F ootball matches usually cause rivalries among passionate fans all pushing their team to win trophies and rejoice in their success. Brunswick Eatery, Bar and Terrace
D ubai’s food scene changes as fast as life in the city itself, new places constantly opening and new concepts introduced. Brunswick Eatery, Bar and Terrace, in the Sheraton Mall of the Emirates is one of these new choices. Previously Brunswick Sports Club, which opened in 2016, has been recently refurbished to create a relaxed and social eatery. As soon as you enter, you immediately forget the bustle you have just left behind of a busy Sheikh Zayed Road or a crowded shopping mall. A new menu was launched at the start of May offering a fantastic range of bar snacks, sharing dishes and sumptuous mains. With so much choice and all sounding really appealing, choosing was tough. To start, the tempura cauliflower was a pleasant surprise, nicely spiced and with a delicious curry mayonnaise, the habachi chicken wing skewers were exactly that, tender chicken wings, still on the bone coated in a teriyaki sauce and sesame seeds. However the stand out was the simple garlic sourdough with a healthy spread of cream, parsley and French cheese fondue. The same tasty sourdough was the base www.connector.ae
of the Summer truffle pizza topped with a combination of pecorino and ricotta cheese. The kind of pizza that makes you want slice after slice. Our mains were a very generous portion of Wagyu tartare perfectly seasoned and served with a quail egg, a huge eggplant baked in salt and stuffed with barley, parsley and crumbled feta cheese, which was a meal in itself, and the beef short rib, which was up there with the best of them. Perfectly cooked, the meat easily fell off the bone and flaked into pieces as you picked it with your fork. The bourguignon sauce added the right amount of complimentary flavours. Desserts are always hard to say no to, so we just had to try the peppermint crisp soufflé, a chocolate soufflé with peppermint custard, and I think we chose well. Brunswick seems to have it all, a relaxed atmosphere and enough choice on the menu for everyone and every occasion, all of which are tasty and tempting. Chef Amrish Sood Specialty Chef at the infamous Rang Mahal Chef Sood sparked an interest in food and cooking before moving to South India and enrolling into catering college in 2001. After completing the course and training with the likes of Taj Hotels, Chef Sood moved back to India to start his professional culinary career. Passion for Food Starting as a trainee with The Park Hotels, Chef Sood travelled around the different regions of India working with various master chefs until 2003, where he settled and opened the first Pan Indian restaurant in New Dehli. Chef Sood then took the leap to Shanghai and the Middle East, where he worked at the Ushna restaurant in Abu Dhabi, before moving to Dubai and the JW Marriott Marquis.

RECIPE MAMSAM MERIYAL Serves - 5 Ingredients 1 Vegetable oil 1”stick Cinnamon 4 nos Cardamom 4 nos Clove 2 nos Bay leaves 300 gms Onion grated 2 tbsp Chopped garlic 3 tbsp Grated ginger 1 kg Lamb cubes
3 tbsp Coriander powder 600 gms Tomato puree 1 tbsp Kashmiri chili powder 1 tbsp Turmeric Curry leaves 4 tbsp Tamarind pulp ½ cup Coconut milk Coconut paste 50 gms Cashewnut 50 gms Coconut grate
Method: 1. Heat the vegetable oil in a heavy bottom pan. Splutter whole spices (cinnamon, green cardamom, clove). Add onion, cook till golden brown. 2. Once the onions are done, add, chopped garlic, grated onions, lamb cubes, stir around to sear the meat on a medium to high flame. 3. Add coriander powder, salt & curry leaves to lamb, mix gently, cover the pot and allow the lamb to cook on a low flame. Add little water in between if required. 4. Once the lamb is cooked to 60%, stir in tomatoes, kashmiri chili powder & turmeric powder. Continue cooking the lamb on a low flame with lid on. 5. Meriyal masala - yield - 8-10 ports 50 gms Coriander seeds 5 gms Cumin seeds 5 gms Green cardamom 3 gms Cloves 2 gms Mace 2 nos Star anise 5 gms Cinnamon 2 nos Bay leaf 5 no’s Red chilies whole
add coconut & cashew paste along with 4 tbsp of spice powder, coconut milk & tamarind pulp. Mix it gently & cook for another 5 minutes. 6. Towards the end adjust seasoning with salt & add crushed peppercorns along with chopped corriander, ginger juliennes & ghee. Coconut paste Roast the grated coconut in an oven till dry & golden brown in colour. Soak the toasted coconut & cashewnut in hot water for an hour & than blend them to a fine paste. I n order to keep a close eye on education standards, Knowledge and Human Development Authority (KHDA) has published individual inspection reports for private schools since 2008. It established a common platform for parents to compare and access the performance of one school to another, which was earlier only possible through word of mouth. KHDA inspection reports marked its ten year anniversary this year and issued a comprehensive report on school growth over the past 10 years. We spoke with Fatma Belrehif, Executive Director of Dubai School Inspection Bureau at KHDA to understand more about KHDA reports and how new and existing parents can read the reports more efficiently. 40 JUNE CONNECTOR
What is a KHDA report? Annually KHDA publishes the individual inspection reports for all private schools in Dubai. This is a public record of how each school is progressing towards the expectations of Dubai for its schools. It covers leadership, quality of teaching and learning, inclusion, curriculum design, how well schools assess students' progress and the academic outcomes when compared with national and international standards. It also judges students' safety, personal development and their cultural awareness. Schools' outcomes are judged on 6 quality levels, - Outstanding/Very Good/ Good/Acceptable/Weak and Very Weak. Schools are expected to improve continuously and to reach an expected level of Good overall, at a minimum. #connectordubai
KIDS & EDUCATION On what parameters are the schools evaluated to be outstanding, good, and so on? Schools are inspected for their overall performance against set criteria. These include the quality of leadership, the progress all groups of students make in the key subjects, the quality of teaching for effective learning and how well the school knows itself - self-evaluation. The overall judgment is made across the six quality levels given the judgements in the above aspects in the 6 quality levels. How should parents read these reports and what should they be looking out for? When parents read a report they should focus on the first sections. There they will find a summary report by KHDA on how the school is progressing from its recommendations last year, how well students academic and personal development outcomes have improved and how the various stakeholders work together. Parents will also find attainment and progress reports for the key subjects. This is a record of how students perform against curriculum standards, depending on the school's licensed curriculum, the progress made by students in each phase of the school in these subjects, Kindergarten/Primary/Secondary/ High School along with the quality of the teaching observed during the inspection. They will also find commentary on www.connector.ae
the effectiveness of leadership and how governors hold leaders accountable for improvement. Later in the report parents will find the technical recommendations made by inspectors for the school to improve. What the reports mean to schools We spoke with representatives of some of Dubai’s top schools and asked them about their thoughts on the relevance that KHDA inspection reports hold and how these reports help parents in choosing a school and how schools strive to improve every year. KHDA inspection reports look beyond academic performance Brendon Fulton, Principal of Dubai British School said, “The KHDA inspection reports provide a measure of quality assurance for schools that looks past just student academic performance and gets to the very heart of a school's mission, vision and values. By doing so, the annual reports serve to affirm areas where schools are doing well and provide insight into areas where schools can and should be doing better by students.” Reports help schools identify gaps and improve Bede Higgins, Principal of Kings' School Dubai said, “A positive outcome in an inspection report is, of course, very rewarding, however as educators, we tend to be quite tough on ourselves, looking CONNECTOR JUNE 41

They act as both a mirror and a road map Christopher Bromham, Principal, Uptown School- A Taaleem School said, “The KHDA inspection report, alongside the inspection itself, acts as both a mirror and a road map. The mirror reflects the progress and achievements that the school has made in the past twelve months. The whole process is predicated on our own selfevaluation and the inspection report helps us to standardise our evaluations against those made across the UAE. The road maps helps us to look ahead and plan future improvements and developments.”
Best source of information Rachel Higgins of GEMS Jumeirah Primary School (JPS) said, “ I believe the reports give parents the best source of information regarding school without bias of advertising and marketing. Parents selecting their children’s education are making informed choices having read what the school does well and what they are continuing to work on. This can all happen before touring multiple schools. For parents in my school it gives them the chance to become better informed about their children’s place of education. At JPS we are passionate about our parental voice and engagement of all parents. When informed, parents can ask specific questions and make great suggestions for the school’s continued improvements - this is an excellent use of the KHDA reports.
What the reports mean to parents Over time KHDA inspection reports have proven to be a better source of information which help parents make an informed decision based on different findings in the reports. Once a school is rated Good or above, then location, cost, personal recommendations and the feel of the school are far more important considerations.” Their impact on the quality of education In the past ten years, KHDA inspection reports have left a significant impact on the education industry. The aim to fulfil The National Agenda is leading the education industry on the right path where education in the UAE will be on a par with international education standards. Significant improvement in standard of education Simon O’Connor, Principal of Jumeriah College said, “You only have to look at the statistics of the last ten years to see the impact that inspections have had on the education landscape in the UAE. There is no doubt that the standard of education has improved significantly, and the role that inspections have had is crucial to this. Schools are encouraged to contribute to UAE National attainment and achievement in English, Maths, Science and Arabic language. From this success, the ambition and expectation is that the UAE will progress upwards in terms of International Benchmarking Tests. Kings' is proud to play its part in this process.” More clarity on definition of high calibre schooling Christopher Bromham of Uptown School said, “Schools now have a clear definition of high caliber schooling and a critical friend to help them set next steps. F or most parents and their kids, summer time is seen as a great opportunity to get outside, play and catch some rays. However, don’t discount the prospect of illness or disease this summer. Therefore, this feature aims to educate parents on understanding summer illnesses, and communicate opinions of expert paediatricians from the region on precautions parents should take to keep their kids healthy in Summer. Key risks to children over the summer Summer heat is harsh and specially for young children who don’t know how to protect themselves. Children are vulnerable to a number of health risks during summer such as insect bites, dehydration, falls, injuries, burns, swimmer’s ear and infections. www.connector.ae
According to Dr. Mfed Mosely, Consultant Neonatologist & Pediatrician of Medeor 24x7 International Hospital, Al Ain, children can drown in as little as an inch of water in a swimming pool so always use floatation devices when swimming with your child and never leave them unattended. While you're enjoying the water don’t forget to apply sunscreen often to protect your child from any harmful UV rays. Invest in a good quality insect repellent as mosquitoes are a possible vector for disease. KIDS & EDUCATION Early signs to look out for the most common illness According to from Dr. Mazen Abou Chaaban, Consultant Pediatrician & Pediatric Nephrologist from Emirates Specialty Hospital, early signs to look out for the most common illness are loss of appetite, headache or dizziness, sleep disturbance, loss on concentration, lack of socialisation and gastric & abdominal problems. The signs can vary from one illness to another. Dr. Mfed Mosely of Medeor 24x7 International Hospital spoke about early signs of summer flu virus, diarrhoea and swimmers ear. Summer flu virus If your child has a fever, is experiencing headaches, has a sore throat, complains of body aches, and is vomiting, your child may have the summer flu virus. Diarrhoea Constant bathroom breaks combined with loose and watery stools are a possible indication of diarrhoea. Swimmers ear If your child is experiencing ear pain with yawning or swallowing and if pus is draining from the ear canal, your child may have swimmers ear. 52 JUNE CONNECTOR
Gastroenteritis Dr. Rouba Abdennour, specialist in Pediatrics & Adolescent Medicine at Shamma Clinic said, “The most common summer illness is gastroenteritis, which results from bacteria or viruses that children catch from eating contaminated food or drinks, or swimming in contaminated pools. These germs can lead to inflammation of the intestines, causing vomiting and/or diarrhoea. The main concern with these illnesses is the risk of dehydration. Parents should watch out for any signs of dehydration, which include: dry lips, dry mouth, decreased urine output (no urine for 8 hours) or dark-coloured urine, lack of energy, crying without tears, cold or dry skin, and thirst.” Heat exhaustion Dr. Rouba Abdennour further added, “Children who spend long hours playing outside in hot and humid weather, parents should also look out for symptoms like headache, feeling faint or dizzy, excessive sweating and muscle cramps. These can be a manifestation of heat exhaustion, which, if left untreated, can lead to heat stroke. Prolonged or unprotected sun exposure can make the children’s skin turn pink, which is an early sign of sunburn that parents should be aware of.” #connectordubai
KIDS & EDUCATION Injuries According to Dr. Zaid Al Aubaidi of Burjeel Hospital, if there are any injuries during summer time, there could be sprains and fractures where one should monitor the size of the fracture based on the swelling, redness, discolouration and loss of unction of the extremity. And in case of any suspicion we should take our kids to the doctor. Steps to take if kids fall sick First of all, parents should not panic. After reading the early signs of illness, parents should try to treat those at home, as advised by field experts. If a child does not recover, they should immediately visit a doctor. Additionally, Dr. Mazen Abou Chaaban from Emirates Specialty Hospital advises parents to get closer to their children & try to solve their psychological problems. Let them feel they are good supported not alone. Summer flu virus Dr. Mfed Mosely of Medeor 24x7 International Hospital, Al Ain said, “Don’t panic! If you believe your child has the summer flu virus you can use Tylenol or Ibuprofen to reduce the fever and treat any body aches. Throat lozenges, tea and gargling warm salt water work great for treating a sore throat. www.connector.ae
Vomiting “If your child is vomiting, restrain from giving them any solid foods and only allow small sips of water as your child's body purges itself. This is known as total bowel rest, let the worst of it pass. If after 8 hours your child is persistently vomiting then go to a doctor for a checkup. Remember to give your child lots of fluids to help recovery and do not give your child any antibacterial medication as the Summer Flu is caused by a virus, not bacteria,” added Dr. Mfed Mosely of Medeor 24x7 International Hospital, Al Ain. Diarrhoea Dr. Rouba Abdennour of Shamma Clicnic said that children with diarrhoea should drink oral rehydration solution after each bowel movement. Children with persistent vomiting or refusal to drink fluids should visit the doctor for adequate treatment to prevent dehydration. Swimmer's ear “To treat swimmer's ear you can use medication ear drops obtainable from your doctor. Pain usually subsides within 24 hours after the medication is applied and with daily treatment the infection usually clears up after a week” , informed Dr. Rouba Abdennour. CONNECTOR JUNE 53
KIDS & EDUCATION Heat exhaustion and sun burn Dr. Rouba Abdennour of Shamma Clinic said, “ Children with symptoms of heat exhaustion should be immediately moved to a cool dry place, offered fluids to drink, and given a shower to help their body cool down. If the symptoms persist or if the child complains of headache, loss of consciousness or high fever, parents should seek immediate medical attention. For children who show signs of sunburn, we recommend moving them to the shade, giving them a cool bath, and applying moisturisers that contain aloe vera. If blisters are present, do not break them, and visit the paediatrician for further treatment. Injuries Dr. Zaid Al Aubaidi of Burjeel Hospital said, “ In regards to any fractures and muscular skeletal injuries those should be checked by a paediatrics orthopaedics surgeon as quick as possible to ensure there are no dangerous fractures that could affect the child’s growth in the future.”

Steps to follow to keep your kids healthy Dr. Ghassan Soud, Consultant Paediatrician at Mediclinic Al Bahr stressed, “Avoid being in the sun between 10 a.m. and 3 p.m., and stay in a shaded area as much as possible. The American Cancer Society suggests a sunscreen with an SPF of 15 or higher. Remember to reapply sunscreen frequently about every 2 hours, when it comes to babies, apply just a small amount to a baby’s face, hands, and neck, the better option for infants is to dress them in light clothing, sunglasses, and hats; and to keep them in the shade as much as possible” Dr. Ghassan Soud further added,“To reduce the risk of insect stings and bites, insist that your kids wear light colored clothing and shoes when playing outside, cover children with lightweight clothing and use mosquito netting over stroller and infant seat. When choosing bug repellents this summer, know that the most effective products contain DEET because it's proven to repel both mosquitoes and ticks, but not for babies under 2 months old, apply the repellent once a day and don't use combination sunscreen/ bug repellent products."

L ocated on the 24th floor of Sheraton Mall of Emirates, Shine Spa is a peaceful retreat to rejuvenate and relax. There is a lot to talk about this premium spa but one thing that appealed us the most was its vegan facial treatments with the leading British brand, Elemis.
