BLU BAR Having attracted royalty, jet setters and the crème de la crème of Europe, who chose to host their parties there, today, the Blu Bar continues to stun guests with its distinctive, vibrant hue that echoes the sea, intriguing collectables and a unique sense of style. Unmistakably chic, with wood, marble and silver details as well as pure white tones setting the mood, this is the resort’s most sophisticated bar where the soft notes of live piano scores serve as the softest background for enjoying premium spirits, excellent wine and signature cocktails. PETROS DIMAS

Executive chef at the Domes Miramare, a Luxury Collection Resort, Corfu, Petros Dimas talks about the concepts behind what makes the resort’s restaurants so memorable.

Having worked at Badrutt's Palace in Switzerland, Pollen Street Social in London (awarded a Michelin star), Aquavit in London (awarded a Michelin star) and in Greece at Hytra and Varoulko (both awarded with a Michelin star), we caught up with Petros Dimas to talk about everything that excites him about the gastronomic offerings at the Domes Miramare, a Luxury Collection Resort, Corfu.

What type of cuisine is served at the flagship restaurant and what inspired the concept behind it?

Modern Greek cuisine - The concept is drawn from Greece itself and its seasonal ingredients where traditional recipes are refined and married with a new way of presentation.

What do you think are the top two dishes, and what makes them so special?

The organic olive oil sorbet flavored with bergamot, basil and louiza appetizer solely due to the change in the olive oil’s structure. Then the eggs with potatoes, truffles, Greek gaviera cheese and sigklino pork where different textures and techniques create something truly extraordinary.

What special techniques and ingredients will guests come across?

In addition to presentation, we have a fully equipped kitchen that allows us to work with various techniques such as cooking at low temperatures for many hours (sous vide), fermentation, lactic fermentation, pickling, extraction and using ingredients such as fungi, algae, lactose, calcium and liquid nitrogen.

What would a foodie love about the restaurant and why would they revisit?

The Ingredients both from land and sea and the overall experience that the food and the taste of the dishes offer.

Can you tell us something about the desserts?

We have played with yoghurt, honey and walnuts to create an intriguing and delicious dessert. Then there’s the beetroot salad with orange, hazelnuts and goat cheese, which we have turned into a very special dessert, and other handmade desserts, and our various handmade breads.
