Aqui irá encontrar não só as nossas sugestões, mas também ler um pouco sobre as nossas iniciativas, novidades, curiosidades e até o ajudará a descobrir o cocktail perfeito para si. ¶ Este ano foi especialmente importante para nós, uma vez que na maior feira de Bartending do país, o Lisbon Bar Show, o Columbus foi galardoado com o prémio de Melhor Equipa de Bar, e o de Melhor Menú de Bar. Sim... é a publicação que está neste momento a ler. It's a family business, founded upon friendship and taste for the bartending activity. We try to put to pratice what we enjoy and learn through time, in an apparently simple way, and always professional. ¶ When the bar opened in , our goal was to create our brand in a nice place,

with quality beverages and specialized service.

AS ONDAS VOLTARAM A ABANAR A FESTA MAIS NAVEGADA DO ANO, COM A 11ª EDIÇÃO DA COLUMBUS BOAT PARTY. PT Foi pela ª vez que O Condor de Vilamoura levantou ferro e zarpou para a festa mais ondulada do ano: a Columbus Boat Party. Com o apoio da GinSul, mais uma vez os destemidos navegantes amarraram-se ao bar aberto e dançaram no convés ao sabor das ondas e da música misturada por Mike Fuentez e Hugo Alves. Rumo à Ilha de Faro, foi sempre com boa disposição, muitos sorrisos e algumas tolices

que a pista de dança navegante voltou ao cais de Vilamoura. Para ganhar fôlego dos mergulhos e recuperar energias, pão com chouriço e croissants. ¶ No final da tarde, e com um tempo perfeito, os piratas voltaram a terra, com abraços e cantorias alegres, na expectativa da próxima aventura e com memórias inesquecíveis.¶ Mais um grande Momento Columbus.

With the support of GinSul, once again the fearless sailors tied themselves to the open bar danced on the deck, balanced by the waves and the mixing of Mike Fuentez. Navigating towards the Island of Faro, it was always with a lot of laughs and some foolishness that the navigating dance floor returned to the pier at Vilamoura. To regain breath from the diving and recover the energy, bread with chourizo and croissants did the trick.¶ In the end of a perfect afternoon, , the pirates came back to shore, hugging and singing happily, in the expectation of the next adventure, and with unforgettable memories.¶ Another great Columbus Moment!

PT O Voyage, criação de João Rodrigues, head Bartender do Columbus, é um gin tónico que muito tem de gin e pouco de tónico. Confuso? Um simples e surpreendente truque culinário fez toda a diferença, que lhe valeu o primeiro prémio no II Concurso Barman “Melius Magellan” no Hotel Melius, em Beja. “Toda a gente vai fazer um gin tónico, por isso tive de fazer uma coisa diferente. Vi uma receita que incluía uma redução de vinho do Porto, e isso deu-me a ideia de reduzir a água tónica.” - Esta técnica permitiu concentrar os aromas essenciais do quinino e tomilho da tónica mediterrânica que, embora perdendo o gás, complementou na perfeição os tons altos das especiarias que estão na base do Magellan, faltando apenas o toque cítrico amargo da toranja para equilibrar o preparado. Vale a pena experimentar.

EN The ‘Voyage’, a creation by João Rodrigues, head bartender of the Columbus, is a G&T that has a lot of G, but not much a T. Confused? A simple a suprising culinary trick made all the difference, and it was worthy the first prize in the Melius Magellan Barman Competition, in Beja. ‘Everybody is going to make a G&T, so I had to do something different. I saw a recipe that included a reduction of Port Wine, and it gave me the ideia to reduce the tonic water’. This technique has allowed him to concentrate the essential aromas of the quinine and thyme in the mediterranean tonic that, although losing its gas, has complemented the high tones of spice that are in the basis of the Magellan Gin, only lacking the bitter citric of the grapefruit peel flavour to balance the preparation. It is worth trying.

PT A maior feira internacional de profissionais na área do Bar em Portugal, o Lisbon Bar Show, realiza-se em Alcântara, Lisboa. Esta encontra-se aberta não só a entendedores mas também a particulares e curiosos interessados na excelência do serviço, onde poderão vislumbar novas tendências, novos produtos e ter contacto directo com os melhores Bartenders de todo o mundo. As competições ao vivo, workshops, e formações na arte do Cocktail são algumas das valências deste evento. ¶ Este ano, estiveram distribuídas pelo espaço do pavilhão mais de uma centena de representações de marcas e projectos na área do Bar. ¶ Cerca de metade dos  melhores bartenders no ranking mundial marcaram presença nos dois dias do evento, promovendo palestras, demonstrações, provas, num ambiente de convívio e boa disposição. ¶ O Columbus - Cocktail & Wine Bar não poderia deixar de estar presente, com o apoio da GinSul, para dar a conhecer o espaço, a equipa e as suas talentosas criações. ¶ Houve também lugar para o estimulante flair bartending, com espectáculos de malabarismos usando garrafas, copos, e instrumentos da mise en place típica de um barman, usados de forma pouco ortodoxa, porém impressionante. ¶ Foram vários os prémios atribuídos durante o festival, tais como os de Melhor Cocktail, Melhor Bartender, Melhor Bar do País, Melhor Bartender Internacional, Melhor Produto do Ano. Mas foi nas categorias de Melhor Equipa de Bar e Melhor Menu de Bar que o Columbus brilhou, trazendo os orgulhosos troféus, para o Algarve neste caso Faro, símbolo do esforço conjunto de toda a família Columbus. ¶ Divertimento e enriquecimento são as palavras-chave que melhor descrevem a experiência. Até para o ano (para novos prémios?)!

Fun and enrichment were the keywords that better describe the experience.

EN The biggest International Fair for the profissionals of the Bar area in Portugal, the Lisbon Bar Show takes place in Alcântara, Lisbon. It's opened not only for the connaisseurs but also for the curious and interested in the art of well preparing and serving of the perfect cocktail, new trends and products and to be able to directly contact famous bartenders from all over the world. ¶ About half of the  best barmen around the world were present on the two days of the event, promoting lectures, demonstrations and tastings, always with a good mood and friendly environment. ¶ The Columbus - Cocktail & Wine Bar couldn´t stop being there, with the support

by GinSul, to promote the bar its team and talented creations. ¶ There was also room for the stimulating flair bartending, with juggling of bottles, glasses and bartenderware used in a very unorthodox although impressive way. ¶ There were several awards distributed, such as Best Cocktail, Best Bar and Best International Bartender, Best Product, but it was in the Best Bar Team and Best Bar Menu categories that the Columbus shined, bringing the proudly earned trophies home, symbol of the team effort of the Columbus family. ¶ A lot of fun and enrichment are the keywords that better describe the experience. EN Cider is an alcoholic beverage made from the fermented juice of apples. It is very popular in the United Kingdom, but it can be found all around Europe and in the USA. ¶ The juice of any variety of apple can be used to make cider, but cider apples are best. Just like grapes, each apple gives its contribution to the tanines and predominances of flavour, colour and consistency, balanced according to the type you wish to produce. ¶ It's lighter than beer and very refreshing.

Who was Columbus?

EN We learn at school that Christopher Columbus was a sailor that, discredited by the Portuguese Court in the th century, had seeked support of the Spanish Court, in order to help him find the New World, under the argument that if the Earth was round, there would be a possibility to reach India going West, instead of going East around Africa, like the Portuguese had done. By accident, he kneeled on the beaches of the current Bahamas, believing to be in India. ¶ This mistake has brought a series of controversies to the knowledge of the world, and to the credits of who had done its discoveries. Can it be that Cristóvão Colombo, pardon, Cristóbal Colón, or Cristofforus de Colombo, or Christophorus Columbus, or is that Christopher Columbus, is actually the historical character that has the most identity reclaims? ¶ The first documental evidences point to a Genovesian origin, accepted by the scientific community by absence of proof that might discredit this hypothesis. However, new analysed documents by the two brothers António and José Mattos e Silva, are now raising an important hypothesis that Colubus was, in fact, a secret agent working for the portuguese king D. João II, during the

Portuguese Expansionist Age (known as The Discovery Age), assigned to work within the Spanish Court. ¶ To the Mattos e Silva brothers, the explanation for Columbus's ‘lack of identity’ resides in the fact that he is a bastard son of a forbidden relationship between Dª. Leonor of Aviz, a sister of the king Afonso V with D. João Menezes da Silva. Named Salvador Anes da Silva, he was born in the portuguese region of Alentejo, in a town called Cuba, in the year . He got married by the year , with Filipa Moniz Perestrelo, daughter Bartolomeu Perestrelo, who was the st Mandatory Capitan of Porto Santo of the Madeira Islands, which would justify the nautical skills. ¶ Not being able to be assumed by his biological parents, he was considered to be the son of a nurse of Dª Leonor's (Inês Gomes, married to Diogo de Pedrosa), and adopted the name Sancho de Pedrosa. This name is present in portuguese and spanish documents, such as correspondence from the Spanish Catholic Kings to king D. João II. ¶ The condition of secrecy was to reveal itself important for the (alleged) destiny of the navigator: secret agent at the service of Portugal.

The name Christopher Columbus should have been

the adopted, to better conceal his condition. It is also believed that it was the sailor's performance that has created the conditions on which the Treaty of Tordesilhas was signed, according to which Portugal was able to negociate the location of boundary line far enough to include Brazil in the unexplored territories reserved for Portugal. ¶ Fact is, that it was at the service of the Spanish Crown that Columbus sat foot on the american beaches of the current Bahamas (at the time baptized as S. Salvador, in honour to himself) for the first time in . What is left to find out is wether he did it for the Portuguese as well. ¶ The veracity of this thesis is currently being tested, with the aid of DNA analysis. Born in Cuba (Alentejo, Portugal) or not, the Columbus - Cocktail & Wine Bar wanted to pay tribute the passing of this great navigator by Faro, dated of th March , after have left from Lisbon on his returned back home from his first journey to America, as refered in his logbook. The tile, cimented on the wall of the old Mercy Hospital, cradle of the bar, is handcrafted in the portuguese traditional way, and it's something to be proud of.
