INGREDIENTS: 8 c. chicken or vegetable broth 1 tbsp. oil 1 onion, finely chopped 2 tbsp. butter, divided 2 cloves garlic, minced 350g button mushrooms, sliced 1 bay leaf 4 sprigs thyme Salt Freshly ground black pepper 2 c. arborio rice 1/2 c. white wine 1 c. freshly grated club

Parmesan 3/4 c. frozen peas, thawed 2 tbsp. chopped fresh parsley INSTRUCTIONS BIn a medium saucepan over medium heat, bring chicken broth to a simmer. Reduce heat to low. In a large pot or Dutch oven, heat oil. Add onion and cook, stirring often, until translucent, about 5 minutes. Add 1 tablespoon butter, garlic, mushrooms, bay leaf and

thyme. Cook until the mushrooms have softened and are golden, about 4 more minutes, then season with salt and pepper. Remove mixture from the pot. Melt remaining tablespoon butter in the pot and add the arborio rice, stirring quickly. Cook until the grains are well-coated and smell slightly toasty, about 2 minutes. Add the wine and cook until the wine has mostly absorbed. With a ladle, add about 1 cup hot broth. Stirring often, cook until the rice has mostly absorbed liquid. Add remaining broth about 1 cup at a time, continuing to allow the rice to absorb each addition of broth before adding more. Stir often and cook until the risotto is al dente and creamy, not mushy. (You might not need all the broth.) Add the mushroom mixture back into the rice. Stir in Parmesan and peas then garnish with parsley. Serve warm.

Chicken Fried Rice INGREDIENTS 2 tbsp. extra-virgin olive oil 3 chicken breasts (about 500g) Kosher salt Freshly ground black pepper 2 tbsp. sesame oil, divided 1 medium onion, chopped 2 carrots, peeled and diced 3 cloves garlic, minced 1 tbsp. freshly minced ginger 4 c. cooked white rice (preferably leftover) 3/4 c. frozen peas 3 large eggs, beaten 3 tbsp. low-sodium soy sauce 2 green onions, thinly sliced

INSTRUCTIONS In a medium skillet over medium heat, heat olive oil. Season chicken with salt and pepper on both sides, then add to skillet, and cook until golden and no longer pink, 8 minutes per side. Remove from skillet and let rest 5 minutes, then cut into bite-sized pieces. To the same skillet, heat 1 tablespoon sesame oil. Add onion and carrots and cook until soft, 5

minutes, Add garlic and ginger and cook until fragrant, 1 minute more. Stir in rice and peas and cook until warmed through, 2 minutes. Push rice to one side of skillet and add remaining tablespoon sesame oil to other side. Add egg and stir until almost fully cooked, then fold eggs into rice. Continue to cook, repeating adding a few ladlefuls of broth and stirring until broth is absorbed before adding more, until rice is al dente, about 20 minutes. Remove skillet from heat and stir in remaining 2 tablespoons butter, lemon juice, and Parmesan. Season with salt and pepper. Top with chives and basil and more Parmesan before serving. INSTRUCTIONS Preheat oven to 425°. In a medium saucepan, warm vegetable stock over low heat. In a small Dutch oven over medium-high heat, add sun-dried tomatoes with oil, garlic, onions, salt, and pepper. Sauté for 2 minutes, stirring with a wooden spoon. Add the rice and wine and stir until wine is absorbed, about 2 minutes. Reduce to low

heat and ladle 3 cups warm stock in 1 cup increments; continuously stir until rice absorbs most of the liquid, 5 to 7 minutes. Stir in last 2 cups of stock and place lid on Dutch oven.
