Hello & Welcome As we (or some of us) tuck away the last of our Christmas decorations and settle into the quiet calm of winter, it feels good to finally slow down. January invites us to breathe a little deeper, rest a little longer, and wrap ourselves in a warm, cozy blanket. I always keep a few wreaths, soft white lights, and bits of winter décor around the house this month—they bring a gentle cheer that brightens even the coldest days. It’s a simple little trick, but it certainly helps keep the winter blues away.

This issue is filled with joy from across our community. Elk River families shared wonderful photos from the holidays and from our first big snowfall of the season. Kids bundled up, parents braved the cold, and everyone seemed to find a little magic in the snow. These snapshots are sure to warm your heart and bring a smile to your face.

We’re also proud to shine a light on Elk River’s own Billy Crede, who was recently inducted into the National Wrestling Hall of Fame. Billy has spent a lifetime giving back to the sport— first as a standout wrestler, then as a dedicated coach and official. His impact on young athletes and our community runs deep, and we are honored to celebrate him this month.

And if winter weather has you craving comfort, Gabi Walker has just the thing: her delicious copycat recipe for Bob Evans’ Cheddar Baked Potato Soup. It’s warm, hearty, and truly good for the soul. IT’S WINTER SOUP TIME!

By Gabi Strickland Walker. Gabi is the creator and editor of Walker Mtn. Eats Facebook group, where she shares her delicious recipes which are tried-and-true tested on her husband, Gar, her girls, and her family, church family, and friends.

I

was genuinely surprised by the very first spoonful of this soup. It was one of those rare kitchen moments when you realize—you’ve finally nailed it. Rich, creamy, comforting… perfection in a bowl. I’ve always loved this particular soup, ever since the days when there was a Bob Evans in downtown Charleston and it was our go-to lunch spot at least once a week. Without fail, this soup and a salad were my regular order. Over the years, I’ve tried several “copycat” versions, but none ever quite hit the mark. Last week, I came across a couple of recipes that finally made sense. I blended elements from both, using what I imagined a restaurant might do—and to my delight, it worked beautifully. The verdict around our table was unanimous. Low went back for seconds, and Ash finished three full bowls. The girls had never tried this soup at Bob Evans—apparently it’s not what they usually order—but Ash declared she would have ordered it every time had she known it was this good. Even Pae, who isn’t much of a potato fan, loved the soup itself.

BOB EVANS’ CHEDDAR BAKED POTATO SOUP

INGREDIENTS

DIRECTIONS

• 1 (10 3/4oz) can Campbell’s cheddar cheese soup • 2 C chicken broth - divided • 2 C sharp cheddar cheese shredded • 4 C whole milk • 10 ¾ oz (soup can) whole milk • 2 T butter • 2 T cornstarch • 1 t salt • 1⁄2 t pepper • 1⁄2 t onion powder • 1⁄2 t garlic salt • 7 medium potatoes - peeled/ microwaved/diced (Quick option: 2 bags of refrigerated diced potatoes)

STEP 1 Wash and peel potatoes. Prick several times with a fork, place on a microwave safe plate. Cook using the “Baked Potato” setting until fork tender but still firm. Allow to cool while soup is prepared. (Quick option: purchase two bags of refrigerated, diced potatoes.)

PREP 15-20 MIN • REFRIDGERATE FOR 60 MIN+

STEP 2 In a large pot over medium heat, add the can of soup, 1 C broth, 1 soup can full of milk, and stir until well combined and bring to a low boil.

STEP 3 Add shredded cheese and remaining 3 C milk, bring to a boil, stirring frequently until cheese is melted.

STEP 4 In a small bowl add 1C broth, stir in cornstarch. Stir to combine well.

Add cornstarch/broth mixture to boiling soup, and stir well. Add spices and butter.

STEP 5 Bring back to a boil, reduce heat and simmer for 15-20 minutes.

STEP 6 Dice potatoes and add to soup OR add in two bags of refrigerated, diced potatoes.. Simmer for an additional 15min more, taste for salt. Top with chopped green onion tops, real bacon bits, and shredded cheese.

FOR WRESTLING BILLY CREDE

Inductee in the National Wrestling Hall of Fame

lk River’s own William “Billy” Crede has been named an inductee into the Lifetime Service to Wrestling by the West Virginia State Chapter of the National Wrestling Hall of Fame—one of the highest honors a wrestling advocate can receive. The award recognizes individuals whose dedication goes far beyond the mat, celebrating those who have spent years shaping not only successful athletes, but strong, disciplined young people. Elk River Living is proud to honor Billy Crede for his lasting impact on the local wrestling community and across the State of West Virginia.

Billy’s wrestling journey began at Herbert Hoover High School when Steve Kee, the wrestling coach, asked him to join the team because they needed someone to wrestle in the 98-lb. weight class. Under the leadership of Coach Kee—a 2005 West Virginia Wrestling Hall of Fame inductee—and Coach Dana Humphreys, Billy quickly developed into a standout athlete. Competing in the 98lb. weight class in his sophomore and junior years, and then 105 lb. in his senior year, he capped off his high school career with an impressive third-place finish at the West Virginia State Wrestling Tournament.

Beyond coaching, Billy also made his mark as a wrestling official, working regional tournaments throughout the state and officiating at the West Virginia State Wrestling Tournament for 30 years. His steady presence, fairness, and deep understanding of the sport earned respect from athletes, coaches, and fans alike.

Soon after, Billy transitioned from competitor to coach, beginning with the Pee Wee Wrestling Program. From 1979 to 1981, and again from 1998 to 2001, he dedicated countless hours to mentoring young wrestlers ages 7-12, helping lay the foundation for their athletic and personal growth.

Billy and his wife, Connie, reside in Elkview. They are the proud parents of two children, Billy II and Caitlin, and grandparents to Leighton, Jaede, Jaelynn, and Walker.

Billy is also the owner of Crede Tractor in Big Chimney, where he continues his family’s legacy of service to the Elk River community. He is a 1978 Herbert Hoover alumnus and received his bachelor’s degree in Education at WV State College.

His coaching career continued to expand when he became head coach at Elkview Junior High from 1984 to 1987. During his tenure, his teams captured multiple county championships. Billy later took his experience and leadership to Herbert Hoover High School, where he served as a coach from 1989 to 1991.

From athlete to coach, official to mentor, Billy Crede’s lifelong dedication to wrestling has shaped generations of young athletes. His induction into the National Wrestling Hall of Fame’s Lifetime Service to Wrestling, Class of 2025, is a well-deserved recognition of a legacy built on commitment, leadership, and heart.

This month we reflect on the floods of 1918 and 2016 in the town of Clendenin. The first photo is what is now the SaveA-Lot parking lot property back in 1918. The second photo with the beloved Dairy Queen sign is the same location in 2016.

TROOP 123 LEAVES THEIR MARK

on the Elk River Trail

The Elk River Trail Foundation is excited to highlight a meaningful contribution recently completed by Boy Scout Troop 123 of Clay County, led by Eagle Scout candidate Elijah Lough. Elijah’s Eagle Scout Service Project brought valuable new amenities to the trail that will benefit cyclists, equestrians, and community members for years to come.

As part of his project, Elijah and his troop designed, built, and installed a new bike rack and horse hitching post on the Foundation’s property in Little Italy, near Ivydale in Clay County. This thoughtful addition supports the wide range of visitors who enjoy the trail, from cyclists to horseback riders exploring the scenic route. These features not only make trail visits more convenient but also encourage responsible recreation and inspire more people to experience the Elk River Trail.

This property also features a dedication memorial, where the land was donated by Tate Creek Consortium, LLC in memory of Harry Sowa, an avid bicyclist and supporter of the trail. There is also a bench on the edge of the property, where you can sit and take in the view of the Elk River. For those wishing to explore, there is a beautiful wooden bridge that leads to a path down to a nice bar in the river. The area is truly breathtaking.

But they didn’t stop there! Troop 123 went above and beyond by clearing brush and overgrown weeds, making the trail area cleaner, more inviting, and easier to navigate. Their hard work truly transformed this part of the trail, and we couldn’t be more grateful for their dedication and effort.

If you’re out on the trail, we encourage you to check out their handiwork. You’ll find the new bike rack and horse hitching post a quarter mile past Mile Marker 51, heading south from the Ivydale Trailhead. It’s a perfect spot to take a break, tie up your horse, or park your bike while enjoying the scenery.

On behalf of the Elk River Trail Foundation, I want to extend a huge thank you to Elijah and Troop 123. Projects like this show the incredible impact that young people can have on our community spaces. We’re so thankful for their time, energy, and care, and we look forward to continuing our partnership with this amazing troop in the future.

BIRDS IN YOUR BACKYARD THIS WINTER

W

inter is one of the most rewarding seasons to welcome birds into your backyard—and sometimes, the best thing you can do is embrace a little “natural mess.” Brush piles made from fallen branches or trimmed limbs create excellent shelter for small birds, especially when placed near feeders.

If you can, leave a small patch of leaves on the ground.

Many insect-eating species will happily forage through them for hidden treats. Blue jays, chickadees, titmice, and nuthatches will even stash their food in these brush piles for later.

Native plants are especially valuable this time of year.

Leave up any shrubs or plants with berries, seeds, or nuts, as they serve as vital winter food sources. And before you haul your Christmas tree away, consider laying it on the ground near your feeders—its branches provide instant, natural shelter.

Offer Plenty of Suet High-energy suet is one of the most important foods you can provide in winter. It delivers a quick burst of calories and fills the gap left by the lack of protein-rich insects.

Birds rely on this extra energy to stay warm and active during the coldest days.

Don’t Forget the Water A reliable source of unfrozen water is just as important as food. Birds need water for drinking and bathing—clean feathers insulate better and help them regulate body temperature. A heated birdbath or a simple heater for your existing one makes a big difference. If that’s not an option, set out a small bowl of warm water each day.

Choose the Right Seeds Black oil sunflower seeds are a winter favorite. They’re rich in protein and high in oil—perfect for helping birds maintain body heat. Cardinals, chickadees, and nuthatches especially love them.

Safflower seed is another excellent option. It’s nutritious but has a tough outer shell that many nuisance birds, particularly European starlings, find difficult to crack.

Offering safflower can help keep your feeders more peaceful during the winter months.

Cold-Weather Feeding Tips • During very cold spells, you may need to refill feeders more than once a day.

• Clean feeders regularly with hot water to prevent mold and disease, even in winter.

• After deep snow, use the back of a shovel to pack down an area and scatter seed right on the surface.

• You can even create a small snow “cave” or alcove near porches or feeders—juncos and titmice love darting in and out for shelter as they eat.

• Keep extra seed on hand. Storing a couple of bags in your car trunk ensures you won’t run out, and the added weight can give you better traction on slick winter roads.

With just a few thoughtful touches, your backyard can become a winter haven for birds of all kinds—and you’ll enjoy watching a flurry of feathered visitors all season long.

AVOIDING FALLS THIS WINTER Submitted by Andi Geary, MPT, Cert. MDT, ATC at Elk Valley Physical Therapy. Andi is an honor graduate of University of Charleston where she played collegiate softball and volleyball while earning her undergraduate degree in Sports Medicine. She is also an honor graduate of WVU and earned a Master's degree in Physical Therapy in 1998. She is a nationally certified athletic trainer and obtained specialty certification in Mechanical Diagnosis and Therapy in 2007. She is a proud HHHS alumnus.

2) Don’t rush – give yourself plenty of time to arrive at your destination. Going fast decreases your balance and increases the likelihood of falls. Use short, shuffling steps and keep your center of gravity over your feet. Keep your hands out of your pockets. Natural arm swing and spreading your arms out both help maintain balance.

3) Use caution – walk like a penguin with short, slow steps, and keep your feet pointed outward to increase your base of support. Keep your head up and slightly bend your knees to lower your center of gravity. Do not lean forward by bending at your waist. Watch for black ice (may appear as dark or wet looking pavement) or slick spots when you choose where you step. Opt for cleared walkways vs. snowy shortcuts and use handrails when available.

4) Pay attention – don’t text or talk on a cell phone as you walk. Be careful as you exit your vehicle; hold onto the car door to give yourself extra support.

5) Be prepared – a little prevention goes a long way. Have salt, kitty litter, or sand available to put on icy driveways and sidewalks. Remove the snow as soon as possible.

Proper lighting is important to be able to see the hazards before you. Physical Therapy or balance exercises like Tai Chi are also helpful for high risk individuals.

1) Proper footwear – wear boots and shoes with good grip. Rubber soles with deep treads are best. Avoid smooth-soled shoes like dress shoes. An extra layer of grip may be added with traction cleats, but do not wear these inside on smooth floors.

In the unfortunate incidence that a fall does occur, try to not stiffen up. Attempt to land on your side or buttocks and just “roll with it”. Extending an arm to catch yourself may result in wrist fractures.

If you feel like it’s too risky, stay inside until the weather improves. Don’t be afraid to ask for help from family members or neighbors. To determine if you are at increased risk for falls, a fall risk assessment can be completed by your family doctor or Physical Therapist.

Appropriate strategies can then be adopted to decrease your fall risk and allow you to enjoy the winter season.
