It’s a word banded around quite a lot at the moment, at a time when we seem to be suffering with more chronic disease, mental health issues and dysfunctional relationships than ever. Clearly, though we seem to be aware of our need for the elusive ‘wellness’, as more of us than ever are attending yoga retreats and self-care days, burning essential oils and reading self-help books than ever before. But what exactly does wellness mean? And what are the eight dimensions of wellness? Most of us know that wellness is much more than being physically well. Whilst physical wellness is clearly one impor tant dimension (without it, the other dimensions are harder to achieve), it’s so much more than just being free from illness and more than simply taking care of the foods we eat and exercising regularly. Did you know there are in fact eight dimensions of wellness? They are all mutually interdependent & neglecting just one

for any time can have a knock-on effect, ultimately affecting our health and general wellbeing. The good news is that each dimension doesn’t have to be equally balanced. Each of us will place more impor tance on some dimensions than others. The point is to aim for a balance between them that feels right to us, not right to someone else. WINTER IN THE GARDEN WITH JESS It may be dull and cold outside but the garden is already preparing for the 2021 show. I look at the garden and I see dried, brown seed heads and the stubs of the cut back perennials. The gorgeous rusty Autumn colours of the leaves and dahlias are long gone but the beauty of Winter is all around and the promise of next years colourful displays has been planned. There is still a lot to be done! A simple job to do is to protect your pots from the frosts. If you have invested in beautiful and pricey terracotta pots then move them into a shed, greenhouse or sheltered area of your garden. If they are too big to move then wrapping them in bubble wrap works really well. I always seem to loose one or two due to my own carelessness and wish I’d taken this piece of advice. Bare root trees, shrubs and roses can be planted any time from now until about the end of February. They are in their dormant state so get them planted and they will thank you for it in the Spring. I plant my bulbs in October and November but many seeds can be sown on a warm windowsill so they are ready for planting after the frosts, these will flower earlier and be stronger plants than those sown next Spring. Sweet Peas will benefit from planting now as will Snapdragons.

I have always loved being outside and noticing the wildlife that plants and flowers bring into our gardens. As a youth I was much happier surrounded by my pets and plants than anything else, this has never changed. Now at the age of 40 I think I’m where I’m meant to be; surrounded once again by plants and pets. For the last 12 years I have been a florist, I have owned my own shop, been studio based and freelanced for some amazing florists having the opportunity to work at amazing venues all over the country. During the last 5 years I have had the space to grow my own flowers, often adding the perfect bloom into my floral displays. Right now a new chapter is opening up and there is much more flower growing in my future. These articles will be my thoughts and observations of the garden as it grows and changes.

WILDLIFE As for the wildlife in your garden, there are jobs that you should NOT do to help them out. Don’t turn your compost, if you are lucky enough to have Hedgehogs then they may be snuggled up and hibernating in there. Solitary bees take refuge in the hollow stems of plants that have been cut back so don’t cut them back any further for now. If you have scruffy areas of leaves, logs and sticks then leave then be while the creepy crawlies enjoy the shelter. Lastly, don’t forget to feed the birds with fat balls, nuts and seeds, you will be rewarded by watching them fluttering down to feed. If you provide then with water too, then they will enjoy a bath. I love watching the birds from my kitchen window and am becoming a proper twitcher, I don’t even mind the pigeons and squirrels.

CHRISTMAS With Covid still affecting everyones lives, I think we all need to support our local businesses this year more than ever and also tap in to our creative sides and make something natural and meaningful.

Christmas isn’t just about the meals – there are presents many will be thinking of and potentially stressing about – I know some of you have them bought, wrapped and ready to go already but for others its going to be even harder this year. If you wish to send presents – be creative – most people love something homemade or with a bit more thought in it. Jam Jars are versatile things (or kilner jars, whichever you choose) – get one for every person you want to buy for (excluding young children) – decorate it and fill it with something relating to them – sweets, crafty bits, hot chocolate kit, sewing bits, bath time treats, tealights, seed packet and garden gloves, savoury nibbles, flavoured sugar or salt, popcorn, beauty bits even socks or pants! If you want to make something or have been caught out short notice, I have found a great recipe this month for Microwave Fudge ready in just over an hour! Another reciepe I spotted that looked interesting was a Seabass in Puff Pastry , it could be an alternative for Christmas lunch! Lastly and I’m yet to try this at time of writing…how to make sloe gin that is ready in two weeks – yes TWO WEEKS!! Wherever we are, whatever we are able to do and whoever we are able to be with to celebrate, I wish you all a safe and healthy Christmas. Find happiness in what is possible and look forward to being beyond whatever currently isn’t. We’ll get through it if we take care of ourselves and others. If anyone is able to drop an item into a foodbank basket when you are next passing please do, it will make a difference – every item adds up and there will be many more in need this year. The Twyford Pantry Seabass in Puff Pasty - Sevves 4

Ingredients 60 g small cooked prawns 2 tbsp tarragon , finely chopped 1 tbsp olive oil , plus extra for greasing 1 large free-range egg , beaten 2 tbsp milk plain flour , for dusting 500 g puff pastry , halved 1 kg whole sea bass , filleted (ask your fishmonger to do this) – you can also buy frozen sea bass fillets

Go online to find a delicious Salsa Verde recipe to accompany this beautiful tasting Seabass Method Preheat the oven to 220ºC/450ºF/gas 7. Combine the prawns, tarragon and olive oil in a small bowl and season generously. For the egg wash, whisk the egg and milk in a small bowl and set aside. Lightly flour a work surface and roll out half of the pastry to a rectangular shape about 5mm thick and 10cm longer than the fish fillets (for the head and tail). Transfer to a lightly oiled baking tin.

Place one of the fillets, skin-side down, on the pastry, leaving a little more space at one end for the tail shape. Spoon the prawn and tarragon mixture over the fish and place the other fillet on top. Brush the edges of the pastry with the egg

397g can condensed milk – always have one of these in the pantry! 140g salted butter, chopped into pieces 1 tsp vanilla bean paste 2 tbsp coffee liqueur (or another alcohol of your

Roll out the remaining pastry to the same size and use this to cover the fish, pressing the edges carefully to seal them. Use a small, sharp knife to trim the excess and create your fish shape. Then, with a teaspoon, score half-moon shapes into the pastry in the style of fish scales (but don’t pierce the pastry). Roll the off-cut pastry to 1cm thick, cut out a few thin strips to shape into fins, and tear off a small piece and roll into a ball for the fish’s eye. Build your fish shape, brush with the remaining egg wash, then bake for 15 minutes. Reduce the oven temperature to 220ºC/350ºF/gas 4 and cook for another 20 minutes, until the pastry is golden and the fish is cooked. Microwave Boozy Fudge makes 24 - alcohol optional!

Method Grease and line a 20cm square baking tin with baking parchment. Put the sugar, condensed milk and butter in a large heatproof bowl (the mixture will bubble up as it cooks to roughly double its size so this is important), add a good pinch of salt and stir together. Heat the mixture in the microwave on High for 10 mins, stirring every 2-3 mins. Keep an eye on the mixture, as it will bubble up and may go over the sides of the bowl making a sticky mess. Add the vanilla and liqueur to the mixture, whisk together and heat on High for another 2 mins. The mixture should be caramel-coloured and thickened. Scrape into the tin and set aside for 45 mins to 1 hr until cool and firm before cutting. Pack into a box and eat within 3 weeks. source: www.goodfood.com
