most of your visit to Yria Ceramics, you need to open your mind to its concept and let your heart show you the way. The spacious showroom of Stelios Gikas in the main Agora of Paroikia is packed with authentic experiences and unsuspected treasures…

A HIGHLY-SKILLED and visionary ceramic artist, Stelios Gikas founded Yria Ceramics on the island in 1977. With a wide range of delightful functional pieces, many of which are hand-painted in Stelios' extraordinarily skilled style, Yria Ceramics’ underlying concept is simple: to take humble clay and transform it into something truly wonderful. Based on creating pieces not only destined for one’s shelf but conceived to stir the soul, each and every piece speaks of an intimacy and thoughtful creation process. While objects can be found in the showroom/lifestyle store in Paroikia which also sells home furnishings as well as unique

products sourced around the globe, it is Stelios’ on-site peaceful gallery and studio, built by himself which is truly extraordinary. Overlooking the village of Kostos on the north side of the island, this is where you can view how his timeless, enduringly beautiful fine ceramics are made. Featuring shapes and motifs that often echo more ancient sources, it is their colours and distinctive designs that are totally original. And with shipping available all over the world, it may prove impossible to choose between his works that are truly pieces of art unto themselves, rendering them pieces that will be cherished forever. •

BUILT IN THE 15th century, it is evident that the enchanting village of Prodromos was built to withstand invading pirates. Entering the main gate, a world of alleyways filled with flowers, arches and small churches accompany you as you make your way to the heart of the village to ‘To Steki: The Art Café’. Once a stopping point for hikers, serving coffee and snacks, the venue was taken over by Antonis and Maria a few years ago who have now created a picture-perfect, overwhelmingly hospitable meeting point, serving fresh seafood delicacies and an extensive array of extraordinary mezze such as stuffed calamari and their legendary chickpea soup. You’d be fooled for thinking that you have stepped back in time, which is precisely when, if you’re lucky enough, Antonis and Maria, both of whom have musical backgrounds, throw impromptu parties, making a visit to their beloved Art Café even more special. • To Steki: The Art Café, Prodromos Vilage, Paros, Tel: +030 22840-42033

THE ESSENCE OF PAROS

PAROS THE PARADISIAC This quintessentially Cycladic island invites you to taste life to the fullest, with an enviable variety of landmarks and experiences to explore.

Raw beauty, cosmopolitan lifestyle, utterly serene spots and remarkable beaches – Paros has it all.

THE ESSENCE OF PAROS

Right next to surfing haven Santa Maria, Mikri Santa Maria Beach (above) is quieter, a local favorite with crystalline waters. Below, snapshots from the traditional village of Lefkes, where the pace of life is still slow and relaxed.

118 . KANAVA JOURNEY

HIT RESET ON THE ORDINARY. Picturesque winding alleys, adrenaline-fueled watersports, arresting traditional architecture, beautiful beaches and much more is what Paros has to offer, along with a relaxing atmosphere and genuine Greek hospitality. Certainly among the fastest-rising stars of travel-focused social media, Paros island manages to pack Cycladic charm, amazing nature and incredibly diverse experiences in one round-shaped rock. In fact, it was voted the best island in Europe for 2020 by Travel+Leisure magazine. Boasting 55km of coastline and several picturesque towns and settlements, this is the island of surprises and endless choices. THE BASICS

Conveniently, Paros features a contemporary airport, which takes half an hour to reach from Athens. Charter flights can get you here directly, and you can also fly in from Thessaloniki and Crete. If you’re traveling by ferry, it’s one of the quickest voyages you can take from Piraeus Port, at 3.5-5 hours, depending on your line of choice. Once you’re here and staying at the lavish Parīlio or the immaculate Acron Villas, you have everything you could wish for at your fingertips. However, should you want to venture further from your accommodation and discover this idyllic island, there is so much to do. A WEALTH OF BEACHES

On this Greek island, more than 30 great beaches for swimming, snorkeling and diving await – including five Blue Flag beaches, although they all have exceptionally clear, inviting waters. Some are excellent lifestyle spots to be seen; others secluded, serene, almost private; yet others attract the crème de la crème of watersport enthusiasts from around the world. And the list goes on. A stone’s throw from your Kanava accommodation, near Naoussa, Kolympithres Beach is one of the most recognizable – and well-shared – spots in Paros. The reason? Surreal granite formations that have been sculpted by the waves, a playful exhibition of nature’s artistry. The unique scenery combined with warm, inviting waters makes it a must-visit for all. On the south-eastern part of the island, Golden Beach is a 700m-long stretch of golden, sparkling sand that offers something for everyone, with sunbeds and umbrellas, water sports, boat access to an uninhabited islet

opposite, scuba diving and wind-surfing schools, food and drink available, and more. In fact, the Professional Windsurfing Association's World Cup has been taking place at the nearby New Golden Beach ever since 1993. Another shore to mention is Pounda, in the west, which is an illustrious global destination for kite-surfers of various skill levels. From beginners to fully-fledged pros, kite-surfing aficionados ride the waves in the strait between Paros and its sister island, Antiparos, where the wind and wave conditions are ideal for this pursuit. Two more beaches to make sure you visit are the tranquil, pristine Kalogeros, with crystal-clear waters and its green mud, which is exceptional for your skin as it dries in the sunshine before you dive into the sea, and the organized and posh Monastiri beach, with its stunning rocks and several amenities. Even closer to Naoussa is Lageri beach. It has an unusual shape, unforgettable waters and endless nooks and crannies to sunbathe at. A short walk from there, Santa Maria is one to be pampered at as you endlessly watch the surfers with a cocktail or Greek wine in hand. Also worth exploring is Mikri Santa Maria Beach, just a short walk from there, which is much quieter – and popular with the locals for its fine white sand and laid-back vibe. TOWNS & VILLAGES

The labyrinthine alleys of Naoussa have become a favorite spot for visitors from the world over, who love to get lost amidst the whitewashed cubic buildings with their colorful bursts of bougainvillea and exciting shop windows. Located very close to the Kanava Hotels & Resorts on Paros – so much it’s accessible on foot – Naoussa has a little bit of everything, from inspiring art galleries to Mycenaean and Venetian antiquities, and a range of bars and restaurants to suit every mood. Despite the town being a magnet for jet-setters and island-hoppers, the vibe here remains relaxed and quintessentially Mediterranean, with many rushing to toast the sunset in the Old Port seafront area with a glass of local beer, Greek wine or cocktail. Visit early in the morning, so you can catch the fishermen returning to shore with their catch – and even buy their freshest fare. It is also an excellent time to take pictures of this stunning town and get to know its more authentic side, before the midday sun inspires you to head to the beach. On the east coast, the island’s capital and main port

The Paros Archaeological Museum is not to be missed, showcasing millennia-old artifacts from the general area, including ancient sarcophagi and the Parian Chronicle, an impressive inscription on marble from the 4th century BC that recounts the history and mythology of Ancient Greece, such as the Trojan War and the Voyage of the Argonauts. rates in centuries gone past, the inland village of Lefkes impresses with its beautiful houses, delightful flowers and 360-degree panoramic views. It is also home to Agia Triada, a distinctive Byzantine church made of the finest white Parian marble. In late May/early June, it hosts a very authentic traditional three-day festival in honor of the Holy Ghost. Marpissa is another settlement to seek out; a study in bright white under the Aegean sun, featuring picturesque churches, traditional painted footpaths, signature Cycladic blue details and colorful floral features around every corner.

PICTURESQUE WINDING ALLEYS, ADRENALINE-FUELED WATERSPORTS, ARRESTING TRADITIONAL ARCHITECTURE, BEAUTIFUL BEACHES AND MUCH MORE IS WHAT PAROS HAS TO OFFER.

124 . KANAVA JOURNEY

Yet, the nooks and crannies worth visiting – and experiences worth having – on Paros extend far beyond its beaches and towns. One of the most remarkable things the island was known for in antiquity was its white marble. In fact, there was a point in time where 70% of high-quality marble used across the Mediterranean came from here. Although they are almost completely depleted, you can still visit the ancient marble quarries in Marathi as part of a hike on foot or an excursion with a tour guide or on your own. Very close to Parīlio is a protected peninsula called Paros Park with winding walking trails, spectacular rock formations, magnificent views, unique beaches and the Ai Giannis Detis monastery, with its fascinating exhibition of 18th century Paros maps. What’s more, an annual festival takes place in its amphitheater and films are frequently shown in the open-air cinema. Unexpected and verdant, the Butterfly Valley near Sotires village is a natural reserve that is home to swarms of the Panaxia quadripunctaria tiger moths, who nest on leaves and tree trunks during the day, to fly at night in the hundreds. They each have a set of black and white wings and reveal a secondary set of red wings underneath when they take flight. Just like the butterflies, visitors too appreciate the green nature and cool breeze of this serene valley. Even further off the beaten path is St. Antonios Monastery near Marpissa. Perched on a hill, this small whitewashed monastery is not just typical of Greek island architecture but a spot from which to enjoy marvelous views of the island and the Aegean sea alike stretching as far as the eye

can see, including the nearby popular island of Naxos. It is difficult not to imagine yourself as an Ancient Greek doing the same so many centuries ago, perhaps feeling inspired to build a boat and travel, or to carve a sculpture in honor of this beauty. INSIDER TIPS

To make the most of your Paros getaway, don’t hesitate to speak to the Concierge team about your personal interests and preferences. There are ample activities and experiences to be had, from seaside horse riding in the sunset for romantics to extreme sports for adrenaline junkies, local brewery tours, history and culture walks and beyond, which can be arranged for you. If you like to improvise with your day, ask us to hire you a car or 4x4 jeep so you can discover Paros at your own pace.•

THE ART OF TASTE • PAROS

AS KANAVA HOTELS & RESORTS are renowned for their inspired, holistic approach to authentic Greek hospitality, the epicurean dimension was always going to be an integral aspect of guests’ experience. As award-winning Executive Chef Alexandros Tsiotinis puts it, “food ought to be part of the journey at a hotel”– and the back-of-the-house team applies our ethos of mindfulness, craftsmanship and respect for nature to every meal and drink you’ll enjoy here. The gastronomic journey one can take on Paros island courtesy of the Kanava team is bound to stay indelible. Utterly comfortable, appointed in soothing natural tones, with plenty of alfresco seating and marvelous surroundings, Mr. E is the on-site restaurant at Parīlio Hotel. Tapping into the Cyclades’ famed gastronomic legacy as well as finding inspiration in contemporary creative cooking, it serves breakfast, dinner and drinks while an all-day menu of light meals and snacks is prepared by the Mr. E kitchen and served at Circe bar. At the heart of these dishes are the freshest, purest of raw ingredients, from the catch of the day from the Aegean sea to Naxos baby goat and Paros produce. At the helm of Mr. E Restaurant, award-winning Chef Alexandros Tsiotinis puts to use his knowledge, insight and remarkable creativity to create mouthwatering, inspired menus. After studying at the Palmier Academy, he worked under some of the most emblematic names on the culinary pantheon, including Alain Passard, Hélène Darroze, Pascal Barbot and Éric Fréchon, in the kitchens of Noma and Le Bristol, among other impressive milestones on his résumé. Utilizing all the insight he eagerly acquired, together with his immense talent, he soon made a name for himself on the national and international stage, earning more than 12 awards for his delectable creations. Endlessly creative, Mr. E Restaurant’s Executive Chef likes to draw parallels between cooking and painting, as he describes the construction of a menu to a series of artworks drawn on the blank canvas. This is evident in the nuanced meals he has invented: locally sourced ingredients chosen for their outstanding quality and simply superb flavor are prepared, cooked and combined with the utmost care and respect, resulting in memorable dishes that marry local tradition with a healthy dose of creativity and utter precision. The focus is on hand-crafted, organic, seasonal and indigenous ingredients, letting the purity of flavor shine through ingenious combinations that draw from heritage and contemporary culinary trends alike. Among others, the breakfast menu features fresh fruity delights, nutritious yogurt, pastries, and eggs cooked in several ways – including creative takes on pancakes, French toast

Poké bowls, burratas, salads, burgers, grilled and roasted mains, and a curated selection of desserts are available from the convenient and enticing all-day menu. As for the dinner options, they showcase creative Greek gastronomy at its finest. From spirited appetizers such as the moussaka croquettes, a twist on the iconic Greek dish, to pork in grape must syrup that melts in the mouth, accompanied by crispy polenta, plums cooked in red wine, parsley roots and celeriac purée, and the tantalizing lobster with beetroot, the menu is characterized by Mediterranean passion, alluring pairings and accessible yet elevated flavors. As for the dish that the talented chef recommends, it is his gourmet take on the traditional salatouri – a vibrant, slightly piquant fish salad with fresh fish of the day, lemon confit, spring onions and verbena-lemon dressing that tastes like the Aegean on a plate. Guests should kindly keep in mind that reservations are recommended. For drinks, beverages, wine and further treats, Circe Bar is a relaxing space to visit at any time. It is open daily, from early in the morning to shortly before midnight, ready to serve guests artisanal coffee, signature and classic cocktails – including cellar-aged cocktails and alcohol-free blends –, refreshing freshly-squeezed juices packing the goodness of nature in a glass, and much more. The wine list boasts some of the finest labels the country has to offer, as well as celebrated international wineries, distillates and dessert wines. The setting combines elegance with a laid-back aura that calls for good company, inspires romantic tête-àtêtes, and feels approachable yet refined. Guests staying at Kanava properties in Paros are invited to explore the most vibrant, most gratifying side of Parian cuisine through the eyes of Mr. E – an embodiment of the noble culture of the island, and a guide to not just wonderful flavors but to the very Greek tradition of enjoying a meal with old or new friends, breaking bread together, sharing mirth and joy, and creating unforgettable memories around the table. •
