MAKRIDIS’ ARCHITECTURAL SIGNATURE The masterminds behind Domes of Corfu, Autograph Collection's ethereal architectural beauty, Makridis Associates artfully combined local aesthetics with cutting edge design.

WHEN IT CAME to the building of Domes of Corfu, Autograph Collection, Makridis Associates were called upon to create an innovative building that was in total harmony with its natural surroundings. We caught up with the firm’s architects and partners, namely Thodoris Makridis and Eleanna Makridou to discuss more about their design approach and the strong influence of Corfu’s architectural language. Can you describe to us a little about the design philosophy behind Domes of Corfu Autograph Collection? Whenever our office receives a new brief for a project – especially when it comes to hospitality based architecture – the most important goal for our team is to harmonise our design with the location. This is achieved by creating deeper connections with history, architecture and tradition so that the work fully expresses the spirit of the place, albeit through a modern look or lens. As a result, visitors get to experience a unique experience and become one with the place. This is exactly how we took on

the Domes of Corfu, Autograph Collection, with the same method, drawing experiences and stimuli from the island but also from the myth of Homer that vividly describes the visit of the traveler Odysseus to the magical land of the Phaeacians. The Domes of Corfu, Autograph Collection resort harmoniously combines local culture and tradition with a relaxed, Venetian and bohemian style. What are the pieces of the architectural puzzle that you wanted to put together? Arches, arcades, balconies and patios are just some of the elements of the architectural vocabulary that finds its roots in the traditional architecture seen throughout the island of Corfu. Inspired by the local colour palette, all of the spaces are based on ceramic and earthy tones in various tones, since it is unquestionably the couleur local of the

island. Characteristic details include the terracotta tiles that line the floors indoors and outdoors, unifying the interior with the exterior. Patterns, textures on surfaces and fabrics, rough materials and handmade furniture combine to create a unique “mosaic” completed by the island’s endemic flora and atmospheric lighting. Was the Glyfada area on the island of Corfu suitable for hosting Domes of Corfu, Autograph Collection in terms of design? What were the elements of the coastal area that you relied on and wanted to highlight? The unquestionably mythical landscape is characterized by a magical naturalness as well as strong contrasts that are however perfectly harmonized with each other, elements that were a source for a creative dialogue between the building and its surrounding environment. in which it is recorded. The shade and texture of the sand led us to natural dyes and materials. The exotic landscape is also seen through the thick vegetation, which grows inside the buildings in the central atriums. How was the balance kept intact with the external environment? The spaces were redesigned so that they open out on to the central atriums that form the core of the main building. Such an architectural gesture which looks outdoors ensures permeability. At the same time, the boundaries of the interior with the exterior become blurred and fluid due to the transitional covered semi-outdoor spaces and the galleries with the large frames. These transitional spaces give rise to a dialogue between man and nature, while at the same time offering him or her a sense of intimacy, due to their human scale.

What is the signature element that you believe sums up your signature as Makridis Associates at Domes of Corfu, Autograph Collection? The warm color of the Corfiot palette that dominates in all areas, in combination with all the local architectural elements, are

undoubtedly the factors that determine the authentic physiognomy of the project. We find it in different qualities throughout the hotel, through the natural paint, terracotta tiles, and the oxidized surfaces of the facades, it creates atmospheric spaces that are familiar and welcoming.

UNIQUE BAR EXPERIENCES Sharing a common philosophy, Domes Resorts & Reserves have partnered with Apallou Bar Services to provide an utterly memorable one-of-a-kind bar experience.

FIRST ESTABLISHED in 2005 in Thessaloniki with their eponymously named bar, Apallou Bar, Apallou Bar Services consultancy has partnered with Domes Resorts & Reserves in a collaboration to provide guests with a truly one-of-a-kind bar experience throughout all of the Domes Resorts & Reserves. We recently caught up with Ioannis Mitrakos from Apallou Bar

Services to talk about the philosophy behind the collaboration and what surprises lay in store for guests. Can you describe the Apallou Bar philosophy that you applied in your collaboration with Domes Resorts & Reserves? The philosophy behind our cooperation is entirely holistic - it began in 2005 in Thessaloniki and up until today is entirely

People-centric. It was with this in mind that our collaboration with Domes Resorts & Reserves began. Our philosophy is entirely based on the Bartender – who we continuously train and transfer our knowledge to, who then go on to serve behind the bars of the Domes Resorts & Reserves. Our bartenders are our partners. Our aim is to transfer our experience to them, to equip them

with everything they need so that they can satisfy the tastes of each customer. All this has made easy through the support and the common philosophy of our company with Domes Resorts & Reserves. The resorts harmoniously combine local tradition with a relaxed, bohemian luxury hospitality experience. What are the elements you wanted to project through the strategy you implemented? All the cocktail lists for each of the bars at the Domes Resorts & Reserves have been designed to highlight the products of each place (Crete - Corfu) and to remind the customer that the “classics” will always be in full demand. We therefore train our people extremely well when it comes to classic cocktails such as such as Negronis, Manhattans, Margaritas etc. But ultimately, our collaboration is based on emphasising the difference between standard service and genuine hospitality. We want a customer-based approach which entails providing a unique experience combining the landscape with the flavours of the cocktail itself. We also wanted to create unique concepts so that the consumer can try something different (e.g. at the Tiki bar at Core, the Mediterranean Beach Bar at Domes of Elounda, Autograph Collection) without forgetting the Flagship bar RAW BAR BY APALLOU at Domes Noruz Chania, Autograph Collection. Can you name typical products/ingredients from the islands of Corfu and Crete that inspired you when you were creating the bar and restaurant menus? We use typical local products such as rosemary, kumquat, citrus fruits, local honey, basil, etc. What cocktail would you sug-

gest our guests try for an unforgettable experience? I would definitely suggest the CRETAN OLD FASHIONED, the ZOMBIE at the Core Bar at Domes of Elounda, Autograph Collection and of course the various APERITIVI & SPRITZES at all the Domes Resorts & Reserves.

What do you believe will surprise visitors at the Domes Resorts & Reserves' bars most? The combination of the unique beauty of the Greek landscapes of Crete and Corfu with that perfectly made classic cocktail, espresso or coldpressed freshly made fruit juice that they’ve been dreaming of...

Curiudo is the engineer of minimalist creature of jewelry as well but also another name for the search of that old glamour. Geometry of Light that reaches sooner the Form. The creator is Eirini. She was born in Corfu, Greece in 1981. She is a graduate of Electrical Engineering from Democritus University of Thrace with an MsC in Biomedical Engineering from National Technical University of Athens. Around 2007 she attended a workshop on "Basic Jewelry Making Principles" in Xanthi, Greece and at that point she realized that making jewelry was the thing that she wanted to do in her life. Since then, she had different seminars on jewelry design and jewelry making. On January 2018, she quitted her job as an engineer and she started making handmade and soulmade jewelry. The SOLIDARITY AND MUTUALITY CEREMONY, at the top of Mount Psiloritis which took place at dawn on the summer solstice, in Krana Mylopotamou in Rethymno was attended by the team of weavers from the Penelope Gandhi Mission, the pioneering project of the University of the Mountains, teachers from Evros to Crete, students and local women, inspired by ancient Crete which is at the same time a modern proposal of prosperity for the future, a study that teaches the new generation a brave but also peaceful way of life, in harmony with nature, awakening our inseparable relationship with the fertility and fruitfulness of nature. Represented by a handmade, flax derived woven garment, with a certain significance in our sacred memory, in history, and in the freedom of the mind, it represents a language lost in the depths of time, between the myth and the woman, the Great Mother. The organisation “University of the Mountains” was founded as a movement whose aim is to transform the role model of modern prosperity into one that will combine sustainable development with the restoration of lost human relationships and the cultural identity of small societies. It aims to fulfil its objectives via protecting the human and natural environment; reinforcing traditional economies through modern management tools so as to stop the exploitation of natural resources; eliminate delinquency and dependence on loan finances and subsidies; and redefine human happiness via human criteria rather than financial data. Easily accessible, Falassarna is situated in a beautiful fertile plain near the village of Platanos, 58 km west of Chania. Declared as one of the cleanest beaches in Greece, it welcomes visitors who flock to enjoy the pure soft golden sand and incredibly clear turquoise waters in what is a truly idyllic spot whose sunsets are celebrated. You’ll find a handful of traditional tavernas in the surrounding area as well as the ruins of ancient Falassarna, once a powerful city-state with a remarkable enclosed port which flourished mainly during the Hellenistic period.

Located close to Chania airport and all but hidden away in the rocky coastline, this gorgeous pebbly beach has incredibly blue, deep waters. Make sure you bring food and water as there are no amenities on the beach, and wear sensible shoes as the descent is rocky. You’ll nevertheless be rewarded for your efforts by the calm waters and stunning scenery.

also stuns visitors with awe inspiring vistas of Paximadia islands, which seem to almost hover in the middle of the Libyan Sea.

4. BALOS The beauty of the shores and waters of Balos lagoon is legendary. When seen from above, the water looks almost transparent, glass-like, surrounded by multiple strips of an exotic, pure white sand. Opposite the beach, the rocky island of Gramvoussa with its Venetian castle beckons, while Mediterranean seals have been known to frequent the surrounding waters.

In fact, it made the top 25 most beautiful beaches in the entire world in 2019 in Trip- Advisor’s Choice Awards for its pink coral sand and crystalline waters. You can get there by boat from Palaiochora or by car. There are cantinas and water sports facilities on the beach opposite Elafonisi, while the islet itself features white sand and many cedar trees, and can only be reached by crossing the reef on foot.

6. KOLOKITHA Known for its fine white sand and calm waters, this secluded cove is made even more beautiful by the surrounding ancient olive groves and wheat fields. As it is very popular – especially in the peak summer months due to the excursion boats – we recommend you visit early in the morning or late in the afternoon. Remember to take an umbrella as the beach isn’t organized and the only natural shade is provided by a handful of tamarisk trees.

Elafonisi has been ranked in the top 21 beaches in the entire world. It owes its pink hue to millions of tiny seashells.

7. AGIA FOTIA Situated 10 km east of Ierapetra, this renowned and wellorganized beach boasts powdery sand, inviting waters and a trendy beach bar that has become a hot spot with young people – locals and visitors alike.

On the northeastern side of Crete, exotic Vai Beach is surrounded by approximately 5,000 palm trees – the largest such forest in Europe. Following its hippy backpacker destination status in the 1980s, Vai has been declared a protected area by the state. Its utterly soft sand, crystal clear waters and overwhelming natural beauty have made it very popular with families.

9. CHRISSI ISLAND OR GAIDOURONISI Located 8 nautical miles (approx. 50 minutes by boat) south of Ierapetra in the open Libyan Sea, Chrissi is a flat islet thousands of visitors visit every year, to swim in phenomenal bright blue waters and to marvel at

the pink-hued sands, which are made up of millions of broken shells. Chrissi has been declared an area of outstanding natural beauty, so spending the night is strictly prohibited – as is collecting shells, sand or anything else, while visitors are also urged to take great care not to break the branches of the protected junipers when walking. Its most famous beach is initially rocky and then turns sandy – the setting of pure relaxation.

ΜAKRIGIALOS A full kilometer long, Makrigialos is known for its fine golden sand and often referred to by the locals as "Hani" or simply “Long Beach.” A great choice for children and families due to its warm, shallow waters which maintain their high temperature even during the colder winter months, this is a great seaside spot to while away the hours as it is surrounded by cafes and eateries for refreshments and meals by the sea. With its traditional villages and rolling hills, western Crete’s raw beauty is unparalleled. Further boasting mountain peaks, fertile valleys, secluded beaches and incredible canyons, the famed area of Sfakia begins at the impressive cone-shaped formations of the Lefka Ori [White Mountains] and stretches all the way down to the shores of the

Libyan Sea. This is where Europe’s longest gorge, the 18 km long Samaria is located. Beginning just below the Omalos plateau, its width varies between 150 and 3 m, while its walls reach 500 m at their highest points. It ends at the seaside village of Agia Roumeli, with hikers often spotting the kri-kri, Crete’s native wild goat. Western Crete also provides a multitude of opportunities for free climbing. The most popular climbing track is found near Chania at Theriso gorge, with levels of difficulty ranging from V to VIII. Further afield, the land is filled with castles, heroes and legends – the result of the island’s tumultuous history and many revolts, one example being the bloody massacre at the hands of the Ottoman army which took place at Frangokastello in May 1828. In the same region, as dawn breaks daily between May and June, strange human shadowlike figures appear on the coast. Folk tradition refers to them as the Drosoulites and explains

them as ghosts of the slain warriors; they are largely considered to be a fascinating optical illusion caused by light reflection. Sougia and Paleohora are pretty seaside towns offering rest and repose, with Paleohora providing the perfect base to visit the peaceful island of Gavdos, the southernmost place in Europe, as well as stunning Elafonisi. The port town of Kissamos – which provides a good base for walking, touring and relaxing – is situated 16 km away from the stunning beach of Falassarna, with the wild and remote peninsula of Gramvousa also within close proximity. Other attractions in the surrounding area include the highly scenic region south of Kissamos known as the Ennia Horia [Nine Villages], famous for its chestnut festival on the third Sunday of every October, as well as the ruins of the ancient city of Polyrrhenia, which was founded by the Dorians and was continuously inhabited until Venetian times.

This Industrial Era landmark is up-and-coming, already offering excellent eateries and spots to relax and take beautiful pictures.

REPRESENTING AN INTEGRAL PART of the history of the city of Chania, the Tabakaria district extends east from the coastal part of Vivilaki Street to the area of Agia Kyriaki, just a leisurely drive from Domes Noruz Chania, Autograph Collection and Domes Zeen Chania, a Luxury Collection Resort, Crete. It is a very atmospheric neighborhood; an architectural monument of the industrial age loca-ted in the rocky part of Chania which dates back to the early 19th century, back when Egyptians ruled Crete. Used as tanneries constructed for the purposes of processing leather, its buildings were mostly erected between 1830 and 1840; the reason for their location being their proximity to Chania and the abundant groundwater, brackish water, and shallow sea, which was useful for the first stage of leather processing. The buildings themselves were built to follow the natural inclinations of the land, with a ground floor entrance at street level and two to three floors facing the sea. Featuring stone and

tiled roofs, they were arranged one next to the other with very small narrow passageways in between that led down to the sea. In the 1950s, over 80 tanneries were still in operation; today, it’s only six. Yet, this unique architectural gem can still be visited today, giving a distinct allure to the area and providing an up-and-coming backdrop to tavernas, bars and cafes that have started popping up nearby. After a short leisurely fifteen-minute walk from Chania’s Venetian harbor, you’ll find yourself in a markedly different place; a place that was once a hive of industrial activity with its own very individual architecture that took advantage of the terrain. Once almost desolate, it is slowly but surely coming back to life to become one of the city’s dozens of attractions. Charming fish and seafood restaurants have set up shop along the water to take advantage of the cinematic backdrop of this district with its almost otherworldly beauty visited and frequented by locals and inthe-know visitors alike.

Brought back to life in Victoria Hislop’s novel “The Island,” Spinalonga islet’s poignant past continues to fascinate from its position across the water from Domes of Elounda, Autograph Collection.

From Ancient Greeks to Arab pirates, Ottomans to lepers and beyond, Spinalonga islet has a rich, profound history.

OWING ITS NAME TO LATIN SPINA [thorn] and longa [long], Spinalonga was not always an island, if Venetian cartographer Vincenzo Coronelli is to be believed; he recorded that the Venetians cut through a portion of the peninsula, creating an islet that measures 85 km² today. It was depopulated in the 7th century due to Arab pirate raids. In 1579, the Venetians built a fortress on the ruins of a pre-existing ancient fortress, which remained under Venetian rule even after the 1669 Ottoman occupation of Crete. The churches of Agios Panteleimonas and Agios Georgios were built subsequently. In fact, during the Cretan War (1645-1669), Spinalonga served as a base for refugees and rebels, consequently falling to the Turks in 1715. In the 19th century, several merchants and seamen moved to the islet,

seeking the security offered by the fortress in their exploitation of the commercial routes of the eastern Mediterranean. It is estimated that by 1834, 80 families lived in Spinalonga. By 1881, the number had increased to 227 families. In 1903, the State of Crete decided that the island would house Crete’s leper community – it would go on to become a colony for lepers from all over Greece, overseen by a director, doctor, nurses, a superintendent, cleaning staff, a financial department and a priest. One of its two entrances was a tunnel known as “Dante’s Gate.” With the little government funding they received, patients were able to go down to the docks and buy produce from the surrounding area’s families, who arrived daily. Any products not sold on the day were considered contaminated, could not be taken back ashore and were there-

fore thrown away into the sea. Nevertheless, during this period, the leper colony supported the economy of the surrounding area. Patients were initially housed in existing buildings, while additional construction was carried out in the ‘30s. The Leper Hospital operated until 1957. Today, visitors can reach Spinalonga via a scenic boat trip across the water to explore the remains of this historic settlement. In this eerie yet charming setting, the past renders the experience of wandering around the colony and learning about its history profound. Dilapidated but with restoration works underway, Spinalonga may be haunted by sadness and memories of tragic times but there is no doubt that it is a fascinating openair museum worthy of a poignant visit that pays respect to its former inhabitants.

KATERINA MAKRIYANNI’S love for the applied arts and her family’s legacy in the field of jewellery design and production led her to pursue specialized courses in design and engraving at the L’ Arti Orafe University in Florence. Since her debut at Paris Fashion Week in collaboration with Maria Kastani as global brand ambassador, her unique pieces can be found on Net-a-Porter, Matches Fashion, Lane Crawford, Browns Fashion in London, Boutique1 in UAE, On Pedder in Asia, Jill Wolf Jewelry in Switzerland as well as Domes Resorts & Reserves. Internationally acclaimed for her designs and craftsmanship, with her creations having been featured in magazines all around the world, we caught up with Katerina to discuss her jewellery and love of Crete. Can you describe the connection between Chania and the pieces that you create which have been featured on the covers of magazines around the world? Chania is the city I grew up in; it’s the city that I have cho-

sen to live in, the city that I love. It inspires me every day and offers me a quality of life that I believe is reflected in each of my collections. I always look at the colours that are abundant in the nature that you find in Chania such as the intense greens with the amazing purple of thyme as inspiration. Cretan folk art provides an inexhaustible source of ideas as well as life in Chania itself - through its simplicity. Domes Resorts & Reserves harmoniously combine local tradition with a relaxed, bohemian luxury stay and experience. What piece from your jewellery collections should guests at our resort definitely look out for? The red lace fan earrings that that they can purchase from Domes Resorts & Reserves. Their design is inspired by Cretan folk embroidery; they combine Cretan art with the bohemian character of my red silk fan which is one of my characteristic designs. These earrings reflect the ambience of Domes Resorts & Reserves, namely simplicity, relaxation and luxury.

What are your favorite places in Crete that you would recommend visitors see? Crete hides so many treasures - even the locals don’t know about them – and they all provide unique moments of relaxation, tranquility and privacy. So beyond its famous sights such as Elafonissi, Balos, the Preveli Monastery, Kedrodasos etc., I would suggest the South of Crete, where you will discover pristine beaches which you can reach either by boat or on foot as well as picturesque villages that reflect the wildness of the Cretan landscape. What are the signature elements in your summer collection? As is the case with each of my collections, for my Summer 2021 collection I wanted to include my 2 great loves - the colour gold and other intense colors – this time in a different way. So I created colorful silk beads in various shapes that are embraced by ornate bronze elements. The result is impressively colored jewelry that is perfect for the summer months.

Your creations are characterized by a strong theatrical element that originates from your studies as well as Italian influences. What reactions do you receive from visitors from abroad to these types of pieces? They’re really popular everywhere! In particular, visitors from abroad love the color and intensity of the jewelry. They want to stand out and wear special pieces. Visitors who buy my jewellery tend to know about my brand already – they are the type of person who wants to know about the designer behind the pieces themselves. They have a very high appreciation for the design process itself, craftsmanship and creativity in general.

Is there a piece of jewelry (from any one of the museums on the island, preferably) that you admire which you would have loved to have designed yourself? The ring that once belonged to King Minos in the amazing Heraklion archaeological museum. It is unparalleled in terms of its aesthetics and technical perfection. It’s made of pure gold, a material I absolutely adore and features original engraved designs depicting Cretan nature and is exceptional detailed. It is one of my favorite designs because it is such a statement piece whilst being so simple at the same time, which makes it classic and definitely unforgettable.

ILIAS SAVVAKIS Chef Ilias Savvakis, along with the pastry chef from Blend Steakhouse, explains why Blend provides such a memorable dining experience. What type of cuisine can guests expect at Blend and what inspired the concept behind it? It’s Modern Mediterranean Cuisine, which combines high quality cuts of meat, pasta and seafood, as well as dishes that are cooked and then finished in our JOSPER charcoal oven. The inspiration comes from authentic flavors and recipes, based on the experience I have gained during my career, both in Greece and in England. What do you think are the top two dishes at Blend, and what makes them stand out? I would say the Salmon Gravlax and the Lamb. The Salmon because it is marinated with beetroot, salt, sugar and citrus and combines the land and the sea, As for the Lamb, it is slowly simmered for 12 hours, and served with a smoked eggplant puree and a yogurt mousse.

What are the special techniques and ingredients that diners visiting Blend can expect? Vacuum cooking and premium ingredients, which we source ourselves and then go on to perfect on the plate. Particular attention is paid to the textures, but also to the different flavors that are harmoniously combined, thanks to the chefs’ know-how. What would a foodie love about Blend and what would make them revisit? The special aroma and the taste of the charcoal will definitely stand out. The selection of good ingredients and the fact that all of our fresh ingredients are always selected based on their seasonality, are just some of the reasons that diners will want to return for another highly gastronomic experience. And last but not least, Blend’s pastry chef outlines the reliance on “blended flavors” using local products but without sticking to the classic recipes in desserts inspired by global cuisines using the most modern techniques to create signature desserts such as the “tropical yoghurt” and other signature desserts with a twist.

After working for acclaimed establishments in Spain and the UK, Executive Chef Dionysis Pliatsikas now leads the talented team at Topos restaurant. How would you describe the food at Topos? We use local ingredients: olive oil, fresh vegetables, seafood, fish... Ultimately, seasonality defines the menu. What are your favourite ingredients and what types of relationships do you have with your suppliers? Our local suppliers are indispensable for us and our dishes. They are our lifeline, our connection to Crete and its products. We only work with certified Cretan producers. Ingredients are extremely important. It’s really hard for me to choose because there is no one ingredient that is more important than others. A humble “ofti” potato cooked on charcoal, an organic tomato, even our sea salt sourced straight from Balos

Beach are all unique and indispensable! When you place all three of these components on a plate, you get a masterpiece of flavour… with or without our exquisite olive oil! Which flavours from Crete stand out for you? I visit one of Chania’s farmers’ markets at least every week. I am most drawn to the many different varieties of wild Cretan greens. Some are sweet, others salty, or bitter, or aromatic… and you can use them in all sorts of recipes – from pies to salads, cooked greens, in the pot or in the pan with meat or fish… literally everywhere! Do you combine local and international ingredients in your cooking? Because we focus on local produce and seasonality to deliver the best dishes possible, I try not to mix different cooking traditions with Cretan and Mediterranean cuisine, with the exception of our special events. What dish would you recommend from the menu? That’s a difficult question, but I’ll give you just one answer: The White Grouper Giouvetsi with wild fennel.

Among them, we find: THE KAISER’S OBSERVATORY: Offering stunning dramatic views, this is where the German Emperor would sit to admire the sunset from the village of Pelekas. MOUNTAINS: Located in the island’s north, Pantokratoras is the highest mountain on Corfu. It offers beautiful treks, breathtaking views as well as lovely Venetian villages, which are relatively unaffected by tourism. Situated in the southern part of Corfu, the mountain of Agioi Deka also boasts stunning views and fascinating walking paths. WATERFALLS & CAVES: There are impressive waterfalls in Kyprianades and in Nymfes. As for caves, Anthropograva and the Cave of Loutses stand out for their impressive stalagmites and stalactites. They’re all found near the village of Klimatia in the northern part of the island. LAGOONS & SALT MARSHES: The lagoons of Chalikiopoulos and Antiniotis and the Salt Marshes of Lefkimmi each have their own distinct ecosystems and attract many visitors.

BEACHES Offering 217 km of verdant coastline, Corfu is a paradise for beach lovers. Thirty beaches have been awarded the Blue Flag, ranging from long sandy stretches through to private pebbly coves. Naturally, choosing from such an impressive array is a difficult, albeit pleasant task. Here is our narrowed down list of some of the most naturally stunning beaches on the island: SIDARI: Famous for its enchanting sandstone formations and its neverending stretches of sand. On its western side, the fjords and the famous Canal d’Amour can also be visited. It is situated in the northwestern part of Corfu. GLYFADA: One of the most popular beaches of the island, Glyfada is located 15.5 km west of Corfu Town. It is awarded with the Blue Flag for its crystal clear waters while the large surface of soft sand is surrounded by trees-covered cliffs and imposing rocky formations where Domes of Corfu, Autograph Collection is located. MYRTIOTISSA: Situated between Ermones and Glyfada, on the southeastern side of the cape of Agios Georgios, Myrtiotissa offers what is hands down one of the most picture-perfect beaches on the island. To get to the beach, you’ll need to walk for about 20 minutes – or have a 4x4. HALIKOUNAS: This long and isolated sandy beach is found near the village of Agios Matheos. A thin strip of land separates the beach from the protected Korission Lagoon. From there, make sure you walk across the wooden bridge to the rare cedar and orchid forest. ISSOS: This magnificent southern beach is known for its golden sand and crystalline waters. Its sand dunes extend as far as the cedar forest of Korission Lagoon.

TRACING THE UNIQUE CHARM OF CORFU TOWN

More closely resembling the small capital of an entire country than that of an island, Corfu Town never fails to seduce all who visit it.

IMBUED WITH GRACE and elegance, historic Corfu Town (also known as Kerkyra) is found in the middle of the island’s east coast. The name Corfu [“peaks”] refers to its twin hills, each topped by a massive fortress built to withstand the Ottoman sieges of the 16th century. Built on a promontory, the town has a unique architecture that reflects the various influences – Venetian, French and English – that have left their mark on the island. This blend of different styles has lent Corfu Town

a unique charm and character. Palaces, fortresses, austere public buildings from the Venetian rule combine with lines of drying washing that hang above tiny alleyways and small secluded squares. The largest square in the Balkans and one of Corfu Town’s most significant monuments, Spianada Square is its main social center, where festivals and parades take place throughout the year. A small part of the Esplanade still hosts the old English cricket field. IONIAN ACADEMY: Towering on the southern side of Spianada Square, the Ionian Academy was founded during the British occupation in 1824 by Ioannis Kapodistrias, the first Governor of the First Hellenic Republic. LISTON ARCADE: Built during the French occupation, this superb arched terrace was inspired by the architectural style of the

Rue de Rivoli in Paris, and houses some of the island’s most elegant cafes and restaurants. THE TOWN HALL: In Venetian times, the building was a meeting place for the island’s nobles. Today, it houses the Municipality of Corfu. IONIAN PARLIAMENT: This neoclassical monument was built in 1854. In May 1864, the Ionian Parliament voted for the unification of the Ionian Islands with Greece. Various inscriptions commemorating this vote surround the main entrance of the building. PALACE OF SAINT MICHAEL AND SAINT GEORGE: Erect-

ed during the British occupation in 1824 and situated in the center of Spianada Square, this impressive neoclassical building was first used as the commissioner’s official residence. Today, it houses the interesting Museum of Asian Art. SQUARE OF THE SAINT: Undoubtedly three of Corfu’s most

important religious buildings, the churches of St. Spyridon, the church of the Blessed Virgin of the Strangers, and the church of St John are all located around this square. THE KAPODISTRIAS FAMILY MANSION:

Can you describe the summers that you spent on the island of Corfu, just as you remember them from when you were a child? My childhood memories are filled with saltiness, playing games on the beach and feeling totally carefree. I would stay with my grandparents during the summer period and I remember the smell of my grandmother's cooking, as well as the smells coming from the

kitchens in the houses around us. I will never forget the taste of nougat or her kumquat jam – which she made herself – which she spread on hot bread everyday for breakfast. PETROS DIMAS Executive chef at the Domes Miramare, a Luxury Collection Resort, Corfu, Petros Dimas talks about the concepts behind what makes the resort’s restaurants so memorable. Having worked at Badrutt's Palace in Switzerland, Pollen Street Social in London (awarded a Michelin star), Aquavit in London (awarded a Michelin star) and in Greece at Hytra and Varoulko (both awarded with a Michelin star), we caught up with Petros Dimas to talk about everything that excites him about the gastronomic offerings at the Domes Miramare, a Luxury Collection Resort, Corfu. What type of cuisine is served at the flagship restaurant and what inspired the concept behind it? Modern Greek cuisine - The concept is drawn from Greece itself and its seasonal ingredients where traditional recipes are refined and married with a new way of presentation. What do you think are the top two dishes, and what makes them so special? The organic olive oil sorbet flavored with bergamot, basil and louiza appetizer solely due

to the change in the olive oil’s structure. Then the eggs with potatoes, truffles, Greek gaviera cheese and sigklino pork where different textures and techniques create something truly extraordinary. What special techniques and ingredients will guests come across? In addition to presentation, we have a fully equipped kitchen that allows us to work with various techniques such as cooking at low temperatures for many hours (sous vide), fermentation, lactic fermentation, pickling, extraction and using ingredients such as fungi, algae, lactose, calcium and liquid nitrogen. What would a foodie love about the restaurant and why would they revisit? The Ingredients both from land and sea and the overall experience that the food and the taste of the dishes offer. Can you tell us something about the desserts? We have played with yoghurt, honey and walnuts to create an intriguing and delicious dessert. Then there’s the beetroot salad with orange, hazelnuts and goat cheese, which we have turned into a very special dessert, and other handmade desserts, and our various handmade breads.
