Casa Zolle is dedicated to the production of matured raw milk cheeses from Galicia. In addition to matured cheeses, Casa Zolle offers cheeses with DOPPimentón de Herbón and DOP Pimentón de La Vera.The matured raw milk cheeses are creamy with a mild, smooth flavor and low acidity; cheeses with paprika from la vera are spicy with a slight smoky-parpika note while the herbón paprika has green pepper notes typical to Galicia. Both cheeses won the Cincho 2024 award.
