nnus horribilis" is how the Queen described 1992 – her children's complicated love lives and a fire at Windsor Castle bringing an unexpected public display of frustration. For 2021, no one had devised such a memorable description, but it does feel like it needs one after one of the most dramatic years for the Windsor’s in recent history. Only when you stop and look back does it really hit you how incredible it's been that the Queen has managed to publicly stay so upbeat. The death of the Duke of Edinburgh at the age of 99. And as if coming to terms with that loss wasn't enough for the 95-year-old monarch, the family troubles kept coming thick and fast. We saw Harry and Meghan sitting down with Oprah, racism claims against the family, bullying allegations within the palace, and the compensation case brought against Prince Andrew. The Queen’s desire to get back on the road and do as many public engagements as possible has been incredible to watch.

From the start of the new year, everyone has been thinking about digging the bunting, union flags and street party tables out of the loft and the garage, because this June 2022, the Queen will mark her Platinum Jubilee – 70 years as monarch and a moment this country has never witnessed before.

Kevin Hart, Actor. Writer. Author. Producer. Network owner. Those are just a few titles on his résumé, but his aspirations don’t stop there. Perhaps what sets Kevin apart from other comedians and actors is that he is more than just an entertainer. He’s gone from being a cog in the Hollywood machine to being the machine by strategically building a media empire – inking production deals with major TV networks and film companies.

he hugely successful comedian, actor, and producer began his career by sizing men and women for footwear. In his spare time, he would run over to an amateur comedy club to try his hand at stand-up. During this time in his early career, he underwent his fair amount of struggle and criticism, but after dedicated practice and performance, he quit his salesman job to fully pursue comedy. He became a household name and has expanded his ventures far and wide into the entertainment industry, becoming a seemingly unstoppable force.

went to community college and was working at the same time, I was known as the guy who would hold court. But it kind of hit me when some of my friends kept suggesting that I pursue comedy. They said, ‘You’re funny as hell.’ You hear that kind of thing enough and eventually you’re going to try it. When I did, I fell in love with it and knew it would be my career.”

As with any successful person, humble beginnings didn’t hold Hart back. They inspired him and drove him to become better, work harder, seize opportunities and achieve more than anyone thought possible. “When you get dealt certain hands, sometimes you have no idea what the turn is going to be - And it could be the greatest card you’ll ever be dealt.” Growing up, Hart knew he wanted to catapult his love of making people laugh into a career – he just didn’t know how to get from making his co-workers chuckle to seeing his name up in lights.

Kevin Hart is the highest-earning stand-up in the world right now, from September 2017, Hart’s Irresponsible tour filled 119 arenas around the world, including six in the UK. Meanwhile, as an actor, his prolific output of comedy blockbusters such as Ride Along and Night School have made more than $4 billion at the box office. “I’m extremely attracted to business,” adding later that he thinks he could be a billionaire by the time he’s 45.

It took time for Hart to develop a unique comedic style. After an early period of attempting to imitate comedians like Chris Tucker, he found his own rhythm by delving into his insecurities and life experiences. “Because of what I do, it has to be an open book,” he has said. “But right now, this is a book that is being written.” Kevin Hart began working as a stand-up comedian shortly after graduating from school, eventually migrating to bigger clubs in New York and Los Angeles. “I’ve always been a funny guy, but when I

In 2009, Kevin released his first stand-up album, titled I’m a Grown Little Man, and has released 4 additional stand-up albums since then.

When it comes to stand up, Kevin has come a long way from his early experiences during his career; getting booed and dodging half eaten chicken wings, but once he fell in love with comedy, he knew this was the career path for him. “Having a live audience, having that immediate feedback, hearing that laughter, that’s what you live for, that’s what you love the most -- hearing laughter, hearing that response. When you’re live, when you hear that reaction, it is motivation not just to go on, but to keep hearing that laughter and to hear it grow. I don’t think there’s a better feeling in the world.” Hart surrounded himself with greatness in every aspect of his life. By chance, he found a mentor in veteran comedian Keith Robinson who began to coach him. He later started performing under his own name and soon success followed. He counts Oprah, Drake and Dwayne “The Rock” Johnson among his friends. It’s not every day that an action comedy becomes breeding grounds for an iconic celebrity friendship. There are just some celebrity friendships that you can always get behind, ones that make you smile from ear to ear. “I can say I have a tremendous amount of respect for the man that he is, it’s good to see people flourish in a world where some don’t know you can”. Dwyane Johnson and Kevin Hart have built something of a ‘bromance’, off-screen as well as on screen. The pair have worked together in a handful of films, including ‘Central Intelligence’, ‘Fast & Furious Presents: Hobbs & Shaw’, ‘Jumanji: The Next Level’ and ‘Jumanji: Welcome to the Jungle’.


Kevin Hart knows how to entertain audiences as an actor, comedian and performer, but when it comes to fatherhood, the dad of four is a complete natural and an absolute devoted parent. “My favourite part about being a dad is that you get to watch these little lives develop into adults, you know? When you’re an active part of your child’s life, you get to see them slowly mould into mini versions of you. So, for me, it’s about being present. I learned the mistakes that were made from my dad with me growing up, and I know where there should have been a lot of time spent, but there wasn’t, and it left a sour taste in my mouth. Spending time with my kids, just being present, is the most important and best thing about parenthood in my mind.”

How to get Headhunted BY STEPHANIE JACKSON,

Stephanie Jackson Recruitment Getting headhunted can be a great way to enhance your career or even explore opportunities that you may have never considered, without spending much time job searching. Although you could be happy in your current position, there is nothing more flattering than being approached for a new opportunity by a head hunter who is searching for that perfect candidate and believes that person could be you! Passively job seeking at all times can lead to great opportunities and keep you in the know of what is happening in your industries job market. However, if you are actively seeking a new role, here are some top tips on how to get headhunted…

Tip 1: Make sure you are visible!! Have a strong, authentic online presence. And no, I don’t mean posting your true feelings about how much you hate your boss on LinkedIn! What I do mean, is ensuring that your LinkedIn profile is up to date with your current role and status and actively sharing, commenting and/or liking relevant posts that could get you noticed. Actively demonstrate your contribution to your current business or industry. For example, if you are a Store Manager whose team have consistently hit targets, then share this on your social media. If the business you work for is achieving great results as a result of your employment, then share it! It’s great to put yourself out there – not just for the likes and follows but to get noticed by the right people! If you are actively seeking a new role then ensure you make this known by adding the right people to your network. Research recruitment agencies that specialise in your field as well as key hiring managers for any businesses you would like to work for. You will be shocked at how quickly a conversation will be sparked.

Tip 2: Networking Your Network is your Net worth – one of my favourite sayings! This saying is often used in conjunction with “it’s not what you know, it’s who you know” and yes, this is true to a certain extent. However, when it comes to getting noticed by a potential new employer or recruiter then it’s an equal mixture of both. As with your social media presence, putting yourself out there is extremely important physically too, so if there is an industry event coming up – make sure you’re there!

Tip 3. Be ready! One thing that I find really frustrating as a recruiter is when I come across an amazing candidate and they are interested in the role BUT they do not have their up-to-date CV ready. This has often led to roles being filled in the time that it’s taken for what could have been the right candidate to send across their CV. If you are hoping to be headhunted or even passively looking for your next move, don’t run the risk of being left behind because your CV isnt ready.

What inspired you to open a sunbed salon?

To be honest, I bought my first Fakin’ it salon with the intentions of opening a male grooming salon (I used to go to a place in Central London) and wanted to open something similar in Cockfosters. I eventually saw the potential of a tanning and beauty salon so I ran with that and the rest is history!

Which of the five Fakin’ It’s was the first and when did it open?

We have five Fakin’ It salons, one of them being a franchise, Cockfosters was my first salon and we are fast approaching our 20th year in business this November!

Will we be seeing any new Fakin’ It salons popping up soon?

Watch this space! We are super proud of being the leading and most successful tanning chain in North London & Hertfordshire! There’s a few more areas in North London we are looking at, our focus for our next salon/s will be in Dubai, the UAE is a growing market and perfectly suited to our brand!

How important is it to have a business plan and branding?

For me branding is key! I’ve been told over the years we have a strong brand presence on the high street, I believe it still looks fresh and current after almost 20 years! We have just reverted back to our original brand colours, after a short colour change, we quickly realised our original brand colours were perfect all along.

What do you look for when hiring staff?

Anyone coming on board needs to be reliable, outgoing, good with people, knowledgeable in sales, have a flexible approach and a strong work ethic.

What challenges have you faced and how did you overcome them?

The cost of running the salons have increased dramatically over the years (utility charges, business rates, stock) yet our prices have not changed much, we have strived to keep prices low for our loyal customers. I have found that by constantly investing in my salons this has helped us stay at the very top. We also adapt our services by introducing cutting edge tanning options for our customers such as our rainbow tanning sunbeds which have quickly become one of our most popular offerings.

What advice would you give someone who wanted to start their own business?

Do your research and then do more research! Study your target market, understand who your competition is and hone in on your unique selling point with the customer always in mind! Most importantly be individual and unique, create your own brand with your own ideas to take your chosen market by storm with fresh approaches! Also make sure you have the financial resources to support you through the first few years, contrary to what people think you’ll be very lucky to make a return straight away!

Do you have any tips on ultimate tanning?

Always use a tanning lotion and never over expose your skin, a tan takes time to achieve, less is more! We are proud to be part of the Sunbed Association and promote responsible tanning! Ask your salon if they are part of the Sunbed Association and have the correct beauty licenses (this will tell you a lot about the salon). We are also very proud to have the Sunangel duo in both our Cockfosters and Enfield branches, these beds are a sensor safe tanning sunbed with no risk of overexposure and a guaranteed tan on the first session!

You recently launched your very own lip plumper; do you have any other ideas up your sleeve? We are currently in a research and development phase on a few of our own brand products which we are very excited about launching very soon. Our goal is to to be a major supplier of all things tanning & beauty in the coming years throughout the UK and UAE.

Crowning Glory We chart a year of exciting events in London to celebrate 70 years of our beloved Queen Elizabeth II.

The world has transformed in the past 70 years. Platinum Jubilee Celebrations A dazzling 90-minute outdoor spectacle over the four nights of the Royal Windsor Horse Show will see more than 1,000 performers and 500 horses thrill in the private grounds of Windsor Castle. Featuring well-known stars of stage and screen, A Gallop Through History takes spectators from the reign of Elizabeth I to the present day. Trooping The Colour June will be a time of celebration with the Queen’s Birthday Parade kicking off a four-day bank holiday weekend, starting the festivities with a majestic display of military pomp and pageantry. Trooping the colour will see the 1st Battalion Irish Guards, with more than 1,200 officers and soldiers from the Household Division, taking part, as well as hundreds of musicians and horses. They’ll be joined by members of the Royal family in a carriage procession down The Mall, watched by thousands of spectators, before they return to Buckingham Palace to watch a military flypast from the balcony. Lights Around the World In a spectacular display, more than 1,500 towns, villages and cities across the UK, Channel Islands, Isle of Man, British Overseas Territories and Commonwealth capitals will light beacons to mark the Jubilee, with a principal flame being lit in a special ceremony at Buckingham Palace. Communities are also being encouraged to bake a savoury tart created by the women’s farming organisation Country Women Country Wide to share at the beacon-lighting ceremonies. The recipe represents all the parts of the UK, including cheddar cheese from England, potatoes from Northern Ireland, smoked salmon from Scotland and leeks from Wales. Giving Thanks St Paul’s Cathedral will play host to a Service of Thanksgiving for the Queen’s 70-year reign.

Based on previous occasions, more than 2,000 guests could attend, including members of the Royal family, political and military leaders, realm Prime Ministers, governors general and representatives from different faith groups, charities and organisations associated with the monarch. The service follows a tradition observed for royal Jubilees dating back to Queen Victoria’s Diamond celebration in 1897. She arrived at the head of a 17-carriage procession carrying members of her family and foreign royals. Victoria, however, was too frail to leave her landau and the 20-minute service was conducted at the foot of the West Steps.

The cathedral hosted a service for George V’s Silver Jubilee in 1935 and in 1977, as the Queen reached the same milestone, nearly a million spectators lined Her Majesty’s processions route to St Paul’s. In 2002, she arrived at the cathedral in the Golden State Coach, pulled by eight horses. And she returned to the famous landmark on the final day of her Diamond Jubilee celebrations in 2012, when the service featured specially written prayers and music, and military trumpeters and musicians.

The Derby

Platinum Party at the Palace

It’s one of her favourite racing events of the season and the Queen will attend this year’s Derby at Epsom Downs with members of her family as part of her official Platinum Jubilee celebrations.

Some of the world’s greatest entertainers are billed to perform at a BBC concert at Buckingham Palace to celebrate the most significant moments from the Queen’s reign.

Racegoers will be hoping to catch a glimpse of the monarch, as she is traditionally driven down the racecourse at the start of the event before meeting officials in the winners’ enclosure and taking her seat in the Royal Box.

The monarch and members of the royal family will attend the star-studded show, which is likely to follow the format of previous Jubilee concerts at the Queen’s London home. In 2012, 10,000 people won tickets to watch performances by Sir Paul McCartney, Sir Elton John, Sir Tom Jones, Dame Shirley Bassey, Stevie Wonder and Kylie Minogue.

The Derby, first run 1780, is the world’s most famous race on the flat; Het Majesty, a passionate horsewomen and racing fan, has never had a winner in the historic contest, but may have a runner this year. On Saturday 6th June 1953, just four days after her coronation, the Queen achieved her best result to date, with her horse Aureole finishing second to Pinza. Thousands more were invited from charities and organisations associated with Her Majesty while millions tuned in to watch on TV. The monarch had arrived late to the concert after her husband, the Duke of Edinburgh, was taken to hospital, but appeared on stage alongside the glittering cast of performers at the end. In a touching speech, the Prince of Wales referred to the Queen as “Your Majesty, Mummy”, thanking her “for inspiring us with your selfless duty and service and for making us proud to be British.”

The Platinum Jubilee Pageant

The Platinum Jubilee Pageant will have all the excitement and spectacle of an international parade and carnival – awe-inspiring and filled with marvel and delight. The Pageant will combine street arts, theatre, music, circus, carnival and costume to celebrate Her Majesty’s unwavering duty, love of the natural world and dedication to the Commonwealth. The Platinum Jubilee Pageant is inviting children from across the UK to play a part in the ‘River of Hope’ procession. Forming an important part of the Pageant, the procession will comprise of two hundred silk flags which will process down The Mall,

emulating a moving river. Primary and secondary school children are invited to create a picture of their hopes and aspirations for the planet over the next 70 years. A selection of these creations will be transferred on to silk flags, which will carried by secondary school pupils. The artwork for the flags will be focused on climate change and incorporates the children’s messages for the future. Teachers from applying schools will be provided with step-bystep guides to creating a beautiful digital artwork with their students, of which 200 will then be selected for the flags. The selected artwork will then also be shown up and down the country on screens as part of the Jubilee celebrations.

Yes, the DREADED talking stage! For those who know the dating scene all too well, this is probably the most annoying stage of finding a mate.

genuinely don’t care about your favourite colour, how long you’ve been single and if you send nudes. Please, I don’t have the brain capacity to store the colours of the rainbow in my head. As we are venturing into the summer months, at last with some normality post COVID, dating will start heating up, so if you planned on having a summer bae or winter warmer, I’ve got just the thing for you. I’ve decided to put together a hotlist and a sh*tlist of the dos and don’ts of the talking stage.

If they are not putting in the effort during the talking stage, it can be an early warning sign of what is to come, so if you want to live constantly wondering where you stand with a person, take this moment in the talking stage to remember what you want and stick to it.

I love a good flirt. I’m surprisingly pretty good at it… or so I’ve been told. But there’s a fine line between flirting and being a complete dirtbag. Now if you’re looking for something very casual, be the absolute dirtbag you want to be… do you boo. But if you’re looking for something more meaningful, a few off the cuff, leading flirty comments could spark a roaring interest from your prospect partner. Don’t be afraid to use your feminine charm to guide him into your arms.

You’ve waited this long to find the right partner, and you’ve kissed a lot of frogs, so set your boundaries from early on in terms of the minimum that you’re prepared to receive.

Being honest about what you’re looking for is key in successfully moving out of the talking stage with the right partner.

There is absolutely no point in pretending to be someone that you’re not, because like most people, you can’t keep the façade up for too long.

If you want something serious, hint at that. Of course, don’t tell him on day 1 that you’re looking for the father to your kids, but make the point of saying that your intention is to be in a relationship as opposed to a casual cuff.

You want to find someone who will be the Ying to your Yang, the Robin to your Batman, the Krept to your Konan, so if being yourself doesn’t tickle their pickle, why waste your time? Be charming, be courteous, find mutual interests (this does not

If you genuinely want to just see how things go and looking for fun dating, then say that too. It’s not uncommon to find yourself in a casual dating scenario which progresses into much more. This tends to happen because you aren’t putting pressure on the situation and want to enjoy the other person’s company for what it is; companionship, friendship, dinners and a consistent dating partner. Your happiness comes down to your honesty about what you really want from the situation.

5. Keep it short – talking stages shouldn’t last longer than a few weeks.

That’s right pen pal. Call this the triaging stage of dating. Think of it like a strategic business. You find a few prospects, you then use the talking stage to triage them. Do you like their chat, do they tick off some of your requirements? Are they date-worthy or are they full of the ick? Use this time to filter out the ones you want and the ones you don’t.

6. Take a chill pill.

That’s correct. Just chill, relax. Enjoy it for what it is and if you don’t enjoy it anymore, then don’t partake. No one is holding you to ransom to speak to anyone you don’t want to speak to and vice versa. During the talking stage, no one owes anyone anything and that’s what you need to remember. It’s anyone’s to win or lose. So long as you have this mentality and you don’t take it personally, then you’re good to go.

Now time for the talking stage sh*tlist. If you find yourself doing any of these things, be self-aware, and go again.

1. Do not treat him like your boyfriend.

Oh ladies, ladies, ladies. This was something I learned the hard way. Remember, the talking stage is the triage part of dating. The chances are there are multiple people in the mix and you’re trying to navigate your way to working out who is right for you to move onto dating. It’s pretty easy to get attached at this stage, especially if it’s consistent talking and they’re saying all the right things. Men tend to tell women what they want to hear, so don’t get sucked into believing that he is yours and you are his off the bat. Take a breath, take each day as it comes and if a reasonable amount of time has passed and you’re getting on well and you feel comfortable and confident that this could be going somewhere, then you can have a conversation about where you both think this is going. Which leads nicely onto this next point.

2. Projecting your insecurities from a shitty past relationship.

I asked the guy I’m dating what gives you the ick in the talking stage, his immediate response was when women start questioning where you’re going and who you’re seeing and keep tabs on your movements like you’re already in a “toxic” relationship. It’s a telling sign of the type of girlfriend they’ll be. If you find yourself acting this way, take a very long look in the mirror. Remember, the hardest relationship is the first one after a traumatising ex, so don’t project your insecurities onto your new relationship. You may have hang-ups from previous relationships which you think you need to deal with early to avoid yet further disappointment, but you just can’t think this way. Give everyone a chance before you assume they will treat you badly. You can’t go into a potential new relationship already assuming they will treat you badly, it will change the dynamic of how you treat and talk to one another, and it’ll be doomed from the start.

3. Don’t over-analyse the situation

Over analysing every word they say and every action they take will send you round the bend. Take the conversations for what they are, enjoy speaking to new people, use it as practice and for understanding what you do and don’t want and don’t put a lot of pressure on the process. Trust the process and as I said before, if its not enjoyable anymore and it’s sending you into a tizzy of anxiety induced panic attacks, take yourself out of the situation until you think you’re ready. Dating should be fun and should help you to learn more about yourself. Yes, you may need to kiss a lot of frogs before you find your prince, but at least develop through the process! HOW TO SUPPORT YOUR CHILDREN DURING EXAMS

T

he summer term in schools is memorable for many reasons; transitions, graduations, school trips, celebrations, fayres, reports and so much more, however it is also a time where children (despite ages) face some challenging assessments, tests or exams.

Although every individual has a different outlook on the idea of exams and testing children, they are statutory and so ultimately unavoidable. Depending on the test, it is generally a time for teachers, schools and the governement to assess the progress the children have made. I personally understand why assessments have to be done but am also very aware that every child is different and written exams do not always show the true extent of an individual’s talents. Tests can be quite daunting and even as adults the thought of sitting tests fills most people with dread. This is why it is vital that we support children in the best possible ways to feel more at ease and give them the tools they need in order to be comfortable with their experiences of assessments.

In addition to these tips try to support your children through clear communication and remind yourself to not let them feel pressure from you. Through my experience of working in Early Years, I have learnt how to teach children through play. I have taken this approach to teaching children of all ages and remind myself when children don’t feel as though they are learning or repeating the same process they tend to progress more. Motherhood #NoFilter

Katerina talks all things motherhood, family life, relationships, work, and trying to do it all at once, with of course, #NoFilter @keepingupwithkaterina @keepingupwithmyclassroom I’ve come to the conclusion that it’s not realistic to say your anxieties are going to disappear the second we face them, but actually, it’s ok and not as bad as we think. I don’t know if i’ll ever be a flying enthusiast, I don’t know if i’ll ever even be excited to fly, but I can accept that, and move on. I don’t love flying, but with the help of my faith, great books to read, a little therapy, my anxieties will no longer steal my joy.

This month’s write up is inspired by a post I saw on Instagram. It said “People say all the time ‘I’d die for my children’ Okay, but would you live for them? Actually live?” That really struck a chord with me. Funnily enough, I read that on a plane just before I took off, which was a big thing for me. I’ve never been one to enjoy flying, actually, quite the opposite. For years I would fear getting on a plane, and would always think the worst is going to happen. Even though I felt like this, I was always able to push through (with the help of diazepam) and travel, here, there and everywhere with Jamie and with my friends, living my best life. All until, of course, I became a mum. I’ve spoken a lot about the postnatal anxiety that I experienced with Rico, that got so bad that even a year after I had him, I would find there were days where I did not want to get out of the comfort of my bed and just wanted to lay there with Rico and just cry. Obviously when you’re feeling like this, and it’s now borderline depression, booking a flight was probably not the best decision to make. After a not-so-good experience of being away whilst in a bad place mentally, (along with missing a flight home due to a panic attack, crying for 48 hours straight, and my dad having to fly over to help get me home), it’s safe to say I avoided flying for a good few years. (3 to be exact). I was one of the people in lockdown who actually breathed a sigh of relief that flying wasn’t a thing and that I wouldn’t have to let Jamie or Rico down by being the reason why our family holidays consisted of anywhere we could get a train to. Ironically, I did book a fear of flying course with Easy Jet that I done just before lockdown, which was actually very helpful, but due to the pandemic, I couldn’t actually put it into action. I was also recommended a book which I will put at the bottom of the page for anyone who is scared of flying or doesn’t particularly like it.

It’s funny because I always moan about mum guilt and how horrible it is, but it’s this exact thing that helped me to snap out of my fears and actually start living my life, for me and for my family. As much as I liked the idea of not having the pressure to fly during lockdown, it did actually also make me realise that I infact do not want to be bound to the United Kingdom for my whole entire life. Feeling ‘safe’ in my head and feeling like I’m ‘protecting’ Rico by not putting his life in danger by getting on a plane was actually being a detriment to him. Sometimes in life, especially when you become a parent, it suddenly becomes a realisation that your anxieties might not always just affect your life, but your families and even your children’s. Deciding to get my act together, I put on my big boy pants, I took my bible, my flight book and a fake smile on my face and got on the plane to Cyprus and enjoyed our first family holiday that Rico is now old enough to remember and enjoy. The good thing about facing your fears is that actually, the thought of them is always worse than the actual action. Thinking about the flight, what could happen and all the ridiculous scenarios in my head were actually way worse than the journey itself. I not only felt so empowered by actually facing my fears, but the memories we made, the fun that we had, and the feeling of actually having a tan and getting into the sea was second to none.

As much as Rico is HARD work (yes with capitals), I love when I think about how much this little being has made my life better and how much he actually gives me such a purpose and a push to do better, be better and actually live my life, for us both. So I propose the question to you my dear readers (Lady Whistledown voice), I know many of you would die for your kids, but would you live for them? Until next time lovelies,

Cook’s tip Get ahead by roasting the aubergine and shallots a few hours in advance. Simply cover, chill, then reheat in the oven until piping hot throughout before serving.

SPICY TARKA DAAL with roasted aubergine Veggie comfort bowl Preparation time: 15 minutes Cooking time: 30 minutes Serves: 2

Ingredients 2½ tbsp vegetable oil • 1 clove garlic, finely grated • 1 tbsp lemon juice • ½ tsp ground cumin • ½ tsp ground coriander • 1 aubergine, cut into 8 wedges • 1 echalion shallot, sliced into 0.3cm-thick rings • 400g pack The Spice Tailor Spicy Tarka Lentil Daal • 2 tbsp natural yogurt (or dairy-free alternative) • Handful coriander leaves • Naan breads or steamed brown rice, to serve (optional)

Method Preheat the oven to 200°C, gas mark 6. On a large baking tray, combine 2 tbsp oil, the garlic, lemon juice, cumin and coriander with a pinch of salt. Add the aubergine wedges and shallot rings and toss to coat in the spices. Spread out and cook for 20-25 minutes, stirring every 10 minutes until the shallot is deep golden and the aubergine is tender. When the aubergine is ready, cook the daal as follows: heat the

remaining ½ tbsp oil in a large saucepan over a medium-high heat. Add the whole spices from the daal kit and sizzle for 15 seconds, then stir in the lentils and the tarka sauce (small pouch) plus 4-5 tbsp water, and simmer for a few minutes until it reaches a thick, creamy consistency. Divide the daal between bowls and top with the aubergineand shallots, the yogurt and coriander leaves. Some naanbreads or brown rice would go nicely alongside, if liked.


Cook’s tip For a stronger cocount flavour, swap the brown sugar for coconut sugar.

COCONUT RICE PUDDING with papaya and lime Vegan pud Preparation time: 10 minutes + standing Cooking time: 25 minutes Serves: 4

Ingredients 70g short grain pudding rice • 2 tbsp light brown soft sugar • 400ml can reduced fat coconut milk • 200ml unsweetened coconut drink (such as Rude Health) • 1 Waitrose Perfectly Ripe Large Solo Papaya, peeled, deseeded and sliced • ½ unwaxed lime, zest and juice

10g desiccated coconut • 1 tsp light brown soft sugar

Method Preheat the oven to 180oC, gas mark 4. Put the rice, 2 tbsp sugar, coconut milk and coconut drink in a large saucepan. Bring to the boil, then lower the heat and simmer for about 20 minutes until the rice is soft and coated in a silky coconut sauce. Add a splash more coconut drink to loosen if necessary. Cover and set aside off the heat for 10 minutes. For the coconut topping, toss together the desiccated coconut and sugar, then spread out on a small baking tray. Bake for 4-5 minutes until golden. Meanwhile, toss the papaya with the lime zest and juice. Divide the pudding between bowls. Top with the papaya and scattered toasted coconut. Serve immediately.

Preheat the oven to 200oC, gas mark 6. Put the grapes on a baking tray and roast for 25 minutes, stirring halfway, until plump and just bursting; set aside to cool. (This can be done up to 24 hours in advance.)

Ingredients 400g Waitrose Sable Seedless Grapes, stalks removed • 100g plain flour • 100g ground almonds • 1 tsp baking powder • ½ tsp fine salt • 3 tbsp flaked almonds • 150g caster sugar, plus an extra 1 tsp for the top • 3 British Blacktail Free Range Medium Eggs • 120g Essential Olive Oil, plus extra for greasing • 2 tbsp whole milk (or dairy-free alternative) • A few drops almond extract (optional) • 2 lemon thyme sprigs, leaves only • Crème fraîche (or dairy-free alternative), to serve (optional)

When ready to bake the cake, preheat the oven to 180oC, gas mark 4. Grease a 23cm springform cake tin and line the base with baking parchment. Combine the flour, ground almonds, baking powder and fine salt in a bowl; set aside. In another bowl, combine the flaked almonds and 1 tsp sugar; set aside. Put 150g caster sugar and the eggs in a large mixing bowl. Using electric beaters, mix on high speed for 2 minutes until pale and airy. Beat in the oil, milk and almond extract (if using), then

add the dry ingredients and the lemon thyme leaves. Fold in with a spatula until just combined. Fold the grapes through the cake batter and spoon into the tin. Scatter with the flaked almonds and sugar, then bake for 45-50 minutes until golden, risen and a skewer inserted into the centre comes out clean. The grapes may sink to the bottom of the cake, but don’t worry. Cool completely in the tin before slicing to serve. A spoonful of crème fraîche is a nice accompaniment, if liked.

Portugal’s coastal capital Lisbon, known as the City of Seven Hills, is a place of ornate beauty and charm combined with a thoroughly hip and modern sensibility. Blessed with scenic vistas, pretty pastelcoloured houses, hilltop castles and mosaic walkways - it’s got to be one of Europe’s most beautiful capitals. And don’t forget pretty Porto, the gateway to Douro Valley (an ancient wine region). As the birthplace of port, you can’t come here without sipping this fortified favourite. When you’re not exploring the city by foot, you should be taking it in from the seat of a streetcar. MOUNTAIN MADEIRA

I’m Too Young To Have A Will…. NO YOU’RE NOT!

Every time I hear someone say “I’m too young to have a Will” and “I don’t have much to include in a Will, so I don’t need one”, it reminds me of how little knowledge we have on the key reasons why, if you are aged 18 or over, you MUST have a Will. A few weeks after I had my first child, some 15 years ago, I remember driving to an office to get my first Will done. I was sobbing on the way, thinking, goodness, I can’t believe I am going to talk about what should happen to everything I own, including my dependent child, should I die! It wasn’t until I started to find out what could happen to my belongings, and to the care of my child if I did not have a Will, that I realised how important it is to have one in place. Here are a few key facts why it is so important for you to have a Will, and for you to think about: • You do not need to have masses of wealth to have your Will drawn-up. • If you have anything of value, which could be as small as an iTunes music collection, items of sentimental value, money, savings, property, then you have the right to state who will inherit these, should anything happen to you. Failing to do so, means that it is all up for grabs! • The care of your young and dependent children, until the age of 16, should be outlined in your Will. Should anything happen to both you and your child’s other parent, if you do not have a Will in place, then the state would decide who is to take care of your child. • If you get married, or divorced, your Will becomes null and void, and you will need to make another Will to reflect your change in circumstances.

The question to ask yourself is, would you like to choose who should inherit your belongings? Or are you happy for whomever to be able to take possession of them? In the unfortunate event that something happens to you and your child’s other parent, taking the time now to consider who would raise your children, and under what circumstances, should be at the top of your priority list. This could include, how and when your assets and belongings would be passed down to your children, and with time on your hands to decide such an important part of life, you can also speak with the person or people that you would want to take responsibility of your children and their remaining upbringing. I can appreciate that our own death is not something that we like to think about, as it feels like a morbid subject, but the reality of what can happen to your prized possessions, no matter how large or small, and to your loved ones if you do not have a Will in place, is also something to take seriously, whilst you can.
