Chili cooks getting fired up BY ZACK STEEN zsteen@dailycorinthian.com

Farmington resident Susie Johnson was busy picking up some last minute items Thursday at Roger’s Supermarket in preparation for Saturday’s 8th annual Crossroads Chili CookOff. “I love cooking chili,” Johnson said. “Been doing it my whole life.” Johnson and other cooks will put their best chili recipe to the test at this weekend’s event. Her chili always contains the freshest ingredients she can get her hands on, noted the local cook. “I chop up onion, add them to a skillet of ground beef and add water,” she said. “I also add a little garlic to soften up the

onion a bit. Add chili beans, tomato and tomato sauce and let it warm on the oven for about a half hour.” Johnson said she always adds a few jalapeño peppers and other “secret” ingredients to her chili. “I plan on entering the competition, unless something comes up,” she added. Johnson will join both local and professional cooks from across the country to compete for $350 in prizes during the Gardner’s Supermarket and Roger’s Supermarket People’s Choice Chili Competition. Set for Saturday from 11 a.m. to 3 p.m. at the historic Depot in downtown Corinth, event goers can purchase a $5 all you can eat tasting kit and sample

Corinth is ordering new residential trash carts as the city takes a close look at the sanitation operation, including labor and equipment needs. A rate increase for customers is also planned to help cover a labor shortage. The Board of Aldermen in a special meeting on Thursday approved the purchase of approximately 6,400 solid waste containers from Cascade Engineering Company at a cost of $317,565 — an expense that can be covered with available funds. The board also voted

to set in motion an ordinance amendment that will increase the rate for rubbish collection by $1.75 monthly, bringing the monthly rubbish charge to $2.75. The garbage collection fee will remain $12, for a monthly total of $14.75. Because the increase involves an ordinance amendment, it must be presented in writing at a subsequent meeting before the board can vote to finalize it. Prior garbage rate increases happened in 2003 and 2008. “We’re way lower than most cities are on these fees,” said Please see GARBAGE | 2A

more than a dozen different chilies. All proceeds from the tasting kit sales will benefit the Crossroads Museum. “The cook-off is a great community event that we’re happy to be a part of this year,” said Brian Gardner, owner of Roger’s Supermarket. “It’s very unique to have an event that people can both participant in and help determine the outcome.” Each $5 tasting kit includes one voter’s card, which gives the individual an opportunity to vote for a favorite chili. “It’s also pretty cool to be able to provide people a way to enter the chili competition for free,” added Gardner. “It’s a another
