HOW IT WORKS Contributions to a traditional 401(k) plan are limited to $18,000 in 2015. Learning to swim early in life is safer and smarter BY JANEEN CHRISTOFF

I

’m going to be honest: It is my dream to see my daughters swim in the Olympics. When running through the list of activities that they would do as children, swimming was at the top of my list – way above dance class, soccer practice and piano lessons. So, when we found Australian Swim School’s Baby Swim Program, we were hooked. However, swimming lessons, particularly for small children, aren’t just for Olympic hopefuls (or parents of them). Learning to swim is a choice that is both smart and safe. “Water is all around us,” says Diane Bainbridge, CEO of Australian Swim School. “Pools, spas, rivers, lakes and the ocean can be aquatic playgrounds, or they can turn into a dangerous liability in a heartbeat. Learning to swim is essential for everyone.” Beyond the obvious safety reasons, Bainbridge points out that learning to swim provides other benefits as well. “Swimming promotes health and wellness for all age groups, from infants to senior citizens,” she says. “Water links us to our mental, social and physical selves.”

Research is on her side. According to a recent study from the Griffith Institute for Educational Research in Australia, children who learned to swim at an early age were ahead of their peers in developmental milestones, such as oral expression, literacy, math and more. Considering swimming’s mental and physical benefits, it’s no wonder parents are increasingly interested in enrolling their children in swimming lessons early. So what makes Australian Swim School so successful? An internal instructor training program that emphasizes swim techniques as well as child development principles and carefully crafted class routines have been fine-tuned over three decades. But their world-renowned Baby

Swim Program is what really put Australian Swim School on the map. It arguably pioneered the baby pool-safe movement that swept the nation beginning in the 1970s. In the Baby Swim Program babies and toddlers were taught to roll over and float on their backs in the event that they fell into a backyard pool or spa.

Pool Safety Tips: The Consumer Product Safety Commission warns that backyard pools can be a fatal attraction to toddlers and that drowning is a leading cause of death to children under age five. With that in mind, here are some water safety tips to follow:

As the pool-safe children progressed in capabilities, however, so did Australian Swim School. In the 1980s, these babies grew and developed into excellent competitive swimmers, competing in the Orange County Swim Conference swim meets. People were amazed at the high level of technique and swimming competency these 5- to 8-year-olds were capable of – and Australian Swim School became a destination for families interested in competitive swimming. Today, Australian Swim School is a charter member of the United States Swim School Association, the country’s governing body of swim schools. Diane and her team hosted the very first conference in 1987 and played an integral part in creating the infant-toddler swim guidelines that are used across the country today.

Located at 1404 Village Way in Santa Ana, the swim school brings everything together in a single comprehensive indoor complex. Centered around a 20-meter pool, the location features a party room available for rental that has been a huge hit for birthday parties as well as changing and shower areas with stalls and changing tables for small children. The facility is also home to a 70-foot mural, depicting a colorful undersea spectacle that adorns the wall above the pool. Whether that is a genetic thing or because I put them in swimming lessons before they could walk – the jury is still out. What I do know, however, is that they are safe both in and out of the water and that makes everything more fun. M

• Never, ever take your eyes off your child in the pool, spa or bathtub. • Learn CPR. • Floatable devices, including floaties, are not water safety devices. • Door alarms, pet doors and fences can be manoeuvred by little ones. • If you have a pool or spa, consider a secure pool cover. • Elect a “Water Watcher” complete with a lanyard and whistle especially in pool party settings. Adults can takes turns as the watcher. • Have a phone near the pool or spa area. • If a child goes missing check the pool or spa first. • Beware of leaving your children with a babysitter or family member who has a pool or spa. Talk to your friends and relatives about water safety. • Learn to Swim. Enroll your children in a reputable swim school year-round for continued skill attainment. Most schools offer lessons from as young as six months. Remember: Taking swimming lessons is a journey – enjoy their progress and think long-term safety and fitness. My daughters have now graduated out of Australian Swim School’s Baby Swim Program, and I can attest to the program’s merits personally. My 4-year-old swims like a fish. She is one of the youngest kids at the school’s Manatee level, a class in which kids perfect all four strokes: the backstroke, breast stroke, butterfly and freestyle. For Orange County parents who are interested in training budding Olympians – or who are just looking for swim instruction for their own children – Australian Swim School is now even more accessible. ummer camps in Orange County seem to be in every city up and down the 405 freeway—whether it’s art, music, science, or sports, Southern California keeps their kids busy when school is not in session! Vanguard University’s annual athletics camps for kids of all ages feature basketball, soccer and volleyball, and offer more than learning skills to use on the court or field. There is something that transcends the typical camp experience: character development. Kids who attend the all-star camps receive leadership and character development alongside their sport, designed to create an unforgettable week. The basketball camp has five sessions offered, running June through August. The university’s 2014 NAIA National Championship coach, and Golden State Athletic Conference (GSAC) Coach of the Year, Rhett Soliday, and his assistant, Taylor Kelly, direct the basketball camps. Soliday has taken teams from novice to expert, and won championship after championship—now offering his skills

to the summer camps. Children ages 5-14 or grades K-8 learn in an incredible environment for all skill levels and confidence levels, too! The Rotary Club of Orange supports Southern California Youth Rugby (SCYR) Tournament

T

he Rotary Club of Orange supported the second annual SCYR 7s tournament which took place at Fred Kelly Stadium and surrounding fields last summer. It was a full day of rugby for boys and girls (in two age groups: Under 16 and Under 18) who came from all areas of the state from San Diego to Pleasanton, with non-stop action on four pitches. Kudos to all teams that competed and congratulations to the winners in each division! Three divisions competed across multiple tournaments in the Summer Sevens Series, following specific eligibility rules and earning points in the Serevi Cup standings. Event sponsors were Ford of Orange, Villa Ford and The Bascom Group. Medals were awarded by Orange Councilwoman and Rotarian Kim Nichols and Rotarian Steve Almond awarded the medals to the winning teams.

Thank Goodness, there’s Tom’s Place

ormally I expect to find restaurants like Tom’s Place located in what I call ‘”The Land of the Real Man”, business parks for guys who work up a big hunger while building things. But in the years since opening, three distinct categories of diners developed; hungry guys, health-conscious office workers, and busy families. Located off East 17th Street at Placentia Avenue, I think I’ve dined at Tom’s Place under all those categories. Hooray! They nail all three!

Amazingly, even with the changes in demographics, the menu is essentially the same as when they opened decades ago. In recent weeks, I’ve enjoyed the oversized breakfast burritos while deep sea fishing, had a salad during a lunch meeting, and catered to the special dining requests of the entire family. The interior is comfortable coffee shop style, (excepting the stainless steel counter at which you order). With ample natural light, warm tones, and booths for everyone, the food is brought to the table, although sodas are self-serve.

From their Burgers ($2.79 to $5.79) to 3-egg Breakfast Burritos ($4.09), the food is consistently a better than expected product and value. For example, the burgers are all 1/3 pound size, versus the expected 1/4 lb. And the list of Mexican Food Entrees extends all the way from Tacos and Quesadillas, to Fajitas and Carne Asada plates. I love that you can make any Ala Carte item into a combo for one set price, ($3.70).

Breakfast Burrito ($4.09) - Three Eggs, Cheese, Potatoes, Salsa, and optional meat (add $1.40), including Chorizo. How does one person finish this? An entire Breakfast in a tortilla! Egg Breakfast Combo – Such a value, and enough for two!

Tom Foskari, and his charming wife Effie, have raised four daughters while running Tom’s Place restaurants across OC. Daughter Maria deftly operated upscale Foscari’s Mediterranean Cuisine for nearly 20 years in Yorba Linda, exactly where younger sister, (Polly) now runs wildly popular Sammy’s Place for the past few years. All three establishments used the family’s Greek heritage to enliven the menu and make it more than a Chicken Breast Sandwich; it’s a 1/2 pound chicken breast, marinated overnight in olive oil, lemon juice and garlic, then flame grilled to seared perfection.

Bacon Avocado Burger ($5.99) – Monster Delish, with thickly cut avocado. Or delve into the Pastrami Burger ($5.79), (yes, pastrami piled high atop a burger).

A can’t miss sandwich would be the Beef Melt, with thinly sliced roast beef piled high with grilled onions and melted Swiss cheese on Asiago cheese encrusted sourdough bread. Sandwiches run from The BLT at $4.39 to $6.99 for the Steak Sandwich, which is made from an ideal cut of beef - the ribeye. Fresh salads & good salad dressings are not the only vegan selection, meatless alternatives also abound. But Here are my fav’s.

The Wraps ($6.49) - Charbroiled Chicken & Avocado, or Albacore Tuna Salad & Avocado. And yes, albacore!

Fried Zucchini (or Mushrooms - my favorite!) – ¾’ thick battered and fried, with a delish ranch dressing!

Gyros on Home-made Pita Bread: Just the Special Greek Sauce had me reconsidering every menu selection ever made, it’s that great! $5.70 Turkey Club ($5.69) – this is what the Club Sandwich was designed to be, all encompassing. As a side note - the Chicken Strips are such a value for kids. And the fries earn special merit for being crisp on the outside, yet baked on the inside. Such added value means your next generation to be eating at Tom’s Place as well!

By Ann LAurence I’m a firm believer that traveling together is a perfect way to bond as a family and even a quick trip to a nearby destination provides plenty of memory making moments. We recently planned a long weekend in North San Diego County – it doesn’t get much easier than loading everyone into the minivan for a road trip that literally lasts less than an hour. Traveling with an 8 and 9-year-old and only three days to pack in the fun, we decided to spend the better part of one morning at nearby Legoland and spend the rest of the weekend taking advantage of the accommodation, amenity and activities at the Rancho Bernardo Inn. We were hoping it wasn’t too tall an order to arrange for accommodation that was comfortable and spacious, with family-friendly dining and amenity, including a – preferably heated – pool and within an easy drive to the theme park.

In searching hotel options online, we selected the Rancho Bernardo Inn (ranchobernardoinn.com) and couldn’t have been more pleased to find that this welcoming property more than delivered on its promise of being a “place to play, to relax, to unwind, to reconnect or to find a little time for yourself.” Each of the Inn’s 287 guest rooms and suites are luxurious, spacious retreats with a variety of enhancements – upon check in, our kids were beyond excited to discover that our room came complete with a pop-up tent (where they hid out and slept in during the duration of our stay), a special “gift” for each child that included a new “friend” (a soft plush toy) and delicious fresh-baked cookies and ice-cold milk (Mommy and Daddy had to indulge as well much to the kids’ chagrin). Another surprise were the packages of Smore fixins’ – which included everything we needed to make too many ooey gooey treats and an amenity we put to good use in the cracking courtyard fireplace opposite our building.

A LITTLE HISTORY Rancho Bernardo Inn opened its doors with 30 rooms in 1963. Room rates started at $8, an all-you-can-eat fish fry at Veranda was $1.50 and guests were invited in to see ‘color television.’ The resort course opened with 18 championship holes designed by William Bell, architect of both Torrey Pines and La Jolla Country Club. The resort sought to provide its guests with casual elegance and this philosophy allowed the Inn to become a staple in North County San Diego. The resort gained notoriety on a national level by hosting the PGA San Diego Open in 1964. Art Wall won with a score of 274 and a purse of $30,000. The LPGA Honda Civic Classic was hosted from 1978 to 1980. In 1978, Sally Little won the tournament with a score or 282, defeating Nancy Lopez with a par on the first extra hole. In 1968, Rancho Bernardo Inn was expanded to 151 guest rooms and our beloved El Bizcocho was opened. A renowned fine-dining experience, it was enjoyed by guests and city residents alike. Chefs such as Gavin Kaysen and Patrick Ponsaty honed their skills in the El Biz kitchen, earning the eatery a loyal following. In 2013, with food trends shifting to a more social, sharing experience, El Bizcocho was respectfully put to rest. In June, after a $2.5 million renovation, AVANT was opened to wide interest and acclaim. Since its inception, the resort has expanded to include a Conde Nast award winning spa, redesigned golf course, and the addition of 250 more guestrooms.

LEGOLAND As Orange County residents, we are ideally situated to spend the day at any number of world-renowned theme parks ranging from “The Happiest Place on Earth” to the San Diego Zoo. But for our family – since the time our kids were toddlers to their now-elementary school age (I’d say the theme park’s target audience is four to 12), a favorite attraction has been Legoland (www.legoland.com) in nearby Carlsbad – home to both amusement park rides (most rides are accessible by height with 34 inches being the minimum) and a fun-for-all-ages waterpark (open seasonally) that alone is worth the trip – there are a dizzying array of water activities, slides, wading pools, splash zones and activity areas to keep the kids occupied for hours on end. Unlike its behemoth amusement park counterparts, Legoland is smaller and much easier to negotiate (a plus for parents navigating their brood between rides).

FAMILY-FRIENDLY DINING San Diego has a huge variety of restaurants to choose from: Thai, Lebanese, Indian, Mexican, and even Eritrean. If you don’t feel like venturing off property, the aforementioned AVANT offers an indoor/outdoor dining experience defined by “bright new flavors from the sea, farm and garden.” For sharing, the fried Brussels sprouts were delicious accompanied by curried cauliflower, pickled mushrooms and baby corn, while the Charcuterie (the Chef’s nightly selection of artisan cured or smoked meats and cheeses and house-made mustards were a tasty complement to a nice house cabernet. Among the most popular entrée selections include the glazed black cod and the all-natural filet mignon and for dessert, AVANT serves up an array of unique treats – ranging from pumpkin spice ice cream and blood orange sorbet to a decadent chocolate pistachio cake flavored with brandied cherries, whisky crème sauce, sea salt and bittersweet chocolate mousse.

STONE BREWING CO. Since we were “this close,” my husband wanted to check out Stone Brewing World Bistro and Gardens in Escondido. I wouldn’t have thought the destination brewery and restaurant would be as kid-friendly as it turned out to be and was surprised by the number of families dining in the expansive interior and exploring the beautiful gardens with children of all ages to tow. Stone Brewing (www.stonebrewing.com) which began as a collaboration of beer lover/ homebrewer Steve Wagner and beer geek/rock ‘n’ roll entrepreneur Greg Koch serves craft draft and bottled beers and an array of inventive and delicious dishes with an emphasis on locally-sourced, organic produce. We started with the housemade hummus – made fresh daily and topped with sweet smoked paprika and extra virgin olive oil with coarse ground sea salt and the Stone-style hemp seed pretzels which deserve a special mention because they became the hit of the evening and the often-talked-about dish for days following our trip. Our 9-year-old son’s palate is rather limited (we often half-joke that were it not for peanut butter, he wouldn’t continue to grow), so it took some doing to get him to even try the fresh-from-the-oven pretzels served with jalapeno cheese sauce and stone ground mustard. But one taste and he was hooked … then it was all the rest of us could do to wrestle a sample away to try it for ourselves.

My husband raved about the Stone BBQ Beef – slow-roasted all-natural chuck roast, shredded with Stone Cola BBQ sauce on a Kaiser roll and topped with a tangy blackberry horseradish slaw, served with garlic pepper potato chips. For my part, I thoroughly enjoyed the organic vegetable platter which arrived with seasonal vegetables, braised greens and a barley-quinoa tabouleh. The kids went with their “go-to” menu choices and were perfectly content with the penne marinara and grilled cheese sandwich (artisanal bread with aged white Cheddar cheese and served with fruit). With world-famous attractions, so many family-friendly dining options and the option of an all-inclusive accommodation such as what we experienced at the Rancho Bernardo Inn, what started out as a weekend getaway ended up fun-filled trip we hope to turn into an annual tradition.

On the Santa Barbara Urban Wine Trail, you can take in the cityscape as you amble and ramble from tasting room to tasting room representing twelve premier Santa Barbara wineries – no car needed. After toasting your time together, choose a bottle to indulge in back at home and make your way back to the Canary for dinner at Finch & Fork – where our dining experience was all about “la vida local.” You can always tell a great eatery when it’s a favorite of locals and visitors alike. Because location matters in more than just real estate – it’s absolutely essential when talking about food and wine. The menu features “New American dishes” that start with just-caught seafood fresh from the Pacific and because of an abundance of farmers market fresh produce, grass-fed beef and other artisanal products sourced so close to home, prepare your palate for an “absolute joyride.” For starters, the Sunchoke & Spinach Schmear, which was delicious with house-smoked salmon, pecans, capers and brioche toast and the Kale salad was a flavorful blend of Feta cheese, toasted pine nuts, mustard croutons, radish creamy lemon dressing. For the main course, the Ribeye was grilled to perfection and accompanied by Trumpet mushrooms, cipollini onions and chimichurri fingerling potatoes and a popular pick is the Prosciutto flatbread topped with shaved asparagus, arugula, parmigiano and organic crushed tomatoes. Paris in a Cup TEA SALON AND BOUTIQUE

For this showcase, our editorial team asked Cheryl Turner, owner of Paris in a Cup, to share her personal vision and inspiration behind her immensely popular tea salon and boutique based in historic Old Town Orange ... in her own words and just in time for the holidays.

isitors to my Tea Salon frequently ask me why I chose a French theme for my restaurant, my answer is always the same. I love all things French, especially the beautiful city of Paris. Due to an inner-ear problem, I have never been to the city of love, so I decided to bring it stateside. Old Towne Orange was the perfect choice. My husband and I own the building and this community is a great place to do business. I have been a business owner in this charming district for over 20 years, I can’t imagine being anywhere else.

We offer our guest two experiences, shopping and dining. When you first enter, you’ll discover a little French souvenir shop filled with much of the same merchandise you find when you visit Paris, France. I have worked very carefully with several French Importers to assure my customer they are getting an authentic souvenir. We actually have shoppers who purchase our souvenirs, travel to Paris and upon returning give them to their family and friends.

I’m a fan of old movies, so I incorporated elements from the silver screen era while designing and planning my restaurant. You’ll see touches from movies like “An American In Paris,” “Weekend At The Waldorf,” “Gigi” and more. My plan was to give my guest an escape, to be transported to another era, if only for an hour or two. Even the clock on the wall reads Paris time and you’ll find the daily Paris

Our Tea Market offers our guest a sample “sniff” of every tea we carry, so you can make your tea selection before enjoying it in the salon or purchasing it to take home. In addition to carrying several French tea lines, we also proudly serve and sell our own Paris In A Cup signature brand. Our teas are imported

and blended by a master tea blender here in the US. You’ll find French gourmet goods, tea towels, candies, chocolates, watches and of course Eiffel Towers. French themed jewelry adorned with Eiffel Towers and fleur di lis are abundant and quite reasonably priced. We’re a great spot to find a gift for your favorite Francophile, or that hard to buy for person. After browsing you enter our Tea Salon, deliberately separated from the shop. Once seated in the salon you’ll forget you’re in the US. Our guests are soon transported to another place and time as they sit back in our cushy, European style banquettes or on one of our oversized chairs. Enjoy our French café music while dining. Close your eyes, you’re in Paris. You’ll be offered a menu featuring tea fare, luncheon and tempting desserts, along with our vast tea selections menu containing 130 teas.

Owner Cheryl Turner macarons served on an Eiffel Tower stand. It’s really hard to choose. All entrees include your beverage choice. Choose from of our freshly brewed teas, delivered to your table ready to pour, or our European style coffee, or try our famous French Vanilla lemonade. We also offer house passion-berry iced tea or pick one from the tea selections menu and we’ll ice it for you.

Our kitchen staff, headed up by Chef Josh Backstrom, will prepare your choice to order. You’ll find items like seasonal entrée salads, hearty handcrafted soups and sandwiches and two types of quiche, all prepared fresh daily. Tea fare can include our award-winning scones served with house made crème fraiche and our berry jam, delectable tea sandwiches and petit fours (a trio of petite desserts). You may want to add a side of our delicious three-citrus curd (our scones and curd got us featured in Tea Time Magazine and “Tea and Scones” book, Hoffman Publishing). Tempting desserts are presented with a French flair. My favorites, our crème brûlée or our French

Throughout the year, we have many fun events and themed teas. Some of our most popular include our Meet the Author Teas, Best Friends Tea for Valentine’s Day, Little Black Dress Tea, Mother’s Day Teas, and of course or Joyeux Noel Teas at the Holidays. As a breast cancer survivor, I am happy to give back by hosting a fundraiser the first Friday in October every year. We call it An Evening in Paris. Delicious dishes, an extensive - and impressive - wine selection and impeccable service defines this signature restaurant at The Ritz-Carlton, Laguna Niguel

T

he menu at this intimate, contemporary steakhouse highlights “sustainability-focused cuisine” - each grilled-to-perfection, mouthwatering steak comes from prime grass-fed, pasture-raised beef with no growth hormones or antibiotics. The organic produce used to create the inventive salads (think asparagus Ibérico salad with a poached egg and caviar crème fraîche) and side dishes (including the sauteed wild mushrooms and petite peas) is grown locally and harvested at the peak of the season, allowing for maximum flavor.

Everything is sourced from farms within 150 miles from the resort. The majority of the herbs are gathered from the resort’s organic garden. Every meal starts with a complimentary pâté - on this night it was a chicken liver pâté accompanied by a multigrain ciabatta bread. Personally, I’ve never been a big fan of pâté, but apparently enoSTEAK serves this acquired taste with aplomb because the aficionados at the next table raved about the taste and texture. Having said that, I loved the presentation - the pâté arrived on a custom “conversation piece” crafted from recycled wine bottles created by Elizabeth Gurklys, a Southern California glass artist.

Accompanying the handcrafted meats and seafood are a selection of five enoSTEAK signature compound butters including black The Ritz-Carlton, Laguna Niguel summer truffle, roasted One Ritz Carlton Drive heirloom tomato, garLaguna Niguel den herb and garlic, 30i (949) 240-2000 enoSTEAK butter and tarragon béarnaise sauce.

For starters, enoSTEAK showcases artisanal cheeses and charcuterie - a curated selected of cured meats that are perfectly paired with a glass of a classic California vintage. Did I mention the extensive wine selection? This is clearly a restaurant that caters to the wine connoisseur - there are over 40 varieties on the dinner menu, but the master list boasts nearly 200 wines to choose from - the impressive decorative glass “wine tower” that serves as the centerpiece of the dining room holds approximately 300 bottles.

Chicken and seafood options are on the menu - the chicken is Jidori™, which means “chicken of the earth” and all of the fish is sustainable and either farm raised or pole/troll caught. But make no mistake: the steak here is king. Each handcrafted cut, including the Grilled Prime Bone-in New York Steak, the Grilled Prime Rib Eye Stek and the Grass-Fed Beef Tenderloin is from Niman Ranch, a farm that is committed to raising the highest quality breeds and is dedicated to caring for its livestock traditionally.
