San Sebastian is a cooperative coffee of 20 smallholders producing coffee in the La Plata area. It was decaffeinated locally using natural substances. In the cup expect notes of orange jam and walnut. We recommend it as an evening coffee. San Sebastian is a combination of Caturra and Colombia arabica varieties.

olombia is considered to be a truly remarkable coffee growing country. There is a huge number of small coffee farms all over the country, and there are many coffee varieties, but in general we can say that Colombian coffee is elegant, silky, balanced and has a tropical fruit flavour with sugar cane notes. On the other hand, we can easily find Colombian coffees with tobacco-like and mineral flavours. San Sebastian is a cooperative coffee, the product of the OCCICAFE (The Asociacion de Productores de CafĂŠ de Alta Calidad del Occidente del Huila) that has over 320 small farms as members. San Sebastian is the combination of 80 % Caturra and 20 % Colombia arabica coffees, all grown on 30 OCCICAFE member plantations. The average lot size of these members is just 2 bags. The coffee plantations around La Plata are at the elevation of 1500-1900 meters, and right after harvest the beans are processed at the local small-sized wet mills. The coffee grown here is decaffeinated in Colombia, contributing to the local economy and reducing the harmful effects that might be brought about by transportation and storage. This decaffeination process uses a

natural substance derived from sugar cane. This material can be found in wine and raspberry as well. Caffeine content is removed from the beans using this natural substance (Ethyl-acetate), and the process does not release any unpleasant flavour. We had been trying to find a coffee that we can wholeheartedly give to people sensitive to caffeine, who drink coffee only because they love its taste, so our top priority has been to roast a coffee that is completely devoid of any unpleasant bitter flavour. The decaffeinated San Sebastian easily caught our attention, since it has a characteristically fruity note of orange or orange jam combined with a pleasant mouthfeel of walnut and milk chocolate.
