MISSISSIPPI MUD POTATOES

MISSISSIPPI MUD POTATOES

INGREDIENTS

• 7 C gold potatoes - peeled & diced

• 2 C sharp cheddar cheese - grated

• 1 ½ C real bacon bits (or 1 lb bacon cooked & crumbled or even diced ham)

• 1 t garlic powder

• ½ t salt

• ½ t Everglades (or multipurpose) seasoning

• ½ t pepper

• 5 green onions - thinly slicedwhites and greens separated

• 1 C mayo (or sour cream or Greek yogurt)

• 1 C triple cheddar cheese blend or Colby Jack (or whatever you like)

DIRECTIONS

PREP 15 MIN | BAKE 60 MIN @ 350•

Preheat the oven to 350. Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.

STEP 1 In a large bowl, combine the diced potatoes, sharp cheddar cheese, bacon bits, thinly sliced white parts of the onions, garlic powder, multi-purpose seasoning, salt, and pepper. Stir everything until evenly mixed.

STEP 2 Add the mayo and gently stir until the potatoes are fully coated.

STEP 3 Transfer the potato mixture to the prepared baking dish, spreading it out in an even layer. Top with the remaining 1 C of the cheddar cheese blend.

STEP 4 Bake for about one hour or until the potatoes are tender and the top is golden brown and bubbly. Remove the dish from the oven and let it rest for about 5-10 min. Sprinkle the thinly sliced green tops of the onions over the top of the potatoes. Serve!

She went on to work with the Child and Adult Care Food Program (CACFP) in Charleston, where she spent seven years ensuring that in-home and center-based child care providers met high standards for nutrition and care.

Inspired by her experiences and driven by her passion, Shannon opened her own center—spending a decade building strong relationships in Sissonville before setting her sights on something more. “My ultimate goal has always been to operate a larger, safer, and more enriching facility where children are supported in every aspect of their development,” she said.

Now, Shannon and Glenn are thrilled to welcome families to her new, modern facility in Elkview, where the future looks brighter than ever. Precious Moments is currently

enrolling for its summer program and working toward an exciting new expansion: 24/7 care to support families who work non-traditional hours.

“I want to be there for every parent in this community, no matter their schedule. Every child deserves quality care, and every parent deserves peace of mind,” Shannon said.

The Pinch Volunteer Fire Department also stopped by to teach children lifesaving safety with a lively demonstration of “stop, drop, and roll.”

Amazon presents! Tiny Worlds of the Appalachian Mountains features artist Rosalie Haizlett’s hand-drawn exploration of the region’s smallest creatures and plants--a celebration of biodiversity and an invitation to slow down and appreciate nature’s hidden wonders.

About the Author/Illustrator

Rosalie Haizlett is an illustrator and author whose work celebrates the hidden wonders of the natural world.

Haizlett has been an artist-in-residence at Great Smoky Mountains National Park, with the National Audubon Society, and at the Roger Tory Peterson Institute of Natural History. In 2022, she was awarded the Eckelberry Fellowship for distinguished wildlife illustrators.

Her clients include Smithsonian, The Washington Post, Patagonia, The Nature Conservancy, and the U.S. Fish & Wildlife Service. Rosalie also teaches workshops in person and online, and so far she has taught more than 60,000 students how to paint the natural world as a Top Teacher on Skillshare. The author and illustrator of Watercolor in Nature (Page Street Publishing, 2021) and the newly published book, Tiny Worlds of the Appalachian Mountains (Mountaineers Books, 2024), she lives on the edge of Monongahela National Forest in Elkins, West Virginia.

ALUMNI SOFTBALL PLAYERS ON THE FIELD

WVSU and WV Wesleyan faced off in a double header at the Hoover Huskies Softball Stadium in April and these Hoover alumni were there playing on the new field! Coach Missy Anderson said, “They graduated before they had an opportunity to play at the new field. Luckily, they got the chance today!”

Fairmont State’s head coach, Travis Hinkle, has announced the signing of six student athletes for their volleyball program--and two are from the Elk River! Rylee Burkhamer of Wallback (Clay High School, rightside hitter) and Ashton Henrich of Elkview (Herbert Hoover, defensive specialist) both will be in the Fighting Falcon’s volleyball’s 2025 signing class. Results from the Cabell Midland Meet: GIRLS: 1st place, Maysen Fletcher, 3200 Meter Run (new school record!) and 1600 Meter Run; 5th place 2 x 800 Meter Relay and 4 x 400 Meter Relay, and 8th place 4 x 200 Meter Relay. BOYS: 7th place, John Jones Long Jump; 7th place Dylan Straight 3200 Meter Run. Results from the Black Eagle Invitational: GIRLS: HHHS took third place.

Also, Maysen Fletcher was granted a citation by Dean Jeffries, WV House of Delegates, for winning a WV State Championship in cross country this past fall for HHHS. Thank you, Dean, for recognizing her great accomplishment as a Freshman! Maysen was also named Gatorade Player of the Year by WV Girls XC.

ELK RIVER BOAT RAMP: Virginia Avenue Public Access

The WV Department of Natural Resources (DNR) proudly held the ribbon cutting ceremony for the newest Elk River Boat Ramp, located at Virginia Avenue in Clendenin (at the corner of Virginia Avenue and Walnut Street, near the Clendenin First Baptist Church). DNR Director Brett McMillion and Assistant Director Zach Brown said, "We are so proud of this new location and we believe it will be a true asset to the Town and businesses in Clendenin.

Members of E.L. Robinson’s landscape architecture and design team and other State and City dignitaries were there on March 26 to make this dream a reality, including DNR Director Brett McMillian, Kanawha County Commissioner Natalie Tennant, and Mayor Kay Summers. Todd Schoolcraft of ELR said, “This is no ordinary boat ramp--this was built to be an environmentally friendly, low impact, green infrastructure park amenity that utilizes several applications to make it more flood resilient. As the Clendenin area knows from the devastating 2016 floods, you can never be 100% flood-proof so attractions must be designed to be resilient to occasional flooding.

This project was completed in collaboration with the WV Department of Natural Resources and JF Allen Construction.

Have you seen the awesome trailhead in Clendenin, designed by Todd Schoolcraft from E.L. Robinson and constructed by Chris Wells of BPI! This project boasts new landscaping, parking lots, a new gazebo, benches along the trail, and a bike rack along the trail through the town of Clendenin. Next up, Mayor Kay Summers was awarded funding to include a bike repair station on the trail. Also, an awesome railroad crossing sign with flashing lights was donated by Roger and Steve Mullins of Mountaineer Auction. This sign is a tribute to Roger’s wife and Steve’s mother, Shirley Mullins.

CONTAINER GARDENING: Grow Big in Small Spaces

and her family manage a family farm in the Clendenin area. Keeping Appalachian values and traditions alive, she enjoys sharing her wisdom on gardening, canning, preserving, recipes and more with ERL readers!

Don’t have space for a full garden? No problem. Container gardening is the perfect solution for small patios, balconies, or porches—and a beautiful way to add greenery and color to any outdoor area.

START WITH THE RIGHT CONTAINER

Your first step is choosing the right container. Make sure it’s large enough to accommodate your plant’s mature size, but still manageable to move if needed. Clay pots offer excellent drainage thanks to their porous nature, while plastic containers are lightweight and easy to transport. Even 5-gallon buckets work well for many vegetables.

No matter what you choose, drainage is key. Ensure there are holes at the bottom of each container to prevent root rot. Use saucers underneath to catch any excess water. As a general guide:

• Tomatoes and carrots need containers at least 12 inches deep.

• Lettuce and green onions thrive in shallower containers like window boxes.

CHOOSE THE RIGHT SOIL

Skip the garden soil and yard dirt—they're too dense and poorly draining for containers. Instead, use a highquality potting mix designed specifically for container gardening. These mixes are lightweight, well-drained, and often enriched with nutrients to support plant health.

PICK THE PERFECT PLANTS

When selecting plants, always consider the sunlight your space receives. Choose sun-loving vegetables like peppers, bush beans, and tomatoes for bright, sunny areas. Radishes are a fast-growing option, ready in just a few weeks, while green onions regrow with regular snipping—perfect for a continuous harvest.

For smaller containers or partial shade, lettuce, herbs, and carrots are great choices. Use deep buckets for carrots to encourage straight root growth.

Stick with compact or bush varieties for container success. Look for container-specific tomato cultivars, and don’t forget support structures—tomatoes and cucumbers benefit from cages or trellises to help them grow upright and stay healthy.

Herbs are a wonderful addition, not only for flavoring meals but also for keeping pests at bay. Try basil, thyme, mint, lavender, rosemary, or lemongrass to repel insects and add fragrance to your space.

WATERING AND FEEDING

Container plants dry out faster than those in the ground. Water regularly to keep the soil moist, but never soggy. Morning or evening watering is best to minimize evaporation. Always water at the base of the plant to prevent mildew and disease.

Because potted plants rely entirely on the nutrients in their soil, regular fertilizing is a must. Use a balanced fertilizer and follow label directions carefully for best results.

PLACEMENT AND MAINTENANCE

Once planted, position your containers where your plants will get the appropriate amount of sun or shade. Avoid areas exposed to strong winds or harsh weather. If needed, use plant cages or stands to provide extra support and mobility—some even come with wheels for easy moving.

Group plants with similar sunlight and watering needs together. And for a functional yet decorative touch, mix in a few flowers or insect-repelling herbs.

EXPERIMENT AND ENJOY

The beauty of container gardening is that it’s flexible and fun. Try different combinations of plants, herbs, and containers. Whether you're growing your own food or just adding charm to your outdoor space, container gardening is a satisfying and rewarding hobby.
