n 1990, Mariah Carey made a big entrance with her first single, “Vision of Love.” She dominated the charts, and her reign on the Billboard Hot 100 is unmatched. She holds the record for the most No. 1 hits by a solo artist, second only to the legendary Beatles.
on ‘It’s a Wonderful Life’ and tried to get into that mood. Then I sat in this small room with a keyboard and started doing little melodies and stuff. I was going over all the things I think about at Christmas time that make me happy and how to turn it around and make it into a love song.”
In a reflective moment, Mariah once shared, “I try to give people a great escape from their problems through the inspiration of my music.” This commitment to providing solace and joy through her art has been a driving force behind her unparalleled success.
One of the remarkable aspects of “All I Want for Christmas Is You” is its consistent chart presence during the holiday season. For 29 years since its release, the song has graced the charts, becoming a festive mainstay. Mariah’s impact on Christmas music is unprecedented, and her ability to create a song that resonates across generations is a testament to her songwriting prowess and timeless appeal.
Real or imagined, her diva armour has protected her during her decades-long run as the most impressive voice of her generation—several generations, actually. Hit after hit, Carey’s voice has grown in tandem with her and her audience’s coming-of-age struggles. For her legendary 1993 remix of “Dreamlover,” with David Morales, Carey completely rerecorded the track’s sunny vocals and melodies, and transformed the short and sugary-sweet earworm into a clubland anthem of gay liberation and selfhood. Two years later, her remix of “Fantasy,” featuring Ol’ Dirty Bastard and Sean “Puffy” Combs, was a rebuff to music executives who urged Carey to play down her Blackness. “Those remixes were the only things I did during that time where there wasn’t somebody coming in trying to control things or pretending that they knew what my music should be like,” Carey said. While Mariah’s success spans various genres and themes, her association with Christmas is particularly noteworthy. The holiday season has become synonymous with her classic song, “All I Want for Christmas Is You.” Released in 1994, this festive anthem has not only become a staple in holiday playlists but has also solidified Mariah’s status as the Queen of Christmas. The song brought with it an equally iconic video which, of course, sees Mariah cavorting around in the snow and tossing around presents with glee. “See me in the snow in that little Santa suit? That wasn’t a studio, that was a real moment,” she says proudly. “I was freezing cold, my hair was frozen, it was outside in a snowy field in New Jersey, and I’ll just never forget it because there were real reindeer.” But if you’re wondering if Mariah Carey still owns that Mrs Claus outfit every holiday season, prepare to be disappointed. “I don’t know where it is! That was one of the first things I had done in my career, so I didn’t realise, ‘Oh, save these things because one day it might be something you want’. But we’re going to have another one made, I think.” One of the best-selling tracks of all time at 16 million copies, the song has contributed an estimated £48 million to Mariah’s merry multimillion-dollar Christmas empire, with a reported £400,000 rolling in in royalties every year. So popular is it still that it was played 10.8 million times on Spotify last Christmas Eve, setting a new one-day streaming record, and has been covered by everyone from Ariana Grande to My Chemical Romance, Justin Bieber to K-Pop girl band Cosmic Girls. As a teen, Mariah waitressed to make ends meet and spent most of her free time writing songs. After putting a demo
tape together, she managed to get it in the hands of Sony Music boss Tommy Mottola. The titan of the industry, he worked with Michael Jackson and Celine Dion and took a very young Mariah under his very powerful wing. Their relationship quickly turned romantic, despite a 20-year age difference, the two married soon after her self-titled debut album became the best-selling record of 1991. Mariah grew up on Long Island, outside New York City. She has previously spoken about herself as a biracial girl—a mix of African-American, Venezuelan, and Irish, with divorced parents and financial challenges. At the time, “people didn’t understand who I was, what I was, my ethnicity, the fact that we didn’t have money. There was a lot going on around me when I was growing up, obviously. Being black and biracial. It’s still the same but a little bit better. But when I was growing up, I had a difficult time cause nobody gave me direction or a talk, like here’s how you handle this or that... but every year I waited for Christmas. I always loved it as a little kid. And then, you know, certain people would just be around and kind of ruin it, like people that I was related to… so every year I was like, “I just wanna have the best time ever. So, at a certain point the record company came to me and said, “What do you think about doing a Christmas album?” I’m like, isn’t it a bit early? You know, why are we doing Christmas already? It’s like just my second album or whatever. Anyway, it just became something that I did. It was the first Christmas song I ever wrote and I kind of wanted it to sort of embody all the things I didn’t have when I was a kid. I wanted it to make people happy and make myself happy. It was more like, ‘this is my healing,’ but it’s also fun. It’s not taking itself too seriously. It’s really just for the love of the holidays and for the spirit that always saved me during the more difficult times in my childhood. Carey added that she knows people tend to look at her as “festive” or the “Christmas princess,” but she said she’s taken on the role because the holiday truly makes her “happy” — which she didn’t always feel growing up. Her rocky childhood is one of the reasons she loves Christmas so much. “As a kid, I always hoped for great Christmas’, and we didn’t have them,” she remembers. “My brother and sister would come back to wherever I was with my mom, and they’d be fighting and ruining the holiday. I would still be like, you know what? I just want to have the best time.” She eventually got that best time: the most popular holiday song in modern history, it’s estimated to have netted Mariah more than $60 million, and she now pours her heart into the season for her children. “We do everything that I always wanted to do as a kid, I want my kids to have everything they can have. I want them to be able to understand that they can be anything they want to be.”

Ingredients
Method
1 tbsp olive oil
Heat oven to 200C/180C fan/gas 6. Heat 1 tsp of the oil in a pan, brown the chicken, then remove. Bring the stock to the boil in the same pan, add the chicken and cook for 5 mins. Turn off the heat, cover with a lid and leave to stand for 30 mins.
1 large chicken breast, skin on 500ml chicken stock 1 slice sourdough bread, cut into cubes 2 tbsp grated parmesan 2 large handfuls spring greens, finely sliced 4 asparagus spears, trimmed, halved and cut into chunky pieces 40g fresh or frozen peas 400g can borlotti beans, drained and rinsed

Put the bread cubes on a baking tray. Drizzle with the remaining oil, some salt and the parmesan. Bake for 6 mins until crunchy and golden. Remove and scrape off the tray onto a plate. Remove the chicken from the pan and slice it. Bring the stock to the boil again and add the greens, asparagus and peas. Cook for 1 min, then add the beans and chicken. Heat everything through, then pour into bowls and top with the parmesan toast to serve.

A NEW YEARS RESOLUTION Hello to all my lovely readers and now for some of you, my viewers. This month has been a catalyst for change. I unexpectedly lost my job and found a new, life changing one. I have put myself on blast on the big ol’ internet talking about raw and emotional experiences, leaving myself open to opinions and scrutiny, all in the name of helping other folk to not make my mistakes. I’ve met a man who has taught me so much about myself in terms of personal growth and development, self-love and respect and has made me realise that I do, in fact, practice everything I preach. I walk the walk, and I talk the talk. We are coming to the end of the year so what better time to provide you with some positive affirmations for the year ahead, something which I have taken heed of in the last month alone. I only have one affirmation for the year ahead, push yourself out of your comfort zone. It sounds easy but there really are levels to this. Once you push yourself to your absolute limits, this is where all your growth will happen. For the last two and a half years, I have expressed myself, my emotions, my experiences, my happiness, sadness and completely wacko behaviour anonymously in this column, and I have been so grateful for the opportunity to do so. What I subsequently realised is that I, indeed, had a false sense of bravery. I could speak my words, whilst hidden behind an alias. I made the decision to turn this platform into a podcast. My bravado wired me into believing that I was strong and brave enough to be this outspoken as a no-longer-anonymous podcaster. We spent months meticulously planning, executing, and editing the podcast to keep it as raw and authentic as possible, the reality of showing my face never even occurred to me. I also did not consider that on this journey, I would meet someone who I would develop feelings for and didn’t take a moment to consider how my discussion points about my previous relationship would make them feel. In true Soph fashion, I went into it, like a bull in a China shop with my sights set on one goal, to tell my story so you don’t live my mistakes, not caring about the repercussions of doing so.

It was launch week and we were editing the final clips for release. I had a niggling feeling, I had let negative thoughts creep in. What if I overshared? What if I never date again? What if I embarrass my family? What about my career? Again, I batted away the little neggy voice in my ear and I persevered. It’s release day and the first episode is out. The words uttered from my mouth are now on screen. “Homeless hobbit” and “Toilet Brush” are the divine takeaways from the episode. As much as both are accurate representations of the horrible man who terrorised me for six years, I now, however, look like a raging bitter ex. Granted, at the time of me writing the first column, I was bitter, at the time of filming, I could not be further from that but I’m now rehashing old wounds and conversations and now I look, problematic. Anxiety set in. I could barely eat or sleep for three days. I was in tears constantly. I needed to have uncomfortable conversations with the ‘Man of the Month’ because he couldn’t quite get his head around the concept and exactly what I meant by a “Toilet Brush”. I had challenging conversations with my family to help them understand the true purpose of this project. It’s nothing about my ex, but everything about me and my growth and to help others find their voice and their strength. I started second guessing myself and my entire purpose, objective, the bigger picture. I was sick with worry. I have become so reliant on my gut telling me what to do - why did it not warn me? I was so sure I’d ruined my life so I began editing like crazy, concerned that I had overshared and embarrassed myself removing the core value of what we are boldly trying to achieve.
My producer wanted to murder me. After giving her my reasonings she sat me down, looked me in the eye and said “Remember who the hell you are and why you’re doing this”. The worst had already happened. I’d released the first episode, anonymity gone, we were on course for the path we’d set out on. The only person standing in my way, was me. I have had such amazing feedback on such a big scale why would I stop? Failure is not an option. I am my own adversary. How can I tell you all to believe in yourselves and fill yourselves up with love and respect and then I walk away? I have not come this far to only come this far. After several days of crying and hysteria, I took a breather and then determined the root cause of my madness. I know I have grown, but it’s perfectly normal for old feelings of self-doubt to creep in. My fear would be that I would never be able to meet someone again because who would want a chucklehead as a wife. Why would a serious man want to date me? Then I woke up. Wiped the metaphorical crust from eye.

Firstly, the type of man who would object to this project and the reasons for doing it would not be for me. As a forward thinking, self-loving, fly by the seat of my pants type of girl, a traditionalist would not be someone who I think would be able to handle me or my ambitions, and vice versa. I am stuck between two generations of having real traditional values but would also want the freedom to make decisions for the benefit of my future. So long as my intentions are good and honourable, my partner should lift me up and support me, not suppress me. So, boohoo, I’m so sorry I have pigeonholed myself from a type of man I wouldn’t be interested in anyway.
I still have unwavering faith that what is for me will not pass me and that the universe will put people and challenges in front of me to make decisions indicative of my growth, as a constant reminder that I’m doing the choosing and I’m listening to my gut and taking those calculated risks. Every decision I’ve made has brought me to this point in my life, and although it’s not been the smoothest ride, I’ve not done too badly by societal standards and by my own high standards too. Sometimes, all we need to do is push ourselves out of our comfort zone, but not just push, throw ourselves into the wild with nothing but our inner compass to guide us. I have been petrified, I have been anxious, beyond stressed because of a choice. My choice. Well, I stand by that choice each and every day.
My biggest fear is looking back on my life and thinking “What if?” as opposed to ‘I tried and it didn’t work out.’ At least I was brave, I was bold, I lived with intention… so let’s go again. If you do this, I promise you, you will shed away your cocoon that you’ve been so comfortably sitting in for so long and you will feel unstoppable. The possibilities of the way your life will pan out are endless but it’s up to you how you try and achieve your dreams. I wish you all the very best for the year ahead and I hope to hear from you in the New Year to tell me you’ve pushed out of your shell and started making little steps towards your big dreams. Christmas
STICKY TOFFEE PUDDING This is a Christmas pudding for Christmas pudding sceptics. A twist on a classic sticky toffee sponge, it’s flavoured with the heady combination of tangy clementines and rich brandy. Serves 8 Prep 30 mins Cook 1 hr 15 mins
Ingredients 75g Kerrygold butter, softened, plus extra for greasing • 150g stoned dates, roughly chopped • 55ml brandy • 100g light brown soft sugar • ½ tsp vanilla extract • 1½ tbsp clear honey • 2 clementines, zest and juice • 2 eggs • 130g self-raising flour • 1 tsp bicarbonate of soda • 1 tsp mixed spice • ¼ tsp freshly grated nutmeg • 1 dessert apple, peeled, cored and grated • double cream or ice cream, to serve (optional) Sauce 175g golden caster sugar • 2 clementines, segmented • 100g Kerrygold Pure Irish Butter • 50ml double cream • ¼ tsp sea salt flakes • 1 tbsp brandy

To top with spun sugar, as shown, first lay 2 greased wooden spoons on a sheet of baking parchment. Make more caramel by melting 200g caster sugar in a frying pan. When deep gold, take off the heat, dip in a fork, then take the thread of caramel slowly back and forth over the spoon handles. When cool, place the spun sugar on top of the pudding.

Method Preheat the oven to 160oC, gas mark 3. Grease a 1.2 litre ovenproof pudding basin and line the base with a circle of baking parchment. Put the dates, brandy and 175ml water in a pan, bring to a simmer and cook for about 5 minutes, stirring a little, until a thick paste has formed; set aside. Put the butter, sugar, vanilla, honey and clementine zest (reserve the juice for the sauce) in a large bowl and beat with electric beaters until pale and fluffy. Add the eggs one at a time, beating between each addition until combined. In another bowl, mix together the flour, bicarbonate of soda, spices and a pinch of salt. Add the dry ingredients to the butter mixture and fold in, then gently stir in the date purèe and grated apple until combined. Spoon the mixture into the prepared pudding basin, smooth the top and bake for 50 minutes-1 hour, or until a skewer inserted into the pudding comes out almost clean, covering with foil after 30 minutes if browning too quickly. Leave in the basin, on a cooling rack, while you prepare the sauce. Line a baking tray with parchment. Put the sugar in a frying pan over a medium heat. Heat to dissolve and then until bubbling and golden; do not stir. Take off the heat, swirl in the clementine segments and, when completely coated, use a slotted spoon to lift them out onto the prepared baking tray; set aside. Carefully add the butter, cream and reserved clementine juice to the caramel residue in the pan, return to the heat, bring to a simmer and stir together to make a toffee sauce. Add the salt and brandy, then take off the heat. To serve, turn the pudding out onto a serving plate. Spoon over some of the sauce and decorate the top with the caramelised clementine segments. Serve with the remaining sauce and cream or ice cream, if liked.

SORBET
The deep cranberry colour and flavour of this sorbet makes it perfect to serve as a Christmas dessert. Serves 6 Prep 15 mins Cook 20 mins
Ingredients 150g caster sugar • 500g cranberries, defrosted if frozen • ½ lemon, juice
Method Put 50g sugar into a medium pan with 150ml cold water. Heat gently, stirring until the sugar has dissolved. Add the cranberries, bring to the boil, then cover and simmer for 15 minutes, stirring occasionally, until pulpy. Allow the cranberries to cool slightly, then place in a food processor and blend to a smooth purée. Place a sieve over a bowl and, using the back of a spoon, press the fruit through it to remove the skin and pips. Set the purée aside and leave to cool. Meanwhile, make a sugar syrup by putting the remaining 100g sugar, 350ml cold water and the lemon juice in a small pan. Heat gently, stirring, until the sugar has dissolved, then simmer for 2-3 minutes. Leave to cool. When cool, add the sugar syrup to the cranberry purée, stir until smooth, then pour the mixture into a 1L freezerproof container. Freeze for 2-3 hours, until the mixture is slushy. Place in a food processor and whizz to break up the ice crystals. Return Cook’s tip to the freezer. Simple individual Christmas pudding

Ed Smith’s trifles work well thrown together at the last minute, so the (re-heated) Christmas pudding is warm, but the custard and cream are fridge-cold. Makes 6 Prep 10 mins Cook 10 mins
Ingredients 300g leftover Christmas pudding • 400g Essential Californian Prunes In Syrup • 3 tbsp dry Marsala • ½ x 500g pot No.1 Madagascan Vanilla Custard • 300ml pot double cream • Whole nutmeg, for grating
Method Preheat the oven to 170oC, gas mark 3. Put the pudding in a baking dish and splash with a little water. Bake for 10 minutes, or warm in the microwave on high for 90 seconds. Meanwhile, drain the prunes through a sieve, reserving the syrup. Remove the stones from 15 prunes (you will have some left for another day, so keep them in any remaining prune syrup in the fridge for up to 1 week), then roughly chop. Combine the Marsala with a little prune syrup (about 3 tbsp), to taste. Break the pudding into a coarse rubble, then arrange loosely at the bottom of 6 small, wide tumblers, wine or martini glasses. Add the prunes to each one, pushing them between gaps in the pudding. Spoon over enough boozy syrup to moisten the pudding, then spoon over the custard. Use a balloon whisk to whip the cream until it forms soft peaks. Spoon as much or as little of it over the custard layer as you like, then finely grate a dusting of nutmeg over each glass. Serve with any remaining Marsala syrup and cream (there may not be any) on the side, if liked, and tuck in.

Cook’s tip This is best made in advance. Cover and chill at the end of step 3 for at least 2 hours (ideally 6 hours or overnight). When close to serving time, whip the cream and finish with the fruit and nuts.
Raspberry & limoncello
TRIFLE
A zero hassle hero dessert that takes less than 30 minutes to make before chilling. Perfect for entertaining. Serves 8 Prep 25 mins
Ingredients 1 Madeira loaf cake • 2 tbsp tbsp No.1 Lemon Curd, plus extra to drizzle (optional) • 6 tbsp Santa Marta Limoncello • 300g fresh or frozen raspberries, plus extra fresh to serve • 250g pack mascarpone • 500g tub Essential Custard • 300ml tub Essential Whipping Cream • 2 tbsp pistachio kernels, chopped
Method Cut the cake into 6 slices, then spread each with lemon curd and make 3 ‘sandwiches’. Cut into quarters, then place in a 2L glass bowl and drizzle over a little extra lemon curd, if liked. Drizzle the cake with limoncello, then scatter over the 300g raspberries and any juices. Using an electric hand mixer, gently whisk the mascarpone and custard together until smooth. Spread the mixture over the raspberries, then cover and chill (see tip). Whip the cream until the whisk leaves a soft trail, then spoon on top of the custard mixture. Scatter the top of the trifle with the pistachios and fresh raspberries.

Me and my now husband (eik!) tied the knot in the summer and had the wedding of our dreams - I’m waiting on the last of the pictures to come through and I’ll update you all properly. I wanted to use my column this month to pass on some amazing clubs that Rico has joined - these were recommended to us and it wouldn’t be fair not to share the gems with you all. If your child has a lot of excess energy to burn (like mine) these will change your life!
Brazillian Jiu Jitsu at Gracie Barra Anyone who knows Rico, knows he loves nothing more than to TOUCH. Whether that involves playfighting or nonstop cuddles, touching is for sure his thing. He’s always been interested in physical sports and after a recommendation from a friend, we visited Gracie Barra for a trial and we couldn’t commit quick enough to attending twice a week. Gracie Barra is the most welcoming and safe place that I could ever imagine enrolling Rico in to learn the fastest-growing martial art in the world, Brazillian Jiu-Jitsu. The coach, Bigfoot, is very knowledgeable, fair and a strong and dominant teacher who is very well respected and listened to by all of the children. The amount of progress Rico has made in just a couple of months has been mind-blowing and I can’t wait to watch him continue in a sport that we’ve all fallen in love with! Gracie Barra has classes for anyone who wants to learn Jiu-Jitsu, men, women and children alike. The academy has highly experienced coaches with world-class programmes designed to help the kiddies learn new skills, reach goals and importantly have fun. Water Creations Swim Academy After a long summer holiday and spending every day in a pool or the sea, we decided it was time to enrol Rico into swimming lessons to really help him to feel confident and happy in the water. For some background - Rico does NOT like water on his face, he would never jump in to the pool, and would not feel happy to be in the pool alone, even though he’d always have a noodle and arm bands on. When Rico first started at water creations, he was very apprehensive, would hold on to the instructor to move around in the pool and hated letting go of the side. After not even a whole term of lessons, in this last week Rico was able to not only feel confident in the pool to do lengths alone, but he also ditched the noodle and the float and went at it
alone! We even finished the lesson with a jump in (a very big deal for my child) The lessons are held at a lovely site - it is very clean, has parking and also a large viewing balcony to watch your little ones go! As well as group sessions, Rico has also had 1:1 lessons with Cory, who offers private sessions and even swimming crash courses. Pro Elite This won’t be the first time that I’ve mentioned Pro Elite in one of my columns, but honestly - this is one group that I could not recommend enough. For those who don’t know - Pro Elite run football classes for little ones. Rico (who’s now 6) has been attending Pro Elite sessions weekly for 4 and a half years, and we can wholeheartedly say we really do feel apart of the Pro Elite community and family! Little bubbas can start from as young as 18 months all the way to 13 years old. Every single coach we have met and Rico has been taught by throughout the years has been amazing - and the bonds Rico has built with them individually has been lovely to see. Coach Anton has recently opened a Hertfordshire location which Rico is thriving at - he’s picked up so many new skills and thoroughly enjoys the weekly matches with his football friends that he has made at training. He always leaves feeling happy and he can’t wait to return on a Saturday morning - he genuinely sees the sessions as a weekly treat/reward rather than any type of training which is hilarious (and great that I can use as leverage to make sure he behaves himself!) This is a great first club if your looking for a way to introduce your little one to sports - and equally a fantastic academy if you want your child to seriously peruse football! THE FIRESIDE COCKTAIL While it’s tempting to always serve whisky neat, this cocktail is the ideal celebration drink. It’s easy to make and will warm you up from the inside – especially if you’re watching the fireworks outdoors!
Ingredients 50ml Chivas Regal 12-Year-Old Scotch Whisky • 5ml maple syrup • 5ml peated whisky, such as Laphroaig • 1 dash Angostura bitters • 1 Zest of orange • 1 Cherry, orange peel and black pepper, to garnish
Method Stir all the ingredients with ice for 30 seconds. Pour into a glass over ice (pictured second left) and garnish.
