Our major upgrade of the Woden Club is also about to kick off, which you can read all about from page 15 of this Magazine. Offering woodfired pizza, a new Clubhouse and Bar, dedicated a la carte dining spaces and a great new family dining zone and kids play area, ‘Woden Central’ will set a new standard. The refurbishment will be done in stages so you can continue to enjoy visiting the Club throughout the works. From mid March, we’re opening the ‘Top of the Grille’ upstairs for a la carte meals and will be offering a fabulous, value packed, all you can eat buffet downstairs. A Stellar Opening Stellar Canberra opens its doors to Members on Thursday 1 March 2018. The enthusiastic team at Stellar are dedicated to providing the most holistic approach to health and wellbeing Canberra has ever seen. Located near the Woden Town Centre on the corner of Yamba Drive and Launceston Street, Stellar Canberra is a purpose built, state of the art, $19 million facility that includes a 24/7 gym, swimming pool, group fitness studios, plus wellness and allied health services all under the one roof. The Canberra Southern Cross Club has built the centre as part of our vision to create a healthier community. The five level centre features a 900 square metre Anytime Fitness gym with views across Woden Valley, a custom-built group fitness floor for spin, aerobics and dance classes as well as circuit training. Following feedback from members there is also a women’s only gym space on Level 2. The ground floor houses ‘Stellar Swim’ featuring a 17m warm water indoor pool specialising in learn to swim programs, water safety, aqua aerobics and hydrotherapy rehabilitation as well as around 25 hours per week of free use for Southern Cross Health Club members. Next to the pool is a healthy eating café that enables parents to relax while the kids take swimming lessons. The café will open from 7am each day and serve great Lonsdale Street Roasters coffee, healthy snacks and a few special treats. Parents will love that Stellar Canberra also includes a 90-space Kids Club Early Childhood Learning Centre that also houses a short stay creche.

“The opening of Stellar Canberra is an important milestone for the Canberra Southern Cross Club,” said CSCC Chief Executive Ian Mackay. “We are expanding our health and wellness services as part of the Club’s diversification program. Stellar Canberra has been years in the planning and we are delighted with the outcome, it is a wonderful building, with a great array of health and wellness services inside . It’s another way we can continue to enhance the lifestyle of our members and the broader community.” The Club is pleased to announce the allied health professionals operating on Level 3 at Stellar Canberra will include a nutritionist, a physiotherapist, exercise physiologists and rehabilitation specialists. Also on Level 3, popular yoga teacher Tack Daniel will run a new business called ‘Unfolding Light’ that will specialise in Yoga, Meditation, Pilates and Tai Chi. The Club will also operate a wellness focused float centre called FloatAbove. General Manager of Southern Cross Health Club, Mark LaBrooy added “Stellar, in having so many services under the one roof really is a one-stop health and wellbeing shop, where our community can easily access a range of services they love and need.” A series of open days will be hosted in late February for Members to inspect the new facilities, and on opening you are welcome to drop in for a tour.

Stellar Café If you fancy a gourmet sandwich, a fruit smoothie or a seriously good coffee, then Stellar Café has plenty to tantalise your tastebuds. Created with a focus on healthy eating, but with a few treats available as well, Stellar Café will cater for all the visitors we expect at Stellar Canberra. Canberra Southern Cross Club Chief Innovation Officer Simon Plummer said the menu at Stellar Café was for one and all. “It’s not just for gym members, it’s for the parents of the learn-to-swim participants, it’s for people who drop their children off at the childcare centre on the way to work, and it’s for our group fitness members, many of whom enjoy a regular catch-up with friends after their class.” The café will be open daily from 7am, serving the popular Lonsdale Street Roasters ‘Stromlo blend’ coffee. It will feature a range of grab ‘n’ go pre-prepared items for those in a rush, as well as eat in options for breakfast and lunch.

Fresh fruit salads, sugar free Ruby Roy Yoghurts, Deeks breads, healthy smoothies and Emma and Tom’s juices are just a part of the menu. There’s also a range of gourmet sandwiches and toasties. The menu has been specially developed in conjunction with Kate Freeman from the Healthy Eating Hub and will focus on healthy eating options. “It will still have a few favourite treats as well,” Simon added, “as a reward for the kids and grown ups who have earned it!”

Fun and Learning at Kids Club When children arrive at the new Kids Club Early Childhood Learning Centre at Stellar Canberra, a real helicopter will be waiting for them.

Canberra Southern Cross Club chief executive Ian Mackay said the club was delighted to be able to offer short and long-term child care at Stellar.

Kids Club Chief Executive Officer, Corie Stone said a great deal of planning, thought and research goes into creating the centre’s stimulating play zones.

“The club felt Kids Club Early Learning Centres had a philosophy closely aligned with our own, which is to provide an educational, caring, healthy, safe and stimulating family environment,” he said.

The centre at Stellar Canberra will cater for ninety children aged from six weeks to five years in an 1800 square metre, state of the art, creativity fostering environment featuring a 1200 square metre outdoor play area with a huge playground with slides, forts, waterplay, and yes, a real helicopter. There will also be a small creche where those using services at Stellar Canberra can book their children, aged three months to four years, in for up to two hours of care between 9am and 1pm on weekdays.

Your children will be swimming like seals in no time with Stellar Swim, an expert learn-to-swim school aimed at keeping kids safe in the water. Pool manager Michael Gillard said the new learn-to-swim program is based on the Royal LIfe Saving Society’s Swim and Survive program. “Learning to swim is so important, especially in Australia with so many waterways across the country,” he said. “As well as swimming pools, we are lucky enough to have oceans, lakes and rivers and while they provide a lot of fun, it’s vital children have swimming and water safety skills.” Stellar Swim features a purpose designed pool with a depth that graduates from 1.05m to 1.2m and is heated to 32 degrees all year around. The pool is 17m in length and 8m wide, with both wheelchair ramp and stair access. The learn-to-swim program has been designed to be vibrant and interactive and will be conducted by expert instructors accredited through Swim Australia or AUSTSWIM. The program caters for kids of all ages, and features a unique naming system of classes to keep your kids

improving. Infants and small children will be graded into Jellies, Frogs and Octopus classes. From age 3 they will graduate to Turtles, Seals and Ray levels with a focus on increasing confidence and water safety as well as starting water movement skills. The Tuna, Barra and Wahoo levels further develop water skills to form swimming strokes and survival skills, while the Sharks, Marlins and Dolphins levels refine a child’s swimming strokes and abilities to ensure they are skilled and safe in the water. The warm water pool will also be used for aqua aerobics, hydrotherapy and private member access at designated times. “Aqua aerobics classes are great for adults of all fitness levels,” added Michael, “and hydrotherapy will be provided in partnership with the Stellar Canberra allied health providers.” Swimming lesson bookings are now available. Train Hard at Anytime Fitness The nation’s biggest Anytime Fitness 24 hour gym will be a key feature of Stellar Canberra, taking up the first floor of the new health and wellness centre. Anytime Fitness Operations Manager Ryan Davies said the gym would boast almost 1,000 square metres of floor area dedicated to workout space.

“Another great feature, which might seem really simple but we know is important, is our ample free car parking,” Ryan said.

“Everything in the facility is brand new, including the cardio, strength and functional equipment, and has been custom built for this purpose.

A huge benefit of the Anytime Fitness brand is that members can access all 460 Anytime Fitness gyms across Australia and 3,000 worldwide. Existing Southern Cross Health Club members need to complete their transition paperwork to access the new space and if you’re not a member, drop in to Stellar Canberra from 1 March to take advantage of the special pricing for Southern Cross Club Members.

Ryan added that the equipment is also technologically advanced with members able to access their Netflix or Stan accounts across the cardio equipment. Cycle, Circuit and Group Fitness Cycling enthusiasts can take a ride through the Pyrenees Mountains without leaving Australia’s capital city, with Stellar Canberra offering hi-tech group fitness classes. Southern Cross Health Club General Manager Mark La Brooy said Level 2 of the $19 million, state of the art health and wellness facility would be dedicated to boutique group fitness with a cycle studio, large aerobics studio, circuit studio, and women’s only gym. He said the iC7 bikes were equipped with Coach by Color, which delivers real-time, colour-coded biofeedback to the user, including an individually determined threshold used to determine their five personalised training zones. “The cycle studio will have best in class bikes,” Mark said. “Coach by Color allows for individualised group fitness spin classes, which really is the best of both worlds. “The cycle studio is also a virtual ride studio with a large projector screen allowing you to ride through places such as the Pyrenees or the Grand Canyon.” Mark said current health club memberships would transfer across to the new Stellar Canberra location at no extra cost.

“We have guaranteed no price rise until August 2018, and as well as all of the same great services members know and love, they will have access to free time in the pool, access to the café and access to Anytime Fitness,” he said. The major studio will be used for traditional aerobics classes, dance classes and other group fitness classes while the circuit studio allows for both strength and cardio training. Find Contentment at Unfolding Light When people leave Unfolding Light, Tack Daniel hopes they do so with an overwhelming sense of santosha, or ‘complete contentment’. Unfolding Light, at Canberra’s newest health and wellness centre Stellar, will run yoga classes from beginner to advanced levels as well as offering best in class pilates, tai chi and meditation. A popular yoga and Body Balance instructor at Southern Cross Health Club, and former dancer, Tack said Unfolding Light was the realisation of a dream come true – his own business. Tack, who hails from New Zealand, said he had always been interested in movement and he hoped the studio would help others with their sense of discovery.

“I want to make disciplines such as yoga, pilates and tai chi more accessible for people and I want to aid people on a feel good discovery and good practice in whatever form that may take for them” he said. Tack said Unfolding Light would cater to all levels of practitioners from beginners to advanced, and people should not feel hesitant about trying yoga, tai chi or pilates for the first time. “We will offer a variety of programs, not just one type or set of movements. The Healthy Eating Hub Nutritionist Kate Freeman knows losing weight is hard. She knows there are pitfalls and she knows not every plan will work for every body. With a love of food and cooking as well as a desire to help people, nutrition was a natural career choice for Kate, but the road to The Healthy Eating Hub and her blog, Kate Freeman – Nutrition, began after the birth of her first child. Her profile online and on social media began to grow, the work began to snowball, and her reputation took off. In nine years, Kate has built a thriving business that caters for fussy two-year-olds to people with gut issues and those who are looking to lose weight. With the new office opening at Stellar, Kate will be launching a new program to help people make lasting behavioural changes over a period of 12 months. “If I see you for one session, it doesn’t mean you are fixed,” she said.

Capital Rehabilitation Professionals A passion to help others be their personal best is what drives exercise physiologist Lea McKaskill. As a nurse, Lea worked around the country with people from all walks of life. She coupled this with personal training before working in cardiac rehabilitation, where she really understood the link between physical activity and exercise management when helping those ‘at risk’.

Studying led to an exercise therapist role with the Australian Defence Force before Lea was accredited as a sports scientist and exercise physiologist. “I wanted to help others reduce the risk of chronic diseases,” she said. Lea, through her business Capital Rehabilitation Professionals, assesses a client's health and physical 13

A Fresh Perspective for our Chefs ‘Prepare meals for our Members that we love eating’ is the food philosophy that our chefs are following, after a recent rotation saw three of the culinary maestros move venues. Executive Chef Anurag Gautam has moved from the Tuggeranong venue into an overall mentoring role and said the aim of the rotation was to create a fresh perspective. “It has put new energy and new ideas on the table,” he said. “As a group, we are all moving in the same direction, and that is to use fresh, local produce to prepare clean and simple food that’s cooked well. “I’ve asked our Chefs to cook what they love cooking. It’s not about trying to impress, but simply focusing on cooking good food that they love to prepare and eat themselves.” Chef Iain McKinnon moved from Jamison to Tuggeranong in early January, and is really enjoying the change. “I’ve learnt a lot since moving to Tuggeranong – the focus on fresh, local produce has definitely attracted a younger clientele.” Chef Jojy Vattoly has moved from the Yacht Club to Jamison, and will launch a new menu there this month. It includes items such as five spiced pork belly for entree, and duck Maryland with green pea risotto. “I just want to create very simple, nice food. A lot of new dishes are on their way, including a variety of fresh fish. I want to offer our Members the best of what is fresh according to the season, but still at a good value price.” Chef Anil Kapoor is new to the Club and said he was looking forward to creating a menu at the Yacht Club that highlighted local ingredients and producers.

“The produce from our local regions is fantastic and it supports the local economy. It’s a big plus if the money we spend sourcing high quality local produce stays in the community, and its also environmentally sound. We know that our local farmers put their heart and soul into their produce and we want to support them.” One chef staying put is Nick Wren at Woden, but that doesn’t mean he, Chris and Gordon, who share the management of the kitchen, get to rest on their laurels. “The redevelopment at Woden is very exciting, and throughout the renovations we will ensure we have a high quality food offering for our Members and guests. We’re especially looking forward to serving woodfired pizzas at the new Woden Central bar and restaurant in the Club,” he said. “We have cooked for families over three generations. I love seeing the progression involved in cooking for someone and then years later, cooking for their children and even their grandchildren,” he said. “It means we must be doing something right.” The new menu at the Yacht Club commences 1 March. There were also seasonal changes to the Tuggeranong menu introduced on 15 February, and Jamison’s new menu launches on 21 February. See our feature on Woden Central (begins opposite) for the menu offers during the refurbishment, as well as the style of food that is being created for this exciting new development.


WODEN CENTRAL

Woden Central is the new name for the dining and bar areas of the Woden venue. The multimillion dollar refurbishment commences in late March and will be completed, in three stages, over a four month period. Our vision for Woden Central is to provide a wide range of relaxed, contemporary spaces for all Members to enjoy. During the upgrade there’s still lots of reasons to visit, with our functions and events spaces, and gaming room trading as normal. We’re also offering an all you can eat buffet on the ground level and a new a la carte dining offer, ‘The Top of the Grille’ upstairs.

INTRODUCING WODEN CENTRAL Throughout our refurbishment, there will be a range of dining options on offer, minimising the disruption to your dining experience while we build you a better Club. The Southern Cross Buffet will become the main feature downstairs, during the first stage of the renovations. Italian pasta, daily roasts with golden roasted vegetables, steamed vegetables, gravy and all the trimmings, a range of curries, a salad bar, and a station where you can make your own nachos, tacos, and burritos. There’s also a dessert bar for those with any room left over for sweets! The Southern Cross Buffet is an all you can eat offer, with Members paying just $14.50 for lunch and $19.50 for dinner. For kids, the cost is just $7 for lunch and $10 for dinner. If a la carte is more your style, the new Top of the Grille will open upstairs, serving all your favourites cooked to order.

Enjoy a range of menu items, from chicken schnitzel to burgers, our Cape Grim rib eye, and grilled salmon fillet, plus small appetite meals including the $9.90 lunch specials, and some faves from the Henry’s kids menu for the little ones.

Stage 1 in March will see the closure of the current Henry’s space, with the Café and sports bar continuing to trade as per normal. During Stage 2 in June, the current sports bar area closes, and the new Woodfired Pizza area, the Terrace Grill, and our new café will open. At Stage 3 in August, the current Golden Grille closes to be transformed into the Clubhouse.

WOODFIRED Pizza An exciting new feature of the Woden Central kitchen is the woodfired pizza oven. “We’ve engaged the services of Gareth Howard from Acre in Sydney, to help us design our own special Woden Central dough” said General Manager, Matt Walshe.

“To celebrate the opening of Woden Central, we have also designed four new gourmet burgers, including the Aussie Lamb Burger and the Maple Bacon Cheeseburger,” Matt continued.

“Gareth was responsible for the training and development of pizzas in six Jamie Oliver restaurants across both the UK and Australia, so you can be sure you’ll enjoy a delicious pizza every time.”

“Our patties are all hand pressed, and we have a local baker who makes our fresh milk buns for us every day. We’re passionate about bringing members and guests the best pizza and burgers in Canberra.”

The space has been designed to feature many nature inspired finishes, lush greenery and earthy colours, referencing the muted tones of the Australian landscape. The menu has also been developed with a focus on fresh produce cooked to taste on the Grill. “The Golden Grille was known for its grilled meats, and we want the Terrace Grill to carry on that legacy,” said Executive Chef Gordon Hunt. “Here at the Terrace Grill, we’ve sourced the best quality meat, fish and seasonal vegetables from around our great land to provide members with a wonderful dining experience.”

KITCHEN UPGRADE Our three Executive Chefs at Woden have been enthusiastically designing a kitchen that can bring our Members a greater variety of delicious meals. “Our current kitchen has provided over five million meals to Members since it opened over 25 years ago. So we’re excited about the installation of brand new equipment that will enable us to bring Members great healthy produce in a wider variety of ways,” said Executive Chef Gordon Hunt. The new kitchen will be a hive of activity throughout the day, with the redesigned space putting the chefs on show – enabling members to see more of the raw ingredients being prepared.

“Our focus is on fresh, quality produce so it will be fantastic that Members can see more of the theatre around how we prepare their meals,” added Chef Chris Drover. “The new kitchen will also enable us to add a range of new dishes to the menu – foods like risotto and pastas are dishes we previously haven’t been able to provide due to the design of the previous kitchen so we look forward to working in our new space.”

THE SOUTHERN CROSS Café The new café lounge is the perfect place to relax with a cup of Lonsdale Street Roasters coffee and catch up with friends. A fabulous display of house made sandwiches and desserts, plus a gelato bar featuring a wide range of flavours from the Bermagui Gelati Clinic ensures there is a tasty treat to suit everyone.

HENRY’s FAMILY DINING When Henry’s Family Restaurant first opened its doors in 1992, it was the first of it’s kind in Canberra. It was a space that offered parents quality dining and the chance to have a decent conversation while children enjoyed free entertainment.

The soft play area will continue to be a favourite spot within Henry’s and is easily visible from the Family Dining area. There will also be a great new range of arcade games for the older kids to enjoy.

New Look for MV Southern Cross The refurbishment of the MV Southern Cross is now complete! With new environmentally friendly, fuel efficient engines, and a brand new interior, it really does take cruising the lake to the next level. Featuring new timber decking, modern carpet and stylish rope cabinetry around the bar, lighting, new acoustics ceiling boards, and state of the art sound system, the fresh new look creates a warm and welcoming atmosphere – perfect for functions on the lake. “The MV Southern Cross offers a unique way to experience the lake, there really is nothing like it,” said Jason Lowe, Yacht Club General Manager.

Growing stronger… together With over $600,000 given away, the Community Rewards Program continues to provide funding to the Canberra community. Funds have been distributed to some of Canberra’s amazing schools, charities, sporting and community groups, and our Members are making a difference every day. The support provided through the Community Rewards program assists the wonderful work of organisations including Karinya House and Marymead, who each work tirelessly providing support to families and mothers in need; outreach services such as Vinnie’s Night Patrol and Orange Sky Laundry who help Canberra’s homeless communities; and many of Canberra’s amazing school P&C Associations. Many sporting clubs have also joined the program, to add much needed cash into their coffers for uniforms, grounds maintenance, and to help keep player registration costs down.

Marinated Yellowfin tuna served with nori spiced pork popcorn, wasabi texture and red elk and gem lettuce leaves will be among the tantalisingly tasty dishes diners will be devouring at the Canberra Southern Cross Club’s fourth Chef’s Signature Dinner. What makes it all the more amazing is that the man cooking the dish, Yacht Club Executive Chef Anil Kapoor, didn’t plan a career as a chef. “I started in hospitality in India in 1999, beginning in front of house,” he said. “I never wanted to be a chef but the Hyatt ran programs to train chefs and managers so I did the two year chef program.” It was a move that has stood him in good stead, having worked not only for the Hyatt but also Accor, Novotel and Crown Plaza before joining IHG Hotels, which led to working in Parliament House. Anil said the inspiration for his entree came from Japanese dishes. “My inspiration comes from Japanese chefs who are doing a lot of raw fish style of cooking,” he said. Anil is just one of the chefs that will feature at the Club’s annual Chef’s Signature Dinner. On Friday 16 March, our talented Executive Chefs from Woden, Jamison, Tuggeranong and the Yacht Club will join culinary forces to present a four course, fine dining experience at the Corinna Ballroom, Woden. Executive Chef from Woden, Nick Wren, will prepare the amuse platters featuring beetroot, hot smoked salmon and creme fraiche macaron, parmesan shortbread with chorizo jam and cured egg yolk and confit duck, and maple red cabbage spring rolls with a chilli caramel dipping sauce.

Chef Jojy Vattoly, from the Jamison venue, will prepare the main course of herb crusted Southern Highland’s Angus tenderloin with goats’ cheese hash, pumpkin puree and prosciutto wrapped young vegetables with shiraz. “I have a special interest in meat, especially tenderloin,” he said. “It’s my favourite item, especially Black Angus for its tenderness.” A lot of people’s favourite dish, dessert, will be a meringue dome filled with a rhubarb and lemon curd, served with a white chocolate and salted caramel ganache, accompanied by berries and raspberry sherbet. Its creator, Iain McKinnon, the head chef at Tuggeranong, said his mother inspired his cooking. “My mother prepared feasts not only to nourish but to surprise and treat us in equal measure,” he said. “She would create wonderful desserts from the most complicated gateaux to my favourite rhubarb and apple crumble.”

The Chef’s Signature Dinner is on Friday 16 March, at 7pm in the Corinna Ballroom at Woden. The cost is $99 per person or a table of 10 for $950. Book at Woden or call 6283 7200. At time of writing, only a handful of seats remain for the event. 27

Southern Cross Health Hero Southern Cross Health Club team member Andrew Sauer is being hailed a hero after saving the life of one of his clients. When member Alan started to feel some chest discomfort during his health assessment, Andrew recognised that something wasn’t right and called an ambulance. Within an hour of the event, Alan was in the Cardiac Lab at Canberra Hospital, had a blockage removed and two stents inserted. He is now on the road to full recovery. “I am in no doubt that I am alive today due to Andrew’s recognition of what was happening to me, and his quick actions in calling the Paramedics”, says Alan. “Andrew also took the time to call my wife while I was in hospital. I would like to personally thank Andrew for his outstanding actions which have in no small part contributed to me being alive today. I intend to return to the Health Club once I am able, and work with Andrew to attain my health and fitness goals.”
