For a 3rd time Antigua’s BBQ grillers are headed for Puerto Rico to the Annual Cattlemen’s Caribbean BBQ Competition in San Juan. 19 sizzling hot BBQ teams battled it out for first place at the first Antigua Barbuda Smokin’ Hot BBQ Challenge organized by Mike Compton and Alexis Garcia of the Caribbean BBQ Association. As a lover of BBQ, I considered myself lucky to be appointed one of the 18 judges at this monster meat-eating affair. Inside the judge’s room the tension built to a crescendo of debate after we’d turned in our judges score sheets to the head judge at the end of each round. We contemplated over each tasty morsel of meat, deliberating over what secret method, seasonings, rubs and sauces were used.
