Recipe: Moroccan Lamb Shanks Serves 4

We recently cooked this classic recipe on one of the Big Green Eggs in a Dutch oven, but it would be just as good as suggested below. Ingredients 2 tsp cumin seeds 1 tbsp coriander seeds 3cm piece fresh ginger, chopped 4 garlic cloves, chopped 1 tsp salt 2 tbsp olive oil 4 lamb shanks, about 450g each 2 large red onions, cut into wedges 1½ tbsp Belazu Rose Harissa 200g can chopped tomatoes 600ml chicken stock, hot 1 cinnamon stick 100g dried ready-to-eat apricots, halved Method Preheat the oven to 140°C. Crush and blend the cumin and coriander, then add the ginger, garlic and salt and work to a rough paste. Set aside. Heat the oil in a large flameproof casserole over a high heat. Add the lamb shanks and brown well all over. Remove and set aside. Reduce the heat to medium. Add the onions to the casserole and cook for 5 minutes. Stir in the spice paste and harissa and cook for a further minute. Add the tomatoes and stock, return the shanks to the casserole and stir together. Bring to the boil and drop in the cinnamon stick. Cover with a lid, transfer to the oven and cook for 2 hours, turning the lamb once or twice. Stir the dried fruit into the casserole and return to the oven, uncovered, for a further 30 minutes or until the lamb is almost falling off the bone. Serve with hot couscous flavoured with mint, coriander, preserved lemon and lemon juice. Georgie Mason

Pet Advice from Black Notley Veterinary Surgery

Fireworks are just around the corner

By the end of this month we will be hearing fireworks more and more in the evening. While fireworks are fun for us they can be very distressing for our pets. If your pet gets scared by fireworks there are things you can do this month to prepare them. A few weeks before fireworks start make a safe den somewhere quiet in the house, this gives them a quiet sanctuary to retreat to if they feel the need. Try to keep to their usual routine but cats may need to be kept indoors and dogs to be walked before dark. When you do hear fireworks try not to react to them or your pets fear as this will only confirm to your pet that there is something to react to. Talk quietly and calmly to them but don’t overdo it. If your pet wants to hide then let them do so. Cats may prefer to be up somewhere high. Outdoor pets may need to be kept in a shed or garage with a light or brought indoors for the evenings. To prepare for the firework season you can start desensitising your pet with a special fireworks CD that can be gradually played louder each evening so that they get used to it. We also have medications that do not sedate but can help your pet to cope. Calmex contains a plant extract that works as a mild sedative and muscle relaxant and Zylkene that acts as a relaxant the same way that warm milk does. Both of these need to be started a couple of weeks before the event to get it into the system. Once the dog is upset they will not work. Pet Remedy has the active ingredient Valerian that is a well-known herbal relaxant. This comes in a plug in diffuser or spray and also works best before the stressful event. If you need any advice then feel free to call the surgery. Finally, don’t forget the wildlife. Review: PBH Juice Bar

As a torrential downpour hits the rooves of Great Dunmow I dive into the arms of ‘Pure Body Health Juice Bar’ – the latest addition within the Pure Body Health family. As I take a seat I’m in perfect position to view Ellie (PBH Juice Manager) concoct nutrition packed Juice creations... The juices are made to order enabling PBH Juice to work around your specific allergies or tastes. The Menu has been designed with the help of Jaclyn Dunne who is the onsite Nutritionist. Jaclyn has considered the nutritional value and benefit of each of the ingredients making up these tantalizing creations. I start with Pure Breakfast of Champs... which is a morning filler, high protein juice and a great way to start the day. With a blend of blueberries, banana, peanut butter, oats, flaxseeds, cacao, honey and almond milk creating a creamy smooth and delicious juice, this is definitely the right way to start the day! Pure Body Burn... full of antioxidants, raspberries, strawberries, blueberries with banana to boost energy levels, cayenne pepper to encourage detoxification and speed up metabolism along with green tea which contains various bioactive compounds that can improve health, this was delicious to taste with a cayenne pepper kick! Pure Summer Beach Body... tasted really fresh with high antioxidant fruits of raspberries, blueberries and strawberries - the Arbonne vegan vanilla protein gave this juice depth, blended with the coconut water and banana it hit the taste buds running. I could consume this juice every day it was so refreshing and filling. Pure Green Mean Machine... with spinach, Kale, cucumber, apple, lemon, chia seeds and bee pollen this juice could be for those with an acquired taste for all that is green and wonderful, however don’t be put off by any fear of bitterness as the balance is brought into one’s olfactory sensation with apple and lemon, making this juice easy on the palette. This is another nutrition packed juice which is fantastic for daily detoxification and general wellbeing. Pure Ultimate God/Goddess... also with spinach this juice is packed with apple whose pectin cleanses the colonic tract, celery, pineapple – which is another metabolism booster, kiwi, lemon, pear, cucumber! The celery kick hits from the get go and this juice definitely tingled my taste buds, by my second gulp the pineapple took over and a gustatory delight followed. It takes 40 minutes to maximise muscle absorption and this juice is packed full of 40g of protein – similar to a chicken breast – making this a great option for a meal replacement. The slow burn is definitely loaded in this powerhouse juice, which is so smooth and delicious to taste, I could easily become addicted!


Pure Body Balance... with gentle flavours of melon 13 balancing the spinach and honey for a natural sugar blood level boost this juice also contains wheatgrass which is packed with chlorophyll, vitamin A, vitamin B, vitamin C, vitamin E, iron, calcium and magnesium! How to wear metallics between seasons……

When the Indian summer is gone, with shorter days and fading light, metallic is a great way to inject a little shine into your outfit. I am not talking the Christmas tree variety, with more sparkle than a bauble, however why not experiment with just a dash of shimmer to add interest to your outfit? It can make you feel lifted and brighter too. A metallic shoe is an easy place to start. A shiny heel looks great with smart denims and a winter coat, or a practical but slightly more glamorous plimsol? Even brogues come in metallic now and there is a lovely juxtaposition between the classic, sensible oxford brogue and the unexpected sheen of metallic leather. Gold accessories can give a glamourous edge to your outfit and work very well against all neautral outfits such as all black or all white. Silver and grey neautrals is a chic look whilst gold and navy can look very expensive. It doesn’t need to be a lot; maybe a bolder bangle, a statement necklace or bigger earrings. The silver or gold bag that worked so well with a tan in summer can also be dug back out of your suitcase, and added to your autumnal outfits. When choosing anything that has a sheen or shine to it you should bear in mind that reflections catch the light and therefore draw the eye so if you are not keen on your tummy, I would suggest avoiding a tight shiny top; no one wants to look like the Christmas turkey. Conversely, if you want to look bigger, for example to enhance your bust, then a light catching metallic can help. For a subtle approach, I suggest sticking to one metallic piece of clothing at a time. I really like the high/ low mix of shine and casual. It creates balance, especially if you are nervous of trying sparkle in the daytime. Top to toe sparkle can be a little too much unless you are a full on fashionista. As a general rule, I would suggest silver or pewter for those with cool colouring; gold or copper for warm colouring; and for those in between you can mix your metals. Bronze is a good option as it combines the cool of silver with the warm of copper to give a mid-toned hue. If you have velvety skin, then matte textures tend to be the most flattering, whereas those with shinier complexions are enhanced by a shinier fabric. (For anyone not sure what would work best for themselves and would like to have more confidence when putting outfits together, an image consultant such as myself can help you.) Autumnal metallics are a side order of style rather than a main dish. Keeping it simple, just adding one or two pieces enhances your outfit without looking like you are trying too hard and will give classic outfits and your basic neutrals a mid season style boost. Health: Gout

Gout is a type of arthritis where crystals of sodium urate form inside and around joints causing sudden and severe pain, swelling in the joint and redness. It frequently occurs at the base of the big toe but can develop in any joint. Around 1 in 40 adults are affected, 3 or 4 times more men than women and most often those aged between 30 and 60. Symptoms develop rapidly in the first 24 hours and a gout attack can last for 3 to 10 days, after which the joint begins to feel and look normal again and the pain disappears. However, further attacks will almost always occur. Sodium urate crystals form because uric acid levels have built up – this may be because too much is produced or too little excreted. Uric acid is a waste product formed when the body breaks down chemicals in the cells called purines. After several years, the build-up of hard sodium urate crystals in the joints may cause them to spill over from the joint cartilage so that they inflame the soft lining of the joint which causes the pain of gout. If left untreated for long time, the crystals pack together (tophi) to cause progressive and irreversible damage to the joints, resulting in pain and stiffness. Rarely, kidney stones can develop as a result of gout. Gout is sometimes genetic. It is more likely to develop if you are overweight, have diabetes, high blood pressure or have a high purine diet. Purines are found naturally in the body but are also in shellfish, sardines, red meat, offal and also in beer and spirits. Gout is one of a few types of arthritis where future damage to joints can be avoided by treatment. Nonsteroidal anti-inflammatory painkillers can relieve symptoms or sometimes corticosteroids or Colchicine are required. Future attacks can be prevented through a combination of lifestyle changes, such as losing weight, and being prescribed allopurinol which lowers uric acid levels. It is advisable to see your GP if you suspect you may be suffering with gout.

We have had a few very hot days; have you protected your hair? Diet plays a major part in determining you hair condition. In cases where the hair is greasy you should avoid greasy and fried foods; too many spices and strong seasoning can over–activate the sebaceous glands. To get rid of the grease always put shampoo on the hair before wetting. If you are generally run-down the hair will follow suit. This can be attributed to today’s fast living especially if you are weight-watching. All too often people on diets neglect the body’s essential vitamins. I would recommend a course of Vitamin B with added C. If you have dry hair and your colour has lifted to a lighter shade, don’t panic: you need to have a colour wash. This will tone the colour back. Use lots of moisture crème and leave some in, if you are sunbathing you can put it on dry hair. Cover well but when you take it off put the shampoo on dry first. Healthy hair looks great. Michael

James Ford’s Adrenaline Release Launch

There’s definitely a buzz in the air as we arrive at the Saracen’s Head Hotel in Great Dunmow for local rising star James Ford and his ‘Adrenaline’ single launch! The audience were treated to a live performance from James who smashed several dance covers before showcasing ‘Adrenaline’. James is living proof that if you have a love and passion for something and want it enough – and you put in the hard work - then you really can make your dream a reality! With no professional training, just an amazing ability, this powerhouse international singer has a happy heart, tons of courage and determination to stay on his desired path. Think Sam Smith meets Adele and you’ll be some way to appreciating his vocal abilities. With a range that tricks one into a false sense of diva hood, this chap has it all. And now at 29 years of age James celebrates the launch of his latest track ‘Adrenaline.’ With an Ibiza flavour, this deep house track is smooth and yet bouncy BPM with an adrenaline kick running through it. The ‘Adrenaline’ private launch party of 150 carefully selected guests was a hit, and support for this track has been huge with 11k and rising views of the video on VEVO. Whilst official sales figures will be released from i-tunes at the end of October ‘Adrenaline’ hit no 21 in the i-tunes Dance Chart within 24 hours of release and held that position for 1 week. With a biography full of appearances and tours with the likes of Little Mix, Dynamo, Diversity and appearances at VFestival James says he’s excited to be looking ahead now and with the support of a number of local radio stations playing ‘Adrenaline live on air’, and interviews lined up throughout October as well as a University Freshers tour, this is set to be a very busy month for James! There are 2 further tracks in production due for release as 2015 closes its doors, one of which is titled “Tough Love” and is in the process of a record label signing. Spring 2016 brings fresh releases of ‘Radio 1 Live Lounge’ style covers with James creating and performing his own acoustic arrangement and plans for an EP release date of March 2016 is on the horizon. 2016 Looks set to be a full year of bookings with a tour in the planning for Ibiza, Marbella and Amsterdam.
