Vegetable Saucer Pies Nutritious and economical, and they taste divine Stir in the flours and coriander and cook, stirring for 2 minutes.

Makes six little pies which can be frozen before baking and taken straight from the freezer to the oven.

Gradually add the cream and the milk and cook over a moderate heat for five minutes until the mixture comes to a boil and thickens.

Preparation time: 75 min Cooking time: 40 min Ingredients Filling 60g / 2oz butter 225g / 8oz leeks - trimmed, thinly sliced and washed 225g / 8oz carrots - peeled and finely diced 1 small head of broccoli, broken into tiny florets 115g / 4oz mushrooms, sliced 60g / 2oz frozen peas 60g / 2oz walnut pieces 60g / 2oz plain flour 1 level tsp ground coriander 150ml 1/4 pint single cream 150ml 1/4 pint milk 4 tbsp chopped fresh dill Salt and freshly ground black pepper Pastry 450g / 1lb plain flour 225g / 8 oz butter 115g / 4oz mature cheddar cheese, grated 1/2 level tsp English mustard powder 1/4 level tsp salt 175ml / 6fl oz milk 1 medium egg, beaten Method Filling Melt the butter in a large frying pan. Add the leeks and carrots and cook gently for 5 minutes. Add the broccoli, mushrooms and peas and cook for a further five minutes. Add the walnuts.

Knead lightly on a floured surface until smooth. Lightly grease six oven-proof saucers, about 15cm / 6 inches in diameter. Cut the dough in half. Roll out one half thinly, and using the saucers as a guide, cut out six rounds, each a little larger than the saucer. Line the saucers with the rounds and divide the filling equally between them. Roll out the remaining dough and, using a saucer as a guide again, cut out six more rounds. Brush the edges of the saucer dough with cold water and cover with the lids, then press the edges together well. Make a small hole in the centre of each pie and chill the pies for 30 minutes. Preheat the oven to 200C / Gas mark 6. Put the saucers containing the pies on two baking sheets, brush with beaten egg and sprinkle with the remaining cheese. Bake for 30 minutes then turn the tray and bake for a further ten minutes until golden brown.

26 How to boost your own self-confidence

From time to time we all have a bit of doubt in ourselves. This could be for a variety of reasons. Perhaps it has been a knock back in your career or your personal life. You could also feel that you are lacking in self-confidence due to something such as taking a career break in order to raise your family. You may also just feel a little down on yourself due to how you perceive your place in the wider world. No matter the reason why your self-confidence is low, the best person to improve this is you. But how do you improve your own self-confidence and where do you start? We have put together some of our top tips to boost your own self-confidence and make sure that you feel great about you! Kill those negative thoughts We all have a tendency to allow a few negative thoughts to creep into our minds from time to time. This isn’t the end of the world, but if the negative thoughts are taking over the rest of the thoughts in our brain, then it is time to make a change. Imagine that you could chase away those negative thoughts, banishing them for good. Sometimes this visual aid is all you need to try and focus on the positive that is in your mind. An exercise that can be helpful is to light a candle and focus on the flickering flame and breath in deeply letting the light chase away any negative thought and replace it with light. Take as many breaths in until you feel the light has reached every part of you, when you breath out blow away the negative thought which has now been replaced with light. Try this for a few minutes every day Be positive More than just thinking positive thoughts, sometimes the key to improving your selfconfidence is to be positive. Speak to others positively, say yes to things rather than no all the time. All those things can help you to feel more positive about life. However, make sure you also practice saying no to things you don’t want to do without feeling guilty about it. Think about how your inner voice speaks to you, try to make it positive. For example, instead of thinking I am fat and disgusting and I need to lose weight, try, I am gorgeous, and if I lost a few pounds it would be better for my health and give me more energy. Look in the mirror every day and say out loud something positive about yourself, tell yourself, I am beautiful, I am kind, I am a good mum and keep saying it everyday, everytime you see a mirror. If there are people about you can say it in your head. Try out some kindness Whilst some of the ways to improve our self-confidence is to focus on ourselves, you can also do it by focusing on others too. A simple way to do this is to try out some kindness. Give a friend a compliment, tell them why you love them, donate to charity or simply just give up some of your time to listen to someone else. All of these things not only make the other person feel great, but make sure you feel great too. Remember what is awesome about you When we are feeling low in self-confidence it is because we have forgotten what makes us so great. So, a simply way to improve this is to remind yourself what is so awesome about you. Yoga Don’t just do something...sit there! Is there anyone left on earth who doesn’t know that if we want to be healthy we need to exercise? Exercise strengthens our heart, lungs and bones; increases our mobility and flexibility; burns calories, improves mood, sleep and memory and infuses us with energy. So after the excesses of Xmas, lets put exercise at the top of our New Year’s resolutions list. Remember exercise should be fun! Forget slogging away in a sweaty gym (unless that’s your thing). Why not try something completely different in 2018, like yoga? Developed more than 5000 years ago in India, Hatha Yoga is the most common form in the west. It involves physical posture work (asanas) and deep breathing (pranayamas), in preparation for meditation (dhyana), when the mind is quiet and focused on a single object, sound or chant. The exercises stretch and flex the spine and the joints, strengthen muscles and bones, tone up the internal organs and stimulate circulation, digestion and the nervous system. In the Sanskrit language yoga means union, harmony and balance. It results in body-awareness, because it calms the mind, while bringing vitality, strength, and flexibility to the body. After practising yoga you will become more aware of how you stand, sit and walk and how you cope in stressful situations. Yoga is a safe

and relaxing form of exercise that can be practiced by anyone, regardless of age or ability. It is gentle and non-competitive. Don’t think you have to be a contortionist and tie yourself up into impossible positions like some super fit celebrities. Once you’re in a posture, you breathe and relax into it and only do as much as your body will let you. Yoga is suitable for almost anyone, though if you have health problems including high blood pressure, heart disease, a back or neck injury or have undergone recent surgery, then you should consult your doctor before embarking on any new exercise regime. There are many forms of Hatha Yoga to suit all levels of fitness. Ananda and Iyengar Yoga are good types to start with, but there are more vigorous forms like Ashtanga and Bikram Yoga for those who like a challenge. You’ll find information about your nearest beginner’s yoga class from The British Wheel of Yoga, a registered charity and the largest yoga organisation in the country. Loose clothing and a non-slip mat are all you need to get started. If you want to improve your stamina, strength, flexibility, posture, and cope better with stress, enrol in a yoga class and you’ll have taken the first step into an activity you can enjoy for many years. You might even extend those years considerably!

Sarah Champier of The Cotswold Flower Company was Personal Florist to the Prince of Wales for over a decade. Part of her role was to style and decorate the Christmas tree at the Prince’s Gloucestershire home Highgrove House. “I dressed so many trees whilst in royal service, in the Cotswolds, London and Scotland. I love Christmas and always look forward to turning the tree into something special. I put on seasonal music and totally immerse myself in this seasonal opportunity to be really creative.” Here Sarah shares some of her style secrets to help you create a tree to impress! “I often begin with some fabric…gossamer Sarah Champier with a sparkle or sheen in a colour that will blend with your chosen theme. Wrap it around the tree and tuck it in towards the centre, deep within the branches, to create a soft backdrop for the rest of the decorations. Vintage saris can look amazing! “Next come the lights, I always use white with a green cable so that it’s absorbed by the natural colouring of the tree. Follow the lights with tinsel or any garlands you may want to use. Then start to place the rest of the decorations on the branches. I use an eclectic mix of ceramic, glass and metal. Gathered over the past 35 years, they include swans, foxes, robins and even flying geese! “Woodland creatures and Nordic winter wonderlands are on-trend for Christmas trees this year with grey and parchment being the colour themes of the season although red never seems to be far behind all the trends.”
