Editor’s Note Welcome to the November / December edition of Community Contact magazine! It doesn’t quite seem right talking about Christmas before Halloween or Fireworks night but the months seem to be rolling by rather quickly! I love Christmas, and I hope you find this issue helpful for planning ahead. In this issue we catch up with Claydon Estate who have a huge variety of Christmas trees available to buy from their courtyard this year, along with wreath making workshops, festive afternoon teas, Christmas lunches and block printing workshops! Check them out on pages 6 and 7 for more information. There are recipes from the Twyford Pantry to tickle your taste buds, and a pick of our favourite gifts in our ‘Shop Local Christmas Gift Guide’ on page 9 to encourage you all to look for those unique presents right on your doorstep! I have also had the pleasure this month to be invited a long to two very special meals. For those of you who don’t know about Cornwall Place Kitchen’s Chef’s Table, you need to see my review on page 30. The Chef’s Table is an intimate dining experience in Buckingham and can be found above Cornwall Place Kitchen’s coffee shop. Think tasting menu, a wine flight with 10 of your favourite people and the whole place to yourself. It was a very special evening, and one I hope to repeat very soon. We also got to visit the new Horwood House, who after their recent £8 million renovation have seen the once tired looking hotel looking fabulous! Check out our review of Harry’s Bar & Kitchen on page 38. The annual Christmas Fair in Winslow will be held on Thursday 24th November from 5.30pm to 8.30pm, in the Market Square. GUT HEALTH AND JOINT PAIN

Do you suffer from aching, stiff joints, and need to pop more painkillers than you’d like? Painful joints are not simply an inevitable side effect of growing older, but can be a signal from your body telling you something is amiss. You might think your gut and your joints couldn’t possibly be connected, but your gut can hold the key to healthy joints.

What is pain? Pain is a signal produced by your body in response to stimuli like pressure, heat or tissue damage. These cause your immune system to release inflammator y chemicals. Special ner ves sense these chemicals and transmit the information to your brain, creating the feeling of pain to encourage you to change your behaviour. It’s a power ful sensation to prevent you from damaging yourself fur ther. Sadly, pain often becomes a vicious cycle, with your brain expecting to feel the pain even when the original stimulus has gone away. The perception of pain is a delicate balance between your immune system and your ner vous system, and it can easily go off kilter. Around 13% of the adult population of England are prescribed opioid drugs like for chronic pain with many more regularly taking over-the-counter medication. Why do joints hur t? Ar thritis occurs when car tilage, the slipper y, cushioning substance between the bones of the joints, breaks down. This causes friction between the two sur faces of the joint and therefore pain. Car tilage can be damaged due to wear

and tear, as in osteoar thritis, or because your immune system mistakenly attacks it, thinking it’s an invader. This is known as rheumatoid ar thritis. Joint pain can follow a viral infection, including COVID, when your immune system is on red aler t from fighting the virus and your joints are caught in the crossfire. Does the Gut Affect the Joints? If your own immune system is attacking your car tilage, the cause can lie in your gut, because this is where your most of your immune system sits. The bacteria living in your gut teach your immune system what’s dangerous and what isn’t and regulates when your immune system launches an attack, and what against. If your microbiome is healthy, your immune system will do what it’s supposed to, but if the bacteria are out of balance, immune cells may produce too many pro-inflammator y substances, damaging joints. Osteoar thritis was long believed to be down to wear and tear on joints. However, it’s now suspected to be an inflammator y disease linked to poor gut health too. Researchers discovered the microbiomes of obese individuals contained more of the types of bacteria causing inflammation, leading to rapid

deterioration of joints, par ticularly after minor injuries of the types usually sustained during activity. However, if they received a supplement of prebiotic,

food for the beneficial gut bacteria, meaning the healthy bacteria thrived and multiplied joints remained healthy even though the individuals were over weight.

Natural Strategies to Prevent and Relieve Joint Pain • Eat an anti-inflammator y diet – avoid sugar, processed foods and alcohol, and enjoy plenty of plant-based foods. • Magnesium is great for relaxing tense muscles which aren’t relaxing due to ongoing pain. This then contributes to more pain by pulling joints out of alignment. At a conser vative estimate, 20% of the UK population is deficient in magnesium. Magnesium rich bath salts can be one way to increase this mineral. • Essential fatty acids are crucial for managing inflammation. Eat plenty of oily fish, nuts and seeds. • Vitamin D is involved in managing inflammation, too. A recent study

found vitamin D supplements reduced rheumatoid ar thritis by 22%. Vitamin C is needed for car tilage formation, preventing friction between bone sur faces. One study showed Co-Enzyme Q10 supplements reduced the production of inflammator y substances in rheumatoid ar thritis patients. Your body produces Co-Enzyme Q10, but you make less as you age. Anti-inflammator y herbs include ginger, turmeric and nettle. Good quality sleep is vital to repair damaged joints and combat inflammation.

IN CONVERSATION WITH SHERYNE SR Who is Sheryne?

A Londoner born and raised, I have enjoyed living and working in Buckingham for the last five years after a sojourn in Milton Keynes. I’m Mama to two amazing little humans, Phoenix Jai 8, a budding mathematician who is addicted to Roblox, and Támesis 7, my mini me who sings, dances, loves performing onstage and practices her times tables in her spare time. In the rare hours I am not working you can find me ferrying kids to clubs, practising yoga, or running around the town (literally!), 10k is my distance of choice, but I usually add half marathon or two in for good measure! If you are at parkrun on Saturday, be sure to give me a wave, if I am not running, I’ll likely be volunteering.

We are a Business Support Agency with over 20 years’ direct experience in numerous business sectors from engineering to social care, big corporates to one (wo)man bands. So why are you passionate about payroll?

Over the years we saw opportunities to improve procedures, simplify systems and give our clients added value at the same time. Payroll is part HR and part accounting, being experienced in both of these areas allows us to bring our talents to the table in a way that has a big impact on our clients’ business efficiencies. What is the one piece of advice you would give to any business owner?

Payroll is far more important than most business owners realise. A lot of sole director owned business don’t have a PAYE scheme set up as they don’t expect to be able to pay themselves a salary when they first get started. When in fact it should be considered over and above drawing down dividends. Making a salary payment that is sufficient to cover the National Insurance Contributions Lower Earnings Limit (LEL) ensures you maintain the advantages of making NI contributions, such as state pension and various benefits, but without the need to actually make NI payments.

What would be your final message

Whilst payroll is not the most exciting job out there for many, the intricacies, the often convoluted and contradictory nature of it, means it is always interesting and every time we at Sheryne SR solve a problem it’s like winning a little battle, and it’s all about the win with us, whether it’s ours or yours! OH WHAT A NIGHT... AT THE CORNWALL PLACE KITCHEN! I was lucky enough to be invited along to a press night at the lovely Cornwall Place Kitchen in Buckingham at the end of September. We enjoyed the most delicious tasting menu at their Chefs Table above the Cornwall Place Kitchen Coffee Shop. If like me, you might be thinking… “Whats a chefs table..?” well you are about to find out… The Chefs Table is an intimate dining experience in the heart of Buckingham with your nearest and dearest. The Chef’s Table is the only bookable table in Cornwall Place Kitchen and seats 6-10 people comfortably. The experience enables you to not only have the building to yourself but watch the cooking take place right before your eyes. You have access to an ipad and the spotify app allowing you to be able to play any of your favourite songs whilst enjoying the best food and drink in Buckingham. There I said it – it was that good! George and Sarah are fantastic hosts, and their knowledge for food and drink is impressive. The food was all perfectly paired with drinks that complimented the food. Every dish is introduced to you, as well as the drink to accompany it. Our welcome drinks were a sloeberry fizz featuring local gin company, Bucks Brothers Gin. The first course was a bloody mary tapioca puff followed by a blue cheese scone with mushroom clotted cream and onion rum jam.

We then moved on to the most exquisite mackerel pate on an onion waffle with beetroot and celeriac served with a delicious Chafor Wine special edition rose. For those of you who don’t know, The Chafor Vine Yard can be found in Gawcott! Next we had a mushroom risotto with a cheese souffle, jus and thyme cracker served with the most delicious red wine from another British vineyard, Half Penny Green Wine Estate ‘penny red.’ Next up which was probably my most favourite course, was the pork loin with ragout dauphinoise, parmesan and parsnip which was paired with another delicious red, villa gracchio chianti! We were then served the most refreshing pallet cleanser - a blood-orange margarita pop sprinkled with salt! Pudding was probably my most favourite pudding of all time, a chocolate delice with beetroot marshmallow, smoked cream and white chocolate. The pudding was served with two drifters rum old fashioned! This really was the perfect night and we will certainly be having a chef’s table of our own in the not too distant future! If you want to celebrate a special occasional I thoroughly recommend booking this wonderful experience. Chefs Tables are bookable for Friday and Saturday evenings while other days of the week may be requested for bespoke packages. A minimum spend of £500 will be applied to all bookings so it is suggested that bookings are of 6-8 people to get the true experience. A deposit of £20 will be requested upon booking and the rest can be paid in full in advance or on the evening. Cancellations less than 48 hours before will be charged at £50pp. If you don’t have enough people to private hire but would like to try the Chef’s Table menu, you could consider one of their popular “Pop Up” nights. Well, now how did that happen?! One minute I’m pouring over light fresh summer recipes, the next I’m immersed in Festive Food ideas and seeing Christmas arrive everywhere we look! Being a self-confessed Christmas Fairy though, I’m secretly loving it!! With the brilliant Twyford Christmas Street Fayre on again this year (3rd December) I’m thinking about doing a Twyford Pantry stall so it’s helping whet the appetite nicely. It really is true that time flies the older we get but time this year feels almost surreal. And what a surreal time it has also been with the loss of our dear Queen Elizabeth in September. Whether you are a fan of the Royal family or not, I don’t think anyone can have failed to be moved by the impact and emotion of her passing. On a completely different more positive note, I was pleased to read a survey in Country Living recently showing approximately 79% of British people are living greener lives than they were 10 years ago which is great news and I think King Charles (gosh it still feels strange saying that!) will spearhead the continued focus on that into our future. Measures taken include less wastage, cutting down on travel and using less energy in the home with colder washes and layering up rather than pumping up the thermostat! Welcoming Spaces is a brilliant scheme across Bucks providing warm, safe places to go to help keep heating costs low at home – these currently include several libraries but more spaces will be on offer soon. Visit the Bucks council website for more info. With keeping costs low in mind, I have focussed on ‘Christmas on a Budget’ for this issue – ‘low cost’ can mean ‘more thought’ which is always a good thing, especially at Christmas! Communities learned how to pull together again over recent years and hopefully we will see more of this to help each other through Autumn and Winter and over the Christmas period. I hope you find these recipes useful, and from our home to yours, I wish you a warm, cosy couple of months ahead and a fun festive time in and out of the kitchen! Love Tina x

Twyford Pantry Ultimate roast chicken (serves 4-5)

Ingredients 1 free-range chicken, about 1.7kg 1 garlic bulb, unpeeled, halved horizontally 1 lemon, halved, plus a squeeze for the gravy a handful of thyme sprigs 5 fresh bay leaves 125g soft unsalted butter about 2 tbsp extra-virgin olive oil 100ml white wine 3 tbsp plain flour about 400ml fresh chicken stock Method Preheat the oven to 200°C, fan 180°C, gas 6. Fill the chicken cavity with half a bulb of garlic, half a lemon and the herbs. Season all over with flaky salt and black pepper. Pack the butter under the skin on the breast and legs. Place the chicken in a roasting tin, drizzle the oil over the skin, squeeze over the other lemon half and maybe season a bit more. Tuck the other half of the garlic bulb in, too. Roast for 15 minutes, then turn the oven down to 180°C, fan 160°C, gas 4 and roast for a further 45 minutes.

Check the bird is cooked by spearing between the leg and the breast with a skewer and if any pinkness appears, carry on cooking. Once cooked, leave to rest for 15 minutes; prop the bird up to let the juices run out. Pour the juices from the roasting tin into a jug and skim off as much of the fat as is practical. Pour the white wine into the roasting tin and stir to release all the lovely sticky bits from the bottom. Scrape into a saucepan and add the roasting juices. Whisk in the plain flour and cook for a minute, then gradually whisk in the chicken stock to your preferred thickness. Simmer for 5-10 minutes. Add a squeeze of lemon juice and season to taste. To serve, joint the bird into about 10 pieces and place on a platter, then pour the gravy over the meat.

Christmas pudding ice cream bombe (serves 6-8)

Ingredients

dried cranberries or glacé cherries few holly leaves or fresh bay leaves (optional) gold lustre, to decorate (optional) Method Take the ice cream out of the freezer for 20 mins to soften. Put the mixed dried fruit in a small pan and stir through the brandy, clementine zest and juice and cinnamon, then heat until just steaming. Set aside to cool. Oil and line a medium pudding basin (approx 900ml) with two layers of baking parchment. Cut into the sides of the parchment, so it fits closely around the sides of the basin – you want it to be as smooth as possible as it will imprint into the bombe. Two layers of parchment will help you remove it once frozen. Mix the softened ice cream, infused fruit and any remaining liquid with the free from Christmas Pudding in a large bowl. Mix gently until the fruit and pudding are evenly distributed in the ice cream. Spoon into the basin, and smooth over the top. Cover and freeze for 6 hrs until solid. Will keep frozen for up to three months. About 20 mins before serving, heat the cream in a small pan until steaming. Put the chopped chocolate in a bowl, then pour the hot cream over it, stirring until the chocolate has melted and the mixture is smooth and glossy. Leave to cool slightly. Remove the bombe from the freezer 10 mins before serving.

750ml vanilla ice cream 100g mixed dried fruit 3 tbsp rum or brandy 1 clementine, zested and juiced ½ tsp ground cinnamon sunflower oil, for the pudding basin 150g free from Christmas Pudding, leftover, or cooked and cooled, cut into small cubes 80ml double cream 60g dark chocolate, finely chopped

To serve, invert the bombe onto a serving plate and remove any parchment – dip the base of the basin into warm water to help remove it if needed. Pour the chocolate ganache over the top, easing it gently down the sides of the bombe a little before it sets. Top with the dried cranberries or glacé cherries, and the holly or bay leaves, if using. Spray everything with gold lustre, if you like, and serve whole at the table before cutting into portions.

An evening out at Horwood House At the beginning of October we were lucky to be invited to the newly refurbished Horwood House to their restaurant Harry’s Bar & Kitchen. Horwood House have spent nearly £9 million on refurbishing and I have to say it looks absolutely fantastic! Harry’s Bar & Kitchen is a contemporary and stylish restaurant with a large variety of seating options, including a large kitchen table allowing everyone from couples to larger groups to dine and drink together! We were welcomed by a lovely waitress called Alina, who really made us feel welcome and looked after us throughout our meal. Before we decided on what to eat we ordered our drinks, a Tom Collins for me and a beer for Neil! To start with I went for the Burratina (a little bit like mozzarella) which was served with pomegranate, toasted almonds, ample minus8 dressing and an onion seed flat bread. Neil had kiln roasted salmon fish cake with fennel jam, orange chicory, herb and alioli! We both really enjoyed our starters. For main I was treated to a ribeye which came with chips and a watercress salad. I had the peppercorn sauce and the Heritage carrots, maple yoghurt & tarragon and greens with garlic & herb butter to go with it. The steak was tender and the flavour absolutely divine. The vegetables were also delicious! All of their meat is sourced locally from The Buckingham Butcher. The steaks are aged for 30 days in a bespoke Himalayan Salt Chamber whilst whole on the bone.

Neil ordered the lamb kofte which came with an onion flatbread, courgette & carrot salad, feta, pine nuts and mint. Our puddings were so pretty! WILL BLINDS HELP TO KEEP THE COLD OUT?? The short answer is yes!

It’s often at this time of year, as the nights close in and the mercury starts to drop that we get asked to recommend blinds to help keep the cold out. With the energy crisis looming, keeping warm this Winter is likely to be at the forefront of your thoughts. With this in mind, your choice of window coverings may be affected, but it is important to know that all blinds will offer thermal benefits if used correctly. Firstly, it always helps to allow the room to warm up during the daytime sunshine by opening the blinds up. However once the sun starts to go down it’s essential to close the blinds immediately and leave them closed until the morning to help retain as much of that heat as possible. Ensuring that your blinds are made to measure will give you the best chance of having as few gaps as possible and if your preference is Venetian Blinds then the slats should be closed tightly to prevent unnecessary heat loss. Roman Blinds are a great choice as they not only come in a magnificent range of fabrics they are also often thermal lined which naturally adds extra insulation. Plantation Shutters are by far the most effective solution for all seasons - keeping both the cold AND the heat out depending on the climate. The frames are sealed in around the windows which creates a little trap between the window and the shutter thus keeping the elements out. We are a family-run business which originally started life as an iron mongers’ shop in Reading, Berkshire. As time went on the business evolved to selling gas and other forms of solid fuel. The business eventually moved to new premises in Sonning Common in 2009. In 2017 we were given the opportunity to set up a new yard in Oakley, Aylesbury. We have been supplying customers locally ever since. Earlier this year, local supplier WG Hill & Son made the decision to cease selling gas.
