Professional Business Women of California This 5th annual Sacramento conference theme was “Across the Generations,” it highlighted the fact that four generations are working together in the workplace for the first time in history. It is more important than ever to share experiences and learn from one another. There were many different seminar sessions available to attend. People were learning and sharing. I’m sure there was interest to learn more and take action improving business. The speakers were warm, caring, and inspiring for everyone in the audience. PBWC was created 19 years ago, with interest in bringing skills, inspiration and strategies for individual’s professional and personal growth.

If you have a live Christmas tree, keep the water stand covered. Pine sap mixed with water makes a poisonous drink for your pet. The smell of a live or artificial tree may cause your pet to urine-mark. It may help to bring the tree into an isolate indoor room for a day or so, so that it smells more like “home.” Pick up any ornament hooks, tinsel or ribbon that Sadie of Gold River fall on the floor. Your pet could experience serious internal injuries if it ingests any of these items. Keep holiday treats and candies out of your pet’s reach. Additionally, remember wrapped gifts under your tree that may be food items. People food, especially in excess, can make your pet sick. Chocolate, in fact, can be fatal to dogs! Place holiday plants in an area where you’re pet cannot get to them. Some plants are poisonous to pets, such as berries, holly berries, poinsettias and mistletoe. The Internet is Running on Empty Did you know the Internet is running on empty? Yes, it is true, and the Internet Geof Lambert is a finite resource. If we view the Internet as a glass of wine we are down to the last few sips. When the Internet we use today was invented the most advanced form of music reproduction and storage was a 33 1/2 LP vinyl record. Storing a gig of memory would have cost about $12.5 million, and modems were the size of a typical residential refrigerator. When the original founders of the Internet were planning and drawing the architecture for the network they were very sensitive to using as little memory as possible, and we ended up with an Internet that will allow for 4.3 billion unique nodes, or IP addresses connected to it. Back in the early days of the Internet that was an extremely large number, however, today that number is very small. Around the globe approximately 20% of the population has access to the Internet, and they are using almost all of the IP addresses available. Fortunately some of individuals and organizations that are involved with the operation of the Internet realized we were going to face a shortage of Internet IP address so they developed a solution that will give us a vastly larger capacity to the Internet. The solution is called Internet Protocol version Six, or the New Internet based on IPv6. When IPv6 is the technology that makes the Internet work we will have trillions of trillions of Internet addresses for the world to use. What’s Cook’n With Mom Salmon and Swordfish special in lemon-dill sauce For 1 portion: 5 oz. salmon filet, 4 oz. swordfish steak, assorted vegetables, red skin potatoes. For the sauce: 1 tsp. butter, fresh dill, 50 ml. table cream, 1/2 lemon. Recipe: Cut the fish to 1 oz. strips and arrange them over plastic wrap in the way seen in the picture. Season the fish with salt and pepper then slide your hand underneath the plastic wrap and with the other hand hold the ends of the wrap tight. Flip fast the fish structure over the flat top grill and cook each side for about 3 min., flipping only once with a large spatula. Cook until medium-well, or when the fish strips stick together, and finish the fish in the sauce. Alternatively, you can arrange the fish strips over parchment paper and cook it in the oven. The sauce: Heat the butter in a pan (with some garlic or diced onions if desired), squeeze the lemon in the pan avoiding the seeds, add the cream and the chopped dill, reduce for 1 min. and add the fish for another minute. Serve the salmon and swordfish special with steamed vegetables and mushroom-shaped red skin potatoes or other starch. Pour the sauce over the ready dish. This recipe is entirely my own creation. Over the years I have created many amazing recipes, most of them I don’t even remember, but that one is a recipe I remember.

Vanilla Bean Crème Brulee Recipe for 10 ramekins of Vanilla Crème Brulee: 1 liter table cream, 3 oz. whole milk, 16 egg yolks, 250 gr. sugar, half vanilla bean, 1 oz. vanilla extract. Bring the cream and milk to a boil with the vanilla bean inside. As soon as it starts boiling, remove from heat and let cool down to 36 C. In the mean time, whip the egg yolks with the sugar and the vanilla essence until creamy but still liquid. Pour slowly the yolk mixture in the cream while whisking. Pour the ready mixture in 10 ramekin cups and place them in a hotel pan. Fill the pan with hot water to the middle of the ramekins, cover with aluminum foil and place it in a preheated oven at 350 F. Leave a small hole in the foil. After about 35 minutes start checking every 5 minutes or so. When the crème brulee is set, it is ready. It may look a little bit wobbly in the middle, but it should be ready. Keep in mind that you can’t safely leave it to cook for a little while longer, because you can end up with sweet and expensive scrambled eggs instead of creme brulee. Refrigerate the desserts until completely cold. Before serving sprinkle lightly with sugar and burn the top. If you don’t have a pastry torch you can caramelize sugar in a pan and spoon a thin layer on top of the crème brulee. Cooking tip: You can add a shot of liqueur in the creme brulee mixture, if desired. Suitable liqueurs are all nut-flavored liqueurs such as Frangelico (hazelnut), Disaronno (almond), even Sambucca (star anise).

Orange Citrus Prawns on a bed of Rappini Ingredients for each portion: 1 cup rappini, 2 ounce red, yellow and green sliced bell peppers, 1 shallot, 1/2 teaspoon minced garlic, the juice of 1 orange and lime, 5 prawns, 2 tablespoon flour, 1 ounce light cream, 1 pinch chopped cilantro, 2 tablespoon butter, 1 ounce vegetable oil, salt and pepper to taste. Recipe: In a skillet, heat half of the butter and sauté the rappini, sliced peppers, shallot, and season to taste. Set aside and keep them warm. Peel the tails of the prawns, leaving the tail ends in place, de-vein them, season with salt and pepper (or lemon-pepper seasoning) and dredge them in the flour. Heat the rest of the butter and oil in the frying pan and cook the prawns on both sides, approximately for 2 minutes on each side. In the same pan, while it is still hot, add the orange and lime juice, cream and chopped cilantro and reduce the sauce until thick. Serve the prawns over the sauteed rappini and drizzle some of the sauce over them and serve the rest on the side.

Manicotti Florentine Recipe Ingredients for 10 Manicotti: 10 dry lasagna noodles (the 4 “ wide, straight noodles), 1 cup frozen spinach, thawed and drained, 1 1/2 pound ricotta cheese, 1 egg, 1/2 tsp. garlic powder, 2 cups tomato sauce, salt, pepper, freshly grated Parmesan cheese. Recipe: Bring 2.5 litres of water to a boil and drop the lasagna noodles inside one by one. Stir gently to make sure they don’t stick together and boil for 12 minutes. Drain the noodles and immediately cool them down in iced water for 1 minute. In a mixing bowl combine the spinach, ricotta cheese, egg and garlic powder, and season to taste. Spread the filling over the lasagna noodles, leaving about 1/2” at the end not covered, and roll them. Spread 1 cup of tomato sauce on the bottom of a baking dish and arrange the manicotti with the edge of the rolled noodle facing down. Spread the rest of the tomato sauce over the manicotti and bake them in a preheated oven at 450 F, until they are soft and the sauce becomes thick. Sprinkle the Parmesan cheese over the manicotti and cook for 3 minutes more. Cooking tip: The leftover manicotti can be wrapped in cling wrap and frozen for whenever you need a quick lunch.

Caramelized Plantain and Brie Dessert Recipe For this recipe that serves as my logo you will need: Plantain, Brie Cheese, Berries and other fruits, Walnuts, Lemon custard and sugar, mango for decoration. Buy a yellow, ripe plantain, not when it’s still green, because when it is ripe, the plantain is softer and more manageable and tastes better. Grease the sides of a ramekin cup for crème brulee and put parchment paper on the bottom. Cut a long slice of the plantain and fold it along the inside of the ramekin cup. Fill the plantain ring with chopped Brie, walnuts, berries and other diced fruit of your choice and bake in a preheated oven at 375 F. until the sides of the plantain turn brown. Sprinkle with sugar and cook for 5 minutes more or until caramelized. Keep at room temperature for 5-10 minutes before serving. Serve with lemon custard on the side.

Spaghetti Sauce This is one of those dishes I usually make a lot of so that I’ll have leftovers. It actually gets made it two stages so that I’ll be putting in fresh veggies every time I heat it up. This isn’t anything special, but a bunch of people wanted to know how I made it. So here ya go. The quantities listed below will serve one person with some leftovers.

1/2 lb lean ground beef 1/3 cup red wine 16 oz tomato puree 1 tbs dry basil 1/2 tsp salt 1/2 tsp pepper 1/4 cup diced celery

1/4 cup diced onion 1/4 cup diced carrot 4 cloves garlic 1 tbs olive oil 1/3 cup cubed onions 1/3 cup cubed mushrooms 1/3 cup cubed bell pepper

1. Brown the ground beef. I usually put the browned beef in a sieve to remove as much fat as possible, but that’s just me. At the very least spoon off the fat. 2. Return the meat to the heat and add the tomato puree, wine, basil, salt, pepper, and the diced veggies. Make sure the veggies are diced very finely. Let the mixture start to bubble a bit and then cover it and turn the heat to low. Let it simmer for 20 minutes, stirring frequently. 3. Make sure your pasta will be ready in a few minutes. 4. Press the garlic into the sauce. Stir it in, cover the sauce, and turn the heat off. This part is done. Usually I’ll make a big batch to this stage and then freeze some for leftovers. 5. A few minutes before the pasta will be done, heat the olive oil over medium high heat. When it’s hot toss in the cubed veggies and saute them for 3-4 minutes. They should still be a bit crisp, don’t cook until they’re browned or wilted. 6. Ladle in about a cup of the sauce and heat through. It’s done. Serve over pasta.

Don’t Wait For Tomorrow

Focus your time and money: Don’t let other people or things distract you. There’s an old Scottish proverb that says: “Fools look to tomorrow; wise men use tonight.” Procrastinators don’t just delay doing crummy daily chores. They also put off important life decisions. But experts say procrastinating is a habit that can be broken. “It’s human nature to put off doing something that isn’t screaming to be done at this very moment,” said Andrea Kay, a Cincinnatibased workplace consultant. “Most folks don’t think about the future. They deal with it when its smack dab in front of their face.” Rita Emmett, author of “The Procrastinator’s Handbook,” offers easy tips to get you off the procrastination treadmill. Use a timer and devote about an hour to a task you dread doing. Plan to do that task before doing more enjoyable things. Another tip: Reward yourself for a job well done—coffee or a little time off might be incentives. You should also recognize behavior that doesn’t seem like procrastination but still causes delays, Emmett says. She calls this “being the happy helper.” For instance, you know you have a presentation due in a couple of days, but a friend calls and asks you to help her move. You oblige. But now you’ve pushed back finishing your presentation and you’ll have to scramble to get it done. Procrastination can also cause career setbacks, Kay says. Putting off updating your resume until a headhunter comes calling isn’t unusual for many people. But why?

“Some people are just hoping and praying that they won’t need to look for a new job,” Kay said. It’s easier to update your resume every six months, she says. It takes only a few minutes and keeps you prepared if an unexpected opportunity comes up. Another way to procrastinate is to put off networking until you get a pink slip. You won’t be as successful if you tap people only when you need them, Kay says. “Keep in contact with people in your field—friends, former co-workers and bosses— and other professionals on a regular basis,” she said. “Make a five-minute phone call monthly, and try to meet or talk to one person you don’t know but want to know.” Some forms of procrastination are situation-based. Consider this: A colleague constantly takes more credit for projects on which you partnered. The situation nags you, but you fear a confrontation and avoid bringing up the issue. “(You) think it might hurt someone’s feelings, make the person cry or get emotional and things will get out of control, or (you) won’t be liked if they bring it up,” Kay said. If you stop seeing the confrontation as intense and negative, you can make it a conversation between two people about an issue that needs to be on the table, she says. If it makes it easier, ask a neutral third party in facilitate the conversation. But do it. Your next promotion might depend on it. “Think about how much you’re losing by not dealing with it,” Kay said. By Adelia Cellini Linecker
