Young Guns Reach Top Ten Shoot Out! The UK’s top 10 young fish friers were announced recently as part of the 2018 National Fish & Chip Awards, organised by Seafish

hortlisted for the Drywite Young Fish Frier of the Year Award these 10-up-and-coming young friers will now batter it out with hopes of being crowned the UK’s ‘best young fish frier’: Peter Calvert of Mister C’s in Selby, North Yorkshire; Katie Gray, Iona Wilson and Alex Walker of Low’s Traditional Fish & Chips in Westhill, Aberdeenshire; Sam Parry of Top Chippy in Conwy, North Wales; Magda Ganea of Real Food Café in Tyndrum, Stirling; Brett Coulton of Black’s Finest Fish & Chips in Halton, Lancashire; Jason Wales of Scrap Box in York; Charlie Collins of Frydales in Leicester; Andy Hillier of Harbourside Fish & Chips in Plymouth. The Drywite Young Fish Frier of the Year Award was developed to encourage the fish and chip industry’s younger generation* to nurture and expand their skills to become expert friers and positive role models for the next generation. The 2017 winner and trade champion is George Papadamou from Papas Fish and Chips. To get to this stage and secure a place in the coveted shortlist, the young friers have faced a rigorous judging process, undergoing exam questionnaires and indepth telephone interviews conducted by senior industry experts. adram Bay Holiday Park is located on the East Devon coastline. Scott Brennan is the manager of Coast Fish and Chips located on the Holiday Park and has run the operation for 5 years. The takeaway had reached capacity as had the old equipment but Scott has ambitions to take the site further and knew there was only one choice for them to progress the site in the manner they intended. He said, “We have a farm shop based in Exeter where an existing Kiremko is installed, the guys over there love it so much, we thought we’d better stick with a company we trust.” When asked what features of the range he liked the most and what differences he had noticed Scott replied, “the high efficiency is a big bonus as our old range just couldn’t keep up with demand. The biggest improvement is the speed the cooking. Before we were forever waiting for the temperature to recover between batches, it’s a problem that has disappeared overnight!” Scott designed his range with a separate gluten free pan and a griddle. This was to diversify the menu as Coast has a varied customer base. Scott wished to conclude by adding, “ KFE are truly a great company to work with.” KFE Open Day KFE is holding their last FREE Open Day of 2017 on Sunday 8th October, enabling fish and chip shop owners to try out its frying range, learn new skills and meet key industry suppliers. German Technology that’s HOT Stuff in the World of Filtering!

N

ot much has moved on in cooking oil filtration technology which has meant there is not a great choice of product. You have the mobile version which enables you to suck out your cooled down oil, clean your pans and return filtered oil but it is time consuming and cumbersome to store. You also have the built in filtration which is gravity fed through a muslin paper or mesh which takes time as you have to wait for your oil to cool down so as not to damage your very expensive range pans and you can only operate this at the end of day when all you want to do is get out and home. Funding Nemo! New-start Nemo’s off to a frying start

A

s illustrated by its name, Nemo’s Fish and Pizza Bar in Sunderland offers customers the best of both worlds; serving the nation’s favourite fish and chips alongside other takeaway classics. With pizzas, kebabs and burgers also on the menu, it’s the perfect one-stop shop for when the takeaway craving hits! Proprieter, Kim Somal, had a vision to open a contemporary new chip shop and takeaway in the Pennywell area. In early 2016, she secured a premises on the busy residential Hylton Road, and with local knowledge and a business-oriented family behind her, Nemo’s was born. The former debt advice centre required significant restoration, and Kim enlisted the services of Elite Shopfitters to refurbish the premises and ensure the Nemo’s distinctive black and purple branding was reflected throughout. The previously-segmented office space was opened up to accommodate the frying range and service counters, creating a light and spacious frontof-house. As Kim’s chosen suppliers for the frying range, Hewigo supplied a bespoke high-efficiency model, finished with curved panels and purple LED lighting to fit consistently with the shop’s contemporary design. Kim approached Johnson Reed, as the UK’s mosttrusted chip shop finance company, to explore the finance options for the equipment purchases and shop renovation. I was an engineer Ministry of Defence for 42 years, when I left I decided to invest in a fish and chip shop. I brought my fish and chip shop of a friend of mine called John Long, who had several fish and chip shops around the area, and started to trade as JB’s (after my son Jeff Berry) after few changes, trade picked up, everything was going well. Unfortunately, 13 weeks ago disaster struck, we had a pan fire. Hawkins insurance came with a forensic investigation team and it was deemed to be equipment failure and no one was to blame, from there on the insurance were really good. The old range was beyond repair, I rang the around to start getting some quotes, eventually I contacted Henry Nuttall and even tho they are based in Sheffield they send someone the next day!

I liked what I was hearing from Jack, as a engineer I used to deal with several MOD contracts and we used to use KPI (Key Performance Indicator) which means Cost, Quality and Delivery and Henry Nuttall’s ticked all the boxes! The range is easy to use, easy to clean, comes through a standard width door so you don’t have start removing the shop frontage etc and looks fantastic! I have my logo laser cut in the front and it really looks professional. I would thoroughly recommend Henry Nuttall for all the reasons I have outlined. The Vito Oil System is amazing - quick, efficient, easy to use, works really well, just put it in the pan, switch it on and 4 minutes later done! I don’t have to stand there or wait for the oil to cool, all my staff find it easy to use and love it! Easy to change the filter and to clean, just wash with hot water and pop it into the dishwasher and then it is ready for the next day…. As simple as that! Victory for Card Rock Café! The Pelican Rocks Cafe at Greenwell Point has the best fish and chips in NSW and that’s official

T

he business, run by husband and wife Sam and Rebecca Cardow, was crowned the state’s best judged fish and chips at the Sydney Fish Market Seafood Excellence awards held recently. Pelican Rocks beat Terrigal Beach Fish & Chips Co and Avoca Beach Seafoods to take out the top award. Mr Cardow summed up his win simply on Facebook. “OMG what an achievement I have the best staff… happy as.” Mr Cardow has operated the cafe beneath his parent’s Greenwell Point restaurant for seven and a half years. His proud father Ron, who with his wife Colleen, have run the family restaurant for 37 years said the win was “just rewards for a lot of hard work.” “It was a blind judging competition,” he said. “The judges just turned up and ordered a meal like any other customer and from that made their recommendations.” And they gave Pelican Rocks high praise.

“Absolutely sensational - everything from service, quality and taste wonderful” were among the comments. The judges looked at five criteria taste, service, choice, information and labelling, with Pelican Rocks Cafe doing remarkably well in all. “It is just rewards for Sam and his team who work incredibly hard,” Mr Cardow said. “He has grown up working in the restaurant and now to see him succeed on his own right is fantastic.” The business had previously finished second in the vote based NSW people’s choice fish and chips competition to Terrigal Beach Fish & Chips Co. Pelican Rocks Cafe will now contest the national finals which will be announced in Sydney on September 28.

She’s an Icelander

- Like coming home Owned by Erna Kaaber and Helen Olafsdottir Icelandic Fish & Chips is a welcome addition to the selection of high quality gourmet imports that New York City has to offer.

eing an Icelander living in New York, I’m highly aware of the great interest and appreciation New Yorkers have for Iceland and Icelandic culture. There’s an overall distinct energy and curiosity towards Nordic food in New York right now. This has much to do with Claus Meyer’s creation of Great Northern Food Hall and Agern at Grand Central Station. A sustainable Icelandic seafood bistro in lower Manhattan is not a shabby addition to that Scandinavian scene. Housed in a charmed brick duplex in the West Village, Icelandic Fish & Chips, a responsibly sustainable bistro launched in Reykjavik 2006, has found its second home. The Manhattan branch is an elevated version of the original hub, including the sophisticated build-out featuring a centered bar, a small library

lounge, and glass stacked wine storage rooms. The ninety-seat restaurant splits its seats between the ground floor and an open dining loft, furnished with a skylight – while the two dining areas are connected by an elegant staircase. The entire space is designed with thoughtful interior touches by Erna Kaaber – as she brought picture frames and decorative objects from her home in Iceland. Iceland is a poster country for sustainable fish (not just recognized by biased Icelanders). The British documentary World’s Best Diet declared little Iceland the global winner of “healthiest nation” due to the fresh fish, high quality meat and dairy products. Icelandic fishing is monitored by a quota system for fishermen to ensure responsible fishing practices and has complete control over how its fish is caught in the cold North Atlantic Ocean that surrounds the island. Being able to offer the most pristine sustainable fish in the world means it was about time that someone opened an Icelandic seafood restaurant in NYC.

The original Icelandic Fish & Chips, serving Reykjavik wild caught fish from Icelandic fishermen right off the boat, has become an important staple in the Reykjavik food scene among locals and travellers. It is known for its fresh seafood, fluffy spelt fried fish, and their signature-dipping sauces: Skyronnes®. The trademarked dipping sauces are infused with extra virgin olive oil, fresh herbs and spices – creating an artisanal variety of delicious dips (high in protein and low in fat). The New York location is an all day organic bistro delivering simple dishes created with high quality ingredients. The seafood options, which are airlifted directly from Reykjavik’s harbours a few days a week, varies on the daily catches. The menu lists the following fish and their description in texture and flavor: Cod, Rose Fish, White Hake, Tusk, Pollock, Ling, Plaice, Haddock, and Atlantic Wolffish. The daily available offerings are then written on a blackboard on the wall. Once you pick your fish and order – it’s deep-fried in rapeseed oil and coated in the signature speltura batter. Everything on the menu is ordered separately including the “chips”, which

are roasted potatoes optionally furnished with rosemary and garlic. Other healthful menu options are a handful of ovenroasted dishes including Catch of the Day, Arctic Char, and Icelandic Langoustines. Vegetarian options include an array of salads, onion rings and a fried vegetable medley. Some of the most exciting items I find to be on the bar menu. In addition to the freshly crafted cocktails infused with Icelandic liquor, is Smoked Arctic Char paired with thinly sliced cucumber and Icelandic Fish Balls. The latter is perhaps only ordered by Icelanders due to how oddly wrong it sounds translated in English – but I promise you, they’re simply delicious miniature fish cakes. The feel of the restaurant is definitely cozy and homey - the energy in the space authentically reflects the experience of dining inside an Icelandic home. And for an Icelander living in New York it’s like coming home – the taste, the feel, and the smell. Racing Potatoes! Isle of Ely Produce is once again looking to put a little fun into this year’s harvest by running the 5th annual potato race in Ely – and are appealing for teams to take part.

I

sle of Ely Produce, of Littleport, is gearing up for the relay race which will see teams race from up and down the High Street in October. It is a race all local farmers want to win. Each competitor will be required to run the race with a 20kg bag of potatoes on his or her back. The two-man team from the Cambridge Ambulance Service, were crowned worthy champions in 2016, powering away from runnersup the Atrium Gym in the dash to the line. The Sylhet Restaurant Ely came third. Dawn Lamb Fitness won the ladies race. Also running in 2016 was Widow Twankey from KD Theatre’s panto Aladdin. The winning team was racing with potatoes from farmers D Palmer and Sons. We already have one chip shop owner taking place Luke from Godfrey’s Fish and Chips – why not join him? The main race will be run at a fast and furious rate on Saturday, October 14, at 11am. It is organised by Isle of Ely Produce who use it to showcase more than 20 different local potato farmers. It coincides with the harvest festival which starts in the city on the same day. They have since added a schools and ladies race to the day as the spectacle grows. It is hoped to eclipse the £3,000 raised last year for local schools and charities. Oliver Boutwood, Director of Isle of Ely Produce, said: “Last year’s race was amazing, more than 1,000 people lined the streets, and helped us raise over £3,000, and help 10 local charities. “The race fits nicely with our campaign which highlights the journey the potato makes from field to frier.” If you would like to enter a team of two for the mens or ladies race please email Austen at austen@ chippychat.co.uk, it is £10 per team and places are very limited. In Memory of Spike and Dan Willington Both lost at Sea

At six o’clock in the morning on July 8, Jonathan Williams stood alone in the car park at Freshwater West beach. Slowly, he heaved one industrial fryer after another out of the back of his van. The air was calm, the sun was sporadically making an appearance and Jonathan had big plans to get set-up and back to the Highgate Inn for the Lions game at 8 am.

t was the day of Spike and Dan’s fish and chip fundraiser, an event to celebrate the lives of two fishermen tragically lost at sea in the spring of 2016. Eight o’clock soon came around and much to Jonathan’s dismay, his gas rig didn’t work, so he spent the subsequent 80 minutes trying to fix it… this however, nor nothing else could have spoilt what proved to be one of the most wonderful and atmospheric days of the summer. Spike (Gareth) and Dan Willington, a father and son from Carew, both lost their lives when they got into trouble on board their vessel Harvester off St. Davids in April last year. The local community had not forgotten such a heart-breaking story and they arrived at the beach in droves. They came to buy portions of fish and chips in order to raise money for the family of the lost fishermen. The queue lasted all day and people sat and talked in the sunshine overlooking the beach.

The Pembrokeshire Beach Food team were in high spirits, dancing to cheesy hits from the Beach Boys as they cooked. The Pembrokeshire Beach Food Company originally planned to donate half of the profits from the sale of fish and chips to the family and half to The Fishermen’s Mission. However, the Willingtons insisted all profits go only to the charity, whom they say they had received a huge amount of support from over the past year. The Fishermen’s Mission is a national charity there to provide support for fishermen and their families in difficult times and in times of tragedy. Chrissy King represents the Fishermen’s Mission for South Wales locally and came to accept the donation. In total, £1,350 was raised. Jonathan Williams, of The Pembrokeshire Beach Food Company, said: “We will always try to support local fishermen. Our business is based on local sustainable food. So often where our food has come from is overlooked and it’s not right.
