‘Louisiana Fast’ Popeyes fast food restaurant 5-6 weeks away from opening day BY JEBB JOHNSTON jjohnston@dailycorinthian.com

Popeyes is about five to six weeks away from opening its Corinth restaurant. Popeyes Louisiana Kitchen is projected to open at Highway 72 and Cass Street around Dec. 15 to Dec. 20, according to Gregory Vojnovic, chief development officer with Popeyes.

“We’ve been trying to get in Corinth for a long time,� said Vojnovic. “It’s a nice regional market that we targeted. We like the community and we are thrilled.� The company-owned restaurant will employ 50 to 60. The location will feature the latest store model with the Louisiana Kitchen name. It’s a

step up from the chicken and biscuits model, he said. “We are very passionate about our foods,� said Vojnovic. “It’s the best fried chicken you will eat, and we also have exceptional seafood. It’s a place that you will come to sit down and dine.� He said the company is making a substantial investment.

Within the last week, a car wash has been demolished at the site, and the company is acquiring some additional property to get enough space for parking. The drive-thru will have a dual order point with two menu boards. Popeyes began in 1972 in Arabi, La., when Alvin Copeland opened “Chicken on the Run,� serving traditional

Southern fried chicken. Several months later, he reopened as Popeyes, serving spicy New Orleans-style chicken. The 2,000th Popeyes location opened in Memphis in 2011. Vojnovic said the company has had a great experience working with local officials in preparation for building the restaurant.

The Corinth Music Club is paying tribute to patriotic numbers and historic events in the country with its “Celebration of American Music and Poetry� for its next Mid-Morning Concert

Series. The music event is slated for 11 a.m. on November 21 at First United Methodist Church. “It will be a lesson in history and patriotism� said event coordinator Donna Janzen. “I want the audience to realize how im-

The Salvation Army will be hosting the Miss Christmas Tree Angel Pageant this month which will be presented by pageant directors Tiffany Kennedy and Diana Word. “Girls from zero to eighteen may participate in the pageant and they can be from any county,� said the pageant director Tiffany Kennedy. urday, Nov. 23 in the Corinth Coliseum. Registration begins at 9 a.m. and the pageant follows at 10 a.m. “It is a charity event and we are raising money for the Salvation Army Angel Tree Foundation. Family collects money for diabetic alert dog BY BRANT SAPPINGTON bsappington@dailycorinthian.com

Every day is a roller coaster ride for 11-year-old Lydia Benjamin. Diagnosed with Type I diabetes 18 months ago, the Baldwyn girl lives each day riding the highs and lows of her erratic blood sugar but her doctors hope a special furry friend could soon smooth those ups and downs. The family is in the process of raising money for the first deposit on a diabetic alert dog, a specially trained canine who will be able to alert her to changes in her sugar levels much sooner than even the most tightly regulated traditional testing regimen. “She just has such extreme fast changes. That’s what gets her into trouble,said her mother, Amy Benjamin, a family

nurse practitioner who operates the Wheeler Health Clinic. A year and a half ago the previously healthy child began experiencing extreme exhaustion and intense thirst. “I was drinking water a lot and I slept a lot and then they started taking me to all these doctors,� recalled Lydia. She was diagnosed with mononucleosis which apparently triggered her body’s problems with producing insulin the hallmark of Type I diabetes. “She lost 18 pounds in a week,� said Amy. “They knew they had to do something.� They were sent to LeBonheur Children’s Medical Center in Memphis where she began a journey of learning how to deal with her new condition. Today she wears a bright pink insulin pump on her hip that supplies insulin without the

need for shots as many as five times a day. She pricks her finger multiple times throughout the day to monitor her blood sugar levels, but with the rapid changes she experiences it’s often not enough to keep her condition fully in check. When it gets out of hand she can quickly become extremely sick, passing out or vomiting with little warning. “It’s just so fast and even with the machine it can drop faster than the machine can keep up,� said Amy. Catching those rapid changes before they become life-threatening problems is the role of the service dog they soon hope to add to their family.
