Ingredients
cooking spray 3 cups self-rising flour 3 Tbs white sugar 2 tsp chopped fresh rosemary 1 (12 fl oz) can or bottle beer 1 med apple, diced ½ cup shredded sharp Cheddar cheese 1 Tbs melted butter
Directions
Step 1: Preheat the oven to 350 degrees. Spray a 9x5-inch loaf pan with cooking spray.
Step 2: Sift flour, sugar, and rosemary together into a large mixing bowl. Pour in beer; stir to combine. Stir in apple and
Cheddar cheese until well combined; batter will be stiff and sticky. Scoop batter into the prepared loaf pan.
Step 3: Bake in the preheated oven until top is golden brown, 55 to 60 minutes. Remove from oven and pour melted butter on top. Return to oven and bake for another 3 to 5 minutes more.
Chef’s Notes: Especially good with soup or chili. Try using an apple ale instead of the beer.
Garlic Roasted Carrots
Ingredients
1 lb carrots, peeled 2 Tbs salted butter, melted 2 cloves garlic, minced ½ tsp garlic powder salt and ground black pepper to taste 1 Tbs minced fresh parsley (optional)
Directions
Step 1: Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Step 2: Slice carrots on the diagonal into 1/4-inch slices and place into a bowl. Drizzle with butter and stir in fresh garlic, garlic powder, salt, and pepper. Spread onto the baking sheet in an even layer.
Step 3: Roast in the preheated oven until carrots are lightly caramelized and soft, 20 to 22 minutes. Sprinkle with parsley.
