to go with a whisky, they’ll likely say that it is the water with which the whisky was made. We’re no different here - our beers are made with pure spring water drawn from beneath the Icknield Series, from our own 300 foot deep borehole. Three Great Beers

It’s All About Terroir The Icknield Way is one of the oldest highways in Britain. It follows the direction of a single soil type to which it lends its name – the Icknield Series, a special soil type forming a band of land running south west from Lincolnshire to Dorset. This loam over chalk grows the very best malting barley in the world. Where better to have a brewery? At Hadham, we use and believe in a term usually associated with winemaking – ‘terroir’. Terroir is how an area’s climate, soils, terrain – and traditions - affect the taste of a product. It is a sense of place. The barley The barley we use is Maris Otter, carefully floor-malted by hand at Warminster Maltings, Britain’s oldest working maltings, described as ‘of the Ware design’ after the highly successful maltings of Ware, once Britain’s premier malting town, and close to the halfway point of the Icknield Way. The water If you ask a distiller what is the best water 6

‘Gold’ is a gold ale at 3.7%, brewed with Maris Otter barley, and hopped with Challenger, Fuggles, Goldings and Bobek hops, for a gently hoppy citrus character, which is lightly bitter in body with a sweetness developing, and a pleasant floral, lemon-lime and pine notes aroma. ‘Oddy’ is a copper coloured 3.9% pale ale. Hopped with Pilgrim and UK Cascade hops, it has a rounded citrus aroma, filling out with splashes of grapefruit and lychee and a smooth bitterness. ‘First’ is a 4.0% amber-brown coloured bitter. It has a fruity, bitter-sweet body, caramel notes and a full finish, with an aroma which is slightly spicy, with marmalade and caramel. ‘First’ was the first beer brewed at Hadham! Brewed with Maris Otter barley, and Target and First Gold hops.

Hadham Brewery is a ten barrel brewery, (which means every brew is just under 3,000 pints), established in 2015, at Church End, Little Hadham. In 2016, William Compton, with over twenty years brewing experience, came on board as Head Brewer. With the fantastic soil and climate of this part of England, the provenance of our spring water and raw materials, together with our brewing style, we have true brewing terroir here in the Hadhams. Quality malt, quality water, quality hops, expertly combined into wonderful ales and with exceptional customer service. We are building a tradition of our own, here in Little Hadham.

Eggs Benedict

with Smoked Salmon & Chives Preparation time: 15 mins Cooking time: 20 mins Serves: 4 (or 2 really hungry people!)

Ingredients 4 eggs 2 tbsp white wine vinegar 2 English muffins or two bagels, halved Butter for spreading 8 slices smoked salmon Chopped chives, to serve

For the hollandaise sauce 2 tsp lemon juice 2 tsp white wine vinegar 3 egg yolks 125g unsalted butter, cubed

Method

Hollandaise Sauce: Pour the lemon juice and vinegar into a small bowl, add the egg yolks and whisk with a balloon whisk until light and frothy. Place the bowl over a pan of simmering water and continue to whisk until the mixture thickens. Add the butter a small amount at a time, whisking constantly until the sauce is thick. If it looks like it might be splitting, remove from the heat and continue to whisk. Season with salt and pepper and then keep warm. Poached eggs: bring a large pan of water to the boil and add the vinegar. Lower the heat so that the water simmers very gently. Stir the water a little so you create a gentle whirlpool effect, then slide in the eggs one by one. Cook each for about 4 mins, then remove with a slotted spoon. Handy hint - you will see the eggs begin to rise in the water as they reach completion. Lightly toast and butter the muffins or bagels, then place a couple of slices of the smoked salmon on each half. Top each with an egg, then spoon over your Hollandaise and garnish with chopped chives.

Do you need a Social Detox? January is the traditional time for a detox after the excesses of the festive period, so how about a social detox? Do I need one? If there is someone in your life who drains your emotional energy, then that person is likely to be toxic and you are better off without them. Fortunately, our seven-step plan will free you from social toxicity in 2019 Identify - Toxic people are manipulative and selfish. They are impossible to work with. They rarely apologise for or own their mistakes. If you dread spending time with a person, they are probably toxic and it’s time to move on. If it’s a colleague or a boss start looking for another job. Be determined - The person might be part of your social circle, or your immediate superior, or they might recognise that you are distancing yourself and try to claw back the friendship. You need to be clear in your own mind and create a mental separation, even if you can’t create a physical one right now. Set boundaries - Don’t respond to texts, block their number if you can. If it’s a work colleague, only respond to work-related matters and keep the relationship strictly professional. Social media is trickier. Blocking or unfriending can make life awkward if you share mutual friends or work together. I would suggest you unfollow rather than unfriend, and don’t interact with them. The algorithms of most social media sites tend to flag up people you interact with regularly, so by not commenting or responding to them they will gradually disappear from your online world. Stick to your boundaries because toxic people exploit weakness. Be less ‘nice’ - Not to everyone, just to toxic 8

people. Toxic people take advantage of kind people. They thrive by draining your good energy. There is no need to be nasty, simply stop being overly accommodating. Accept you can’t save them - Toxic people show up when they need something: attention, money; a shoulder to cry on. They want a way back into your life. Be determined and maintain your boundaries. If they are in real straits direct them to resources that specialise in the help they currently require. Solving their problem is not your responsibility. Family matters - Toxic family members are particularly difficult to deal with as a clean break is often impossible. But you can still establish clear boundaries, even if they are in your head. Limit interactions, perhaps only phone a toxic parent once a month for 20 minutes, or restrict visits to three times per year, whatever works for you. The point is, take control, visualise your boundaries clearly then stick to them. Treat it like a relationship break-up - Be kind to yourself. We are primed as humans to need relationships, but we don’t need unhealthy relationships. The more time you spend away from toxic people, with positive, loving people who bring joy to your life, the more uplifted you will feel. Make time for people who bring you happiness and let go of those who bring you anything less. IMPORTANT - Please note that there is a difference between people who are truly toxic and people who have a negative outlook because they struggle with depression. Most of us can tell the difference between toxicity and depression. If your friend or family member suffers from clinical depression let them know that you love and support them. Don’t cut them out of your life.

A Good Read The Tattooist of Auschwitz by Heather Morris

There are many books about the horrors of the Holocaust, some fictional, others biographical. This 2018 book is one of the later. Heather Morris had a chance encounter with Holocaust survivor Lale Sokolov in 2003, and over the following three years until his death, he told her the story of his life. Lale was a Slovakian Jew and in 1942, at the age of 25, he was transported to Auschwitz in Poland. Well presented and a bit of a chancer, he managed to get appointed to a job that would allow him to remain alive for the remainder of the war, and give him privileged accommodation and food. He became the Tatowierer whose job it was to scratch indelible numbers into the skin of prisoners. At first glance this might appear to be a depressing story, but it is ultimately not a story of death but a story of love, survival, and determination in the most horrific place on earth. Here the inmates try to maintain some level of existence despite the fear of death every day. Lale meets Gita, a young Jewish woman assigned to work in the camps and they plan for the seemingly unthinkable: a life beyond the camps. What Morris gives us is a story that you won’t be able to put down. A story of hope that will uplift you and reveal the very best of humanity. 14

The Girl in the Blue Coat by Monica Hesse

Adult fiction is not the only genre to venture into Holocaust literature, and age appropriate novels are available for children and young people. One such novel is The Girl in the Blue Coat, aimed at the young adult market. This remarkable novel is fictional, but rooted in an impeccably researched Amsterdam under Nazi occupation. Hanneke is 19 years old and works for an undertaker. However, she also works on the black market, obtaining items otherwise rationed or banned under Nazi occupation. She hates the new regime and the sight of soldiers in her city, but gives very little thought to the treatment of the thousands of Jews living in the Netherlands. That is until one of her clients presents her with a rather unusual request. She wants her to find Mirjam – a 15 year old Jewish girl whose family have been killed and who was in hiding until she vanished. This request takes Hanneke into a world of resistance that she never knew existed, and the true horror of the treatment of Jews becomes apparent. Hesse brings 1940s Amsterdam vividly to life and incorporates real stories of individual heroism (such as the resistance workers who saved up to 600 babies by smuggling them out of Amsterdam) among the fictional characters she has created. Inspired by a trip to Holocaustrelated sites in and around Amsterdam she draws on the real life accounts of resistance writers during the war and Jews in hiding, to present a story of how simple acts and unwitting betrayal can change lives.

Do You Need an Activity Tracker? Activity trackers have become very popular in recent years. Fitbits are the device that everyone has heard of but there are many others. If you’re thinking of buying one, ask yourself these questions: Do you exercise regularly? Lots of people buy a Fitbit or its equivalent because they think it will help them to exercise consistently. But these devices are not magic bullets. If you make any and every excuse NOT to exercise then a Fitbit won’t change that, you will simply make excuses to avoid exercise while wearing a gadget! Would you wear it, and use it? For a fitness tracker to give you actionable data you need to wear it almost all of the time, even while asleep. Some people can’t wear watches or jewellery while they are at work, others hate the feeling of anything on their wrist, and others have sensitive skin which is irritated by straps. If you don’t wear it then it can’t do its job, so it’s not worth buying one. Will you use the app? You’ll need to download the app to your phone and use it if you want to make use of the data your activity tracker collects. Interacting with your device and the app is key to success, so if you can’t commit, don’t buy. Are you a data nerd? Some of us love to monitor our sleep, our heart rates, the number of steps we do each day. We find ourselves endlessly fascinating. The basics of losing weight and becoming healthier are simple, but the specifics for our own body can vary wildly. 16

If you don’t care about specifics and are happy with just eating a bit less and exercising a bit more, an activity tracker might be a waste of money for you. If you have a medical condition or are in training for an event, or just enjoy looking at data, then having organized and detailed information at your fingertips is a great resource. Would my phone do the job instead? There are hundreds of fitness, pedometer and cycling apps on both Android and iOS. If you’re unsure about whether an activity tracker is the right purchase for you try using one or two of these apps for a month. You might find they give you all the data you need. Also, if you find you can’t be bothered to use the apps, then you are very unlikely to benefit from buying an activity tracker. Are you competitive? Some activity trackers (particularly Fitbits) are social. You can add friends, compare step counts and earn milestone badges. You can also create groups and engage in competitions and challenges. While these are good features, they aren’t for everyone. You might not need such a high-spec activity tracker if you don’t want to engage in the social side of things. Activity trackers are useful devices and many people enjoy them and benefit from using them, but they won’t turn a reluctant exerciser into a highly motivated one, and if you aren’t actually interested in all the data, they might not justify their price tag.
