“Love yourself instead of worrying about the idea of other people loving you”

ebruary is the month of love for those of us who still believe in fairytales (you

can take that however you want). Love has so many definitions, we love our

children, we love our significant other, but the most important love that we typically

let ourselves embrace later in life is the love we have for ourselves. As I look back through the rabbit trails of my life, my biggest regrets, as well as the women friends with whom I share my secrets, is that I didn’t fall in love with myself first. At my young age of 30, okay 40 . . . okay 40 something, life lessons as well as maturity have helped me grow into the world of self-love. I now have the mind set that I no longer associate with those who drain me and suck the life out of me. Whatever your age, whatever your gender, I encourage you to fall in love with yourself. It’s the best love you will ever find. Buy yourself presents, wrap them beautifully and open them with a bottle of wine, send yourself flowers with a note attached, “I’ll love you always” and gift yourself a trip alone. Allow yourself a small vacation; write a part of that book you’ve always wanted to write. Send notes to those you’ve always intended to, saying the things you’ve always wanted to; just because. The old clichés that time waits for no one, and that today is all we really have, should be a part of our everyday mantra. 2015 allows us time to review regrets and recommit to our future.

This month, The City Magazine pays homage to love in all shapes and forms. Whether it’s from loving the simple features our great city has to offer, in particular our amazing culture and the food it brings with it, to the art and wide range of people living within our city limits. This month, I am really excited about our editorial highlighting our very own Mexican Food Trail where our writer Valentin Sandoval tracked down a few of the oldest and most distinguished El Paso Mexican restaurants our borderland has to offer. This issue also pays homage to Chef Bobby Griffing, a culinary icon for El Pasoans since he has cooked all over the world, from El Paso to Mexico City, to New York City and his current international project in Dubai. The interview conducted with him marks a first for me; thanks to technology Skype allowed us a face-to-face interaction as his culinary masterpieces are being created for royalty in Dubai.

So this month in the spirit of love do something special. Whether it’s getting a big group together and dining with friends, or simply taking a walk on the slow side and doing something special for yourself – wherever your path takes you, choose love and the rest will take care of itself.

“It’s always a chef’s dream to open a place in their hometown,” says Griffing wistfully with a slight sense of nostalgia and pride. “I really miss that food truck.”

The food truck Griffing mentions was one of my favorite downtown attractions on the weekends while in college. Friends and I would join flocks of other nightlife-lovers after last call to the Square Cow food truck that was usually situated near Union Plaza for late night burgers. There’s something about eating a juicy -- not greasy -- burger at 2 a.m. in a party dress that’ll always be satisfying.

“Yes!” says Griffing, “That’s exactly what we wanted.”

In 2012, Griffing decided to take his talents global once more.

Working again with English, Griffing has opened 34 restaurants around the globe that include locations in Mexico City, the Bahamas and Tokyo. Griffing says he’s enjoyed and learned from every city he’s been in, but has a particular attachment to Tokyo.

“The way of living, and the pride in presentation in everything that’s done over there …” Griffing says it inspires him.

Take a look at Chef Griffing’s Instagram (chefbobbyg), and you’ll notice that Griffing’s dedication to artfully presenting his culinary masterpieces translates regardless of what city he happens to be in.

Delicate seared scallops bathed in white chocolate and cauliflower, hamachi tartare, and lobster cantonese are among some of the delicious photos Griffing posts upon mastering the recipes.

Griffing has been in Dubai preparing to open yet another restaurant for English, and says that the architecture and overall environment have affected him in a positive way.

February, 2015 “They take inspiration from places all over the world,” he says of the Middle East’s rapidlygrowing cultural development. “They make it bigger and they make it their own.” For Griffing, it’s a prime creative atmosphere that encourages him to challenge himself abroad.

As Griffing’s star has risen, he’s been featured on popular news shows such as “The Today Show,” “Top Chef,” “Iron Chef,” and “Regis and Kelly.”

But part of him really wants to return to Texas.

Griffing says he’ll always have a soft spot for El Paso, and that some of the best restaurants are still around. Among his hometown favorites are L & J Cafe and Cafe Italia.“That pizza is some of the best in the world,” he says, which is high praise from someone who knows his food.

But what about Griffing? Surely he has a dream place that he’d like to open -- possibly in his hometown (nudge, nudge).

To this he smiles.

Yes, he has thought about it.

“Yeah, something small. Thirty seats, no sign, reservations only. A speak-easy kind of place.” A place like that seems like it could (and would) do well in El Paso’s ever-evolving market. “El Paso is really on its way,” says Griffing, noting how proud he is of the

ne of the frontrunners of the movement, Sandor Katz, writer of The Art of Fermentation, believes food has potential beyond what we currently understand.

“There is this creative space between fresh food and rotten food where most of human culture’s most prized delicacies and culinary achievements exist,” says Katz.

As its popularity rises, the idea of feasting on fermented foodstuffs shouldn’t bring about despair or nausea; there are reasons that both your palate will rejoice with each spoonful of kimchi. For gusto, supporters of fermentation argue that the process intensifies flavors and develops textures.

Acids and alcohols mature as the mixture is set away and produce tastes that are unique to fermentation. The method is beneficial for preserving food long past a regular shelf life while keeping it safe for consumption.

Fermentation’s history dates back thousands of years to the Neolithic period, and involved different cultures such as the Egyptians and Babylonians. The process is still prevalent today with wine, cheese, and beer being popular and well received contenders.

The scientific practice itself happens when bacteria and yeasts consume sugars and starches and then release acids, gases, and other bacteria. The ‘live culture’ that results is chock full of good bacteria. Studies suggest that these good bacteria can help by resetting the bacteria balance in your gut, aiding digestion and possibly playing a role in immunity.

Even a festival in honor of the bacterial concoctions will be held early February in San Diego, California as Americans fall in love with fermented foods and the benefits they offer. As for what’s ahead, we like to focus on seasons and our menu actually changes according to the season. In the eight-month period that we have been open, we have changed the menu three times already. Our customers’ taste palates change every season; therefore, we need to accommodate those changes. In order to do that, you need to lead the trend and you need to predict how the taste palate is going to change. We like to play on seasonal fruits, veggies, and fish. For the holiday season we added chocolate stout to the menu because customers crave sweeter foods and drinks during the holidays, but as we are getting into the spring season, we are going to accent citrus.

Mediterranean Fig Salad with Balsamic Dressing Ingredients Mixed greens 4 cups Feta cheese ¼ cup Tomatoes large 2 (cut in ¼) Red onion 1 tablespoon Olive oil- virgin ½ cup Italian herbs 1 tablespoon Cranberries ¼ cup dried Cucumber 1 (sliced) Balsamic vinegar ¼ cup Pine nuts 1 tablespoon Slivered almonds 1 tablespoon Water ¼ cup Dried figs 6 cut in ½ White cheddar 4 oz. cut in cubes For the dressing: Place all the ingredients in the blender (extra virgin or virgin olive oil, balsamic vinegar, salt and water, Italian herbs) until the dressing become smooth.

Organic Olives and Artichoke Chicken Cutlet Parmesan With Tomato Basil Sauce Over Quinoa Pasta Serving Size: 4-6 Servings Ingredients Chicken cutlets 2 - 4 pounds Coconut flour 2 cups Tomato sauce 4 cups Organic eggs 4 eggs Olive oil 2 tablespoon Panko crumbs 4 cups Organic mozzarella 1 large package shredded Italian seasoning 1 teaspoon Fresh basil 6-8 leaves Cherry tomatoes 6-8 organic cherry tomatoes Artichoke hearts 6 whole Black olives 6 large pitted Green olives 6 large pitted Pimento peppers 3 large red peppers sliced lengthwise, ½ in thick Garlic cloves 4 cloves Sea salt ½ teaspoon (Himalayan) Crushed pepper ½ teaspoon (coarsely ground) black Parmesan cheese ¼ cup In three different bowls, place each item, the flour, eggs and panko. Pound the chicken cutlets until they become thin, set aside. Then place each cutlet in coconut flour; eggs and panko. Put each cutlet into a sauté pan with olive oil and place over medium heat. Also, traveling to Mexico, and falling in love with the vast cultural depth of Mexico in general, has influenced my work.”

My pieces are very detailed, and can take months to complete. In building a collection of work, this is maybe not an obstacle, but a challenge,” while others are more expected and culturally related, “As an emerging artist, finding funding to produce my work is an obstacle.

My pieces are somewhat non-traditional. Though my work has a very broad appeal, the consumers for my pieces are as unique as the work itself. There are more art consumers that would be inclined to purchase a painting, versus a freestanding, larger scale mixed-media sculpture.”

The personal and commercial challenges have not slowed the growth and enthusiasm of this young talent. “An artist’s credibility is relative to showings and exhibitions. Emerging artists face the challenge of establishing credibility as they build their history of showings. The Mulvane premier of my work was a milestone and significant step in establishing my credibility as a working, contemporary artist.” This strength of character, like his aesthetic taste, was forged due to his youth, “Growing up in the El Paso border community, and now living and working here, is a huge motivator behind not only my work, but my identity as an artist. Because I am a non-Latino artist who embraces strong Latino themes in my work, there is already somewhat of a ‘border’ element in what I create.” This affection for his home not only influences him but inspires him to contribute back, “I not only draw from this cultural influence, I want to be part of the energy behind elevating the recognition of how rich our local art community is. I want to show that there can be amazing, credible art that originates from a community that might not necessarily be considered an art center.”

With brave souls such as Wayne Hilton creating works based on the border and sharing it with the nation at large, perhaps the Paso del Norte region will truly become an “art center” and that would be his greatest creation yet.

SPORTS nce summer starts to close in, it becomes evident why El Paso, Texas is known as the Sun City. Things just got a whole lot brighter with the El Paso Sun Devils Semi Pro Football Team charging into packed stadiums full force all across the southwest. The Rio Grande Football League, formerly known as the New Mexico Premier League, includes teams from Texas, Arizona, Colorado, New Mexico and other states along the Rio Grande. Our hometown stars, the Sun Devils, are a non-profit and charitable organization that are ready to set the tone for the region this year. Under the leadership of an impregnable and dynamic coaching staff, it is safe to say that the team’s future is bright like a fire one has never seen, and it’s highly unlikely that any team will be able to put out the flames.

HEAT! The overseer coaching the team to success is a man with a track record of leadership. The reins go to the honorable and well-known Manny Frias who has

service to bring to the table. Frias presides over the West Side Sun Devils football,

basketball and baseball programs and has been doing so for a whopping 20 years.

When it comes to superior coaching style, Frias is nothing short of an expert and

has proven this by making a name for himself in the Borderland. The Sun Devils are also privileged to have the support and backing of Defensive Coordinator Ernest L. Troutman III along with founders David and Darrell Parker. These individuals are ready to do anything in their power to ensure that the players make it to the top.

The journey across the Rio Grande stretch begins on February 28th; the team will play their first game well-prepared mentally and physically. Strategically, the Sun Devils are completely restructured which will give them the upper hand against former competitors. Players are also being introduced to a different coaching style, still the same “in your face defense” but a completely revamped agenda is in store for the offensive game. One player to look out for this season is Mitchell Johnson who was named West Texas Defensive Player of the Year. The rock solid M.V.P. linebacker from Louisiana is ready to dominate with his team and as he calls them “family.”

Aside from the team’s main focus on victory they find it equally important to also give back to the community. On January 5th the Sun Devils hosted a Polar Plunge event
