Il nome Zýmē proviene dal greco e significa “lievito”, elemento fondamentale nel mondo dell’enologia, ma anche elemento simbolico che richiama il fermento. Ecosostenibilità, conoscenza e rispetto dei tempi della natura sono i cardini della nostra produzione. Visitare la cantina, ampliata e rinnovata nel 2014, è un’esperienza globale, capace di coinvolgere tutti e cinque i sensi più l’immaginazione. I visitatori entrano nel mondo Zýmē, diventando partecipi di un progetto non solo lavorativo, ma esistenziale, testimoniato da un percorso che comincia con l’ammirare l’architettura particolare della cantina e si snoda attraverso la storia dei vini e dell’azienda cul-
minando con il momento della degustazione, dove è possibile assaporare le due anime della cantina: quella classica con i vini che hanno reso questo pezzo di terra celebre in tutto il mondo e quella innovativa con i vini nati dalla ricerca e dalla sperimentazione del fondatore. Cultura, storia, tradizione, innovazione, un bicchiere di vino è tante, molte cose, ma nel cuore di Celestino Gaspari è soprattutto lievito per la mente e per far crescere un progetto: Zýmē.
The name Zýmē, from Greek, means “yeast” which is not only an indispensable oenological element but it also bears a symbolic meaning since the fermenting process is understood by Celestino Gaspari as a continuous striving towards transformation. Ecosustainability, understanding and respect for the rhythms of nature: these are the cardinal principles of our approach to winemaking. A visit to the winery, reformed and enlarged on 2014, is a 360° experience the can involve all one’s senses plus imagination. Guests get into Zýmē’s world, becoming part of a long time work project and existential too. This is testified by a path beginning with the unusual ar-
chitecture, followed by the story of the winery and of its wines, culminating with the wine tasting, where one can try here our two souls: the classic one represented by the wines that made Valpolicella famous all over the world, and the innovative one, by the wines born under the founder’s research and experimentation. Culture, history, tradition and innovation - a glass of wine is so many things, but in Celestino Gaspari’s heart, wine is above all yeast for the mind, and a yeast that grows a project, Zýmē.
