Female chefs have always been among the most influential in America, even when their ranks were small, and now a record number of top kitchens in this maledominated industry are headed by women. They have never been short of role models. Several generations of



chefs for a series of dinners called “The Women of Food.” Superstars such as Nancy Silverton, April Bloomfield, Niki Nakayama, and Elizabeth Falkner will collaborate with Crenn at her more approachable Petit Crenn, turning out some extraordinary, culturally diverse creations. “There are a lot of great chefs out there, many of whom are female. We need to continue the conversation, that’s how the world will change,” said the host chef as she announced the series. “Coming up through the ranks, I knew I had to know the food and technique in a more detailed way than the guys next to me, just to prove myself,” recounts Mary Dumont, now chef/owner of Cultivar in Boston. Since debuting last year in the historic Ames Hotel, the restaurant has become one of the hottest tables in town. “There’s something to be said for equal opportunity, but I probably put in a little extra face time

In addition to authentic French bistros, trattorias and dim sum houses are two restaurants from young chef Katie Button: Cúrate and Nightbell. The self-taught chef — she has a degree in chemical/biomolecular engineering from Cornell — acquired some culinary trickery from acclaimed Spanish toques Ferran Adrià and José Andrés.



creating a supportive environment for her staff. “I think it’s more equal than ever, but I can’t say that it’s equal,” she says of current opportunities for female chefs. “What’s important to me is helping people find their voice, whether male or female,” says Dumont, who observes women tend to be more patient about their careers than men. Many dishes on Cultivar’s menu are inspired by vegetables, but Dumont — she is a former champion of Boston’s Cochon555 competition, a nose-to-tail celebration of heritage pigs — also has a deft hand with meats. Look for those sensibilities in her charcuterie board, dry-aged steaks and agnolotti stuffed with rabbit mortadella. A group of young female chefs is energizing the already rarefied Chicago food scene, and one of the best is Sarah Grueneberg, a native Texan who mastered Italian cuisine under chef Tony Mantuano at the Windy City’s renowned Spiaggia. At Monteverde, she has won a James Beard Award while delighting diners with pork cheek tortellini en brodo or roasted striped bass with white bean purée and salsa verde. A Top Chef runner-up, Grueneberg agrees with Dumont that

Zepeda-Wilkins views female chefs as more sensual and visceral, while male chefs are sometimes motivated by aesthetics or that elusive “wow” factor. “Women are more in tune with connecting to people’s souls in their cooking,” she suggests. Zepeda-Wilkins says the industry is still challenging for women, but admits, “These women will have a better shot of asserting their spot in the kitchen without as much backlash.” Suzanne Goin is one of America’s most accomplished female chefs, with a collection of acclaimed restaurants in Los Angles and a fistful of James Beard Awards. After her Ivy League education, Goin found herself in the kitchen at Chez Panisse, the Berkeley restaurant of Alice Waters that pioneered California Cuisine and transformed fine dining in America. The value of having an influential female mentor like Waters has never been taken for granted by Goin, who pays it forward in her own restaurants. “Mentoring our talent in the kitchen is one of the most gratifying parts of my career,” says Goin, always conscious of how important that relationship can be to a young chef. “Although it’s inclusive of both men and women, I love to encourage women in what is often a male-dominated field,” she says. Washington, D.C., is a challenging place to cook, with a pool of celebrities every bit as entitled and fickle as those in L.A. or New

At Nightbell, she crafts a repertoire of small plates with Appalachian ingredients. “It was often hard just to go to work and do your job without somebody making unwanted flirtatious comments,” reports Button of cooking through the ranks, but notes being the boss has its own issues. “Managing other people has become even more challenging because you have to earn their respect,” says the employer of 135 professionals, many of them women on a leadership track. Button, who is a mom, is pleased she can be a role model for young female employees. “They see that it’s possible to juggle it all, that you can be successful and still raise children,” she says. In San Diego, chef Claudette Zepeda-Wilkins is opening her first restaurant, El Jardín, where the menu will reflect her own culinary and cultural journey, from working in her aunt’s Guadalajara restaurant to becoming a chef/owner. The entire spirit of the restaurant is matriarchal, says Zepeda-Wilkins, who is inspired by the women in Mexico entrusted with pre-Hispanic, indigenous recipes. “It’s about harnessing the Pandora’s box of every family in Mexico,” she explains.

by writers or customers,” contends Brandwein, who suggests the term “comforting” is disproportionately applied to food presented by female chefs. Celebrity pastry chef, entrepreneur and television personality Candace Nelson has expanded Sprinkles, her chic cupcake brand, to 10 states and Kuwait. Recently, she debuted Pizzana, an equally trendy nuovo-Neapolitan pizzeria in L.A.’s Brentwood neighborhood, and considering her penchant for replication it may ultimately become another coast-to-coast hit. Nelson, who remains close to her female mentor from pastry school, is proud to be serving that role for a new generation of women. “When hiring, we always look for the best, most talented individual for the job,” says Nelson, who adds with a smile, “At Sprinkles, we have found that more often than not that person tends to be a woman!”

Recognizing the unprecedented rate of wealthy population growth and the increasingly interconnected nature of global real estate, the Coldwell Banker ®

1. Paris Status: Seller’s market. Average Sold Price in 2017: €1.7 million (US$2.1 million) Who’s Buying: “Foreign buyers represent 15% of the total transactions. The percentage increases substantially, the higher in price point you go,” says Loïc Boppe, general manager for Coldwell Banker France and Monaco. “For instance, foreign buyers represent 50% of the market for properties with prices over €2 million and 70% for properties with prices over €4 million. The top nonresident buyers are French expatriates; the top foreign nonresident buyers come from the U.K., then Italy, the U.S., China and the Middle East.” Draw: “The primary drivers are the attractiveness of Paris in Europe, as well as its exchange rates, market prices, political stability, tax context and ease of access,” says Boppe. Hotspots: Triangle d’Or (8th district), Marais (3rd and 4th district), Saint Germain (6th district), Eiffel Tower area (7th district), and the 16th district. Luxury Housing Stock: Most properties are apartments (Empire-style buildings between 1850 and 1930) and mansion homes. Luxury prices generally start at €1 million for apartments and €5 million to €10 million for mansion homes. Wild cards: “Presidential elections and low interest rates,” says Boppe.



2. Rome Status: Balanced. Average Sold Price in 2017: €1.1 million (US$1.4 million) Who’s Buying: 90% of Rome buyers are Italians. Hotspots: “The most sought-after areas are the historical center, Parioli and Prati, both by national and international individuals who, in most cases, are looking for a first house to purchase,” says Cassiano Sabatini, vice president of Coldwell Banker Italy. Luxury Housing Stock: Buyers and residents mainly demand properties with a view or with outdoor spaces such as terraces or gardens, according to Sabatini. “In particular, new houses in good locations can be worth up to €5,000 to €8,000 per square meter. The price for used houses in excellent locations (excluding the historical center) is more moderate, ranging from €4,600 to €6,000 per square meter. Over the last two years, properties in great positions reached up to €9,500 per square meter and €330 for rental square meter per year.” Wild Cards: “In the prime market, 75% of buyers tend to purchase an apartment rather than other property types in the area,” notes Sabatini.

3. Bangkok Status: Balanced. Median Sold Price in 2017: US$300,000 Who’s Buying: “About 75% of buyers are domestic and about 25% are foreign,” says Adam Taugwalder, CEO of Coldwell Banker Thailand. Hotspots: Sathorn Road, Lumpini Park, Thonglor District and Riverside. Luxury Housing Stock: “It’s primarily new condominium stock,” says Taugwalder. Wild Cards: According to Taugwalder: “The market is shifting upward toward high-end to luxury, condominiums as well as single houses, due to rising land prices.”

4. Biarritz Status: Seller’s market. Average Sold Price in 2017: €820,000 (US$1,015,000) Who’s Buying: “About 75% of buyers are domestic and about 25% are foreign,” says Boppe. Hotspots: Biarritz Chiberta. Luxury Housing Stock: Due to its idyllic location on the Atlantic coast, close to the Pyrenees and Spain, housing prices in Biarritz are incredibly high. Housing stock mainly consists of gabled Basque houses, Bearnaise houses made of stone, pebble and slate, and harbor houses with brightly colored doors and shutters. However, modern luxury buyers are gravitating primarily to “new condominium stock,” says Boppe. Wild Cards: “Prices are rising,” notes Boppe. “There is low inventory and high demand for frontline properties.”

5. Barcelona Status: Seller’s market. Average Sold Price in 2017: €810,000 (US$1 million) Who’s Buying: “We typically see North Europeans, Russians and Chinese,” says François Carriere, CEO of Coldwell Banker Spain. “Americans are also starting to come, attracted by the golden visa program, which allows buyers purchasing properties above €500,000 to hold double citizenship. We’re also seeing a lot of interest from the Middle East, Russia and those with economic uncertainty in their countries. It’s an opportunity for them to find stability in a European country.” Hotspots: “L’Antiga Esquerra de L’Eixample District, which is the city center, with old buildings and historic modernist architecture,” says Carriere. Diego del Mar and Pedralbes are two other popular locales. “Turó Park is also an upand-coming area with office and residential,” adds Carriere. Luxury Housing Stock: “Newly built homes priced at €400,000 to €700,000 are most in demand. These are typically flats with two to four bedrooms in the city center,” according to Carriere. In Diego del Mar, buyers will find modern architecture consisting of condominiums and flats located at the end of the city near the clubs. Pedralbes is a family-friendly area and has more single-family detached homes near international schools. Wild Cards: Presidential elections and rapid price appreciation. Carriere says his team continues to be surprised by “the increase in newly built prices in the prime areas. Prices are up 20% and rents have gone up, too, about 20% to 30%.”
