This category is open to all general foodservice outlets where fish and chips is included on the menu but is not the core offering. To reach this stage of the competition, finalists have been assessed against a wide variety of judging criteria including responsible sourcing policies, supplier relationships, preparation and cooking techniques, menu diversification, staff training and development and customer service. Over the coming weeks, the businesses will face additional mystery diner judging audits to assess both the levels of customer service and the quality of fish and chips on offer. This final stage of competition judging will determine the overall national winner who will be announced at the 30th anniversary awards ceremony. The winner of the Best Foodservice Operator Award will be announced at The National Fish & Chip Awards’ 30th anniversary ceremony in London on 25 January 2018. What’s hot for takeaways in 2018? The latest foodservice trends reveal a continuing increase in the popularity of free-from items, healthy food and street food-style options. Gordon Lauder, MD of frozen food distributor Central Foods, serves up tips on how fast food outlets can adapt their menus to cater for all

“T

here’s been a huge increase in demand for free-from items, including gluten-free products and food that’s suitable for vegans and vegetarians. It’s reckoned that the freefrom market is worth more than £627 million now and is continuing to grow. As well as an increasing number of vegans and vegetarians – IPSOS Mori reports there are now more than half a million vegans and 1.14 million vegetarians in the UK - there has also been a rise in the number of flexitarians, with one in three avoiding meat most of the time. “Many customers visit fish and chip outlets and other takeaways because they want to eat fish and chips, or something similar, but if a group or family is ordering, the chances are that within the group there will be customers who are avoiding gluten or who would prefer a meat-free option or have other dietary preferences or requirements. They may well be looking for a healthy option, as healthy food is one of the big trends predicted for 2018. “Fortunately, it’s relatively simple to have a range of free-from items available frozen to satisfy this growing demand and cater for everyone in a group. Always

ensure that you have something on the menu that’s suitable for different dietary requirements. It’s expected nowadays that these will be just as tasty as everything else on the menu and with the range that’s currently available – whether that’s a gluten-free pizza base or glutenfree sausage, or a cheese and onion or meat-free sausage roll – there’s no excuse for it not to be. Most frozen items cook straight from frozen, which is ideal, as it means products are always on hand and avoids operators being caught out! “It’s also quite easy for takeaway owners to add a twist to their menus to serve up hand-held street food-style items – another big trend that’s been popular for a while. Often, it’s just a case of opting for a suitable tasty flatbread and creating a delicious filling. Again, there are many items that operators can buy in to make this a simple process …from flavoured flatbreads and wraps to filling options like fish, poultry or vegan items, such as reformed scampi-style bites. “Poultry remains the most popular meat served in the UK – appealing to widespread sectors of society. This deep connection that Norwegian people have with the sea has driven Norway to become a world leader in sustainable fishing. They know it’s only when the fish are thriving that the people can thrive. They truly know the importance of protecting the valuable resource of the sea for future generations to come.

T

he Brits’ love affair with fish & chips has helped make the UK one of the biggest markets for cod and the biggest market for haddock in the world, consuming nearly 238,700 tonnes over 130,400 tonnes respectively every year. But with a relatively low domestic catch for these species (4% cod and 22% haddock), there is a continued reliance on imports to keep these humble species on British chip shop menus. Over the last 70 years, Norway has played a vital role to help satisfy demand and keep cod and haddock a constant for chip shop menus. Nearly 60,000 tonnes of cod and just over 40,000 tonnes of haddock from Norway are exported to the UK every year from one of the most abundant and scientifically managed stocks in the world. And long may this continue. The Norwegian frozen at sea (FAS) fleet all fillet and freeze their catch at sea, and are committed to Norway’s principles of providing sustainable seafood of exceptional quality. To ensure the fish supplied to customers tastes as fresh as

Take Hart! Twenty-five years ago, I was working part time in my local chip shop, on a Saturday. At the time it was owned by Chris Drake, I enjoyed my two years there serving and learning a bit of frying. I remember thinking one day that I would buy that very shop when it came up for sale By Dean Brooksbank

ast forward to 2013 and the shop was on the market. The shop is in Leeds and close to where I lived. I hadn’t realised but a good friend of mine pointed it out and I thought about buying it. I was bored in my job and getting frustrated with working for someone else. I discussed it with my wife and whilst she was undecided, I thought I could make a real go of it. After asking several banks for a loan (not an easy task after a recession) I managed to secure a business finance loan. The shop had been in the hands of a couple who were close to retiring and the business had taking a slight downturn. With my background in marketing and design I set about rebranding the shop and attracting people back to it. In effect I was on a steep learning curve and spent the first year learning the role whilst managing staff, the business side of things and producing a product that would bring people who had given up on the shop to come back. Slowly, and with the help of some good reviews and place in the final of the local chip

shop of the year awards I started to get busy… Very busy. I needed more staff and stricter rules in place to keep the product consistent. Not many shops have a good website – so I made sure we had an up to date site with a downloadable menu and mobile friendly usage. Facebook pages and Instagram go without saying these days – an excellent way to communicate to your customers/advertise and receive feedback! On top of this the shop needed a refurb to bring it up to modern times! Retiling throughout, new signage and a fresh new uniform for all staff. I understood through years of dealing with customers that sometimes all they want is some interaction, an experience – as well as good food obviously. There are many chip shops, many fryers don’t even say hi or chat to customers. I make a point of greeting everyone (however grumpy) with a cheery hello and cook their fish fresh. It really does make such a difference. On top of great customer service, we also add special and seasonal items to our menu. For example in summer there is beer battered fish, prepared with a different beer each week; for our vegetarian customers we offer battered courgette chips, deep-fried Halloumi and cheese filled Jalepeno peppers – all cooked in veg oil (as our chips always are). Its just about giving customers options. Like with Gluten free (which is produced to a very safe/exacting standard) its gives people options and often invites large orders. The following year the shop, with the help of my staff, was assessed for ‘Best Newcomer’ in the National Fish and Chip awards. Even though I didn’t win, I was ‘highly commended’ which gave the business a tremendous boost. Towards the end of 2015 and with my first shop running well - and to my standards, I decided to embark on a second shop. There was an old shut down shop in the market town of Pudsey. A couple of previous occupants had tried to run it but failed, I knew that I could make a difference regardless of the stiff competition in the area. Having given the second shop a Hartley’s rebrand we opened in November 2015. It was a slow start attracting people to the shop, however within 18 months the turnover was really quite good, and we had the difference from the rest, we chatted, smiled and listened to our customers. We offered something different – a pleasant experience, family discounts and lunchtime specials. All of this with a clean look and everything cooked fresh to order attracted customers from the locality as well as giving the option to others that lived between both the shops. One of our many highlights of 2016 was being asked by Marks and Spencer to provide fish and chips to their regional headquarters staff party. Over 200 portions all boxed and delivered, all by personal recommendation! Now into our second year and with more competition we are still going strong with regular customers and large charity and business orders. Who knows what is around the corner for Hartley’s in 2018, It might be time to look at new ranges for the shops (the ones in there are currently about 25 years old) and are a little tired… For those that are thinking about buying a shop or wanting to start out in this trade I would simply offer this advice: Its very rewarding in terms of community, job satisfaction and sometimes financially; however, it is hard work and you need a good team, family support for the antisocial hours and understanding friends when you go out straight after work

Staff served up cod and chips dressed as ‘mums and babies’ for the last time in November. Jonathan and Mark Hollings, and Andrew Felton, have managed Drfiters for six years. They have also fund-raised for local causes, as well as the charity Stand Up To Cancer. Jonathan Hollings said: “We love doing it and we’ve raised a lot of money over the 15 years. “But its got more elaborate as time has gone by. Next year we’re thinking of doing a raffle and bingo instead.” The shop raised around £1,000 for Children in Need each year. Their highest total was £3,000. It’s Behind Them! Colmans Sponsor Family Show

ame Bella Ballcock took over the kitchen at Colmans in South Shields – trying her hand at battering fish instead of her long-suffering son, Arbuthnot. But don’t worry – she was back in the castle kitchen soon enough! From Greek Tragedy This week we speak to a couple out in Cyprus about their arduous fish and chip journey!

J

ill has a family background which was connected to restaurants and, she worked and ran restaurants (one of them was in Bahrain) and Ian also owning a café, both having lots of experience and background in this market. The Happy Friar fish and chips restaurant and takeaway was established by partner’s Jill Mitra and Ian Copley in December 2015. Here they tell their story. It all started the year before in November 2014 attending an outdoor event which we decided a mobile chippy would be a very good idea. Fortunately, before purchasing the trailer they discovered licences for outdoor catering mobile vans are no longer available in Cyprus. Determined we found premises where we could build an extension to an existing taverna to build a takeaway chippy. Ian started work on the extension and the work was completed in June 2015. The range was in place and we were then ready to go! Then the nightmares began. Due to problems with the tenants of the

taverna we had to leave. Six months of hard work and lots of money went down the drain. We then found new premises at our current location. The place was an absolute mess and we had to start the work all over again completely stripping the kitchen, knocking walls down, a complete renovation. We also had to fit in a trip to NFFF headquarters in Leeds to attend training. That was in total another six months work with no money coming in. Finally, on December the 6th 2015 we were ready to open the doors to the public! After 1 year’s hard work struggling to get the chippy open the real hard work was about to begin. Situated close to the beautiful St Raphael Marina and Resort we have a perfect spot in the beautiful town of Limassol in Cyprus. to Happy Friars So, two years after opening we are now number 1 British European restaurant out of 23 in Limassol on TripAdvisor and number 22 out of over 1000 restaurants in Limassol. Serving up fish and chips is our main choice on the menu for our customers, there are many British in Cyprus who enjoy the traditional British fish and chips. It’s been a very hard 2 years with dedication determination and lots of long hours but together as a team made it all worthwhile. The Cyprus Mail certainly enjoyed The Happy Friar. While there are many places that offer great doses of English food the relatively new Happy Friar steals the show when it comes to its fish and chips. Once found, its location ensures relaxation and peace of mind as you can escape the hustle and bustle of a busy city. It is there, quite simply, to put a smile on your face due to the good food and friendly service and to make you feel as much at ease as possible. And the one thing on the menu that everyone heads for is its fish and chips. Their fame precedes them, and I had often heard their praises before actually

trying them. Upon ordering you get to choose curry sauce to accompany your meal, which to me was a delightful surprise. Once served, everything looked as delicious as it tasted; a large cod that tasted light and crispy and great, crisp batter. The fish was soft and succulent and each mouthful offered a burst of wonderful comfort food flavours. Another great thing about the dish was the double-fried potato chips, offering as an authentic experience as any on our Mediterranean island. Another thing that I do miss, especially being away from England, and English fish and chip shops are the mushy peas. There is no greater delight than a proper serving of mushy peas and these will not disappoint. All combined with the colourfully spicy curry sauce, and teamed with bread and butter, it creates an unparalleled dining experience. Yes, the fish and chips dish are the star of the menu, but it is not the only thing Happy Friar’s does well. The pukka pies are another delightful taste of England.

The Fish School The Fish Hoose in Thornton, Fife has definitely been the ‘plaice’ to be for some local schools in Central Fife. Colin Cromar opened the doors to welcome primary school parties to find out what goes on behind the scenes of a busy Fish & Chip Shop.

T

he children (and their teachers) learnt about Sustainable Fishing, caring for the environment and just how and where fish are caught. The children even had a maths puzzle about how many bags of potatoes it would take to power a single Fryer for an hour (the answer is the potato and starch waste from approx. 10 bags) Colin had samples of different types of fish available for the children to handle including Plaice, Haddock and Lobster. For many this was the first time they had been up close with whole fish and proved a real talking point for them. Each visit was rounded off with a well-earned Fish lunch for the young guests. So far The Fish Hoose has engaged with three schools groups P5 and P6 from St Pauls on Glenrothes and P5 from Coaltown of Balgonie. There are some more trips planned for the New Year. Im-PORT-tant visit Uk’s top fish and chip restaurants visit Peterhead as part of educational study trip

R

epresentatives from five of the UK’s leading fish and chip restaurants have returned from an exclusive trip to North East Scotland, as part of the 30th anniversary National Fish & Chip Awards. Organised by Seafish, the educational trip gave the five businesses – all finalists for the Fish and Chip Restaurant of the Year Award* - the opportunity to have a closer look at the inner workings of Europe’s whitefish capital. The finalists enjoyed a two-day trip to Peterhead – home to Europe’s leading whitefish fishing port – and Aberdeen, to learn about the vital supply chain of haddock and cod for the fish frying industry and the wider UK food sector. Marcus Coleman, Chief Executive at Seafish, comments: “Peterhead is one of the UK’s busiest fishing ports and is at the forefront of the Scottish fishing industry – with cod and haddock catches landed in Peterhead in 2016 totalling 28,500 tonnes, representing 35% of UK landings. “The focus of the trip was to highlight the wide range of seafood on offer from North East Scotland, encouraging menu diversification and the use of different species in fish and chip shops across the UK. Crucially, the trip also emphasised the socioeconomic importance of Peterhead port and the wider impact it has on the overall UK seafood industry.” Starting the trip with an early morning visit to the lively fish market, the finalists explored the daily routine of Europe’s whitefish capital while also learning about the sustainable fisheries management practices followed by the Scottish fishing fleet – advancing their knowledge of the

With much of the UK’s primary processing of seafood located in the North East of Scotland, the finalists also visited the Sustainable Seafoods Limited processing unit in Peterhead and the Nolan Seafoods Limited processing facility in Aberdeen. The group observed first-hand how traditional skills are married together with modern technology and equipment, discovering how the future of the fish processing trade is evolving. The North East Scottish whitefish sector has grown over time, creating a clever blend of production systems, offering high quality product from both hand-crafted and mass manufactured methods. Processors have made consistent investments in staff training; retaining traditional, highly-skilled hand filleting, whilst embracing innovative technologies offered by state of the art equipment, to produce a highly graded, top quality, fresh, skinless and boneless fillet to match the increasingly specialised needs of today’s restaurants, chefs and consumers. The study trip provided an opportunity to highlight these processes and for leading businesses within the fish and chip restaurant sector to witness it in action first-hand.

yder, a leading independent commercial vehicle contract hire, rental, and maintenance provider in the UK, is supplying three new DAF LF curtain side trucks to Mitchell Potatoes, tailored to the customer’s specialist requirements. The vehicles come with Insulated curtains to protect potatoes from weather extremes during transportation, and the Simark suspended strap system for load restraint. Warwickshire based Mitchell Potatoes Ltd is the UK’s largest wholesale distributor of chipping potatoes, and delivers direct to fish and chip shops, fast food, and catering customers across England and Wales. The new DAF LF 230 FA 18-tonne rigid trucks have a 4x2 axle configuration, and are mounted with Bevan bodies. The vehicles are being provided through a supply and full service lease contract, which runs for six years. The DAFs, which increase the size of Mitchell Potatoes’ fleet to 36 vehicles, will be used for deliveries from the firm’s Rugby headquarters and its regional hubs in Watford, Bristol and Taunton.

Century Duty! 100th Chippy in UK to earn ‘blue fish’ MSC label

S

impson’s fish and chips takeaway in Stroud has become the 100th in the UK to receive a coveted sustainable fish certificate, from the Marine Stewardship Council (MSC), an NGO that sets a standard for sustainable fishing around the world. Simpson’s can now use the MSC ‘blue fish’ label on its cod and haddock, assuring customers that the fish sold has been caught using sustainable methods. It also means it can be traced back to the fishermen who caught it. Across the UK from Shetland to Penzance, the number of MSC-certified UK fish and chip shops has grown 30% on last year. Over two-thirds of the winners at the 2017 National Fish and Chip awards were MSC-certified. Simpson’s was the first business to introduce MSC certified fish in Gloucestershire at its Cheltenham takeaway in 2014. YouGov Research with fish and chip shop customers has shown very positive support for sustainable fish - with four in five fish and chip fans believing that chippies should serve certified sustainable fish. A family business, Simpson’s first fish and chip shop was opened in 2009 by husband and wife team, Bonny and James Ritchie, but fish and chips have been in the family since 1976. Their ethos and commitment to sustainability is what led to the Cheltenham shop’s award-winning accolade of the UK’s Number 1 Fish & Chip Takeaway 2016. James said: “It makes a considerable difference to us. Many people say they source sustainably but being able to

prove this to your customers and promote the widely recognised ecolabel is a huge advantage. “Stroud is well known for being an ecofriendly town and many customers quiz us on our menu items. It shows how far and fast the industry is moving forward and we are so proud to be able to celebrate this.” He added: “Congratulations to Simpson’s who are doing their bit to protect the future of the oceans by selling MSC certified fish. Top Tips from the Fryers Hot Tips for Cold Days With the cold days of winter well under way, trade can be a bit slow, and in lots of ways that’s not good for your food or your pocket. At Frymax, we want to help wherever we can. So why not check through this list of tips from the Frymax fryers and see how you can maximise the life of your oil and also help you save costs. Especially in January and February with fewer customers, your oil can be sitting hot and idle for long periods of time, and Frymax likes to be busy! Oil goes off at its fastest when it is sitting hot and unused, with no steam from food to ‘steam clean’ the oil and give it a protective blanket against the air.

Little & often… On slower trading days, don’t prepare large batches of potatoes and leave them in water, because they could be absorbing water for a long time before frying. When you fry, it can take longer for the water to be removed, the oil will be colder - and the chips will absorb more oil. Fry half size batches of chips and smaller portions of other dishes. This will help in 2 ways: Firstly, you will need to fry more frequently, so the oil will be cleaned twice as often - and will deteriorate less quickly. Secondly, smaller batches don’t cool the oil down as much, so recovery to optimum frying temperature is quicker. Less oil is absorbed into food making it crisper, less greasy - and using up less oil. So looking after the quality of your food will also look after your profits!

Keep it cool… With lower trade, you could also see whether you can reduce the temperature of your fryers when not in use, or even reduce the number of fryers you’re using. Cold oil scarcely deteriorates, and oil at 130C will go off much more slowly than hotter oil. But don’t hold the oil between 70-120C as this is the temperature where lots of oil breakdown reactions happen, so the oil will deteriorate badly. You should still fry at recommended temperatures (<180C) for food quality, safety, and efficient, cost effective operation.
