hen you look at your kitchen, you may notice that your kitchen floor and cabinets look like a bad flashback from another era. While you may not be ready to move just yet, taking on a kitchen renovation project can certainly add value to your property. The kitchen is probably the most utilized room in a home - nearly every homeowner will experience the exciting-though-daunting task of planning a kitchen renovation at one time or another. Poor layout, inadequate lighting, cramped spaces, outdated fixtures and old cabinetry are common complaints of homeowners. With some careful planning and good advice, this space can be turned into a gathering area that is functional, yet comfortable. Amy Koehn (Kohon Designs) took on the challenge to revitalize Mickey and Louise Hargreaves’ existing kitchen. The ultimate goal was to increase workspace, while creating an attractive kitchen that they would enjoy spending time in. Koehn selected products and finishes that complimented and enhanced the cedar ceiling. “I really wanted to make it stand out as the stunning feature it was.” To reduce the electrical installation costs, a

All existing appliances and plumbing were replaced in the renovation. A new wrought iron and wood railing was installed to give the staircase a much more modern look and feel. Koehn replaced the flooring using a combination of cork and tile. “The cork color plays off the shades in the ceiling which a nice overall unity to the space.” The backsplash was composed of custom-cut 4” x 6” porcelain tiles to maintain the clean lines of a contemporary look. The existing bi-fold closet doors were also replaced with a beautiful glass sliding door system that reflects the style of this whole new look. The Hargreaves now have a kitchen with room to move. It’s beautiful, functional and certainly looks like it belongs. Before you decide to go ahead with your own kitchen renovation, it is important to clearly identify the features you want in your new kitchen. Just as important is a thorough pre-renovation inspection to identify any existing problems. Consider things like: •Size and design — the existing kitchen may be too small or poorly laid out. •Fixtures and appliances — the fixtures and appliances may be worn out, inefficient or outdated. •Cabinets and countertops — cabinet finishes, hardware or countertops may be outdated, need repair or replacement. •Structural problems — there may be problems that require structural changes or repairs. •Moisture — the floor, walls or finishes may be unsightly or damaged due to moisture problems.

Different Styles of Desks Throughout History A rather versatile price of furniture is the desk. A desk typically has a section that functions as a table and then also contains a storage area. Desks tend to be used for writing or computer use. Most items stored in the desk are stationary, office supplies and other items of business. Desks will have the drawers to one side and the table on the other so a person can sit underneath it and have access to everything. There are several types of desks besides this more classic table style. A portable desk is very much just like a board that can be put on your lap and used when travelling. You can find an armoire desk inside your wardrobe and this desk does not have a table. There are desks that sit multiple people as a partner’s desk is like two desks facing each other joined together, this also goes by the name of a double desk. Desks became very popular when paper and typing became a main staple of the business place. This occurred mainly during the 20th century. Most of these industrial style desks are built for strength and can easily carry a typewriter and reams of paper. They also contain plenty of storage for files. The beauty of sofas is that they turn any location into a place where you want to be. I am referring to a phenomenon
that extends beyond your typical place for a couch, say, in the living room of your home. What I am talking about is when you see a sofa having ventured outside the usual confines; when you come across one sitting unexpected on the sidewalk or in a bar. There is some sort of quality to sofas that makes their presence in an outside or public setting seem like a pleasant little surprise. It’s as if the disparity between the public landscape and the casual intimacy of a couch transforms the piece of furniture into a miniature thrill ride from its rarity. (NC)—Simple to make, these mouth-watering coins have a rich cheese flavour and crunchy walnut texture that make for perfect hors d’oeuvres for your next party. • 1/2 lb pre-rolled puff pastry • 1/2 cup shredded old Cheddar cheese • 1/2 cup toasted California walnuts, finely chopped • 1/4 tsp cayenne pepper • 1 egg, lightly beaten Toasting walnuts: In large, dry skillet over mediumhigh heat, cook walnuts until lightly toasted, about 1 to 2 minutes. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper. Set aside. Unroll pastry. It should measure a 10-inch (25 cm) square. If not using pre-rolled pastry, roll out to this size. Sprinkle pastry with Cheddar cheese, walnuts and cayenne pepper, leaving a 1/2-inch (1 cm) border along the top edge. Starting at one edge, roll up tightly, jellyroll style. Place on baking sheet and freeze for 15 minutes, or until firm.

Heat the butter or oil in a large, deep pot over medium heat. When the butter melts or the oil is hot, add the vegetables. Sprinkle with salt and pepper and cook, stirring, until starting to soften, 2 or 3 minutes. Add the stock, adjust the heat so it gently bubbles, and cook until the vegetables are very tender, about 20 minutes. Use an immersion blender to blend about one quarter to one half of the chunks. Add fresh herbs if using, such as chopped scallions and dill. Serve!

No kitchen is complete without a few accessories all developed for the sole purpose of extracting the delicious flavor of garlic. No matter if a person is of an Italian descent, an Italian food lover, a professional chef, or a regular person who likes the taste of garlic, the proper garlic tools are necessities. Garlic is a strong smelling and tasting, and specific garlic gadgets make the cloves easier to peel, crush, chop, press, roast, and grate. Garlic is an ingredient present in many recipes. Since it can have a strong flavor, it is sometimes used in small amounts. However, there are many people who love the taste of garlic and can’t seem to get enough of it. For these people, garlic can be added to recipes in bulk. Since garlic must be removed from its skin before it is used, several tools can assist in making this sometimes difficult job much easier. Most garlic tools can be purchased for a relatively small amount of money, some as little as a few dollars. However, there are quite a few tools which all do different things to a clove of garlic, and a person may or may not need all of them. The need for the tools depends on how much garlic a person tends to use in their daily or weekly cooking. GARLIC PEELER No matter if a single garlic clove or a whole head of garlic is being used for a recipe, everyone can benefit from a garlic peeler. Anyone who has ever tried to peel individual garlic cloves using their fingernails knows how tedious it can be. A garlic peeler can greatly speed up the peeling process and it is very easy to use. By placing a clove or garlic in a garlic peeler, the skin of the garlic sticks to the peeler and the inside of the garlic clove is left for cooking. Using this tool will speed up the garlic peeling process and at the same time it will alleviate the everlasting garlic smell that can remain on fingers. GARLIC ROASTERS True garlic lovers should not live without a garlic roaster. While a piece of aluminum foil can serve as a makeshift garlic roaster, an official roaster, made out of a terra cotta plate, a rounded lid, and ventilation holes, is

the best way to roast a head of garlic. Placing an entire head of garlic (with the top cut off) in a roaster and drizzling it with olive oil, salt and pepper, and baking for about one hour will yield a delicious, soft head of garlic. Individual garlic cloves can be squeezed out of the head and spread directly on a cracker or a piece of bread for a delicious treat. GARLIC SLICERS It’s very difficult to cut garlic into very thin pieces using a knife, and it takes a lot of practice and experience to slice garlic in an efficient manner. So, if a large number of garlic slices is needed for a recipe, a garlic slicer can come in very handy. Garlic slicers ensure that pieces of garlic are uniform in shape and thickness, and they are as easy to use as cheese graters! GARLIC KEEPERS Most people come home from the grocery store with a bag full of garlic heads and throw them in the refrigerator. This, however, is not a recommended place to store garlic. In fact, garlic should not be stored on a kitchen counter either since direct sunlight is not good for it. Garlic keepers can be cute accessories to add to any kitchen, as they come in many styles. Storing heads of garlic in a garlic keeper allows the garlic to remain in a cool, dry place away from sunlight. GARLIC PRESS Simply chopping a clove of garlic into a million pieces with a knife and a chopping board does not produce the same effect as a piece of garlic that has been put through a garlic press. A garlic press is a tool that squeezes the garlic and presses it into tiny pieces. Some recipes call specifically for pressed garlic, and there is really no way to obtain pressed garlic without using this specific tool. There are numerous other garlic tools and gadgets available, and most are very inexpensive. The best way to determine what is needed in a specific kitchen is to evaluate the daily, weekly and/or monthly garlic consumption in a household, and judge what tools would make preparing the garlic easier for the cook. Fennel is crunchy and slightly sweet, adding a refreshing contribution to the ever popular Mediterranean cuisine. Most often associated with Italian cooking, be sure to add this to your selection of fresh vegetables from the autumn through early spring when it is readily available and at its best. Typically used to compliment fish, fennel is found in a variety of Italian dishes, as well. It is the seed that flavors Italian sausage. Fennel is composed of a white or pale green bulb from which closely superimposed stalks are arranged. The stalks are topped with feathery green leaves near which flowers grow and produce fennel seeds. The bulb, stalk, leaves and seeds are all edible. Fennel belongs to the Umbellifereae family and is therefore closely related to parsley, carrots, dill and coriander.

3 Great Coconut Shrimp Recipes
If you love coconut shrimp, here are three different, but very good coconut shrimp recipes to try.
Coconut Beer Batter Fried Shrimp with Pineapple Salsa
Coconut Shrimp Kabobs with Island Coconut Salsa
• 2 eggs • 1-3/4 cups all-purpose flour • 3/4 cup beer • 1 tablespoon baking powder • 2 lb. medium shrimp, peeled and deveined coconut oil • 3 cups grated coconut
• 1 lb. shell-on shrimp, uncooked • 1/3 cup coconut milk, canned and sweetened • 2 tablespoons lime juice • 1 garlic clove, crushed • 1 teaspoon red chili peppers, seeded and minced • 1 teaspoon ground cumin • 1/2 teaspoon ground coriander • 1/4 teaspoon ground white pepper • 12 to 18 fresh pineapple chunks
Seasoning mix: • 1 tablespoon cayenne pepper • 2-1/4 teaspoons salt • 1-1/2 teaspoons sweet paprika • 1-1/2 teaspoons black pepper • 1-1/4 teaspoons garlic powder • 3/4 teaspoon onion powder • 3/4 teaspoon dried thyme • 3/4 teaspoon dried oregano Thoroughly combine the ingredients for the seasoning mix in a small bowl and set aside. Mix 1-1/4 cups of the flour, 2 teaspoons of the seasoning mix, baking powder, eggs, and beer together in a bowl, breaking up all lumps until it is smooth. Combine the remaining flour with 1-1/2 teaspoons of the seasoning mix and set aside. Place the coconut in a separate bowl. Sprinkle both sides of the shrimps with the remaining seasoning mix. Then hold each shrimp by the tail, dredge in the flour mixture, shake off excess, dip in batter and allow excess to drip off. Coat each shrimp with the coconut and place on a baking sheet. Heat deep fryer to 350°F. Drop each shrimp into the hot oil and cook until golden brown, approximately 1/2 to 1 minute on each side. Do not crowd the fryer. Drain on paper towels and serve immediately. Lay shrimp on large lettuce leaves and serve with Pineapple Salsa dip. Garnish with lemon, orange, or lime wedges. Pineapple Salsa • 1 cup finely chopped fresh pineapple • 1/3 cup chopped red onion, 1/4 cup finely chopped fresh cilantro • 1/4 cup pineapple preserves (or apricot-pineapple preserves) • 1 tablespoon finely chopped seeded fresh jalapeno chili • 1 1/2 tablespoons fresh lime juice • 1/4 teaspoon ground black pepper Combine ingredients and gently toss.

Island Coconut Salsa • 1 cup flaked coconut • 1 cup chopped cilantro • 1 cup chopped green onion • 2 tablespoons fresh lime juice • 2 tablespoons minced fresh ginger • 1 to 2 teaspoons minced garlic clove • 1/2 teaspoon sea salt • 1/2 cup olive oil or macadamia nut oil Peel and devein shrimp retaining tails; set aside. Combine coconut milk, lime juice, garlic, red peppers, cumin, coriander and pepper; pour over shrimp. Marinate no more than 1 hour. Thread shrimp and pineapple chunks on skewers. Broil or grill, 3 minutes per side, or until shrimp are done. Arrange coconut shrimp on large lettuce leaves. Serve with Island Coconut Salsa on the side.
Caribbean Shrimp Run Down • 1 lb shell-on shrimp, uncooked • 3 tablespoons lime or lemon juice • 3 cups coconut milk • 1 large onion • 3 cloves garlic • Finely chopped hot pepper to taste • 1 lb. tomatoes, peeled and chopped • 1 Tbsp. vinegar • 1 tsp. fresh chopped thyme • Sea salt and freshly ground black pepper Peel and devein shrimp retaining tails. Pour the lime juice over the shrimp and set aside. Cook the coconut milk in a heavy frying pan until it is oily. Add the onion, garlic and cook until the onion is tender. Add the hot pepper, tomatoes, salt and pepper, thyme and vinegar. Stir and cook very gently for 10 minutes. Drain the shrimp, add the other ingredients and cook until the shrimp is tender, about 10 minutes. Serve hot over rice. Preparation time: 30 minutes.

Merlot is a variety of grape which is known as a close cousin of Cabernet Sauvignon. It is used to make red wines, which are very famous in the wine lovers’ fraternity. It has low tannins and produces fast matured and soft textured wines. It is often mingled with Cabernet Sauvignon to soften the taste. Wines made from Cabernet Sauvignon are generally very soft, smooth for throat and rich in taste. On the contrary, wines made from Merlot are very dry but thin in texture and not very soothing to absorb. Unlike Cabernet Sauvignon, Merlot needs cooler places to be matured. As Merlot is very easily affected by fungus and mold diseases, it is very difficult to grow. Merlot grape achieved its first success in the Saint Emilion and Pomerol areas of Bordeaux. The example of Merlot derived wine is Chateau Petrus. Merlot grape generally has ripe berry element. Merlot wines are generally contained in Bordeaux bottle which is high shouldered. Merlots can be aged for long but generally are ready to absorb in 4 to 8 years. Usually Merlot should be served little below of room temperature. This is due to the reason that if the temperature reaches 74 degrees Fahrenheit, then the alcohol gets an unpleasant sharp taste and becomes very much pungent. To avoid this problem, Merlot can be stored in refrigerator for 20 to 25 minutes.

It rips earlier than Cabernet Sauvignon grape. Basically Merlot was regarded as a blending grape, but now it has found its place in the upfront of the wine world. It is massively cultivated in East Europe and California. It has also immensely breeds in Chile, where it is the second most popular grape. But it seems that Merlot is mostly honoured in California. It has flavour like bell pepper and blackcurrant and also can be found in chocolate and spicy flavours. As Merlot has soft texture, which helps it to have a titillating plumy, fruity flavour and very delicate smoothness, it gets more acceptability than Cabernet Sauvignon. Merlot is less discrete and little bit flowery in aroma and flavour. Unlike Cabernet Sauvignon, it is not much acidic. So it is more tasteful. When the cold days start setting in,
you know that you have to take care to bundle up and to avoid getting sick, but did you know that you should take the same precautions for your pet as well? Just like people, animals are strongly affected by winter, and if you have pets, now is the time to start thinking about how you can make them comfortable and keep them healthy during the long winter months. Learn a few basic tips to keep your animals in good shape this winter. First, before the winter sets in, take them to the veterinarian. Your veterinarian can make sure that they are not going to have problems that will get bigger as it gets colder and you will find that if they do, now is the time to treat them. This is essential if your dog or cat is older. Conditions like arthritis are going to make your pets’ joints very sensitive and tender in the cold months, and it will also make them more clumsy. If they jump up on things, they can miss or stumble and hurt themselves. Make sure that your older pets have comfortable and warm sleeping spots on the floor. When the temperature starts dropping, keep your dogs and cats indoors as much as you can. If you do need to take them outside, keep them on a leash and stay with them at all times. Remember that if there is a reason for you to leave them outside, they need a warm shelter against the wind, and this shelter should have bedding and a water source. A hot water bottle wrapped in a towel can help keep them comfortable as well. Remember that long haired breeds like huskies will tend to do better than short haired breeds like Great Danes, and keeping them indoors can be an important factor in keeping them healthy.

THE 2010 OLYMPIC TORCH With the New Year fast approaching so are the 2010 Olympics! The excitement is starting to build as the Olympic Torch will be coming through Melville on Saturday, January 9th at 3:00 – 3:30 p.m. We would like everyone to come out and help us welcome the Torch to our community. Come early to enjoy some of the festivities! It will be first coming to the Tourism Centre and then will be making its’ way to City Hall with a City float escort. There will be hot chocolate and sweets being served throughout the City, at the Tourism Centre, City Hall and Royal Bank.
