MISSISSIPPI POT ROAST

My family of 5 usually only eats 1/3 of this recipe at a time. I make the entire recipe, divide into three servings, and freeze two to be used at a later time.

They love to find new ways to celebrate everyday life together. Make Ahead Mashed Potatoes

Ingredients

• 5 lb. potatoes, peeled, cooked and mashed

• 8 oz. block of cream cheese

• 1/2 c. of butter (1 stick)

• 1 tsp. onion salt

• 1 tsp. seasoned salt

• 1 c. milk or half-and-half

Instructions

• Using a mixer, mix all ingredients together until well blended and fluffy. Place in a 9x13 baking dish and cover with foil. Refrigerate for up to 24 hours until ready to bake and serve, or cover tightly and freeze for up to 6 months.

• Warm potatoes to room temperature before baking. If frozen, place them in refrigerator overnight to thaw.

• Bake at 350 degrees for 30 minutes. Stir before serving.
