The following recipe for “Corn Tortillas” from Diane Rossen Worthington’s “The New California Cookbook” is sure to please your guests at your next Mexican themed dinner party.
Homemade Corn Tortillas Makes 12 tortillas
2 cups masa harina 1 1/2 cups warm water 24 7-inch squares of wax paper. Tortilla press • Combine the masa harina and warm water in a medium bowl. • Blend the mixture with a fork until it forms a smooth ball. • Divide the dough into 12 pieces. Form the pieces into balls and cover the balls of dough with an inverted bowl. • Put a piece of wax paper on the bottom half of a tortilla press and place a dough ball on it, opposite the handle and slightly off center toward the edge of the press. • Flatten the ball slightly and cover it with another wax paper square. • Lower the top of the press onto the wax paper and press down firmly on the lever until the tortilla measures about 6 to 61/2 inches in diameter. • Make all the tortillas in the same way with the remaining dough. • Heat a griddle over high heat until hot. Carefully peel off the top paper square from a tortilla and invert the tortilla onto the griddle. After 5 seconds, peel off the remaining wax paper. • Cook the tortilla for 1 minute; turn it and cook until it looks dry and flecked with golden spots, 30 seconds to 1 minute longer. • Transfer the tortilla to a plate or a napkin-lined basket. • Cook the remaining tortillas in the same way. • If they’re not used immediately, wrap them in stacks of 4 in aluminum foil.

Dulce de Leche Ice Cream Makes about 1 quart
2 cups half-and-half or milk 4 large egg yolks 1/2 cup sugar 12 ounces butterscotch chips, divided 1 cup heavy whipping cream 1 teaspoon vanilla extract • Prepare a large bowl or pan of ice water. • In the top of a double boiler, heat the half-and-half over simmering water until steaming. • In a bowl, whisk the egg yolks until blended, then whisk in the sugar. • Whisk in about half of the hot half-and-half and pour the yolk mixture into the pan of half-and-half. • Stir with a silicone spatula or spoon and cook over simmering water for about 8 minutes. • Stir in 1 cup of the chips and continue stirring until blended in and the custard coats the back of the spatula, about 2 minutes more. • Immediately place the custard pan in the ice bath and stir the custard occasionally until it cools to room temperature. • Transfer to a container and stir in the cream and vanilla. • Cover and refrigerate until thoroughly chilled, about 3 hours. • Freeze in an ice cream maker according to the manufacturer’s instructions. When the ice cream is almost frozen, add the remaining 1 cup chips and churn until blended in, about 15 seconds more. • Transfer to a container, cover and freeze until firm, about 2 hours.

Moderate beer drinking has a variety of benefits. Though beer is not something many people associate with health, some might be surprised to learn that beer does provide some notable health benefits. Beer should always be consumed in moderation, but beer fans should know that those cold ones aren't just refreshing but potentially healthy as well. Builds bone strength A 2009 study from researchers at Tufts University determined older men and women who consumed one or two drinks daily had higher bone density. Beer contains silicon, which has been linked to bone health. Of the various types of beer, pale ale has been shown to have the highest concentration of silicon. Heymann Whinery started as a hobby about 40 years ago in Bob and Flossie Heymann’s Chehalis kitchen, and while it has expanded over the years, the Heymanns say it is still pretty much a two-person operation. “It’s time-intensive in the beginning, it’s time-intensive in the end, and everything in between’s enjoying the last batch,” Bob Heymann said this week. Since 2009, the winery has been located at 212 N. Tower Ave. in downtown Centralia. While the Heymanns say they’ll miss the downtown crowd, they plan on taking the business in a new direction this summer. The Whinery and wine tasting, and some gift options, will be located as of Aug. 1 at their home at 731 SW 21st St. in Chehalis. The Heymanns already have their winemaking operations at that location in another building on the property. While the move means a kind of retirement from having a downtown storefront, the Heymanns don’t have any plans to retire from wine-making. “I really can’t imagine a life without the winery,” Bob Heymann said. Bob started making wine in the 1970s, when he was in his 20s. He didn’t yet enjoy drinking wine, but gave his finished products to friends and family. “I was looking for something to do,” he said. “It got out of control.” He bought a guide to winemaking and some supplies — much like those still sold at Heymann Whinery’s Centralia shop — and quickly began making his own batches. Making wine is actually a fairly simple process, he said. “It’s all about the yeast. The yeast eats the sugar and turns it into alcohol,” he said. “It’s all a matter of what you make it out of.” Heymann started with simple grape wines, but today the winery offers 19 different wines made with grapes, apricots, berries and other fruits. He started making a gallon at a time, until demand from family and friends grew. Eventually, the burgeoning wine-making operation outgrew the Heymanns’ kitchen. “I kept getting everything sticky in the kitchen,” Bob said. While sticky countertops might not have been enough to

earn his exile into the garage, an explosive batch of cherry wine sealed the deal. “The final blow was when we had the cherry wine explode in the fermenter,” Flossie said. They had to repaint the kitchen to remove the violent red stain, she said. All of Heymann Whinery’s fruit comes from Washington. “It’s all about the fruit,” Bob said. “The winemaker’s just along for the ride.” Bob learned much of what he knows about winemaking from his mentor, Joe Mills, of Widgeon Hill Winery, and gleaned the rest from books and “hard knocks,” he said. The Heymanns opened their winery in 2004. The creative spelling of “Whinery” was originally a joke, but stuck. When they first opened their doors, the Heymanns learned
they would not be allowed by federal regulations to bring any previously made wine into the business. By necessity, they made several batches of fruit wines, which take less time to mature, Bob said. “We never really intended to open a store with a lot of fruit wines,” he said. However, today the winery is well-known, partly because of its wines made with non-grape fruits. “We find there’s a definite market for the fruit wines and a definite market for the grape wines,” Flossie said. Fruit wines, Flossie said, have a much different taste than grape wines, and often appeal to people who don’t like the taste of traditional wines. “They’re much more like juice with a kick,” she said. They also do blends of fruit and grape wines, such as a raspberry chardonnay, and Just Peachy, a peach/Reisling wine blend. Their apricot wine recently won best in show in the Capital Food and Wine Festival in Lacey. When asked, Bob Heymann said he couldn’t pick a favorite of the many wines on his store’s shelves. “I like them all, or they wouldn’t be here,” he said.

any parents contribute money toward the purchase of their teenagers’ first car. But even those who don’t help kids finance the purchase of their first vehicle may still want to offer some advice as their teens start to look for the car they will no doubt remember for the rest of their lives. Different drivers need different things out of their vehicles, so a car that might be perfect for adults will not necessarily be the best fit for teen drivers without much experience traversing the nation’s roadways. Here are two tips to consider when helping teens find their first car.

The NHTSA suggests such drivers’ immaturity and inexperience plays a significant role in that overrepresentation. In addition, very large cars, such as pickup trucks or SUVs, can be difficult to control and are best suited to older drivers who already have years of driving experience under their belts. Teens’ first cars are often preowned vehicles, and such cars may have significant wear and tear on some important safety features. Wear and tear may not be a reason to avoid purchasing a preowned vehicle, but parents may want to replace the brake pads and tires on recently purchased preowned vehicles. Many homeowners prefer the look and durability of real hardwood flooring. It can be exciting to install new flooring, and you may be anxious to start transforming a room. But before diving right in, it's necessary to acclimate wood flooring to a home. Otherwise, you may end up with buckled wood or other problems. Hardwood flooring needs to sit in the room where it will be installed for anywhere between five and 10 days or in adherence to the manufacturer recommendations. This gives the new flooring time to adjust to the humidity level and temperature of the home. Natural wood shrinks and expands due to temperature fluctuations, which is why it is essential to match the conditions in the home before working with the flooring. The boards can be acclimated in the boxes (with the ends opened) or outside of the boxes.

What is your favorite teaching memory? One of my favorite teaching memories so far, was having a student who had negative attitude towards reading at the beginning of the year, months later ask if he could stay in recess to read his book. When students become excited about reading and learning, I am a happy teacher! What do you love most about teaching? My students! Learning their unique personalities throughout the year and watching each child grow is my absolute favorite part about teaching. Having to let them go is the hardest part! Why did you decide to become I teacher? I think it was what I was meant to do, I can't imagine doing anything else (aside from photography, which I also love!). I love going to work everyday, and not everyone can say that. I have to give some credit to Jen Humphrey, my mentor teacher and teaching partner. She has played a huge role in helping me become the teacher I am and is constantly sharing her enthusiasm towards teaching and learning!

How did you end up in this area? I came to this area 12 years ago because God opened up the opportunity to Pastor Bethel Church. We were living in Dallas Texas at the time and it was our hope to return one day to the Great Northwest. My wife Joanne grew up in Chehalis, was a graduate of W.F. West and had a lot of family in Lewis County. It was an exciting day when we received the invitation to return to Chehalis and raise our 3 kids in the wonderful Twin Cities. We’re so grateful the Lord gave our kids the opportunity to grow up in this great little town. What do you love about our area? Having lived in both Seattle and Dallas, we really enjoy the small town feel and the ability to know our community. No matter where we go, we bump into friends we know. From bike riding and hiking, to fishing and water sports, we have enjoyed the wide variety of our beautiful surroundings. It just doesn’t get any better than 50 degree winters and 75 degree summers. We also appreciate living where most people share our conservative values of Faith and Family.

Dr. Brandy Fay was kind enough to answer a few questions in between seeing customers and their beloved pets. What do you love about your job? “There are a lot of things I love about my job. Puppies, kittens, my amazing staff and of course a good medical mystery case. But I feel, with veterinary medicine, I have the best of both worlds; I get to work with pets and people. As a veterinarian I have had the privilege of developing very meaningful relationships with my clients through their pets health care.” Why did you choose this profession? “I wanted to be a veterinarian since I was five. I grew up around livestock and developed an interest early on in veterinary medicine by helping with my family's cattle. As I got older I knew it was the right profession because I wanted to be able to advocate for animals who couldn't advocate for themselves.”
How do you make pets and their owners feel comfortable during a visit? “I believe one of the most important parts for both clients and patients to feel comfortable during a visit is to first be understanding that vet visits can be very stressful for both the pet and owner. I like to have my clients get to know me before I even do an exam on their pet so we can establish a positive relationship to ensure that we make the best possible medical decisions for their four legged family member together. I like to sit on the floor during exams, try to give lots of cookies and treat all my patients as if they were my own pets. Anyone who has known me more than five minutes knows how much I love my dog Lola :).

Linda Tomasheck, Relay For Life Of Lewis County Runners Up: Patty Allee, Relay For Life Of Lewis County April Pennington, Toledo Veterans Day Parade How Did You Become Involved in Volunteering? I was asked! I currently volunteer through Rotary, Relay For Life of Lewis County, Miss Lewis County and Lewis Mason Thurston Area Agency on Aging Advisory Council. My main efforts go to Relay for Life of Lewis County. I have not met anyone that has not been affected by cancer whether that through family, friends or co-workers. My hope through volunteering with RFL is that we will fund the research that finds the cure. I am a cancer survivor myself for a little over seven years and I don’t want my children or grandchildren to know that fear of being diagnosed with this awful disease. Why Did You Become Involved in Volunteering? It’s pretty simple — I want to help where I can make a difference for someone, whether by sharing my skills, knowledge or heart. I feel I am a strong advocate and mentor so I lean towards volunteering in areas where this passion is needed. I feel lucky to be able to be a part of these wonderful groups of people working to make a better tomorrow. When asked to pick a special item at the museum, Chip Duncan went right to the display that is featured at the end of tours— Sgt. Jeff Shaver; a fun loving, never give up, prankster that lived his motto, "Love and Live with Passion." He lost his life in 2004 while serving. Sgt. Jeff Shaver started his goal of serving others early on in the Boy Scouts. He later served others by becoming involved in a mission trip to Toatan and on the Colville Indian Reservation and later, by joining the Washington National Guard in 1999. He became a certified EMT and worked hard to gain more training. When his unit, the HHC 161st, was activated to Iraq he went and trained other medics and provided medical services to the Iraqi people. On May 12, 2004, his life was cut short when he the HUMVEE he was riding in was struck by an explosive device. Jeff's last moments, according to a fellow soldier, was spent smiling and (the soldier believes) the smile was due to his thoughts about his soon-to-be fiance. Chip Duncan said, "His story embodies what is right about America: Sacrifice that insures we have freedom. It is also a story of all the sacrifices of people that have come before him —and those that are going to come after him."
