ELK’S COOKBOOK PIZZA DUMPLING CASSEROLE

abi Strickland Walker of Walker Mtn Eats calls her Pizza Dumpling Casserole Easy, Peasy, and Cheesy and we certainly agree with her! It’s made with many ingredients you have on hand in your pantry, and you use your favorite sauce and any pizza toppings you want. It just doesn’t get any easier with this delicious, quick recipe. Gabi says, “Give this one a try soon!”
PIZZA DUMPLING CASSEROLE INGREDIENTS
DIRECTIONS

3 ¾ C Bisquick Mix
Step 1:
•
1 C water
•
1/2 t garlic powder
•
1/2 t onion powder
– Spray a 9 x 13 baking dish/pan with cooking spray and set aside. In a medium bowl combine Bisquick, salt, garlic powder, onion powder, and Italian seasonings. Add water and stir until a soft dough forms.

1/4 t salt
•
1 1/2 t Italian Seasoning
•
1 16 oz. jar of your favorite Pizza/Pasta Sauce
•
6 oz. Sliced Pepperoni
•
1 C each of any pizza toppings you like (Gabi uses cooked/crumbled sweet Italian sausage, sauteed onion, and banana peppers, but you can choose any of your favorites)

2 C shredded Mozzarella Cheese
Editor's Note: Our son, Nate Tawney, makes pizzas in his Big Green Egg grill and they are amazing as well.
SERVES 4-6 Preheat Oven to 375 degrees.
NOTE: If dough is too sticky, sprinkle in a few tablespoons of Bisquick; if it feels too dry, add a tablespoon of water.
STEP 2: – Divide dough in half and drop dough by tablespoon-sized portions all over the bottom of the prepared pan. NOTE: The pan will not be covered by the dough.
STEP 3: – Drizzle 1 C of the pizza sauce on top of the dough. Layer half of the pepperoni and other pizza toppings on top of sauce. Sprinkle with half of the mozzarella cheese.
STEP 4: – Repeat STEP 3 and layer 1 C of the pizza sauce on top of the mozzarella cheese layer and add the other half of your pizza toppings on top of the sauce. Top with the remaining mozzarella cheese.
STEP 5: – Bake 25-30 minutes in the oven or in a pizza oven until golden brown and dumplings are cooked in the center. Let rest for a couple of minutes, cut into squares and serve warm.
