EDITOR’S NOTE January is always a catch up month for me, a time to relax and unwind from all the end of year activities. As it happens though it was also a month of preparation, getting ready for everything February has to offer, and it has a lot. There’s lots of events including Remix 92, RedFestDXB, Dubai Duty Free Tennis Championships, Dubai Jazz Festival, the start of the Dubai Food Festival, and opera and ballet at Dubai Opera. If getting active is your thing then there's Daman’s ActiveLife Beach Run, open to runners of all abilities and all ages. Do you like to brunch or are you looking for a Valentine’s day idea? We have as many as possible covered. A lot of us have children and a lot of our day is spent away from them while we work and leave them in school or a nursery. We take a look at things to consider when choosing a nursery that best suits your's and more importantly your child's needs. We always like to try something new and one thing that certainly offers something different is kayaking around Palm Jumeirah. Table 9 at Hilton Dubai Creek

O ne thing that can’t be said about Dubai is there are not enough places to eat. With thousands of restaurants and more opening, there's always somewhere new to try. What about restaurants that have stood the test of time or have been around for a while? Restaurants like Table 9 at Hilton Dubai Creek. Table 9 has had its share of talented chefs. Created by duo Nick Alves and Scot Price, who launched the fine dining restaurant when they took the space vacated by their mentor Gordon Ramsey. The two moved on and left Table 9 to another Ramsey mentored chef, Darren Velvick, who also left and for the last 12 months Table 9 is under the stewardship of 24 year old Head Chef Enver Can Gumus. Table 9 still has a modern minimalist look and feel and looks deceivingly bigger than it is, mainly due to the long mirrored walls. The menu however has evolved and offers the right amount of choice with 39 dishes from soups, salads, cold and hot starters, meat, fish and vegetarian options. Our starter of Slow Cooked Octopus was an amazingly tasty dish of bite sized pieces of tender octopus, cooked to a Mediterranean recipe and served with baby potatoes and www.connector.ae

onions and accompanied with Hollandaise Sauce. No one flavour over powered any other and together the combinations complemented each other. The main of Pistachio Crusted Lamb Loin with polenta, confit fennel and plum jus did not disappoint. The lamb was cooked to perfection and the coating of crushed pistachios worked. The sides of zucchini sticks in parmesan and Brussel sprouts, ensured the expectation set by the starter was matched. Our deserts were tiramisu and macaroons, and white chocolate parfait. The tiramisu, a desert lover’s idea of heaven, a dark chocolate shell encasing macaroons, coffee mouse and berries, each mouthful made you want more. The white chocolate parfait was as tasty with the added surprise of raspberry in the centre. With many places to eat in Dubai and the hub of the city moving, it is easy to forget some places. Table 9 is certainly one not to forget and with the passion and enthusiasm of Chef Enver, it is safe to say it will continue to be a favourite for some time. Francisco Javier Benedicto Borges Chef de Cuisine - Casa de Tapas and Cielo Sky Lounge

F rancisco is the current Chef de Cuisine of Casa de Tapas and Cielo Sky Lounge at Dubai Creek Golf & Yacht Club. Francisco started his journey in the culinary world at The Westin Palace Madrid right after completing his culinary school education. He was in charge of the breakfast buffet and assisted the pastry chef. After this, he joined Michelinstarred Mugaritz, one of the world’s 50 best restaurants, located at the resort town of San Sebastián. His experience with fine dining in Madrid brought him to Barcelona where joined Hotel Eurostars Grand Marina as a Banquet Chef de Partie, taking charge of breakfast and inventory control. With a desire for unique culinary experiences, he joined The Coconut Club in Barcelona as Chef de Partie to develop and introduce new dishes. Prior to joining Dubai Creek Golf & Yacht Club later worked with Alsure Café and Restaurante Macondo as Sous Chef before joining the culinary team at Dubai Creek Golf & Yacht Club as Junior Sous Chef before being promoted to Chef de Cuisine. 40 FEBRUARY CONNECTOR

RECIPE Paella de Mariscos Many non-Spaniards view paella as Spain's national dish, but most Spaniards consider it to be a regional Valencian dish. Valencians, in turn, regard paella as one of their identifying symbols. Types of paella include Valencian paella, vegetable paella (Spanish: paella de verduras), seafood paella (Spanish: paella de marisco), and mixed paella (Spanish: paella mixta), among many others. Valencian paella is believed to be the original recipe and consists of white rice, green beans (bajoqueta and tavella), meat (chicken, duck and rabbit), white beans (garrofรณn), snails, and seasoning such as saffron and rosemary. Another very common but seasonal ingredient is artichokes. Seafood paella replaces meat with seafood and omits beans and green vegetables. Mixed paella is a free-style combination of meat from land animals, seafood, vegetables, and sometimes beans. Most paella chefs use bomba rice due to it being less likely to overcook, but Valencians tend to use a slightly stickier (and thus more susceptible to overcooking) variety known as Senia. All types of paellas use olive oil.

Ingredients: 120 gr bomba rice 6 clams 500 ml fish broth 6 mussels 30 gr green peas 3 pranws 3 langustine 60 gr cuttle fish 40 gr calamary

2 gr garlic 6 ml olive oil 60 gr onion 60 gr red pepper 60 gr green pepper 3 gr papprika 1 gr saffron salt & pepper

Method: 1. Add olive oil in a paella pan, put the garlic and pre cook all the seafood, and save on the side. 2. Chop the vegetables and cook , add the rice , papprika , salt, pepper and stir for 30 seconds in a medium high temperature. 3. Add the calamari and the cuttlefish , put 250 ml of broth and the saffron, let it simmer until the rice is cooked , at the same time add the rest of the broth when the rice needs it. 4. Add the rest of the seafood and the green peas and simmer until rice is cooked.

nursery in the UAE

I t seems like only yesterday when you brought a tiny life into your home and before you even realise the baby is set to board an independent journey to a nursery. It is the time when being parents, you start to get your heads together to select the best one for your little one. A nursery is the first tiny step towards early education - a stepping stone - hence it becomes a crucial decision to choose the right one. Whether you are a working or stay-at-home parent, you would always want to send your child to a nursery where they learn new things with other toddlers in an amusing and engaging setting, and not only to a crèche. Staff to child ratio Your youngster was getting your full attention at home, so make sure that they get the desired attention at nursery and are not left unattended. The major concern, therefore, should go beyond the number of toys and classrooms a nursey has, and you should be looking at the number of staff members to children ratio in a nursery class. You cannot expect 1:1 staff member to child ratio in any nursery, but a prospective nursery should have a ratio of 1:4, 1:5 or 1:3 in order to provide full attention to every child. Now that you know what the appropriate ratio should be; make a learned decision, and always look for a nursery that offers a child staff ratio closer to these. Bear in mind the extra cost you may need to pay for the nursery that operates all year. Food & Nutrition Provision of food is also one crucial consideration, if your work schedule does not permit you to pack full meals for your youngster. If a nursery provides food, ask if the food is cooked on the premises or delivered. What are the menus like? Also, inform them in advance about your baby’s eating habits and food they are allergic to. T he birth of a child is a happy occasion for any family and a new chapter in the life of a couple, but there are a number of couples who are unable to conceive due to many reasons. However, in today’s time, medical science has made a quantum leap. The cutting-edge technology has revolutionised the way we look at infertility and offered fertile solutions to the infertile couples.The front line field of in-vitro fertilisation (IVF) is one such technology which not only offers childless couples hope to be parents, but also offers better acceptance in the society. Births to first-time mums aged 40 and over have doubled in the last 10 years. “Women are born with their full oocyte complement and these are not replenished throughout reproductive life. With advancing age we see a decline not only in oocyte number but also in oocyte quality” said Dr Carol. “The decline in oocyte quality is reflected in the increased risk of miscarriage www.connector.ae

and increased incidence of chromosomal disorders in the children of women of advanced maternal age.” Pre-implantation genetic screening (PGS) is a technique where medical experts can check the chromosomal components of an embryo before pregnancy occurs. Couples who have alterations or mutations in their genes, or who have a risk of having children with genetic disorders, benefit from this screening in a process referred to as pre-implantation genetic diagnosis. The procedure for the test is simple. It includes obtaining eggs from the mother and injecting them with the husband’s sperm. The fertilised eggs are then followed for five or six days until they become embryos, inside the IVF lab. Then a biopsy is performed from the mature embryo when cells are examined to rule out any genetic mutation / alteration. This process takes about ten days. In the meanwhile, the embryos are frozen by a process known as cryopreservation. When the results from the screening process are available, chromosomally normal embryos, or embryos without the specified genetic condition are transferred into the mother’s uterus. “The suggested population of patients that can benefit from PGS include infertile women of advanced age , patients with a history of recurrent miscarriage and couples who have experienced recurrent IVF failures,” concluded Dr Carol. However, the muscle-relaxing toxin is not only used to prevent wrinkles, and can also be used to stop excessive sweating. When was it first discovered? Botox was ‘discovered’ in 1987 when Vancouver doctors, Jean and Alastair Carruthers accidentally discovered that a toxin previously used by ophthalmologists to treat disorders such as eye spasms (blepharospasm), also possessed cosmetic properties when patients discovered their forehead wrinkles lessened with use. How does it work? Once injected into a specific area, Botox binds itself to receptors in the muscle, affecting the nerves within. So when your #connectordubai

The wrinkle that forms when the muscle contracts then fades or disappears completely. Are results permanent? Dysport and Xeomin are two other neurotoxins that are used regularly - all come from the same strain of bacteria. Should I avoid any foods or medications before the injections? It’s always best to consult with your practitioner, who will advise you of their specific guidelines. However, most insist you do not use anticoagulants, such as aspirin and ibuprofen before a treatment as they interfere with blood clotting.
