How do you compare beef, elk and buffalo meat? • Game meats are denser and a lot leaner (have less fat) than beef, so I don’t recommend cooking them past medium rare. If you do, they can get dry and chewy. Although you can order a straight, grilled elk or buffalo steak, a lot of game dishes are paired with light sauces or fruit to cut their stronger, “gamey” flavor. Elk meat is “gamier” than buffalo and extremely expensive, so if you’re looking for something cheaper, try it in a burger. - Chef Pete Lagerveld, Gun Barrel EAT
