EDITOR’S NOTE Welcome to March. The weather is as close to perfect as you can get, setting us up nicely for what is looking like being a great month. We have lost count of how many times we have heard that there's so much to do here, but it’s true. This month we took a look around one of Dubai’s newest destinations, La Mer in Jumeirah. See what we found on pages 26-29. A lot of you are families with children and we have some great pointers to help occupy the little ones, whether you are looking for family friendly brunches, want tips on how to arrange a stress free children's birthday party or simply looking for after school activities – we have included as much as we can. Health and wellness are always important and we cover the growing issue of obesity, how to manage it and reduce the risk. If weight loss is just a stubborn issue that won’t budge, we also look at fat transfer as a procedure and how it is carried out. Planning on going out? Where do we start? There is heaps to do, including the return of firm favorites in the March calendar, Taste Of Dubai and the $10 million Dubai World Cup. Finally, we can’t believe our luck here at Connector, not only did we get a chance to review Galvin Dubai from award winning chefs the Galvin brothers (page 39), but also our chef’s recipe comes from another award winner and Dubai debutant David Myers! Galvin Dubai at City Walk

I t is exactly two years since the second phase of City Walk opened and offered a totally new and unique dining, shopping and leisure destination that has very quickly become a popular and lively place to visit any day of the week. Within the hustle and bustle of City Walk is The Square, home to three fine dining restaurants. One of these is Galvin Dubai, the second venture in Dubai of award winning British chef brothers Chris and Jeff Galvin. Galvin Dubai is spread over two levels with the elegant restaurant on the ground floor and a relaxed lounge bar upstairs. There is also a well-spaced outdoor terrace for those looking to enjoy al fresco dining. The menu has a distinctive Mediterranean flavour to it, with a leaning towards French cuisine, and, under the direction of Executive Chef Luigi Vespero, who spent 5 years working with Galvin in London, a regional twist has been added to some dishes. Our starters consisted of an escabèche of yellow fin tuna, beautifully accompanied by a herb salad and a perfectly spiced aubergine puree, and a signature dish of a lasagne of Devon crab, three layers of pasta stuffed www.connector.ae

with crab meat and served with a creamy bisque. The portions were both just perfect for a starter. The yellow fin tuna was a very refreshing option to start the meal and the lasagne was so full of crab meat you got a great taste in every mouthful. For the mains we opted for the nicely cooked beef tenderloin accompanied with carmelised shallots, and a dish with a Middle Eastern twist, the tagine of lamb. Both were well presented and looked as delicious as they tasted. The lamb tagine was accompanied with a beautiful couscous and the subtle sweet taste of dates wrapped in crispy filo pastry. After tasty starters and main courses, it can be difficult to go for a third course, but with tempting deserts on the menu it was impossible to resist, and our eyes took us to the Baba au Rhum and the Apple Tarte Tatin. A sweet way to end a fantastic meal. With great food and knowledgeable and attentive staff, an evening at Galvin Dubai offers another reason to visit City Walk. T ravel has always been at the heart of the unique culinary experiences crafted by global restaurateur and celebrity chef David Myers. After training in the kitchens of some of the most internationallyrenowned chefs, opening several of his own restaurants across the world and receiving numerous accolades, David now brings three exclusive dining and drinking experiences to the Renaissance Downtown Hotel, Dubai. His signature collection in Dubai reflects three well-defined concepts that are each close to his heart. Bleu Blanc is the quaint Southern French farmhouse-inspired restaurant. 4. Season the aioli with crushed garlic, salt, pepper, saffron, and a squeeze of lemon. The Bleu Blanc kitchen is baking homemade charcoal brioche bread every day. At home, you can replace it with traditional brioche bread from your favourite bakery.

LOBSTER ROLL Ingredients: 2 live main lobster 1 shallots 4 gr saffron 250 gr cherry tomato 1 piece organic egg 1 tablespoon dijon mustard 1 cup olive oil 1 clove garlic 1 lemon salt pepper charcoal brioche bread roll fleur de sel

2. Collect all the lobster flesh out of its shell, and dice it. 3. For the aioli, start an emulsion with the mustard and egg yolk. Add in the olive oil while whisking continuously.

5. Slice open the roll, and warm it. 6. Toss the lobster in aioli with chopped shallots, chives, and diced cherry tomato petals. 7. Fill the roll with the lobster mixture and finish with a spoon of saffron aioli on the top, and a pinch of fleur de sel.
