On Veterans Day, we honor the men and women who have served in our armed forces. If you’ve recently separated or retired from the military, or you will be leaving soon, you can be proud of the service you’ve provided to your

country. But once you’re a veteran, away from the structure and imperatives of the military, you may need to take greater control over managing your finances and protecting your family.

become a civilian, you may need to consider two topics that have special importance to you and your family: health and life insurance. Regarding health insurance, you should be able to get coverage through TRICARE and/ or the Veterans Administration, but you also may want to take advantage of employer-sponsored health coverage.

As for life insurance, you will lose the coverage offered by the military (Servicemembers’ Group Life Insurance, or SGLI) shortly after you separate from active duty, so you’ll want to consider your options for your SGLI, such as converting it to either Veterans' Group Life Insurance or a civilian policy.

Your new employer may provide some form of insurance as an employee benefit, but it might not be sufficient for

your needs. In any case, if you have dependents, it’s essential you don’t lose life insurance coverage, even for a short time.

Finally, be prepared for one negative aspect of becoming a veteran: fraud attempts. It’s unfortunate, but scam artists frequently target veterans.

Scammers may tell you that you qualify for “secret” government programs, but you must first pay a fee or provide personal information, which can then be used for identity theft. Or they might try to charge you for access to your service records, even though you can get them free from the Department of Veterans Affairs. As a general rule, be suspicious of anyone you don’t know who seems overly eager to help veterans.

Entering a new phase in your life can be exciting and rewarding – and you’ll enjoy it even more when you get comfortable with your new financial arrangements.

THE GOOD OLD DAYS: What’s Important About Clothes? By the Late Wayne Lubenow WE WERE INVITED to a party at a friend’s house the other night. It was nothing formal, no big dress-up deal.

I tossed on a pullover shirt, a pair of pants and a sport jacket and meandered out into the living room.

Rosie took one look,

stiffened like she had been smitten by an ancient Zulu curse and muttered, “Dear God, you’re not going out in that, are you!”

“I am a gregarious guy,” I said, “and I don’t like to look staid dressed in all one color. I like a little contrast.”

“Why not?” I asked innocently.

“A purple shirt, brown pants and a yellow jacket is not contrast, “ she said.

“It’s a collision.”

“They’re comfortable,” I mumbled, “and I like being comfortable at parties.”

“Those colors,” she groaned. “You look like a pizza with everything on it.”

I’ll come out of the bedroom in the morning and she’ll ask, “Why are you wearing blue sox with brown trouser?”

“These ain’t blue sox,” I say patiently. “They’re dark brown sox.”

But I’m not trouble-maker so I go back and change.

I have to admit that Rosie always looks nice, which probably accounts for the fact that she has three-fourths of our closet and my rags occupy the other one-fourth.

Hey, I can only wear one thing at a time and I don’t mind wearing it every day, so who needs so many of everything?

I hate neckties and the guy who invented ‘em should be choked with one.

But I got one favorite tie.

How could anybody not like a necktie that is green with huge red roses on it?

I got two suits. One is about 12 years old and it is a light blue with red pinstripes in it. My other one is only about seven years old and it is brown.

I like my old suit the best because it is baggy and comfortable. It is a little frayed, but I have become very close to that suit over the years.

But I never get to wear it. Rosie insists I wear the brown one because, while it’s old, it’s newer than the blue suit with the red stripes.

“When,” she keeps asking, “are you gonna buy some new clothes?”

I dunno. I hate shopping. Besides, I still got

Thanks in large part to a global pandemic that has lasted for much of 2020, Thanksgiving figures to be celebrated a little differently this year than in years past. Family gatherings may not be as large and highways may not be as heavily trafficked as they are on what is normally one of the year's biggest weekends for travel. In addition to smaller gatherings, many families may opt to host Thanksgiving dinner outdoors.

According to the Centers for Disease Control and Prevention, the COVID-19 virus spreads very easily through person-toperson contact, and the risk of spreading the virus is even greater when spending time indoors with other people. As a result, some families are planning to host Thanksgiving dinner outdoors on their patios or decks this year. That decision has prompted some to consider different ways of cooking their Thanksgiving turkeys, includ-

ing smoking. Smoking has long been associated with cooking foods like brisket at home, but smokers also can be used to make delicious Thanksgiving turkeys.

Thanksgiving hosts who want to smoke their turkeys outdoors this year are urged to take a few trial runs and watch some online tutorials before trying their hand at smoking.

Smoking relies heavily on controlling tempera -

tures, which can fluctuate dramatically and quickly inside a smoker. As a result, smoking a turkey may require simple but frequent adjustments to dampers so the temperature inside can remain steady at around 225 F. Hosts who suspect they will be busy hosting or preparing side dishes on Thanksgiving may want to cook their turkeys in more traditional ways, such as baking the bird in the oven. Those who can devote the time to controlling the temperature o n t h e i r s m o k ers also

should know that the turkey will take much longer to cook in a smoker than in an oven. According to the online grilling resource Heygrillhey. com, cooks should plan to smoke their turkeys at 225 F for approximately 30 minutes per pound.

That means smoking a 15-pound turkey will require at least 7.5 hours cooking time. That's a significant factor to consider for people who want to host Thanksgiving dinner outdoors this year. In order to avoid serving smoked turkey after the sun has gone down and temperatures have dipped, Thanksgiving hosts may need to wake up especially early and fire up their smokers around the break of dawn if not earlier.

TIPS TO SIMPLIFY THANKSGIVING ENTERTAINING Preparing Thanksgiving dinner for a houseful of close friends and relatives can be a tad overwhelming.

Thanksgiving is a

food- and tradition-centric holiday, and all eyes will are typically on the dinner table. Pulling off a feast of this magnitude - multiple courses, side dishes and desserts - takes considerable effort. These tips, tricks and timesavers can be a Thanksgiving host's saving grace.

Pick the menu early Don't leave menu planning and shopping to the last minute. Decide what you'll be cooking in addition to turkey several weeks before the big day. Select two or three side dishes, preferably items that can be prepared in advance and then reheated on Thanksgiving. These can

T h e first time you bag a buck is not something you’re likely to forget, especially when you get to share that moment with your father.

Son Logan Falk and father Nate Falk of Hankinson, North Dakota, had this opportunity on Dec. 31, 2020.

The opportunity was given to them by the non-profit organization Outdoor Adventure Foundation.

Since 2009, the Outdoor Adventure Foundation has coordinated excursions for children diagnosed with cancer.

“It’s been a little over three years.

[Logan] had a 10-month battle with heavy treatment. We’re in maintenance now, oral chemo every day and once a month blood testing and IV treatment,” Nate said.

The initial 10-month battle was brutal for Logan and the entire family, Nate said.

In early spring 2018 doctors couldn’t detect any more cancer. That didn’t necessarily mean Logan was cancer-free, but none has been detected since, Nate said.

The Falks initially found out about the Outdoor Ad-

venture Foundation while Logan was in the hospital.

“I had seen the brochures in Roger Maris. You’ve got a lot of time on your hands to wander the halls waiting for lab results and waiting for medicine and all that, and I just never thought to reach out to them,” Nate said.

Their initial invitation from the Outdoor Adventure Foundation was to attend a banquet in Fargo, something that never ended up happening due to Logan feeling sick, and inclement weather.

In the fall of 2020, the Outdoor Adventure Foundation reached out to the Falks for an opportunity to go bag a buck. Their first two trips did not yield any success. They saw a lot of does during their time out,

but no bucks.

“Then they reached out to us again, right before Christmas and said they’d like to hook us up and we made it work for Dec. 31 and that was a successful hunt,” Nate said.

Phillip Heitkamp, their guide, helped scout the area before the Falks arrival. On Dec. 17, Heitkamp received a call asking him to help with the hunt and gladly accepted. Heitkamp had been familiar with the Outdoor Adventure Foundation for two years, but this was the first time he was able to volunteer.

Every morning and night for two weeks, Heitkamp would make the 45 minute drive from Kent, Minnesota, to the hunting location just north of Wyndmere to find the ideal buck, slowly moving cameras closer and closer to where the deer were going to sleep until he found just the right buck.

“They told me they had him out multiple times and all he wanted to do was shoot a buck and hadn’t seen a buck and they asked if I could help.

Logan had been pheasant hunting before, but this was his first time hunting deer on his own.

of people that I knew to see if they had some land I could find some deer on, late season. I probably had a little over 10,000 acres of people that said yes within that night,” Heitkamp said.

On the day of the hunt they posted up and waited for their moment.

“I liked watching the animals and just trying to find a nice one to shoot,” Logan said.

Watching the animals paid off. A buck emerged and made its way to the bait pile. Obscured by branches, Logan waited for his opportunity and timed the perfect vital shot. Hitting the branches could have altered the bullet's path.

“You’re talking through it, sometimes dads are a little bit too overbearing and maybe I was in that moment, but I just wanted to make sure it was successful for him and the people guiding us … You like to guide your kids, but also like to let them do their own thing and take it upon themselves to do some of these things and he did it,” Nate said.

“To see the joy on Logan’s face and my face, we had a really rich experience,” Nate said.

A SIMPLE TECHNIQUE FOR FASTER TURKEY (OR CHICKEN) ROASTING Waiting to dig into a beautifully golden and succulent turkey is one of the joys of Thanksgiving Day. Waiting is the operative word on Thanksgiving, as cooking a turkey to perfection in the oven can take several hours.

Those who do not have the patience to wait for their drumsticks or breast meat may look to faster cooking methods like deep frying, which takes considerably less time than roasting. However, for those not yet ready to delve into deep frying, spatchcocking is a classic technique that can cook turkeys a little more quickly.

While food scholars are not certain of the origins of spatchcocking, many agree that it dates back to 18th century Ireland.

Spatchcocking is a simple deboning method that essentially butterflies a whole chicken or turkey.

According to The Spruce: Eats, spatchcocking involves removing the backbone of the bird from tail to neck so that the poultry can be opened out flat. The increase in surface exposure to the heat while roasting results in a shorter cooking time and more even cooking. A 10-pound turkey may be done in under two hours when spatchcocked, compared to three or more hours when cooked traditionally.

Butterflying a turkey also makes it easier to manage on a grill or in a smoker.

How to spatchcock a turkey A sharp, sturdy pair of kitchen shears is the best tool for the job. Once shears have been procured, cooks can follow these guidelines.

1. Remove the gizzards, if applicable, from the inner cavity of the turkey.

2. Flip the bird breastside down on a cutting board and find the backbone in the

middle.

3. Cut along one side of the backbone, then repeat on the other. It may take a little strength to power through the rib bones. Save the backbone for making stock or gravy.

4. Flip the turkey breastside up and then use both hands to crack the breastbone and flatten the turkey further.

5. Cut off the wing tips, if desired, or tuck them under the breast.

Place the turkey on

a rack in a roasting pan. Turn the legs so that the drumsticks are facing inward on the pan, like the turkey is knockedkneed.

6. Season and cook until internal temperature at the thigh (not touching the bone) reaches 165 F with a thermometer.

SENIORS PRAISE VALLEY SENIOR SERVICES ON 50TH ANNIVERSARY More than 10 million meals, 2 million rides since 1971 Written By: Barry Amundson/The Forum Elaine Fiske of North Fargo was leaving the 50th anniversary party for Valley Senior Services on Wednesday, Sept. 1, at Rheault Farm in the Metro Senior Ride van to go have her hair done.

"I don't know what we would do without it," she said about the transportation service offered to senior citizens.

Fiske was also referring to the Meals on Wheels, senior meal sites and other services of Valley

Senior Services.

She uses the ride service, which charges a minimal fee, to go to the Sons of Norway every Tuesday and for her hair appointments.

Fiske said her neighbor gives her a ride to church.

"I don't really go a lot of places," she added. Although she owns a car, she said her son has the keys and the battery is dead in the vehicle.

Warren Swenson and

his wife, Kathy, of south Fargo, were also at the celebration attended by about 200 people.

He said he frequents the senior meal site in south Fargo, and in addition to the "very good and nutritional food" he enjoys talking to all the people and learning about their various backgrounds.

"A lot of us have the same problems, the aches and pains, too," he said.

His wife said he has

made a lot of friends at the meal site.

They have each other, Kathy Swenson added, but a lot of the seniors there are "lonely" and enjoy having a conversation with someone.

Many join in activities such as playing cards.

Jan Baker, of south Fargo, picks up a meal occasionally and visits the meal sites where diners are asked to provide a donation.

She said it was especially helpful to have

meal pickups during the COVID-19 pandemic's peak.

Brian Arett, who has been director of Valley Senior Services for 32 years and worked there 10 years prior, said the "overriding goal is to help senior citizens live independently as late in life as possible."

Since 1971, the organization that is part of the Fargo Park District has provided more than 10 million meals and 2 million rides.

Valley Senior Services serves seniors in six counties in southeast North Dakota and provides transportation services across the border to seniors in Moorhead and Dilworth, too.

Mayor Tim Mahoney, who addressed the crowd, said the partnership with the Park District is amazing, and it illustrates how they provide services to city residents from children to senior citizens.

The organization was originally part of President Lyndon B. Johnson's Great Society that brought Medicare and the Older Americans Act, Arett said. Former Park District Director Bob Johnson was instrumental in giving Valley Senior Services a two-year trial period, he

added, as the organization was the first of its kind in North Dakota.

It never stopped operating, only growing.

Valley Senior Services served or delivered 21,254 meals that first year, and last year it grew to 322,316.

The budget has grown from $200,000 the first year to about $5 million, with about 30% coming

from federal funds and 40% in state and county funds. Residents who pay minimal fees for rides and meals provide about 23% of the budget with 5% to 10% in grant money.

There are 120 employees, mostly part-time, but Arett said they could never operate without the help of so many volunteers who deliver meals and help in other ways.

Locally owned small businesses are vital components of many thriving communities. The unique role locally owned small businesses play was never more apparent than

during the pandemic, when many such establishments were forced to close, reduce their hours of operation or downsize their offerings as consumers were urged to

stay home and prevent the spread of the COVID-19 virus. In the wake of those changes, communities across the country soon realized how vital local businesses are to their local economies.

Job creation and tax revenue are two ways that locally owned small businesses support local economies. These businesses also make communities unique and serve as a source of pride for residents, which underscores the importance of supporting them as the world slowly emerges

from the pandemic.

Businesses big and small look to the holiday season as a great time to increase their revenue.

Big business gets a significant boost from Black Friday, which occurs on the day after Thanksgiving and marks the unofficial opening of the holiday shopping season.

But consumers who want to support locally owned small businesses as they start their holiday shopping can look to Plaid Friday.

Plaid Friday was initially

organized in Oakland, Calif., in 2009. Back then, Plaid Friday, which takes place on the day after Thanksgiving, was intended to serve as a more laid back alternative to Black Friday, a day that's become as notorious for incidents threatening public safety as it has for great deals. Plaid Friday efforts promote locally owned small businesses and encourage residents to patronize these establishments as they begin their holiday shopping.

Since 2009, Plaid Friday has caught on outside of

Oakland, and many communities now embrace it. Many small business owners host Plaid Friday sales, and some even offer extra discounts to customers who wear plaid, which has come to symbolize support for small, independently owned businesses.

This year Plaid Friday occurs on November 26. Residents are urged to support small, locally owned businesses, many of which could use a boost after a challenging 2020 holiday season.

Six of the veterans served with the United States Army and one with the United States Marine Corps. BETTER DRIVING HABITS HELP FAMILY FINANCES AND THE ENVIRONMENT According to the nonprofit National Institute for Automotive Service Excellence (ASE), motorists can help the environment and their own finances by incorporating a few good practices. Regular vehicle maintenance and better driving habits are two simple ways any car owner can go “green” — both for the environment and one’s own wallet.

Here are a few specific, easy-to-implement tips from ASE: Keep the engine running at its peak performance.

A misfiring spark plug can reduce fuel efficiency as much as 30 percent. Replace filters and fluids as recommended in the manual. A well-tuned engine pollutes less and uses less. Moreover, neglected engine performance problems can cause costly repairs over time If you do your own repairs, be a good steward of the

environment. Dispose of engine fluids and batteries properly. A single quart of used motor oil can pollute thousands of gallons of water. Antifreeze poured on the ground can poison wildlife and household pets. Check around at local repair facilities to see if they accept used fluids and parts, or call your local government agencies for information on proper disposal and recycling.

If you have used any over-the-counter remedies such as system sealants or self-service refrigerants, let the technician know prior to servicing the vehicle.

Duane enlisted in the ND National Guard at the age

of 16, serving in Battery C as a gunner on a 4.2 mortar and later transferring to a transportation company.

He served 5-1/2 years in the NDNG. He then enlisted in the US Air Force in 1961 and trained as a ground control approach repairman, serving anoth-

er 4 years and achieving the rank of Airman First Class.

Ken served active with the US Army from 1953 to 1955 and as inactive reserve from 1955 to 1963.

During his service he was stationed both in the US

and in France, where the Army engineers were attached to the Air Force at Chateauroux AFB France.

Richard served as a commissioned officer with the US Air Force from 1969 to 1972. He was trained as a weapons controller and personnel officer, serving with the Tactical Air Command and Strategic Air Command.

Arnie served in the US Air

Force from 1949 to 1953 during the Korean War. Arnie was an aircraft mechanic working on F51 fighter planes.

Brad enlisted in the US Air Force in 1971, serving in Vietnam during 1972 and 1973. He later spent time in Thailand and the Minot AFB. After 4 years of active service with the USAF, he joined the ND Air National Guard and served there until May 2009 with

38 years of total military service.

Galen served in the US Army from 1986 to 1990.

Galen was a military police officer in Zirndorf, West Germany. Being a newbie out there, he was assigned to carry the heavy M60 machine gun.

THE HEALTHY GEEZER By Fred Cicetti Q. Who are the people most liable to be bitten by a dog?

More than 60 percent of the people who are bitten by dogs are children.

The elderly are second.

And people like mail carriers and meter readers are third.

Children often don’t know how to act around dogs and frighten them into aggressive behavior. Older people are more prone to being bitten by an aggressive dog because they tend to be slower and weaker than younger adults. Mail carriers walk onto property the dogs consider their domain to defend.

Dogs bite more than 4.7 million Americans a year.

About 800,000 of these victims seek medical attention. Of those injured, 386,000 require treatment in an emergency department and about a dozen die.

Here are some tips from the experts on how to avoid being attacked by a dog: * Don’t look a dog straight in the eye. This is provocative. * Do not run away from or past a dog. This can make them aggressive and want to chase you. * Never go up to a dog you don’t know and try to get friendly, especially if the dog is behind a fence, tethered or in a parked car. * If an unfamiliar dog

comes up to you, stand still. Most of the time, the dog will sniff you and then walk away. * Never bother a dog that is eating or sleeping. And stay away from a mother tending to her litter. *If you're threatened by a dog, don’t yell. Respond calmly. In a commanding voice, tell the dog to go away. Try to stay still until the dog leaves, or back away slowly. * If you are attacked, give the dog an object, such as a jacket or a backpack to bite. If you are knocked down, roll yourself into a ball and lie still. Cover your head and face with your hands.

a doctor’s care, you should clean the wound with soap and water, apply pressure with a clean towel to stop bleeding, apply a sterile bandage to the wound, keep the injury elevated above the level of the heart to slow swelling and prevent infection, apply antibiotic ointment to the wound twice daily until it heals.

An immediate concern that comes to mind after a dog bite is rabies.

Rabies is uncommon in dogs in the United States.

If a dog appears to be healthy, it probably does not have rabies. However, if you’re bitten by a dog, you should take some precautions.

If you are familiar with the dog that bit you, check its vaccination record. Even if it has been vaccinated, it should still be quarantined for 10 days to insure it doesn't exhibit rabies

DID YOU KNOW? According to the Alzheimer's Association, people with a parent or sibling with Alzheimer's disease are more likely to develop the disease than those who do not have a first-degree relative

with Alzheimer's. In addition, those who have more than one first-degree relative with Alzheimer's are at an even greater risk of getting Alzheimer's. Though family history is not necessary for an individual to develop Alzheimer's,

the AA notes that researchers have identified hereditary Alzheimer's genes.

For example, researchers estimate that between 40 and 65 percent of people diagnosed with Alzheimer's have the APOE-e4 gene.

APOE-e4

is characterized as a risk gene because it increases the likelihood of developing Alzheimer's but does not guarantee it will happen.

The gene is inherited from a parent, and people who

inherit two copies of APOE-e4 from their mother and father have a higher risk for Alzheimer's than those who inherit one copy of the gene from their mother or father. The AA also notes that researchers have found deterministic

genes that cause A l z h e i m e r ' s .

However, these genes are rare and have only been found in a few hundred families across the globe, accounting for 1 percent or less of all Alzheimer's cases.

The 2021 North Dakota deer season opens Nov. 5 and runs through Sunday Nov. 21. Legal shooting hours after opening day are a halfhour before sunrise to a half-hour after sunset each day.

While some hunters have been in the field enjoying dove, waterfowl and upland game hunting opportunities, there’s many hunters who just hunt deer and the new electronic posting regulations may not be understood. It’s difficult to address each question and scenario so I suggest taking time to understand the regulations and reading up on the Game and Fish Department website gf.nd.gov or consulting your local Game and Fish office.

There are tools available on the Game and Fish website that hunters can use to determine if land has been electronically posted.

These include multiple map applications and digital PDF documents that can be saved to a device or printed for use in the field.

The map apps can be accessed by a computer or smartphone. The apps offer features to identify a point of contact, work offline or without cellular service, and create your own maps.

Custom maps provide the ability to turn on other map features, such as deer hunting units and aerial imagery, or zoom into areas to see more detailed information.

A benefit of electronic posting for hunters is that they can determine a valid point of contact when requesting access. The name of the landowner, or authorized person who posted the land, is included on the map apps.

While law requires the name of the person who posted the land to be available to the public, hunters may also find additional contact information such as an email address, phone number and/or alternate point of contact. Hunters should note that point of contact information is not available on printed maps, but only on online apps.
