can enjoy! Lately, I have been really focusing on healthy eating habits and incorporating that into family meals that are both healthy and delicious! This recipe for fish florentine is one of my favorite recipes. I would love for you to try it and it become a favorite of yours too!

Ingredients • 4 - 5oz. thick pieces of skinless white firm fish fillet (I use grouper) • 1 Tbsp extra virgin olive oil • 1 Tbsp butter • 1 cup red bell pepper, chopped • 2 cloves garlic, minced • 9 oz. fresh baby spinach • 2 oz. reduced fat cream cheese • ¼ cup half-and-half cream • 3 Tbsp grated parmesan cheese

• In a large skillet, over medium heat, add ½ Tbsp olive oil and ½ Tbsp butter, red bell pepper, and garlic and cook for 4 minutes. • Add spinach, season with salt and pepper; cook until the spinach wilts down. • Add cream cheese, half-and-half, and parmesan cheese; mix well until cream cheese is melted and resembles creamed spinach. • Heat a separate skillet on medium high heat; add remaining oil and butter. • Season fish on both sides with salt and pepper and place on the hot pan. • Cook 6 minutes on first side, flip fish over, and cook on the other side an additional 5 minutes until cooked thru and browned. • Divide the spinach mixture on the bottom of each plate and top with a piece of fish.
