When Mid Valley High School’s Underwood Players put on a production, they take the time they need to do it right. A good example is this year’s production of the Broadway favorite, “The Music Man,” with a cast so large the group has been in rehearsal since October. The curtain will open on Friday and Saturday, March 23 and 24, at 7 p.m. Director Patricia Powell said audiences can expect a full-scale musical with professional sets and carefully designed costumes ... and full houses in the auditorium. The show first came to Broadway in

Most people are familiar with the plot of “The Music Man.” Wiley conman Harold Hill (played by senior Mateo Lopez) arrives in River City, Iowa, with a scheme to fleece the townsfolk with the promise of forming a children’s band. Among those most suspicious of Hill is lonely librarian Marian Paroo (played by senior Gianna Manzo). Hoping to deflect skepticism, he begins to court her — and soon becomes smitten. If you observe the tradition of fasting during this Lenten season and are looking for quick and easy meatless dishes to prepare for our families; here are some of my favorites. I am sure that you will love these tasty dishes. Be sure to add them to your recipe collection. Enjoy. CHEESY CRAB MEAT PIE 7-1/2 ounces crab meat 1 cup celery, finely chopped 2 tablespoons onion, grated 2 tablespoons green pepper, chopped 2 eggs, beaten 1 cup mayonnaise 1/2 cup unseasoned bread crumbs 1/2 cup Cheddar cheese, shredded 1/4 teaspoon salt 1 tablespoon lemon juice 9-inch unbaked pie shell Preheat oven to 350º. In a mediumsized bowl, combine crab meat, celery, salt, onion, green pepper, mayonnaise, lemon juice, eggs and all but 2 tablespoons bread crumbs. Mix ingredients lightly using a wooden spoon. Turn into unbaked pie shell. Sprinkle with reserved crumbs and Cheddar cheese. Bake in oven for 25 minutes or until pie is firm and golden brown. Serve warm. Yield: 8 servings. OVEN FRIED FISH 1 pound fresh fish fillets (sole, cod or your favorite fish) 2 tablespoons cornmeal 2 tablespoons dry bread crumbs 1/4 teaspoon salt 1/4 teaspoon paprika 1/8 teaspoon dried dill weed Dash black pepper 1/4 cup milk 3 tablespoons butter, melted Preheat oven to 400º. Cut fish fillets into 2-by-1-1/2-inch pieces. Mix cornmeal, bread crumbs, salt, paprika, dill weed and pepper. Dip fish into milk, then coat with cornmeal mixture. Place fish in well-greased 9-by-13-inch
baking pan. Pour butter over fish. Bake, uncovered, for about 12 to 15 minutes or until fish flakes easily with fork. Yield: 5 servings. TUNA AND BROWN RICE PATTIES (Leftovers make delicious sandwiches.) 1 can tuna, well drained 1 egg, beaten 1/2 cup cooked brown rice 1 small onion, chopped 1/4 cup buttermilk pancake mix 1/4 cup green pepper, chopped 1/4 cup Parmesan cheese, grated Vegetable oil for frying In a large mixing bowl, combine all ingredients well. In a large heavy skillet over medium heat, heat oil to cover bottom. Drop tuna mixture by tablespoons onto hot oil; flatten slightly with spatula and fry 6 minutes on each side or until golden and firm. Yield: about 7 patties. SEAFOOD SPAGHETTI WITH MUSHROOMS (Lenten favorite requested by a reader.) 1 cup mushrooms, sliced 2 tablespoons butter or margarine 1 large tomato, peeled, seeded and chopped 1/4 pound shrimp, shelled, deveined and chopped 1/2 cup chopped clams 1/4 pound cooked lump crab meat, flaked 1/4 pound cooked lobster meat, chopped 1 pound spaghetti 1/2 pound butter or margarine, softened and cut into pieces 1/2 cup chopped parsley Parmesan cheese, freshly grated Sauté mushrooms with butter until golden. 1 egg white 2 tablespoons anise seed clams; cook 2 minutes. Remove from 4-1/2 cups all-purpose flour, sifted heat and stir in crabmeat and lobster Mix together yeast and water; let meat. Keep sauce warm. Cook spaghetti stand 8 to 10 minutes, long enough to in about 3 quarts boiling water for 10 dissolve yeast. Bake for 30 minutes 1/2 teaspoon baking soda or until fish flakes easily with a fork. 1 cup chopped cashews Season with salt and pepper before 3/4 cup whole cashews serving. Yield: about 5 servings. Butterscotch Glaze (recipe below) Cream together butter and sugar; HONEY-MUSTARD CRISPY beat in egg until light and fluffy. Add ROASTED POTATOES sour cream. Stir together flour and 2 tablespoons Olive oil baking soda; add to creamed mixture. 2 cloves garlic, finely chopped Fold in chopped cashews. Drop by 1 teaspoon dried rosemary rounded teaspoonfuls onto greased 1/2 teaspoon dried tarragon baking sheets. Press a whole cashew on Salt and black pepper to taste top of each cookie. Bake in preheated 1-1/2 pounds Yukon Gold potatoes, oven at 350º for 12 to 15 minutes until quartered edges are lightly browned. Remove to 1 tablespoon honey wire racks and cool.
