Welcome On behalf of Raymond James Ltd. and myself, I welcome you to Wine on the Mountain 2009! Enjoy your evening by discovering unique wines, tasting delicious food pairings and meeting many community members who have a strong commitment to adoption. We are proud to be the presenting partners for this premier fundraising event in support of the Adoptive Families Association of BC. Who among us has not, at least once, complained about one of our siblings or been embarrassed because Mom or Dad was cheering for us a bit too loudly at our baseball game or a swim meet when we were a child? Far too many children are waiting for that very experience which we so casually dismiss. They would give anything, everything, just to have someone they can call Mom or Dad and to know that they will still be there for them tomorrow. A poster in my office reads, “A hundred years from now, it will not matter what my bank account was, the sort of house I lived in or the kind of car I drove, but the world may be a better place because I was important in the life of a child.” I am an adoptive parent and I believe in this message. Together, this evening, we can move one step closer to our goal of finding a “forever family” for every child who has been waiting far too long. Please raise your glass with me as we celebrate a wonderful evening with friends, partners and adoptive families.

Comment: With towering trees in its backyard and the ocean at its front door, The Teahouse is a true Vancouver style restaurant. Fresh local ingredients and cross-cultural cuisine influences result in comfortable, contemporary dining with the best sunset view. Nestled on Stanley Park’s Ferguson Point for 30 years, The Teahouse has gone back to the tradition that made them famous. On May 14th, at a gala event in the park to celebrate their 30th anniversary, The Teahouse officially dropped “Sequoia Grill” from its title and reverted back to its original name. Janet McGuire, new Teahouse Manager and past owner of the Beachside Café says, “We’re going back to the tradition that set the Teahouse apart from the rest. The Teahouse has become such a landmark in this city because of the people who have experienced so many wonderful occasions here. Countless engagements, anniversary celebrations – you name it, it has probably happened here” General Manager, Mona Trivedi agrees, “We want to recognize the people who have allowed us to be a part of the big moments in their lives.” Recently joining the Teahouse is Executive Chef, Francois Gagnon. Combining classical training and using premium ingredients, he crafts traditional dishes which stand out and authenticate his strong belief in letting the ingredients speak for themselves.

On a hillside overlooking vineyards, sagebrush, and the old gold mining creek that is its namesake, Tinhorn Creek Vineyards has been owned and operated by the Shaunessy and Oldfield families since 1993. The winery is located south of Oliver, BC. Tinhorn Creek sources fruit exclusively from its own vineyards: 150 acres of prime land on two very distinct benches. This land lends to the creation of terroir-driven wines that are classic illustrations of the place they are grown. The 100-acre Diamondback Vineyard on the Black Sage Bench is planted with a mix of red and white varieties, primarily Pinot Gris, Merlot and Cabernet Franc. The 50-acre Tinhorn Creek Vineyard on the Golden Mile Bench is also planted with a mix of red and white grapes, but primarily features Gewürztraminer.

Art of Storage The Art of Proper Wine Storage

Imagine enjoying a perfectly chilled Sauvignon Blanc on a sunny patio or coming home to a jammy, well-aged Cabernet after a long day at work. Wine with food; wine to soothe the senses. Whatever your pleasure, the rewards of the winemakers passion, hard work and talents are profound. In order to ensure you get the most enjoyment from the artist’s handiwork, proper storage conditions are invaluable. Your wines prefer to age in conditions similar to an underground cave. Avoiding vibrations and ultraviolet light keep the aging on track and clear of a condition called “lightstruck,” a state where sulfur and onion like smells overpower the crisp, lovely aromas. Store wines at lower, consistent, temperatures; preferably around 13C to help the flavors develop properly. Lastly, humidity levels should be between 50 and 70% to keep the corks moist and slow the effects of oxidation. Keeping your favorite vintages in the above conditions will ensure years of enjoyment and value. Properly stored wines pay due respect to the winemaker’s talent; we experience what the artist intended the wine to be. Ramona Lehnert

Bottega Petalo Moscato ‘IL Vino Del Amore’ IGT Grab a small handful to provide a delightful summer diversion – perhaps for Sunday brunch in the garden or after a midnight swim on a hot night. Lovely, fragrant, pure green melon, floral and anise aromas are very invigorating, as is the lively yet gentle effervescence. Light, sweet but genteel too.

Argiolas Costera Cannonau di Sardegna 2007 The 2006 Costera IGT is another knock-out effort from Argiolas. It reveals masses of super-ripe fruit, bacon fat and licorice flavours. Today the fruit remains enshrouded in a wall of tannins so one or two of further bottle age is called for, but this is a magnificent wine especially at this level.

Bottega Prosecco ‘IL Vino dei Poeti’ Spumante DOC Prosecco An aromatic vine stock which gives origin to a kind of wine which expresses happiness and poetry. Gathered during a slightly early wine harvest, the bunches of this vine stock, vinified using a Vaslin (soft pressing) system, feature round yellowgreen grapes, with exceptional fruity perfumes of apple, pear and exotic fruit and a fresh taste, with a dry but always fruity aftertaste.

Di Lenardo Pinot Grigio IGT Venezia-Giulia 2008 The candied fruit, lemon zest, orange blossom and mineral notes make this wine stand out.It has a rounded, soft body with well-integrated crispness. Very good, with pineaple, light almond and mango character. Good acidity and a medium to long finish.

Argiolas Costamolino Vermentino di Sardegna 2007 Lemon rind and honey, with hints of sliced orange on the nose. Full-bodied, with ripe fruit and a long, flavourful finish. Rich, clean and steely. Good value in a squeaky-clean, flavorful wine.

Di Lenardo Merlot IGT Venezia-Giulia 2008 Intense nose with blackberry and licorice flavours – mouthfeel is very full but not loaded with tannins. Soft and round with an approachable style and easy to drink.

If your heart is warm with happiness, you’ll need a glass - if sorrow chills your heart, have two! 28

The Show Cabernet Sauvignon Like a Hatch print for an Elvis gig, The Show grabs your attention. Big and bold, it is dominated by full flavours of dried black cherries, jammy preserves and complex toasty, vanilla, and spicy oak. Napa Cellars Cabernet Sauvignon The 2006 Napa Cellars Cabernet Sauvignon reveals vibrant dark fruit aromas of blackberry and plum, with oak and vanilla that integrate nicely with vibrant red berry flavours on the palate. This full-bodied Napa Valley Cabernet Sauvignon cries for beef, lamb and game. Zinfatuation Zinfandel Medium bodies on the palate, the wine displays bright raspberries and blackberries with spice and mocha notes. Errazuriz Estate Sauvignon Blanc The fruit was hand-picked during the second and third weeks of March and taken to the winery where 100% of the grapes were gently destemmed and crushed. All of the must was then lightly cold-clarified and fermented in stainless-steel tanks at 12°– 16°C (54°–61°F). Fermentation lasted 15 to 20 days. Following alcoholic fermentation, the separate lots were aged on their lees for three months to enhance the distinctive fruit character and develop texture and mouthfeel.

29

Errazuriz Late Harvest Sauvignon Blanc Golden yellow in colour with excellent aromatic intensity. Aromas of citrus and ripe fruit lend complexity and freshness to the blend. The characteristics of honey, raisins, and aromas of ripe apricots and quince come from the noble rot on the grapes. The percentage of Gewürztraminer in the blend contributes citrus and floral notes. The palate has a good attack and body, with an excellent balance between acidity and sugar, which makes it feel fresh and fruity.

Hans Herzog “Spirit of Marlbourogh” 2001 This Pomerol-style wine is a blend of merlot, Cabernet franc and sauvignon plus malbec. A big wine with an impressively opaque purple colour and sweet berry fruit mixed with caramel, mocha and vanilla. It displays outstanding concentration, length, intensity and depth, copious ripe tannins and a fine mouth-feel. Castello di Bossi 2003 Chianti Classico Riserva “Berardo”  Deep ruby red in color with spicy aromas of wild berries, tamarind, and licorice. Berardo is soft and velvety on the palate with a structure that is powerful without being aggressive. Delicious notes of raspberries, currant, and tobacco linger on the palate nicely framed by firm tannins. Gianfranco Alessandria VDT L’Insieme 2004 A superb blend of Nebbiolo, Barbera d’Alba & Cabernet Sauvignon that is silky, velvety and intriguing, it offers sweet mineral tones, soft tannins and a long finish on the palate. Part of an association of 9 small producers with proceeds from the sale of the wines are donated to various charities linked to artisanal agriculture and related trades.

32

Rating:

Blue Cheese & Cracked Pepper The king of all cheeses, this cracker definitely shines with a glass of red wine. It’s also great with a seafood pate, or fig tapenade. A simple dollop of cream cheese works fine too... Parmesan & Rosemary Inspired by my love for Italian food, this cracker makes the best crouton for Caesar Salad! It’s great on it’s own with wine, but is also good with a simple soft cheese. Canadian Cheddar & Chive A line of Canadian crackers had to have the classic flavour of aged Canadian cheddar as one of its flavours. With the subtle addition of chives, this is popular one to keep in the cupboard for an afternoon snack!

Maybe ❒ Rumrunner Rich, full-bodied and intriguing, this one-of-a-kind dark amber cider is aged in rum soaked bourbon barrels for over a year. The Rumrunners who operated in our local waters during the era of prohibition were the inspiration for this gently effervescent, semi-sweet cider with notes of molasses, apple butter and rum. Pomona Inspired by Pomona, the roman goddess of apples, this ice cider is hand crafted by freezing then slowly fermenting crab apple juice at cool temperatures.  The result is a sweet dessert style cider with confectionary notes and hints of orange, apricot and clovetruly a nectar befitting the goddess herself.

Wild English Spicy, robust and unrestrained - a traditional Herefordshire-style cider not for the faint of heart. Named for the wild yeast fermentation used on English bittersweet cider apples, this ultra dry, unfiltered sparkler delivers deep earthy aromas and notes of an autumn orchard.  Kings & Spies Kings & Spies is crafted from a blend of local heritage apples – primarily Kings and Northern Spies – yielding a fruit-forward, Italian-style sparkling cider. Proceeds from this cider support Lifecycles, a Victoria organization that promotes local food security.

H oneymoon In ancient Babylon, the bride’s father would supply his son-in-law with all the mead (fermented honey beverage) he could drink for a month after the wedding. Because their calendar was lunar or moon-based, this period of free mead was called the “ honey month,” or what we now call the “ honeymoon.”

Pure Belgian Chocolate Daniel imports chocolates from Barry Callebaut for 3 simple reasons: • Callebaut’s Belgian chocolate making expertise and heritage of more than 120 years • Callebaut’s dedication to quality and guarantee of consistent taste • Callebaut’s commitment to sustainable cocoa communities

Pure Natural Ingredients There is nothing comparable to fresh and natural ingredients like whipping cream and butter.  By using high quality natural ingredients, Daniel’s chocolates taste rich and flavorful without the need of artificial flavor additives.  Your will never find preservatives, artificial flavorings and hydrogenated or tropical fats in our recipes.    Pure Belgian Chocolate Making Techiques The majority of Daniel’s chocolates are shell-molded because it is the traditional process practiced in Belgium.  Although shell-molding process involves more steps and time to complete than the common enrobing method, the elegant and symmetrical finish is well worth the effort.

Callebaut has long been engaged in activities to support cocoa farmers and cocoa communities to maintain a sustainable cocoa industry. It takes a leading role in industry associations such as the World Cocoa Foundation to help support a range of economic, social and environmental programs in cocoa communities in Africa, Asia, Central America and South America. Road 13 wines express the special character of the Golden Mile. Our motto, “It’s All about the Dirt” reflects our belief that great wines start in the vineyard. We respect our vineyards and work hard to farm with integrity. 2006 Fifth Element This wine is about balance, elegance, and a “delicious complexity” factor. There is a lot going on in the aroma and even more on the palate. The flavours run from tobacco through chocolate with much fruit between, while the texture is mouthfilling, but not cloying. The tannins and acidity hold the wine together. The finish is long, which allows time for the complexity of flavours to reveal themselves. This is a classic steak wine.

Feel The wine you taste leaves an impression; you feel its weight, texture and temperature.

2007 Syrah This soft, blousy wine has typical Okanagan Syrah pepper characters and, of course, typical Okanagan Anything fruit intensity. The addition of the Viognier has brought some interesting apricot and fig aromas to the background. The wine is very dry, with fine soft tannins, which should help it match well with some grilled or barbecued protein.

of how it feels in your mouth.

Is it light and crisp?

Is it heavy and rich?

2008 Pinot Noir After a hit of a stylistic digression of the 2007 vintage (not bad, just different) this wine resumes the style of previous vintages. Again, cherry predominates with a “briary” background which comes, year after yeas’, from the particular vineyard. Typical with lower Black Sage fruit, the body is lighter and the tannins are slightly more pronounced. As any good Pinot Noir should, this wine shows fantastically with any tomato based sauces, amongst others...

Comment: Pippins Juicy, expressive, and playful on the tongue – Pippins reveals why cider was North America’s favourite drink before Prohibition. This lively, aromatic semi-dry cider opens up to reveal notes of pineapple, citrus and apple. This sparkler is as robust as our pioneers and the “Pippin” apple trees that flourished on our frontier. abv: 9.2 % (2008)
