My goodness, 2016 is whizzing by and it’s almost May already! We love Spring here at H&N, it signifies so many new beginnings and we have some fantastic new things in this edition to keep you interested for hours. This time of year kick starts so many things, maybe a new healthy lifestyle to make sure you’re looking good in time for summer, no doubt you will be looking at your home, inside and out and making plans for home improvements, getting the garden in order and what about all of the beautiful garden furniture around just now; it’s all about outdoor living and giving yourself the best lifestyle possible throughout your whole home. So we’ve got it covered, bringing you some fabulous ideas and great local businesses to help you create your dream home and be the fittest, healthiest version of yourself possible. Spring also kicks off ‘race season’ and it’s such a good day out that we decided to give you some helpful race fashion tips to make sure you look the part, especially if you go to a ‘Ladies Day’ meeting, it’s so important to dress correctly. You will feel a million dollars and you are sure to have a brilliant day. If you want to have an Ascot Ladies Day experience closer to home then see what The Stansfield Arms are doing on June 16th! HE HAS A LUXURY LINE WHICH HAS GAINED HER THREE BRITISH FASHION AWARDS, AN OBE FOR SERVICES TO THE FASHION INDUSTRY AND THE FIRST SUCCESSFUL HIGH FASHION BUSINESS MODEL ROOTED IN SUSTAINABILITY. INITIALLY ACCUSED AS BEING THE ANTITHESIS OF LUXURY FASHION FOR HER ECO FRIENDLY ETHICS, TODAY IT’S THESE SAME VALUES THAT SET HER APART FROM THE REST AND MAKE STELLA McCARTNEY A DESIGNER FOR THE FUTURE. They also go a long way to explaining Stella’s highly lucrative collaboration with Adidas. Partners in sportswear since 2004, Adidas has provided her with invaluable access to sustainable materials and garment technologies and in return has gained two successful womenswear lines; ‘Adidas by Stella McCartney’ and ‘Stellasport’. In 2012 the prosperous pair created the ‘most successful Olympic range ever’ with items selling out both in the UK and internationally. As her GB 2016 Olympic kit is due to be unveiled in April, H&N take a look at how Stella McCartney has taken first place in the sportswear arena.

A self proclaimed ‘woman designing for women’, Stella understands that ladies are more likely to enjoy being active if they look and feel great whilst doing it. ‘I find that a great kit encourages and inspires me to exercise.’ With her wealth of fashion industry knowledge and personal experience as a keen horse rider and gym aficionado she delivers flattering designs with distinctive Stella McCartney style. Professing to over think every detail in order to achieve a favourable fit, there is not one seam or stitch that McCartney’s critical eye does not consider. She explains, ‘It’s important to me that if you are on your way to the gym, you aren’t embarrassed of the way you look’. Not only do ‘Adidas by Stella McCartney’ and ‘Stellasport’ allow women to dress for sport without compromising their style, but they are also genuine sports performance brands too. While some fashion houses do sportswear that lacks in performance, it’s a challenge which Stella enjoys. ‘Anything can go down the runway, where as with this range if it doesn’t perform, it’s not in’, she explains. Materials such as ClimaLite, Climacool and TechnoFit are in her own words ‘exciting and modern’, but are also sustainable materials which she believes ‘are essential to solving the sustainability conundrum’. After range upon range of successfully amalgamating stylish sports clothing and sophisticated performance wear it’s not surprising that Adidas asked McCartney to be their creative director for the Team GB 2012 Olympic kit. Stella immersed herself in every aspect of the


kit’s requirements and through talking to the athletes discovered there had never been such a ‘comprehensive view of their needs’ taken into account before. Apparently however, the biggest challenge for her and a request from the athletes was to make them ‘feel and look like a team’. Her success in doing so and making both the team and Britain proud quickly became evident in record breaking sales. As the new 2016 kit is soon to be unveiled, Adidas leave us eagerly awaiting with a tantalizing statement; ‘Three years ago we set the benchmark. Bringing together our innovative sports technology with the designs from Stella McCartney will allow our athletes to perform better than ever before’. Not so surprisingly, the Spring 2016 ‘Adidas by Stella McCartney’ range was inspired by ‘athletes’. The collection has a strong retro vibe and as such debuts the ‘Studio Onesie’, a tight fitting all-in-one with racer back. Intense seventies colours such as burnt orange, powder blue and maroon teamed with exotic animal prints such as snake and zebra make a bold statement across the range. The campaign saw the designs modelled by American track and field professional Tori Bowie who applauded the collection, ‘I love everything about the range. It’s bursting with explosive colours and exotic prints, but it’s the technical features that truly stand out.’ Such features include internal cooling spots, flatlock stitching for speed enhancement and super lightweight fabrics. Stella McCartney’s long term goal is simply to encourage women to do sport. ‘Women’s sports are undervalued and my whole reason for doing the collaboration with Adidas was to give women a platform, an importance and pieces they deserve’. However, she still feels there is much work to be done and proclaims, ‘I’m all for re-educating women on how they wear sports clothes’. We can’t wait to see what she has in store for us!

RACES

The style to aim for is flamboyant and glamorous, yet sophisticated and well groomed.

hoosing an outfit for the races can be difficult at the best of times. You can go racing without having to dress in your finest, but big events such as royal ascot and spring festivities provide the perfect excuse to frock up. Dressing up for the races is unlike dressing for any other event, there are few do’s and don’ts to keep in mind when planning your outfit... REMEMBER IT’S DAYTIME Dress appropriately and stick to etiquette. Think classy, sophisticated and head to toe style. Do think well cut dresses that fall to the knee or contemporary takes on the classic suit. Don’t wear outfits mores suited for a nightclub. Leave the short skirts, midriffs and sequins for the evening. Do remember to bring a jacket or pashmina to cover up when the sun begins to set. You will be outside most of the day and don’t want to be cold at the end of the day. Don’t be heavy handed with the make-up. The natural light will expose excess application, so make sure you think natural, well blended make-up. The style to aim for is flamboyant and glamorous, yet sophisticated and well groomed.

FASHION BY SEASON Spring – the time to embrace bright bold colours and floral prints. Open toed shoes, wedges and pumps are appropriate shoes for spring and summer, and hats and fascinators incorporating bright colours, florals and sinnamay (straw). Autumn – time for tailored suiting and felt or structural hats and headpieces in muted tones; think black, grey, tan and aubergine. Lay off the fake tan and shoestring straps. Closed toed shoes and booties are appropriate with stockings for Autumn and Winter. Black and White are ALWAYS in fashion!

So, decide between going teetotal in the fabulous tower heels or wearing more sensible shoes so that you will still be able to navigate the uneven terrain and steps up to the Grandstand after a few drinks!

ACCESSORIES Matching shoes and handbag or cute clutch are the perfect accessories to complement your outfit and avoid wearing to much jewellery or bling on a race day. Your shoes, handbag and hat should be enough

DRESSING FOR GENTLEMEN Picking everyday office suits with a bold shirt and tie combination is the standard attire, however don’t be afraid to experiment. The modern day man is beginning to pay much more attention to detail. Think about incorporating patterns, a fine pinstripe in your suit, a check on your shirt, a stripe in your tie. Do pay attention to your shoes, pointed boot and stylish lace-ups might be your thing, but always make sure they are polished and clean and don’t clash with your outfit. Do match accessories and pay attention to detail. The extra touches can make a great difference with cufflinks, belt, watches, ties and ties clips and a hat if you choose to wear one. Do wear a flower in your button hole if the occasion calls.

HANDBAG ESSENTIALS There are a few things a girl should always have in her handbag, but there are some MUST haves you frankly should not be without! Sunglasses, Lipstick (for touch-ups) which you can also use as a blush if needed, cotton tips, perfect for fixing eye and lip makeup, Band-Aids, for blisters, Party Feet and safety pins for emergency repairs! HIGH HEEL ETIQUETTE The races is an all-day affair and can involve walking around (in the grass) and plenty of standing up. The shoes you choose to wear can make or break your day, so ensure you choose wisely. Do wear shoes with a thicker heel that can prevent you from

FRONT RUNNER FIX UP AND LOOK SHARP AT THE RACES THIS SEASON WITH OUR STYLE GUIDE

T

here’s always been a lot of emphasis on what the girls are wearing to the races, and who’ll have the best or most outlandish hat, but men’s style is just as important, so what you wear at the races should be something on par with your female counterpart. Let the ladies bring the glamour, and the gents bring the style. I’m not talking about the fashion rules just yet, I’m talking about the actual dress code or guidelines different festivals and events have in place. They will differ, they can even differ on the day you go, or even the enclosure you are looking to enjoy your day at. Some are a bit dressier, some a bit more casual, so to get the anxiety out of the way it’s best to check their own fashion advice on what is and isn’t allowed. WEARING A SUIT AT THE RACES The most obvious thing to wear is a suit. A day at the races should be fun, and you don’t want to look like the same as you do every day in the office, so you can wear something which is a little bolder or brighter than your usual black suit you may wear at work. It’s the perfect opportunity to show off your own personality and add a bit of style and colour to an outfit, and a great excuse to get dressed up. You can try different colours such as plum, light or dark blues, cream or beige colours will also

work well in the summer and give you more of a lighter look. You can look at something patterned, rather than a plain grey colour, try a modern check pattern in a mid-grey colour. MIX AND MATCH JACKET AND TROUSERS COLOUR COMBINATIONS Separating the colour combinations is something which is really exciting and could very well set you apart from the rest of the crowd. It means exactly what you think it does, simply wearing a different colour bottom to top; so that’s a different colour jacket to the trousers. This type of tailoring and fashion has become increasingly popular and is a popular especially for the summer seasons. For this to work you have to make sure that you find trousers, a shirt and a jacket which complement each other well. Using core colours is a good way to make sure everything matches up well; Dark blue or navy trousers should work with a grey jacket, to finish off with a light blue shirt. On the flip side, some light beige trousers with a navy jacket and a classic white shirt will work well too. FOOTWEAR – KEEP IT SMART Your footwear should be smart, so we’re talking shoes, not trainers, not even smart ones. That said, it doesn’t mean they have to be boring. In terms of colour and style they should be fitting with the rest of your outfit. If you’re wearing a suit you may want to keep it smart with a pair of plain black or brown Oxford’s or Derbies which will keep the tone of the outfit smart and slick. If you’re going for a more colourful look with separate jacket and trousers or chinos, you could try a pair of brogues which can still be smart but inject some colour into your footwear, or a pair of smart suede shoes.

SHIRTS – STICK TO TIMELESS COLOURS If you’re going to inject some colour into your look with the suit/jacket/trousers, you’ll want to calm down the colour palette and neutralise your look with a shirt in a timeless colour which will keep you looking distinctive but not like you’re over doing it. Timeless colours include white, greys and blues, match these up with the rest of your outfit. A bright white shirt will go with almost anything, if you have any doubts, and it will set it up nicely for a tie. DON’T FORGET A TIE AND POCKET SQUARE Being smart is all in the little details, so you should not neglect them. You’ll want a tie to go with your shirt and jacket combination, so make it a good one. Again, just because it’s quite a formal piece that doesn’t mean it has to be plain and boring. Go for something with a colour which compliments the shirt and jacket, inoffensive patterns and stripes are a really good idea and add more of an edge than a plain tie would. You’ll want a pocket square too, depending on the rest of the outfit you can go for the simple but classic square fold, which is as easy to do as it sounds.

Whether you choose to play it safe and elegant with a nice fitting blue suit, or you go down a more colourful look with separates, remember you’re there to have fun. Think about the outfit as a whole rather than single pieces, making sure the colours of different pieces work well with each other.

It’s a superb day out and with an abundance of race courses to choose from in Yorkshire, there’s every reason to try it this year. The race season has just started and whether you just want to go for some fun with a group of friends, as an incentive for your company or do the extra special race meeting days such as Ladies Day, you will absolutely love your experience. Many of the regions race courses are in historic market towns too so there’s always the opportunity to take a mini break and stay over for a night or two to take in all that the location has to offer.

Hunt Racing and continuing the flat racing it started for the very first time last year. Yorkshire’s premier National Hunt Racecourse is home to some of the most competitive races staged throughout the jumps racing calendar, the current racing season started in mid-October 2015 and finishes at the end of May 2016. Experience the thrill of the Steeplechase and enjoy a great day out with family and friends or entertain clients in some of the finest hospitality facilities in the North of England. The North bank of the River Wharfe is steeped in horse racing history and it is here that the

CROSSHILLS A thriving village with plenty to shout about...

The village is overlooked by two monuments called the Pinnacles which stand above crags on the Cowling Moor skyline. These are small towers: Sutton Pinnacle is square with internal staircase and topped by a crenelated parapet; Cowling Pinnacle is an obelisk. They are known locally as the Salt Pot and Pepper Pot. The countryside and scenery of the area is truly spectacular in this part of Yorkshire and with so many major towns and cities just a short journey away, residents of Cross Hills enjoy the relaxing benefits of country life and yet a short journey transports them to the buzz of the city.

Discovering Yorkshire CROSSHILLS There are some places coming to our attention where all of a sudden there seems to be a buzz, an excitement, an increase in local businesses setting up, new businesses moving into the area and it quickly becomes a hotspot where people want to live, raise their family and enjoy a very nice standard of living. This is exactly what is happening In Cross Hills, a picturesque village situated halfway between Keighley and Skipton in the Craven district of North Yorkshire. The village lies on the south bank of the river and is surrounded by the hills of the eastern Pennines including Steeton Moor, Cowling Moor, White Hill and Kildwick Moor. Cross Hills is now such a great place to live, the diversity of businesses and shops provide everything within the one area and unless residents really want to, they don’t need to leave the village for anything! The Main Street is chock a block with fabulous independent businesses and shops from Hard Rock, the coolest of barber shops to the most amazing designer clothing at Debney. You have your choice of beauticians and hairdressers, florist, card and gift shop, everything for the home plus tea rooms and restaurants. Schools are right on the doorstep and there are parks and walks in abundance. There’s even a very successful performing arts school; The May School of Dance & Theatre Arts, where children and adults alike can explore their artistic side. Something as a visitor you notice very quickly is how well maintained and clean everywhere is, there’s not one bit of litter to be seen and everyone has a smile on their face and says hello! While there recently myself on a beautiful sunny spring day, and I wandered on foot to neighbouring Sutton in Craven Park and it was full of local residents enjoying the many facilities the park has to offer, it’s easy to see why this area has become such a hot spot. If you are looking for somewhere to visit for the day, Cross Hills is definitely worth putting on your list. Do a spot of shopping in the eclectic range of shops, then enjoy lunch or afternoon tea in one of the restaurants or coffee shops, or why not pack a picnic and go to one of the beautiful parks. There is so much to see and do and I haven’t even touched on the history that Cross Hills is steeped in. That’s something I will leave you to discover for yourself and who knows, you might also fall in love with the place and the people and decide to move there or open your own business in this lovely Yorkshire village!

When Scott was made redundant from his long term job and Terri was ready to return to work after being a stay at home Mum, they began to look into different business ventures. It was absolutely perfect timing that Forget Me Not went up for sale in their village just as they began looking. It seemed too perfect to pass up - one of Terri’s favourite types of shops to visit is a card and gift shop and so the opportunity to create one of her own was all too enticing. They both knew they wanted to create something really special to bring to Cross Hills, so in only six days they completely stripped the shop down to bare walls and refurbished the entire thing! They did keep the original counter to retain a little history from years gone by.

For example, they stock an extensive range of stunning Honey Bee Ceramics hearts, impressive Bronte Stone slate signs, the beautiful Lah Di Dah cards and a great range of local scenery cards, which are all made in Yorkshire. A real confidence booster and great motivator to the two is their incredibly friendly and loyal customers, some of whom have shopped at Forget Me Not their entire lives. It really means a lot that the business is continuing to receive so much support - some of the customers have even been known to bring in gifts to say thank you!

It was important to them that they kept on all the same card companies as before but also to add lots of new card and gift ranges in order to guarantee they provided the best range of products possible. They now stock a wide range of products including Joma Jewellery, Woodwick and Stoneglow candles, East of India gifts, Manhattan Toys, the Wrendale

After such a successful and fulfilling two and a half years Terri and Scott decided that they wanted to expand further in their business ventures so Terri has moved a little further up the high street in the village where she has opened a ladies clothing boutique, named Debney, with Scott continuing on in Forget Me Not. Every now and then H&N discovers a new business that is so exciting we want to shout about it and let everyone know. This is certainly the case with our latest lovely little find - the very bijoux Debney in Crosshills! Debney started life as merely a pipe dream of local resident, Terri DebneySuccoia. Whilst on holiday with her daughter Honey, Terri imagined her own boutique in her home town of Crosshills and on her return from sunnier climes she decided to explore the possibility of actually making this dream come true. Terri knew exactly what she wanted; a boutique stocking designer labels and unique pieces, some even handmade, designs it would be difficult to find without an unenviable trek to a major city centre such as Leeds or Manchester. After visits to trade shows such as the Pure Fashion Show at Olympia in London, Terri found the perfect designers and styles for her clothes, accessories, shoes and handbags, ranges she would be happy to stock.

After securing the perfect premises, an ex-solicitors office on the corner of Crosshills Main Street and Holme Lane, her husband started to rip out and refit the interior to Terri’s specifications, a labour of love doing 90% of the work himself. The couple even found themselves foraging things while out walking, a large piece of driftwood from the beach hung from the ceiling now makes the perfect rack to hang the jeans collection from. There are lots of unique things about Debney, from the handmade tissue paper giant flower backdrop and window displays, designed by Terri herself, to the sparkling chandelier, and stylish furniture, creating a glam backdrop for a fab shopping experience. FRESH AND FUN NEW FITNESS TREND ARRIVES! Clubbercise, a new dance fitness class that is storming the nation has arrived in West Yorkshire, brought to you by Caroline Harris of Fitness2Glo. We wanted to know more so we grilled Caroline on your behalf! So Caroline, how does a Clubbercise class differ from other fitness classes? Clubbercise classes are taught in a darkened room with disco lighting, lasers and flashing glow sticks set to uplifting club tunes. They play anything from 90’s classics to the latest chart-toppers from the likes of Rudimental or David Guetta. What made you decide to start running Clubbercise classes as part of your timetable? I love finding new ways to help people keep fit - it’s something I’m really passionate about and when I discovered Clubbercise, I just knew people in the Yorkshire area would absolutely love it. The routines are easy-to-follow, which means you can really let go and enjoy the music. Plus, the classes appeal to a wide range of people because they’re so much fun it doesn’t feel like a workout! Is this an exercise or dance class? Both. The choreography is a blend of simple aerobic and street dance moves offering high and low impact options aimed at all abilities.

What makes Clubbercise so unique? The music is a mix of 90’s classics up to the very latest floor fillers. What makes it so unique is that every class takes place with the main lights out, disco lights on, and all routines incorporate our trademark flashing glow sticks - providing a bonus arm workout! NOW RECRUITING FOR 2016 Back in October an incentive was announced that three Yazz staff members would have the fantastic opportunity to travel to Barbados in March. The criteria was simple, to be the lead member of staff in achieving various goals within the Yazz brand. There is nothing like a competition to increase motivation between the excellent and creative Yazz team to offer the highest standard of customer care. In January, Yazz owner Paul Shakeshaft announced the winners out of 30 members of staff were Alice, Senior Stylist, Rawdon Salon, Charlotte, Creative Director and Manager at the Guiseley Salon and Jemma, Creative Director and Manager the Rawdon Salon. The team flew out from Manchester Airport on Sunday 28th February and stayed at the beautiful Palm Paradise, Paynes Bay, St. James.

It was in a beautiful setting, close to the famous Sandy Lane and the accommodation and facilities were first rate and the Yazz team couldn’t have been looked after any better. The week was filled with Paul’s lively itinerary, beginning with a visit to the popular Boatyard beach party, involving drinks, pier jumping and the most beautiful sunset. During the week the team visited the most beautiful restaurants, hotels and bars seeing how the rich and famous live. The week past for too quickly and we flew back to UK, suntanned with a hint of pink and with great memories of a lovely week. Thank you Paul for such a wonderful opportunity and a holiday that will be remembered for many years to come. Hard work always reaps rewards and working for Yazz enables any member of staff access to the best training and benefits and be part of a successful team.

EXHAUSTED? Time for a weekend detox at Champneys with our travel expert Sue Heady

I arrive frazzled - and later than intended due to slow traffic – at Champneys Tring one Friday afternoon, but as soon as I sweep inside the majestic gates and through the 200 or so acres of parkland up to the redbrick mansion, a wave of calm descends. At reception, a young gentleman whisks away my bags away to my room while another hands me a welcome – and after a long drive it is particularly welcome – fresh fruit juice, along with a white waffle robe and some slippers, so that I can go straight to my pre-booked spa treatment. (Pre-booking of treatments is highly recommended, particularly at weekends.) For the next two hours, I am cocooned in a Decleor package, which sees my face and body deep cleansed, massaged and moisturised; it is a wonderful way to start a mini detox weekend, as dead cells are removed from face and body, before beneficial oils are rubbed in, leaving both body and mind totally relaxed. After my treatment, there is just time to check out my room before dinner. It’s beautifully decorated in neutral shades of taupe and mushroom, with a huge comfy bed. Thick curtains deaden any noise – given the parkland location, an owl hooting at night perhaps? – and block out all light, ensuring a great night’s sleep. Doors lead out onto a private patio with loungers and a seating area, overlooking the gardens and tennis courts. 36 | WE ARE HERE & NOW

Over dinner, I read all the welcome literature, which includes a map of the resort, a sensible idea as otherwise it would be easy to get lost, or miss something, as Champneys is packed with facilities. There’s a gym area with a tight schedule of daily classes (ranging in intensity from stretch and relax to indoor cycling), a 25-metre lap pool, a huge spa area with treatment rooms as well as new relaxation room, complete with plunge pool and meditative fire, a detox and wellbeing centre, and a thalassotherapy area, as well as steams, saunas, Jacuzzis, a juice bar and elegant rooms in the heart of the original building for a quiet read. Dinner starts with a small helping of hummus and olive oil for dipping tasty brown bread. It is followed by a salmon tartare and avocado puree starter, grilled chicken breast with sweet potato chips and steamed vegetables for a main, and a heavenly strawberry “cheesecake” as dessert. It is all super healthy and, thanks to some well-used herbs and spicing, totally delicious. I opt to dine alone (for pure relaxation purposes), but there is always the Champneys Table for those who want to natter with other solo visitors. I retire to my room once I have eaten and feel so chilled out, I get an early night and a great night’s sleep. An early breakfast of a fresh fruit and vegetable “shot”, plus a bowl of fresh fruit and goats’ milk yoghurt, then it is out on the road with James, one of the fitness instructors, for a brisk hour-long Morning Walk through the grounds and along the lanes around Champneys, followed by a 30-minute aerobic Wake-Up Workout. A quick change into my fluffy robe and then I am off to the new Detox & Wellbeing Centre for a Wellbeing Ritual. This involves a detox drink, a 30-minute foot bath, a session in the Thalassotherapy pool, time in the oxygen and salt chamber “to cleanse the lungs”, a seaweed wrap (that is so authentic it makes me smell like Tenby beach when the tide’s gone out) and time on the waterbeds of the relaxation room with two cotton buds soaked in some pungent oil inserted in my nostrils to “clear my airwaves”.

At lunchtime, I try the Lighter Diet, which is for those with serious weight issues, such as people seeking to lose substantial amounts of weight in readiness for an operation. A spring greens soup is followed by chicken breast with Mexican rice and guacamole. Once again, the dishes are mouth-wateringly good and filling, too, so I don’t need a pudding, which is lucky as it is not offered on the Lighter Diet. I make a mental note to order myself a Champneys cookbook when I get home. After a busy morning, I thoroughly enjoy doing very little on Saturday afternoon: I flick through magazines found throughout the resort, I read my book, I snooze. The one thing I definitely do not do is check my phone or tablet – I have promised myself that this weekend will include a digital detox, too, and I stick to it. Having no one and nothing to distract (or irritate) me is very refreshing. Dinner that night is potted duck with crispy flatbreads, followed by panfried salmon with couscous and roasted cherry tomatoes, then a fruit crumble with crème anglais. Again, all very tasty, but I definitely have a tinge of food envy when my next door neighbour’s Roquefort and beetroot salad with walnut dressing arrived. After another long, deep and restorative sleep, breakfast is a slightly heartier affair than the previous day. There is such an enticing array of food on offer, I succumb to some delicious rye bread with apple butter, in addition to my fruit, and a cup of tea. There are plenty of other options should guests them, including poached egg with avocado and a healthy cooked breakfast, with chicken sausage and turkey bacon that comes in at just 418 calories. I skip the morning walk and opt instead for some water “sports” instead: a few leisurely laps of the indoor pool, before a visit to the outdoor Jacuzzi where my feet are tickled and my back pummelled by the water jets, while I enjoy a great view of the Champneys original building. Built in 1874, in French Second Empire style, it has been a wellness centre since 1925 –

celebrating its 90th anniversary last year – and you really get the feeling that they know what they’re doing with all that history behind them. Then it is back to the gym, as I am determined to try the Da Vinci class that I’ve heard several other guests mention. A new fitness trend from the US, Champneys was the first place in the UK to introduce it in late 2015. With trepidation, everyone is assigned a board, with various rubber bands attached, which we then pull and push in a series of moves that combine resistance work and cardiovascular training. It certainly provides a really good workout for the entire body and I feel sure I will ache for days after, but I don’t. Another point in its favour! Knowing that my time at Champneys is, sadly, coming to an end, I choose my last activity to be meditation, as I feel the need for a final dose of calm before heading home. The guided session, led by a wonderful gentleman called Laurie, ticks all the boxes. Meditation has never come easily to me, despite numerous attempts, but – for the first time – under his guidance, I feel that I’ve “got it”. So much so I buy the CD and have used it at home since, to great effect. As I drive out of the gates of Champneys after 48 hours, feeling fully rested, restored and revitalised, I wonder how long the feeling will last. At least till I get home it seems: my neighbour tells me I look ten years younger! And while it is easy to slip back into the stresses of everyday life, I bring some useful lessons home with me: delicious tasting food can be healthy (and I now have a Champneys cookbook to prove it) and meditation really can help ease daily pressures. I also realise that, while a week-long holiday or more is wonderful, a couple of days away – if you make a concerted effort to relax (and that means without 21st century gadgets) – can be extremely beneficial too. One thing is for sure: it won’t be long before I’m back at Champneys for another mini break! hnmagazine.co.uk | 37

Here at H&N Magazine, we are privileged to visit many amazing places enabling us to feed back to you our readers, the best restaurants to dine and where to go for a weekend break or holiday. It’s important to us that we offer a wide variety of choice and it’s also very rare that we discover somewhere as special and unique as The Devonshire Arms, Beeley on the Chatsworth Estate in Derbyshire. Set on the Chatsworth Estate in the Peak District National Park, this friendly country inn with rooms is a cosy place for a getaway and only a short drive or a twenty minute walk to the house and gardens. Our drive there from Leeds took an hour and a half, it was a lovely spring day and driving through the Chatsworth Estate was beautiful. The grounds are immaculate and the sight of Chatsworth House in all its splendour viewed from the top of the hill was breath taking, we couldn’t wait to visit the house, but that was something planned for tomorrow. Driving through the estate to the hamlet of Beeley where The Devonshire Arms is located was an experience in itself, the abundance of wildlife wandering around and even walking alongside the car was magical, especially the deer, there were hundreds of them. Beeley is so quaint, a picturesque hamlet within the Chatsworth Estate since the 18th century when the Duke of Devonshire bought Beeley Hill Top and then much of the property piecemeal. The Devonshire Arms itself is no less quaint and unique with its Barter Board where locals can offer their own fresh produce 40 | WE ARE HERE & NOW

in exchange for beer! What a great tradition, this place is steeped in history and to find such things still in existence is wonderful. If you like authentic old buildings, complete with wonky walls, dipping ceilings and beams plus the obligatory creaking floorboards, then you will absolutely love this place as much as we did. But wait…what was that? Our accommodation was across the road in a large medieval house that had been split into deluxe accommodation, could this get any better? Unpacked and settled in, we wandered across the road back to the pub part of The Devonshire Arms for a couple of drinks and got so settled, chatting to the staff, other guests and locals that we suddenly realised how long we had been there and it was time for dinner! We wanted to stay where we were seated in the old and atmospheric part of the pub to have dinner and were readily accommodated by the restaurant team. There is a conservatory part to the restaurant called The Brasserie, which can take much larger number of diners but we wanted to stay in the original part to keep the historic experience going. Now for a pub with rooms and a restaurant, the menu is just a small indication of the standard of food you can expect. Our starters comprised of Goats Curd Pannacotta with heritage beetroot, cauliflower puree, pomegranate and lemon and Seared Scottish Scallops with salt baked pineapple, kohlrabi slaw and crispy scallop roe! Impressed? We were, the presentation and flavours were superb. What a start to the meal, we were eager to see if the standard continued with our main courses; Buttermilk and Lime Leaf Poached Cornish Monkfish with chickpea, wild nettle, brown shrimp, saffron broth, and crispy banana dumplings, and Seared Marinated Local Prime Derbyshire Pork Tender Loin, perry braised pork faggot, heritage beetroot fondant, kale and hazelnuts. Wow, wow and wow again! Everything was expertly cooked, the mix of flavours was divine, portion sizes were perfect and again the presentation spot on. At this point I need to make


mention to the team looking after us during our stay, some worked in both the hotel and the restaurant with such friendly professionalism and pride in their work, they helped to make our stay all the more special and memorable. After a suitable break, we ordered one dessert to share, Baked Chocolate Mousse with honeycomb ice cream and bitter pecan crumb, (which was positively yummy), and we also shared some of the cheeses that we had had our eye on since sitting down, which were now perfectly ripe and paired with a glass of port, completed our faultless dining experience beyond our expectations. By the way we chose a bottle of Sauvignon Blanc 2013, Nelson Estate, Paarl, S.Africa to accompany our meal which we were delighted with. Finally to bed and after a great night’s sleep, (I usually don’t sleep very well unless I am in my own bed!), we took in the fresh countryside air with a brisk walk in the estate to build up an appetite for our freshly cooked breakfast. Nothing mass cooked and kept warm here! The breakfast buffet offered freshly made fruit salad, farmhouse yoghurts, a selection of cereals, nuts, homemade granola, stewed prunes, apricots with fresh vanilla, croissants, pain au chocolate, pudding shop tea loaf, toast, marmalade, jams and Nutella. Then we had a choice of The Beeley Breakfast, boiled free range eggs with soldiers, traditional porridge oats with wild honey or sea salt, Scottish smoked salmon and creamy scrambled eggs, Claire’s sausage tomato and bacon buttie with brown sauce, Victorian breakfast for two to share or the vegetarian cooked breakfast. It was The Beeley Breakfast all the way for us! Could we possibly eat any more I hear you cry…no! We were now in desperate need of another good walk, this was the perfect time to visit Chatsworth House.

After wandering around the impressive grounds admiring the huge fountain, the sculpted gardens and walking along the river, our visit was all too soon at an end. Once upon a time, unless you lived in a castle, a staircase was a simple thing, built of wood and standing against the wall. Today, it can be a central design feature able to transform an interior with one dramatic statement. Curved, cantilevered, spiral or suspended, in steel, glass, timber, copper or aluminium - infinite possibilities have been opened up by clever design and engineering which can turn the staircase into the most important focal point of the house. Staircases are fast becoming a priority for architects and developers, seeing the potential to add that ‘wow factor’ to a house, be it a new design or a renovation project. Homeowners have historically spent a fortune on their kitchens and bathrooms, rooms that are often out of view and only have a lifespan of around ten years. Staircases are another matter altogether. This is an area of design that has been neglected in the last fifty years but 46 | WE ARE HERE & NOW

is now gaining importance. Today’s interiors are often open plan, lightfilled spaces where the staircase can make or break the overall design. A lightweight, transparent structure in glass, for example, suits this type of interior as it continues the open feel and doesn’t take away natural light. In addition, a striking, well-designed staircase adds value and can set the tone for a whole house, helping to woo potential customers with that all important first impression. Changing a staircase is not something one should embark on lightly. However, if it blocks out light, is not well integrated into the house or if it is in a rickety condition, it might be time to look at an alternative. A natural time to think about a new staircase is when other renovation work is already taking place. As aesthetic and structural implications need careful consideration, each staircase has to be planned individually. SPRING FORWARD Selling up this spring? Make sure your home is in the best shape with our top tips on impressing potential buyers

Struggling to sell your house? You are more than likely emotionally attached to your house, after all it is your home. However, this could be the reason you can’t see past the broken light fixtures, weed-choked garden and residual smell of fish from the salmon you cooked for yesterdays dinner. Take heed, home sellers - first impressions really do count. Exterior appeal Stand outside your home and compare it to your neighbours’ properties. If you do this and it makes you feel slightly mortified, it’s likely that you’ve already failed to impress your potential buyers. Ask yourself: When was the last time I mowed the lawn? Have I ever cleaned those gutters out? Could those window frames use some fresh paint? Were those paving slabs always that uneven? Don’t those children’s toys have somewhere to be? Can people see my house number behind that embarrassingly overgrown shrub?

Speaking of clutter Get rid of it. If you’ve accumulated a lot of bits and pieces over the years (and you definitely have), now’s the time to either a) throw them out, b) give them to charity or c) find proper, neat places for them in a closet or cupboard. You might even consider a car boot sale to purge your house of all that unnecessary ‘stuff’. Do whatever you need to so that your buyers never have to lock eyes on it. Another idea is renting storage space to temporarily keep any extra furniture that could be making your house feel crowded. Be radical - remove half the furniture in your living room and see how spacious, sleek and light it looks and feels without it. As a general guide, there should be enough space for people to move around the room unhindered, and enough furniture to convey the room’s purpose. Spring clean Clean! Clean as though your life depended on it. We’re not talking about a quick once-over. Serious attention to detail is necessary here. Dust the skirting boards (if you don’t know what a skirting board is, yours probably really need dusting). Clean the windows (inside and out) and then polish them for extra shine. Dust light fixtures and furniture, vacuum like there’s no tomorrow, get rid of cobwebs, polish taps and mirrors, bleach tile grout, scrub the oven clean - it may sound excessive, but prospective buyers are notoriously nosy and judgmental. Control your pets, if possible, remove


pets altogether when you’re showing your property. Ask a friend or family member to take them off your hands for a while. Presumably your estate agent knows what they’re doing and has sold some houses before. Why not leave them to get on with it? No offence, but prospective buyers don’t really want you hovering over them while they’re trying to nose around your home. If they feel awkward, they’re much less likely to linger in your home and get the full impact of how great it is and how they’d very much like to buy it. Repair, restore, revamp The devil is in the details, and the sale of your home could be hampered by simple little things that you’ve stopped paying attention to. Try to look at your home from the perspective of your buyer, and think about the details that would impress or dismay you if you were in their position. Then take care of those details immediately. For example replace broken light bulbs, fix leaky taps, fix doors and drawers that don’t open or close properly, repair cracks in the walls, touch up paint and repaint altogether where necessary (in a neutral colour) etc. Let there be light Lots of natural light usually tops the list of things people are looking for in a home. Fortunately, there are other ways to maximise the light in your house - natural or otherwise - and give the impression of having plenty of bright, airy space. Replace dim light bulbs with higher wattage or repaint darker rooms with lightcoloured and light-reflecting paint. In areas of your house that are particularly dark, install some extra light fixtures and prune any trees or vines that are casting shadows inside the house. Follow these simple rules and in no time you will be receiving those long awaited offers.

Being a regular visitor to Weetons, there was one thing I had never had and that was the Afternoon Tea. Having heard great things about it and with afternoon tea being one of my food guilty pleasures, it seemed a ‘must do’ to try it out. Order placed, our tea was with us within minutes and it was lovely to relax and enjoy a cup before the food arrived. There is a choice of hot beverage but for me, the tradition of afternoon tea would not be the same unless there was a good cuppa included. You can also have a glass of Prosecco but I was driving so stuck to the tea! The food arrived, looking magnificent on a tiered cake stand and my goodness there was food aplenty! Starting with ‘A Taste of Weetons Sweet and Savoury Treats’. Tomato, basil and parmesan bruschetta, Romanov gravadlax, beetroot and caviar toast, Weetons award winning rare roast beef sandwich and Mini Caesar Salad cup. All extra tasty and just enough to tempt you into the Yorkshire cream tea of homemade scones and 58 | WE ARE HERE & NOW

preserves, rum and hazelnut chocolate truffle, the Weeton mess and Elderflower and fruit jelly! Now we all have our favourites that we leave until last, and mine is always the cream tea with homemade scones. Everything was so delicious and as full as I was getting, I paced myself to make sure I didn’t run out of steam before I reached my favourite, which by the way was superb. Copious cups of tea later, afternoon tea was eventually completely devoured, however I couldn’t leave without wandering around Weetons sumptuous food hall and deli. This is definitely not only popular with the residents of Harrogate, Weetons is always full of destination visitors too and every one of us leaves with bags full of delicacies and goodies. So when you next visit Weetons, give yourself plenty of time to enjoy delicious dishes from the seasonal menu, including grazing boards filled with tasty local meats, fish and cheeses; Weetons award-winning roast beef and rocket sandwiches; or a boosting Superfood salad complete with spinach, rocket, avocado, walnuts, pine nuts, Yorkshire feta, blueberries, blackberries and a raspberry vinaigrette. Don’t forget the mouth-watering deli is packed full of local and homemade delights including freshly prepared salads, pies, quiches, charcuterie and olives, alongside a wellstocked cheese counter oozing with over 50 different cheeses. I think the piece de resistance is the butchery and meat counter. The skilled, experienced butchery team can give help and advice on everything from the best Sunday roast to the perfect barbecue. Just try one of the juicy steak burgers to taste the difference. Weetons is an award winning one stop shop, you can easily spend at least two hours here and feel like you have had a fabulous day out! THE TWISTED BURGER COMPANY LANDS AT THE YARD, ILKLEY

Created back in Jan 2011, Twisted Burger Company is undoubtedly a God Daddy of the British street food revolution. Now enjoying a sixth successful year in the business, their passion for patties is undeniable. However, it’s not only their gooey burgers and crispy fries which promise to feed the soul...

As music lovers, their naughty grub comes with a side order of great tracks as standard and it’s this mission to deliver a unique combination of ‘burgers and beats’ at independent venues across Yorkshire which has given them an edge. Latest to be recruited by Twisted Burger is live music venue The Yard at Ilkley. H&N popped by to sample their creative offering and find out exactly why T.B.C.is so hot in Yorkshire right now. On arriving there is an instant realisation that there is no gimmick here. The commitment to ‘burgers, beats and good times’ is just that. The Yard offers classic, relaxed British pub vibes at their best. Warmly greeted and seated, we peruse the menu over a pint of IPA whilst enjoying a playlist of the freshest music curated by the Tramlines festival team. The menu is imaginative and exciting making choosing tricky, but as all their meat is fresh and locally sourced and all their relishes and sauces are made in-house to secret recipes created by executive chef Alex Malins, you surely can’t go wrong? ‘The Hallouminati’ (double halloumi patty, roasted red pepper and jalapeno salsa) was a surprise favourite for a meat eater like myself. Too often vegan and vegetarian options are a careless afterthought, but not at Twisted Burger Company. They take pride in cleverly assembling each combination of patty, relish and sauce with the same attention to detail in order to delight every palate. ‘The Hallouminati’ was easily the best thing we ate all night and in a gluten free bun too! Great also was the ‘Drop it like it’s Hot’ (double beef patty, spicy refried beans, Monterey Jack, Dead Twisted BBQ sauce, hot mango salsa and Harley House relish). Did exactly what it said on the tin; a delicious heat 60 | WE ARE HERE & NOW

kick for any spice fan. However, the most intriguing offering due to its bacon patty was the ‘Rasher’s Delight’ (double bacon patty twisted slaw, monterey jack and russian dressing). The patty, a minced pork similar in taste to a salty gammon steak was perfectly paired with cool crunchy slaw, definitely one worth revisiting for. If you’re going to go full beast mode whilst you’re there (and we suggest you do), then there are some sinful sides too. The ‘Big Pimpin’ Fries’ (pulled pork, manchego sauce and dead twisted BBQ sauce) are unbelievably good. The creamy manchego sauce was a truly gluttonous treat but honestly worth every calorie. We sampled the ‘Jalapeno Business Fries’ too (cheese, guacamole, sour cream, house relish, diced jalapenos and cajun seasoning). The fries equivalent of nachos, not as good as the classic, but tasty all the same. All fries come skin on and portions are huge so be sure to share otherwise prepare to be rolled out of the door when you’re finished. Finally, if there is any room left, a sweet tooth can be satisfied with one of four indulgent shakes. The ‘Peanut Butter Wolf’ (peanut butter, caramel, marshmallows and cream), or how about the vegan friendly ‘Almond Van Helden’ (Almond milk, peanut butter, chocolate and chocolate sprinkles). For an extra £3, you can harden up any of the innocent shakes with a cheeky double too. Why not? The whole package at The Yard is a winner. Great food, great music, great atmosphere. The Twisted Burger Company values work harmoniously alongside those of The Yard making for a friendly and relaxed experience. ‘Whether it be a lazy Sunday afternoon with friends or a wild weekend till the early hours’, there’s no doubting that The Yard along with T.B.C. can cater for all ‘burger and beats’ needs. INTERVIEW WITH THE CHEF Mark Puckey comes from a long line of fisherman in Polperro near Looe, instilling in him a passion and knowledge of Cornish seafood from the outset. Inspired by a family of great home cooks, Mark took his first job in a local seafood restaurant at the age of 14. At 16 he started his formal training at Mid-Cornwall College,which included time at a catering college in Gijon, Northern Spain.

His restaurant received recognition from the Good Food Guide for three consecutive years and in 1999 Mark was featured in ‘Cornish Chronicles’, a six part documentary series on ITV. After Rick ate at Mark’s restaurant during filming for one of his series he invited him to work at the company where he has been for 15 years.

Once qualified Mark took a position as head chef along Fowey River but after two years decided to explore cuisines further afield. A one-way ticket to Bangkok ignited in Mark apassion for Asian cuisine. His culinary experiences expanded to include Thailand, Laos,Indonesia, Malaysia, Australia and Spain. Most recently he was invited to the 5* Conrad Hotel and Michelin-starred Cuisine Cuisine, in Hong Kong to teach Western fish cookery and also to develop his knowledge of Chinese food and culture. In 1996 Mark returned to Cornwall and set up his own

He joined the company as head chef of Stein’s Deli in 2000 where he remained for two years before being appointed to the position of head chef at Rick Stein’s Café in 2002. After a year at the café, Mark spent three years as production manager for the business, developing products for the restaurants and retail aspects of the business. In October 2005 Mark took on the position of head chef lecturer at Rick’s Stein’s Cookery School.

WHAT IS THE MOST ESSENTIAL ITEM IN YOUR KITCHEN? Passion and talent WHAT DO YOU COOK AT HOME THAT YOU NEVER COOK AT THE RESTAURANT? We cover so many types of cuisine in our cookery school there’s not much we don’t cook there. A CHEF ALWAYS WANTS TO BUY THE BEST POSSIBLE INGREDIENTS: HOW DO YOU CHOOSE YOUR SUPPLIERS? We always choose local and respect the seasonality of our ingredients. Having a strong relationship is so important too – we invite our suppliers into our cookery school all the time to chat to our students about their produce too.

WHAT DO YOU CONSIDER TO BE YOUR BEST DISH TO DATE? My most memorable show dish was a Cornish surf and turf using seared venison and grilled garlic Cornish crawfish with triple cooked goose fat chips. WHERE DO YOU GO WHEN YOU WANT TO EAT AT A RESTAURANT? I love trying new restaurants but most recently ate at Rick’s restaurant in Sandbanks. The head chef, Pete, and his team did a great job with the hot shellfish and Indonesian seafood curry. IN YOUR RESTAURANT - WHO WOULD BE YOUR IDEAL DINER? Any one that is open-minded with an adventurous palette. WHO HAS BEEN YOUR GREATEST INSPIRATION? Rick Stein, Keith Floyd and Robert Carrier when I was younger.

DO YOU HAVE A SECRET OBSESSION? My Big Green Egg – a ceramic charcoal grill/oven YOUR ALL TIME FAVOURITE MEAL IN A RESTAURANT, AND WHERE IS IT? I had an amazing Kobe beef salad and pan roasted black cod dish at Asia de Cuba in London. WHAT IS YOUR FAVOURITE COMFORT FOOD? Anything cooked by my Mum. Turtle Bay Leeds, Rum , Reggae Jerk, it's a social 'ting...

If you haven’t heard of Turtle Bay before, it’s a Caribbean restaurant that has been taking the nation by storm, celebrating the lively, colourful, soulful and, above all, delicious experiences that the Caribbean has to offer - they are all about enjoying bold spicy food and drink in a vibrant lively atmosphere! In the past year they’ve opened a number of restaurants across the country and fortunately for us, now right here in Leeds!

There’s a very special bit of authentic Caribbean to be discovered in Leeds city centre. A lively restaurant inspired by Caribbean beach shacks and street hawkers, with a jerk pit barbecue. Caribbean cooking is one of the world’s great cuisines, but, is criminally under-represented among our restaurants.

slow cooked tender pork cheeks marinated in Caribbean spices for 24 hours, cooked in coconut milk, coriander, sweet potatoes, chilli, fresh garlic, ginger and pineapple chunks. Now there’s some great Caribbean flavours right there in that one pot! It was amazing and as one who doesn’t like things too hot, this was spiced up just enough for my palate. Our other main course was from the Jerk Pit BBQ section of the menu. Half Jerk Chicken (£10.10), 24 hour marinated and grilled, with sour orange chutney and coconut shavings. We also had spiced fries and roti on the side – big mistake!

If you haven’t yet found Turtle Bay, the restaurant is part of a chain of 25, but doesn’t feel like it. Making the most of its location, it has strung up festive-looking lights and planted trees and greenery to give a holiday feel. It might be a long way from the tropics, but once inside you certainly feel like you are in a Jamaican beach shack – all driftwood, hand-painted signs prompting ‘One Love’, moody club-lighting and shabby-hip bar and serving areas complete the setting

As delicious as this food was, it was super filling and although I managed to polish off my one pot, there was masses of jerk chicken and the fries and roti hardly got touched, so don’t let your eyes be bigger than your belly here, apparently it’s the spices that make you feel full quicker than normal.

The good humour and banter from the waiting staff is infectious and it’s easy to join in, especially after one or two of their cocktails (!), we had a couple of Passion Rum Punch and Caribbean Pimms…it would have been rude not to! The menu has all the usual Caribbean suspects – jerk chicken and pork, goat curry, plantain… but also plenty of options for those who can’t cope with spice, or meat and fish. We were advised that the best way to negotiate the menu was to choose starters to share – with the Beach Food Platter (£12.95) being very popular and exactly what we chose. This formidable slab of wood came with fiery jerk wings, pepper roti, sweetcorn fritters and garlic flatbread, super good. The jerk chicken was good and hot and the other elements on the platter gave a really good selection from the starter menu with variations of heat in each. My Curry Pork Cheeks was chosen from the One Pot Mains (£10.70), 64 | WE ARE HERE & NOW

We struggled on the pudding front as we were so full, however…after a respectable resting period we decided to share BBQ Pineapple, grilled, sugared pineapple, rum caramel sauce, coconut ice-cream and shavings. This seemed the lighter option and it was the perfect pud to share. If you can fit in a pudding (all £4.85), and you probably owe it to yourself to try, there are some totally tropical picks including our BBQ pineapple, and banana cheesecake. A naughtier, desert is the notorious rum tasting board – a choice of four tots of its 15 aged and richly-spiced varieties, plus a can of Ting for £18. Yes we also tried the rum board and it was the best way to finish off a meal I can remember! It didn’t last long but has stayed much longer in my memory of a very different and enjoyable dining experience. It all makes for a great alternative to the usual city centre options, we will be returning soon with friends – this is the perfect place to have fun and an experience to share in a group, One Love! You need to be friendly, approachable and knowledgeable.” How long have you been working with Arc Inspirations? I have worked for Arc Inspirations for the best part of 9 years. I’m now General Manager of Banyan Leeds which opens on the 23rd April.

What’s the best thing about working here? The best things about this company are the training and the incentives that we run twice a year. The incentives are every 6 months, 1 for the winter and one for the summer. The incentives themselves cover mystery visits, standards audits and sales targets amongst other things. The winners of the incentives get to send 7 people from their site to either Ibiza or Meribel. I have been very lucky to be part of several winning teams and I have been to Ibiza 3 times all expenses paid!! The training is also fantastic and our company has brought through many fantastic bartenders and managers.

What’s the most challenging part of your job? I would say trying to balance work, rest and play. Having to work at Christmas, Father’s day/ Mother’s day etc is always very difficult but it’s also very rewarding. Also the long and sometimes unsociable hours can be difficult but it’s just part of the job.

What skills have been put to the test since joining the Arc Inspirations team? Initially when I first started in the industry it was just a case of learning all the cocktails and how a bar actually works. As I have developed into being a General Manager organisation was something that needed work and I used to be terrible at doing excel and spreadsheets etc.

What are your best-selling dishes? Our best-selling dishes from our other Banyans are the dishes from the main section. These dishes are very flavoursome and also good value for money.

We have a wide variety of dishes from Chicken Skewers to Steak and Ale pies. The healthy options have also been going down well – especially our Salmon and crispy kale superfood salad.

What drinks are going down well? The Gin Copas form our new Gin concept are flying out across the other Banyans. Each Gin is paired with its own garnish and specific Fever Tree tonic to complement each gin. My personal recommendation is our Brockman’s perfect serve which is garnished with fresh raspberries and grapefruit and lengthened with Fever Tree Indian Tonic water.

Tell us: What makes this restaurant so special? The main reason we are special is that we are adaptable. The bar transforms as the day progresses. During the day we have ladies who lunch, business men and families. As the day progresses the lights get lower, the music gets louder and it turns into a high volume cocktail and wine bar. We also spend a lot of time training our teams as we feel the service our customers receive is so important and we need them to be adaptable to our customers as well.

If you were a customer today, what would you order from the menu? I would order our Portuguese half flattened chicken. It’s a beautiful dish with plenty of flavour. The chicken is marinated overnight and then flattened with a brick covered in foil. Its smothered in piri piri sauce and served with skin on fries and a cooling crème fraiche dip.

What do you think makes great customer service? Customer service is something I take very seriously, without customers you have nothing. There is so much competition around right now and there is a new bar or restaurant opening every other

week. You can sometimes forgive a poor meal or cocktail but you never forget poor service. I believe great service is delivering a personal touch and adapting your style of service. You need to be friendly, approachable and knowledgeable. I train my teams to deliver fantastic customer service and we always endeavour to ensure every customer has a fantastic experience.

Where have you visited locally recently, where the service was excellent? The best service I have received recently was at Pintura in the Trinity. The waiter gave his name, made personal recommendations, the food was fantastic and the atmosphere was very vibrant.

Where would you eat out on your day off? I try eat somewhere different every time I go out. My recent favourites are Pintura, Gusto and Manahatta. The main things I look for are friendly staff, great atmosphere and good value for money.

What do you cook at home? I generally eat quite healthily and my speciality is a cottage pie using turkey mince and plenty of vegetables topped with sweet potato mash and feta cheese. Gin Copas

Filmore & Union was founded on the idea that true health means making the best decisions for your body so you can live a healthier, happier lifestyle, full of nutrient dense food to help your body support you, but does it taste good? Our fashionable foody, Lorraine, went to get the skinny... Cast your mind back to 31st of December 2015. It’s N.Y.E. and everyone is rejoicing; the power of the N.Y. resolution will strike at midnight. It’s the one magical night of the year when it’s guaranteed we go to bed with visions of a ‘better us’ and wake up transformed like in a fairytale. For me the transformation was nothing short of miraculous. Able to forgive myself of the previous years sin and draw a line in the sand, I could now go forth armed with my untouched yoga matt and shiny new vegan recipe book to become the healthier me I’d dreamed of. Fast forward to April 2016 and it’s safe to say the local takeaway won’t be scratching me off the Christmas card list just yet. Tired of eating the same 5 dishes in my ‘healthy meals’ repertoire, the eager, motivated version of myself who had been so full of promise disappeared as quickly as the leftover selection boxes. I needed a saviour. Filmore & Union in their own words are ‘a fresh and exciting food and drink concept that focuses on pure, healthy and great tasting ingredients’. Their menu of nutrient rich, wholesome food provides an oasis amongst the mass of eateries serving up sugar laden, ‘low fat’ foods and proceesed grub. Born from owners’ Adele and Will’s frustration at the lack of healthy restaurants and take out options, Filmore is somewhere dedicated to serving up the cleanest, body- boosting bites around. It’s simply impossible to be uninspired by their fresh and vibrant menu. With tag lines like, ‘We believe that a healthy diet is not what you don’t eat, but precisely what you do.’ , we suspect we may have tracked down a healthy menu which will leave the hungriest of bellies satisfied, but is it really possible? The proof is in the pudding (quite literally), so H&N sent my hungry belly down to F&U at the Victoria Quarter to sample some of the healthy treats on offer. Nestled in the center of a bustling Victoria Quarter, Filmore is the perfect location for a little R&R. Concerened with more than just healthy eating, co-founder Adele (previoulsy the owner of a wellness clinic) is passionate about living well too and claims Filmore’s synergy with yoga is reflected throughout each store. Unexpectedly, this calming environment has been achieved at the VQ restaurant too. Although only inches away from busy shoppers and seperated only by a panel of glass, it’s the sunshine filtering through the beautiful glass roof and a specially curated chilled out playlist which provide for a relaxing atmosphere. The staff are great too. Clearly ‘Filmorite’s’ through and through; exceptionally friendly (without being annoyingly

enthusiastic) and just the right amount of laid back; they seem happy to be there which makes for brilliant service. In all it feels the perfect place to take an hour or two, relax and watch the world pass by. The menu is positively bursting with an array of nutritionally packed wholefoods which all sound delicious. I opt for the gluten free seared tuna loin with green quinoa, brown rice, wild rice, kiwi, grapefruit, asparagus and sweet mustard sauce. Sounds like a few too many ingredients right? Wrong. The flavours made for a moreish, full rounded fork full of goodness. The mixture of textures from crunchy charred asparagus with bite, to melt in the mouth tuna also made for a really satisfying dish. My husband opts for the gluten and dairy free sweet potato and lentil cake with hemp and super seeds, kale and maple syrup, served with five grain salad, seasonal salad mango and kimchi relish. Much to his delight, when it arrives it’s in a gluten free brioche bun; a guilt free burger! Again, the complex list of ingredients has been thoughtfully developed making it a delight to eat and with Filmore’s golden rule of strictly no frying, it’s something to enjoy without having to count the calories. Never usually satisfied with such a healthy meal, we’re both suprised to find our demanding bellies well and truly full. It’s a good ‘full’ though, not one in which I feel the need to sit in a food coma for an hour. That said, when the desert menu comes round, we can’t pass up the opportunity to sample Filmore’s infamous baked goodies. They state, ‘We truly believe that sweet treats are not only good for the taste buds, but also for the soul.’ ‘With a reputation for delivering freshly baked cakes without any added refined sugar, it doesnt take long for us to order the orange and lavendar cake and the seasonal chocolate and beetroot cake. Both were insanely tasty. Initially turning his nose up at my orange and lavendar cake, my husband was soon stealing it from my plate. Zingy, light and sweet; it was delicious and the unique lavendar was a refreshing change for my seasoned sweet tooth. Filmore & Union has made being healthy delicious. I never thought I’d be describing a nutrient packed, gluten free, super food meal as moreish, but when the hat fits! Looks like I might be getting that bikini body after all!

GUSTO GREEK STREET, WE MIGHT BE JUST A LITTLE BIT OBSESSED.... Gusto leeds transports you back to a more elegant time of parquet wood flooring, an art deco setting and a time of grand living service and food to match! It’s even more impressive than that! Inspired by the traditional grand cafes of europe, gusto is all about making the everyday exquisite with timeless, classic surroundings and a fabulously contemporary italian menu. Leeds is awash with restaurants and eateries, some good, some bad, some don’t pass muster and just a few are worth a special mention and definitely worth a visit. Gusto Leeds City Centre on Greek Street falls in to the latter category and we had the pleasure of visiting very recently to check out the new dishes on the menu. You know a restaurant is going to be good when you arrive at 6.30pm and it’s already buzzing. This is exactly how it was when we visited and it has to be said Greek Street is home to some other high profile restaurants, but on this occasion it was all happening at Gusto. Part of a very successful group, Gusto has perfected the art of superb customer service and amazing food, not only that, the atmosphere is always good and they think outside the box offering a Cocktail Club and Cocktail Masterclasses, along with other regular promotional events, all great fun and if you get the chance to book on any, just do it! The night we went, we were booked in for 7pm but arrived early at 6.30pm to find the place already in full swing, we received a lovely greeting at the door and were taken straight through to our booth along the far wall. We loved this table as the booths are raised above the rest of the tables and you get a really good view of the whole restaurant. Our waiter, Martin, was already looking after a number of other tables but expertly managed to catch our eye to let us know he had noticed us and would be with us in a few minutes. Nicely done Martin, we appreciated his acknowledgment and this gave us time to relax with a drink and choose our dishes from the menu while we waited. With a number of new dishes just added to the menu we wanted to try as many of them 70 | WE ARE HERE & NOW

as possible, so after consulting with Martin on his recommendations we chose Asparagus Spears with dolcelatte mayonnaise and roasted red peppers for one starter and Burratina Mozerralla with pane gratuga, bitter lemon purée and pickled radicchio for the other…Wow! Both were so light and flavoursome and so very fresh. Perfect choices and beautifully complimented with the Garganega Pinot Grigio, Cantina di Monteforte, Veneto, Italy, described as Classic Northern Italian freshness and elegance and it was spot on. There’s a good selection of wines by the glass if you don’t want a full bottle…we had a full bottle of course! For our mains we chose Roast Lamb Rump with truffled cheese, flavoured piccolo ravioli and tomato sauce and Roast Monkfish Tail served with a curried mussel sauce and smoked garlic oil, and on the side Tender Stem Broccoli, red chilli and almonds and fries. Both the monk fish and the lamb rump were cooked to perfection, the fish was plump and juicy and the lamb pink as requested and so tender. The chefs here certainly know how to cook, this meal was exceptional and the portion sizes absolutely perfect, we both had room for dessert! It had to be our favourites from the dessert choices, Almond Milk Panna Cotta with flaked almonds and lemon curd and Warm Chocolate Brownie served with pistachio ice cream and chocolate sauce, total food heaven. The whole meal took two hours, we never felt rushed and certainly had lots of attention from Martin, he was also very knowledgeable about the menu, we did try to catch him out a couple of times but he knew his stuff which he credited to the regular training and tasting sessions Gusto provide. I wanted to stay and have something else done, however the whole point of Yorkshire Blow Dry is if like me you needed to be in and out pretty quick, you will be. On the other hand you can have a full pampering experience if you have time to kill and I think this is what I will return for. I can’t
