Affectionately known as Marga, Margarita Mayrata began her journey with Chenot at age 21 in her native Mallorca, Spain, where she enrolled in the brand’s academy for therapists – a natural path for someone with her passion for traditional Chinese medicine and human wellbeing. What began as curiosity soon evolved into a lifelong commitment to the Chenot philosophy.

Now 56, Marga brings decades of expertise to her role as Lead Training Manager for Bioenergetic Treatments at the corporate level. She oversees energetic assessments, acupuncture, and Chenot’s signature personalized massages, all tailored to each individual’s energetic profile.

Her knowledge has been shaped not only by practice but also by having worked directly with Henri Chenot. Today, she remains a strong advocate for preventative health and personalized care, combining physical technique with a deep understanding of mental and emotional wellbeing. For Marga, the work is personal. “This role constantly fuels my curiosity about people, about Traditional Chinese Medicine, and about how purpose and fulfilment are key to what we do,’ she shares.

Outside of Chenot, Marga finds balance in nature. In summer, she kayaks on Lake Lucerne near her home in Weggis or returns to Mallorca to explore hidden coves. She also has a longstanding connection to Kenya, where she once lived and still visits for its grounding presence and natural beauty. HENRI CHENOT WAS A PIONEER OF A NEW CULTURE OF HEALTH – HIS WIFE DOMINIQUE CONTINUES HIS VISION. IN THIS INTERVIEW, SHE SPEAKS ABOUT HER HUSBAND’S LIFE’S WORK, THE IMPORTANCE OF HEALTHY NUTRITION, AND THE ART OF LIVING WELL IN THE CHENOT STYLE.

Madame Chenot, when you reflect on your husband’s legacy, what would you say is his greatest personal contribution? Henri was driven by a deep-seated desire to help people. believe that was his true purpose in life. He always cared about holistic wellbeing and wanted to inspire his patients to take a preventive, natural approach to health – to find a sense of balance. Today, wellness and healthy living are on everyone’s minds, but he was exploring these ideas over 50 years ago. In many ways, he was a true pioneer.

The Chenot Method blends Western medicine, traditional Chinese medicine, and modern nutritional science. How did your husband manage to unite these worlds so seamlessly? Henri had a boundless curiosity. He read extensively and had a profound understanding of human needs. He recognized the strengths of each discipline and built bridges between them – the holistic lens of Chinese medicine, the scientific precision of Western medicine, and the innovations of nutritional science. What emerged was a coherent, highly personalized method, always centered on harmony between body and mind.

How would you define “wellness” in 2025 –and what are the biggest challenges facing the industry today? Wellness today means creating balance between physical, mental, and

social health. One of the greatest challenges of our time is the impact of modern life: hyperconnectivity, lack of movement, and chronic stress. We also face emerging health issues – such as autoimmune disorders – that are closely linked to emotional and neurological imbalances. All of this informs our work at Chenot.

Nutrition has always been a key pillar of the Chenot Method. This is a field in which you worked closely together… We wanted to create a form of nutrition tailored to the needs of each individual. I’ve always loved cooking, and I became interested early on in vegetarian and vegan cuisine. Henri recognized food intolerances as an issue over 40 years ago. I began developing menus that were entirely free of gluten, lactose, or fructose – yet still appealed to all the senses. That was important to me. even sought advice from Michelin-starred chefs to ensure the dishes were as aesthetically refined as they were nourishing. That’s how my first cookbook, “Buono, bello e sano”, came about.

Why was Weggis, on Lake Lucerne, chosen as the location for the new clinic? Switzerland, with its outstanding healthcare system, seemed like an ideal choice. Add to that the idyllic lakeside setting, surrounded by mountains – a place of peace, perfect for rest, regeneration, and reflection. And it’s also known for its exceptionally clean air.

Looking back on the decades you spent at your husband’s side – what left the biggest impression on you? And how are you continuing his legacy today? It was deeply moving to witness the positive changes in so many of our patients. What impressed me most was Henri’s unwavering commitment – his ability to innovate without ever compromising his values. I carry on his vision by remaining faithful to his principles while embracing innovation where it serves the whole. The holistic approach remains at the heart of everything we do.

What is your personal secret to beauty and health? I’ve lived through difficult times – illness and the loss of my husband. But was never afraid. Fear is the greatest thief of energy. When I was unwell, I knew I had to keep my mind strong in order to heal my body. For me, that means movement, walking, reconnecting with myself. meditate, practice gratitude, and remain closely involved with the Chenot brand. I love music and travel often – I recently spent three months in Asia, visiting Japan and Taiwan, where my son lives with his family.

If your husband could walk through the clinic in Weggis today, what do you think would make him most proud? He would be moved to see how fully the clinic embodies his vision. It’s a place where innovation meets tradition. He would be proud of the principles and practices he established – and proud to see how they’ve evolved. Everything flows. He would be happy to know the clinic continues to inspire and transform lives. Because ultimately, it was always about people. About helping them find their way to a better life.

Let’s start with a challenge: can you explain how the Chenot Method works – in 30 seconds? Gladly! The body inherently has the ability to heal itself. If you know which signals to send, it will do the rest. The problem is that this ability weakens with age. But if we deliberately push the body out of its comfort zone, it switches into a kind of survival mode and activates its own protective mechanisms. This sets off a process of renewal and revitalization – like pressing a reset button. That, in a nutshell, is how the Chenot Method works.

That was just 29 seconds! You see, it’s really quite simple. But let’s go a bit deeper. Anyone who comes to us interrupts their usual lifestyle and goes through a kind of "pit stop" for the body. This reset takes about a week. Imagine every cell in your body as a battery. At birth, it’s full of energy. Over time, it drains and corrodes. We clean that battery and recharge it. The cleaning is what we call detox, and the recharging is recovery. But first, we need to assess the battery’s condition, which is why we carry out comprehensive screening. Every treatment is tailored to the individual.

You mentioned earlier that the body must be pushed out of its comfort zone. How do you do that? Primarily through the diet. We restrict caloric intake to around 850 calories per day, with a low protein content. In the first few days, this may cause temporary fatigue, headaches, or discomfort – but it is precisely this controlled stress that activates the body’s intrinsic repair and protective mechanisms.

This metabolic challenge is complemented by hydrotherapy treatments, which elevate core body temperature and stimulate thermogenic responses. These responses promote the mobilization and elimination of cellular waste.

The combined effect of caloric restriction and heat exposure increases sympathetic nervous system activity – a necessary stimulus. To restore balance and counter this physiological stress, we integrate techniques from traditional Chinese medicine to activate the vagus nerve and enhance parasympathetic function.

This holistic approach extends to our specialized massages, which not only address the physical body, but also stimulate energy channels and meridians – helping to regulate internal systems and support recovery.

A typical program at Chenot Palace lasts one week. What can people achieve in that time? The week acts as a full physiological and mental reset – a catalyst for long-term change. Guests not only undergo a deep detoxification process; they also gain valuable insight into their own bodies, habits, and health status.

It’s an emotional journey as much as a physical one. The program is intentionally challenging –designed to push the body and mind beyond their usual limits, revealing just how adaptable and resilient we truly are.

Of course, one week isn’t the end goal. But it provides a powerful foundation. Guests leave feeling lighter, clearer, and more energized –equipped with the knowledge, motivation, and personalized tools they need to continue the journey towards optimal health on their own.

How often do guests usually return? Most guests come once or twice a year. Each visit allows us to track their progress using comparative diagnostics, which can be both motivating and empowering. It’s not just about the week they spend with us – it’s about building sustainable habits that extend far beyond their stay.

While we offer advanced medical expertise, this is not a clinic in the traditional sense. We see Chenot Palace as a destination for healthy individuals who want to perform better, age slower, and live with greater vitality. Our approach is proactive, not reactive – focused on prevention, optimization, and long-term wellbeing.

Equally important is the mental and emotional experience. Guests should feel at ease, supported, and inspired. Our setting in Weggis – one of Europe’s most breathtaking regions – plays a vital role in that. We combine luxury hospitality with state-of-the-art health science in a seamless way. That balance is a key reason why the Chenot Method thrives here.

Before joining the Chenot Group, you worked with elite athletes. How has that experience shaped your work today? In high-performance sports, learned to use the best training technologies and how to maintain physical performance and wellbeing over the long term. What I do with guests at Chenot Palace is not so different from what did with athletes. The number on your passport doesn’t define your true age. With the Chenot Method, people can rejuvenate – they

can improve what we call their vitality index. We measure this using a range of parameters such as vascular age, oxidative stress, muscle function, emotional stress, and metabolic rate.

One final question: on the tour of Chenot Palace, I noticed a room dedicated to neuroacoustic deep relaxation. What is that exactly? It’s a powerful example of how non-invasive therapies can have profound physiological effects. Neuroacoustic deep relaxation uses specific sound frequencies to stimulate the parasympathetic nervous system, helping guide the body into a state of deep, restorative calm. While individual responses can vary, research –including studies from Harvard Medical School – suggests that just 20 minutes of this therapy may offer regenerative effects equivalent to two hours of sleep.

It reflects an important principle of the Chenot Method: while our framework is structured, it’s never static. We continually integrate the latest scientific findings to enhance outcomes and evolve our approach – always with the goal of supporting the body’s natural intelligence and capacity to heal.

Dr. Gaitanos is the Chief Operating and Scientific Officer of Chenot Group. He joined the company in 2013. His role is strategically important in the development of the brand within the health wellness sector – especially as the company, in addition to its existing facilities, moves forward with plans to expand worldwide.

Dr. Gaitanos has a background in physiology and biochemistry and is an expert in energy metabolism. He received his MSc and PhD at Loughborough University (U.K) and, conducted substantial post-doctorate research at the Karolinska Institute in Stockholm, Sweden. His research work has been published in numerous medical journals.

He has 14 years of experience (1992-2006) in the world of high-performance sports at the elite level of international competition including two Olympic Games and the NBA, as well as over 30 years in health promotion and disease prevention with an integrated and personalized lifestyle medicine approach. He has collaborated with multidisciplinary and multinational teams of healthcare practitioners and managers, attaining both operational and leadership positions in medical and wellness institutions.

Recent longevity research underscores that epigenetics (how our environment influences gene expression) plays a more decisive role than genetics alone. Our external exposures, collectively known as the exposome, can disrupt biological balance, with a significant share of these exposures contributing to toxicity. This makes daily support of the body’s detoxification systems essential for long-term health.

“Any conversation regarding detoxification should start by saying that our body is actually able to do it on its own, nothing can improve on nature,” says Dr. Anna Marie Olsen, regenerative medicine expert and Associate Professor at UCL and the National University of Singapore. “An optimally working body detoxifies constantly but we are now receiving more toxins than we are genetically designed to deal with, so we must use a range of disciplines to support it.”

The primary focus of effective detoxification must be in supporting liver function to process and eliminate toxins from the body and reinforcing the gut barrier to prevent toxins from entering the bloodstream. Biotransformation helps a well-functioning liver inactivate toxins, converting them from lipid-soluble into a water-soluble form that can be eliminated. Studies show that gut barrier strength is fundamental to the body’s toxic load because when heavy metals, air pollution and nitrates are inhaled, they are deposited in the gastrointestinal tract. This can trigger gut dysbiosis, reducing the gut microbiota’s ability to metabolize, and increasing gut permeability, which then permits larger toxin molecules to directly enter the bloodstream.

The gold standard of detoxes are intensive and investigative; a week spent with Chenot enables a profound understanding of a person’s individual toxic load, enabling each system to be overhauled accordingly. Yet it’s not just about how much water we drink, rather the quality of what we're drinking. “While filtered water is great, hydrogenenriched water accelerates not only hydration levels, but the body’s detoxification processes as well. Some traditions, such as Ayurveda, also suggest that drinking water close to body temperature can improve absorption and ease digestive strain.” Herbal and nutritional supplements, such as artichoke extract and chicory water, also boost bile flow and liver efficiency.

SUPPLEMENTATION

Cruciferous vegetables, flax seeds, olive oil, green tea and turmeric are all welldocumented as aiding toxic elimination, while vitamin infusions – including B-complex, amino acids, glutathione, vitamin C and zinc –open the body’s detox pathways from all the major organ systems. Blue light emitted from the screens of electronic devices suppresses melatonin secretion, making it harder for the body to enter sleep mode. Avoiding screen exposure for at least an hour before bed prevents circadian rhythms from becoming interrupted and promotes the consistent resting patterns required for essential nocturnal detox processes. Initial research shows this also has positive ramifications for the gut–brain axis, which is heavily influenced by circadian rhythms.

What we breathe, swallow, eat, stress over, even the origin of our water, all tallies up to toxic load, so even the simplest daily acts can have a positive domino effect. Genome testing deciphers the body's unique detoxification capabilities to create the most accurate plan for the bestpossible approach. According to Dr. Olsen, “Sunshine, hydration, breathing, and strength-ening your muscles every single day, works for everyone. You don't even have to want to live to 150, if you want to be your best self in the moment. Detoxification must be the cornerstone of any positive lifestyle because the removal of debris and toxins is a pillar of long-term health.”

SKINSPAN

Skin is our first layer of defense against a toxic world so we should be prolonging our skinspan and supporting barrier strength. “Skin is our main protection for any exterior toxin or aggressor; 90% of what skin does is protect toxins from coming in. Exfoliation with a blend of crystal sugar, Himalayan salt, and avocado removes outer cells, helping the skin to perform better as a barrier to the toxic exposome attacking daily.”

MICROPLASTICS

The results published earlier this year in Nature revealed a 10% increase in both healthspan and lifespan. This notable improvement is attributed in part to the role of Vitamin D and omega fatty acids in supporting the body’s natural detoxification processes.

BREATHING

According to a recent global consensus, the best longevity biomarker of biological age is VO₂ Max - the maximum amount of oxygen your body can absorb and use during exercise. “The main thing we can do today to optimize our lungs is breathing exercises. One of the main drivers of modern cellular intoxication is microplastic accumulation. Microplastics are ubiquitous and entirely unavoidable, so the best defense is to support the five organs associated with detoxification. Before Ettore Moliteo sits down for the interview, he lets his menu speak first. At Chenot Palace, the meal often starts with dessert – like today’s subtly sweet tapioca pudding with coconut panna cotta and blueberry compote.

Prior to joining Chenot four years ago, he worked at a Michelin-starred vegetarian restaurant in Italy, preparing him well for this demanding and rewarding role.

Guests at Chenot Palace consume just 850 calories per day during their typical one-week stay. It’s not a lot, but it leaves room for creativity in the hands of a seasoned chef like Moliteo.

“By now, can almost instinctively tell when a dish has reached its calorie limit,” he says. “Our team of nutritionists here in Weggis provides the final confirmation.”

As he speaks, the second course – a rocket salad with fresh strawberries and a tangy berry dressing – is served.

The biggest challenge? Minimizing salt. Under the Chenot Method®, only one gram per person per day is permitted.

“How we perceive saltiness is largely a matter of habit,” Moliteo explains. “After three, maybe four days, the palate adjusts. You become more sensitive to a product’s natural flavor and no longer depend on salt for enjoyment.”

Instead of crystalline salt, Moliteo uses naturally salty vegetables. He pairs them with polenta cakes and a Mediterranean mix of slow-cooked tomatoes and onions, garnished with a few Taggiasca olives.

With salt so drastically reduced, the natural flavor of each ingredient becomes central. That’s why the Chenot kitchen prioritizes seasonal, organic ingredients sourced within a 50-kilometer radius whenever possible.

“When food travels long distances, it loses not only culinary quality but also its energetic value,” Moliteo emphasizes.

Alongside naturally salty ingredients, Moliteo has a soft spot for earthy produce like celeriac. He slices it thinly and cooks it gently before serving it as a firm “carpaccio” atop a barley ragout with two types of pesto – one made with mizuna (a peppery Japanese green) and hazelnuts, the other with basil and peanuts.

His preparation methods all embrace quick cooking times, high humidity, and low temperatures to preserve as many nutrients as possible and minimize the formation of AGEs (advanced glycation end-products), which are linked to ageing and various degenerative diseases.

Moliteo shares his culinary philosophy in weekly cooking classes at the Chenot Palace. Despite the necessary “reset” effect that excludes salt, white flour, and all animal products, his goal is always to delight and entertain his guests.

Spices like cinnamon, star anise, and cumin play a role, as does his passion for texture.

“When I create a dish, I always make sure there are three distinct textures on the plate,” he says. “Breaking up the calories into three courses also helps keep things interesting at the table.”

KIWI, GOLDEN APPLE AND ALMOND SMOOTHIE

Ingredients

4 kiwis

2 golden apples

20 g peeled almonds

250 ml water

6 ice cubes

Diced kiwi and apple for garnish

Preparation

Peel kiwis and core apples. Blend all ingredients until smooth.

Pour into a glass and garnish with diced fruit.

• Green apple + kale + mint + lime + cucumber

• Cucumber + lemon + parsley

SWEET AND SOUR TOFU

Ingredients

Preparation

Sauté garlic and chili in olive oil, then cook nettles briefly and blend until creamy. Brown onion in olive oil, add rice, toast, then cook in vegetable stock for 30 minutes.

Stir in nettle purée, yarrow, salt, pepper, and lemon zest.

Serve garnished with yarrow leaves and chamomile petals.

80 g soy sprouts

1 Thai chili, finely chopped

15 g pine nuts

20 g tomato paste

20 ml rice vinegar

Soy sauce (a few drops)

Preparation

Cube tofu, peppers, and pineapple. Sauté sprouts and peppers with chili. Toast pine nuts. Brown pineapple, then tofu, deglaze with rice vinegar, and combine all with tomato paste and soy sauce.

Over the years, I’ve come to understand that the key to a sustainable, active lifestyle lies in balance. True wellness isn’t just about physical fitness, it’s about finding harmony in all areas of life: our routines, our relationships, our food choices, and the way we handle everyday stress. Staying active isn’t about constantly pushing yourself to your limits. It’s about finding joy in movement and showing up with consistency, even on days when motivation feels scarce. My daily routine is non-negotiable. It’s not always

about intensity, what matters most is consistency. Simply showing up builds momentum, and that consistency becomes a quiet source of strength, especially during life’s more challenging moments.

Some of my most treasured memories are of sharing runs with family, exploring mountains together or weaving through vibrant city streets. These moments aren’t just physically rewarding; they’re emotionally enriching too. They remind me that movement doesn’t have to be a solitary journey. In the end, it’s not about what sport or activity you choose. What matters is finding something that resonates –something that brings joy, clarity, and a sense of connection. Once you find it, then commit to it, let it evolve with you, and allow it to deepen your connection to both you and the world around you.

FROM EVENING JOGS TO HALF MARATHONS

ONE FOOT IN FRONT OF THE OTHER, A SIMPLE RHYTHM THAT UNLOCKED A NEW RELATIONSHIP WITH MY BODY, MIND, AND LIFE ITSELF.

When moved to Switzerland ten years ago, didn’t have a regular fitness routine. As a young professional starting a new chapter alone in a new country, life was exciting but also demanding. That changed thanks to a surprising source of inspiration: my neighbor, 20 years my senior, who introduced me to running.

What began as casual evening jogs – our way of unwinding from work and exchanging thoughts (until I quickly learned I couldn’t talk and run at her pace!) – soon evolved into something more ambitious. We had both previously lived in Berlin, and the idea of running the city’s famously flat and festive half marathon came up quickly. Although she eventually dropped out, had already made a promise to myself and told far too many people to back out. That was the beginning.

Soon after, discovered running camps, active holidays that combine sport, nutrition, and community. Surrounded by like-minded people, I began learning about performance-focused nutrition, injury prevention, and smart training techniques. These experiences introduced me to the “culture”

of running and helped me view fitness not as a chore, but as an ongoing, joyful learning process. In April 2017, stood at the starting line of my first Berlin Half Marathon. The rush of adrenaline, the runner’s high at the finish line, and the sense of belonging to a driven, supportive community were unforgettable. Since then, I’ve completed more than ten half marathons in cities like Lisbon, Lucerne, and Palma. My Garmin Coach helps me stay focused, guiding my training and helping me chase new personal bests like the one just achieved this year, back in Berlin, of course.

Living in Switzerland, where breathtaking trails are always just around the corner, offers daily inspiration to pursue a healthier, more intentional lifestyle. My husband – an age-group triathlete and my personal executive chef – plays a huge role in that journey. And so does the Chenot philosophy, which continues to remind me that health isn’t just a message to share – it’s a mindset to live by.
