ell what an exciting month January 2014 has turned out to be! The new team here at Chippy Chat HQ have been working on our plans in for what will be an exciting new era. Isle of Ely Produce who supply chipping potatoes to wholesalers across the UK are proud to be the new owners of this national treasure. First we must pass on our thanks to Mark Petrou who has given us this opportunity to take the Chippy Chat baton forward and for his hard work with the magazine and events thus far. Chippy Chat belongs at the very heart of the chip shop and fast food trade and we will look to both continue to build on this tradition and give our readers and advertisers alike something that I hope they will be proud of. I would like to thank our advertisers and partners who have already supported us in this month’s edition. Please contact us if you would like to

Our first issue is dominated by coverage from the recent National Fish and Chip Awards 2014, which Seafish so expertly held in London last month. Congratulations to Staurt Fusco and his team at Quayside Whitby on taking the overall crown, and to all of the other winners and runners up. Reading their stories really motivates us and makes us think that we all go into 2014 with a great story to tell. Finally I have to say well done once again to Calum Richardson of The Bay, Stonehaven. It has been a privilege to watch (and indeed join him) as he seemingly danced from one great PR opportunity to another, a true ambassador for the industry. We hope you enjoy the ride (and read). ell here we are in another year and I hope it’s a prosperous one for you all and a positive one for fish and chips. Like most of you our attention turns to looking at the year ahead and what we can do to maximize sales and attract new custom and promotions are a big discussion point, we have been looking at past advertising and promotions we have run to see what has worked best for us as well as the cost’s involved. Local and parish magazines have worked well for us, vouchers, giveaways and coupons in our local paper have been a great success and radio advertising has worked well too. Social media has been a great tool for us in being able to build a local business profile and also allow us to establish and maintain a relationship with media so we can keep them up to date with anything new that’s happening or if we have gained an award, it’s a vital relationship to us and has often resulted in us being asked for interviews and quotes on many subjects that are in the news from food hygiene ratings to football! And also allows us to have a relationship with our customers but it gets our name and fish and chips out there! To me every time fish, chips or both are mentioned in a positive way it’s a good thing for all fish and chip shops, whether it’s a McCain chip advert, a cookery program or another fish and chip shop in the news it’s enough to make your customers think about fish and chips and possibly come to you.

It’s clear to me there are a lot of fantastic fish and chip shops out there that have all got their own house in order who are ingenious, passionate and dedicated, and in my opinion its these shops that will be the future of fish and chips as it’s these shops that can see past worrying whether their nearest rival may or may not gain from us joining together to raise the profile of fish and chips. I know I’m not the first person to say what could we do if we all joined together? But I am saying it again, what could we do if we all joined together to promote fish and chips? I can’t help thinking that in the past what’s put people off joining together is the many differences we have in whether its fresh or frozen fish, whether its beef dripping or vegetable oil, whether its chilled or fresh cut chips, but does it really matter? Regional and personal preferences are always going to be there and it’s these things that makes us successful in our own towns and cities but even with these differences we do still have something in common, fish and chips but to put it bluntly even though we know there is approximately 10,000 shops we do know that not all are forward thinking. We can all see around us that the big chains are dominating advertising, how the national media are constantly reporting about how bad takeaways are, how obesity is on the rise, how salt and sugar contents are a major topic and of course the horse meat scandal! Who are quite happy to put fish and chips in the same ‘takeaway bag’. When we all know this is not the case, we know we have the most natural and nutritional ingredients.

What can we do?

Unite and change the perception. We have some fantastic fish and chip shops run and owned by forward thinking people, many industry bodies, manufacturers, suppliers and media with a wealth of expertise and knowledge. Working together, under the umbrella of fish and chips we can change the negative perceptions and promote the positives of what is a British tradition and way of life. n 16th March KFE are holding an open day at their state of the art facility in Market Deeping near Peterborough. The day is run like a little exhibition, pulling together all the key aspects of the trade, from batter to finance. You can expect to see an incredible array of state of the art equipment operated by the very elite of the chippy world. Visitors will be greeted with a glass of champagne, meet the sales team and the training team.

Just some of the features of the day

Nigel Hodgson, (one of three top award winning trainers), will take people into the kitchen to look at fish cake preparation, supported by a representative from Kerry Foods. Followed by a look at potato products, supported by Dry Wite. Next visitors will move onto a range with Gordon Hillan, where they will fry the fish cakes and people can sample them. There will be an opportunity to explore the KFE filtration systems, heat exchanges

KFE Open Day on 16 March and pans etc. In a normal showroom, on any other day you can see nice shiny equipment, the difference here is that visitors get to see it in action. Finally they move into the boardroom led by Mark Petrou, who will be looking at marketing your business. All of the trainers will be available throughout the four hour experience for visitors to talk to. Many of the people who come will be new to the industry and see this as an opportunity to find out more about products, delivery days and prices all areas that are covered by the experts on hand, and there may well be special offers on the day from suppliers. Portman Finance leasing company will be there to discuss finance options. Some people come to see the equipment and others to see the training school. All have their questions answered. 16th March is the first open day, three more are planned for later in the year for which KFE will be lining up special guests, hopefully Fred Caple and Richard Ord and we may get Jean Christophe Novelli.

Nick Williams joins the Family Business Nicky Williams started in January, joining the family business. Paul, (dad) is the MD, Avril, (mum), is the sales coordinator, Tanya (daughter) is the sales manager, her husband joined as financial controller and his brother is a trainee engineer and now Nicky (son) also joins on the sales side. Tanya said: “We like to think of the whole firm as a family, not that we are all related - we’d like to think all our staff feel part of it. We organise a dinner dance every year - our thank you to the staff for all their hard work. We invite them to bring their partners. It’s open to our customers and suppliers too - normally around 200 people. This acts as a really good

network because all the KFE customers relate to each other. Everybody says when you are looking for a new range you could be joining the KFE family. Before joining KFE, Nicky worked as a policeman in the Met and Australia, and was a salesmen before that. He grew up with the family in the fish and chip business in the Boundary In Deeping. Having attended a lot of the events he already knows an extensive network of people in the trade.”

KFE Dinner Dance - 18 May Asked about the KFE dinner dance - Sales Manager Tanya said: “This year’s KFE Dinner Dance is on the 18th May, in the Marriott Forest of Arden Hotel & Country Club near Birmingham, it’s a beautiful hotel with a marque out in the grounds, there’s a championship golf course. Half the people come for a couple of nights. We usually have 40-50 golfers that T-off in the morning to play the championship course. We have various trophies, but the main one is the International KFE trophy, battled out by England, Scotland and Holland. England have won it the last couple of years. But then, we also have a separate annual golf tournament which for the last two years has been held as St. Andrews and last November the Scottish team won. So it will be hotly contested. The dinner dance takes place in the evening. Kerry, Middleton and Friar’s Pride are usually among the 200 guests. This year we’ve got Britain’s Got Talent finalists - The Jive Aces performing, They should put on a really good show”

A

film which has been nine months in the making is released today marking the journey of the potato as it makes its way from a humble seed to the chip shop. The film which was the brain child of Calum Richardson at the Bay, in Stonehaven and made by Beard Askew Productions was only made possible by a number of partners from across the fish and chip industry coming together to fund it. Isle of Ely Produce were first to sign up to the brief and they quickly persuaded local farmer Mark Gilbert, of J Gilbert & Sons to join in. Oliver Boutwood Isle of Ely Director said. “ The journey of the potato from seed (often from Scotland), through the planting process, then storage, sampling, grading and off to wholesalers is an interesting story. We followed the journey from Gilbert’s farm right through to the chip shop.” This journey will stimulate, educate and hopefully lead to all fast food outlets to think about the freshness and traceability of the food they serve”. Please help us raise money to make a wish come true for a 5 year old boy who is terminally ill

L

ittle Ryan is a cousin of one of my staff. Ryan has a rare form of Sarcoma Cancer which affects one person every four years in the UK. Ryan has had Chemotherapy, Radiotherapy and other treatment. Unfortunately there is nothing more that can be done and he only has months to live. The cancer has spread to his bones and he has a big lump behind one eye which will result very soon in having to have his eye removed! We are basically fund raising to raise some money to give Ryan a treat. Maybe a trip to the zoo for him and his family, helicopter ride, London eye or something bigger if we raise enough money! Myself and Ryan’s cousin really appreciate any help given to raise money. We would like to make him better, but unfortunately all we can do is help to make the little boys short life as special as possible. He is a lovely lad, always smiling regardless of his problems.

he shop, run by the Fusco family and represented by brothers Stuart and Adrian Fusco, has been announced as Independent Takeaway Fish and Chip Shop of the Year 2014 by awards host, professional and TV Michelin star chef, Jean-Christophe Novelli at a prestigious ceremony at London’s Lancaster London hotel. The top ten finalists, representing respective parts of the UK, were pitted against each other during the final stage of competition judging, in the race for the coveted title. All faced a rigorous judging process over the past few months, culminating in presentations to a panel of industry judges in London in a Dragon’s Den style pitch. Frankie’s Fish and Chips in Brae, Shetland earned second place, while Papa’s Barn in Ditton, Kent came third. Quayside also won the ‘Marketing Innovation Award’ sponsored by The Q Partnership (comprising Henry Colbeck, Friars Pride and V. A. Whitley). This accolade was also awarded to Quayside after industry judges agreed that they demonstrated great focus and innovative thinking in marketing and promoting their business.

Shops were assessed on a wide variety of judging criteria including product quality, customer service, food preparation procedures, hygiene, innovation, staff training and development, marketing and promotional activity, and approaches to sustainable sourcing.

Organised by Seafish, the authority on seafood, the Independent Takeaway Fish and Chip Shop of the Year Award recognises the wealth of quality, value and choice offered by the nation’s much loved independent fish and chip shops serving up the UK’s ‘national dish’. While there are no big cash prizes up for grabs at the awards ceremony, winning the title has in the past resulted in sales increases of up to 100 per cent for the winning shop. Perfect Timing It seemed all was lost, then a distant bugle called, a cloud of dust was just visible on the horizon, and the sound of pounding hooves drew ever closer, against all the odds, in the fading light of the setting sun, the cavalry galloped to the rescue. Cardiff-based range manufacturer Preston and Thomas has been bought out of administration by Rangetek in Epsom, Surrey.

angetek will be re branded Preston and Thomas as directors call upon the prestige of the Welsh manufacturer, which has installed ranges in more than 11,000 fish and chip shops since the Second World War. Preston and Thomas was placed in administration last September following a decline in turnover in recent years. The sale of the business to Rangetek took place in December 2013 and was managed by the administrators David Hill and Steve Wade of Begbies Traynor Cardiff office. Mr Hill said: “After several months of talks with potential buyers, we managed to secure the sale of Preston and Thomas’s goodwill and intellectual property, along with some of its plant and machinery. This will enable the trusted brand of Preston and Thomas

on February 3 and look forward to taking the brand forward and continuing its reputation for serving quality to fish and chip customers across Britain and beyond.” Mr Lewis added that Rangetek’s name would switch to Preston and Thomas for the February 3rd relaunch. Rangetek was founded in 1987 by Steven Saunders and Tom O’Neil before being sold to employees Martin and Donna Lewis in 2011. Based across two sites in Epsom, Surrey, and Sevenoaks, Kent, Rangetek specialises in supplying fish and chip shop fryers, in addition to equipment servicing and upgrades.
