July14th National Mac&Cheese Day
Cauliflower Mac and Cheese Ingredients
2 Heads of Cauliflower
5 Tablespoon Butter
5 Tablespoon Flour
4 Cups Milk
½ Teaspoon Onion Powder
½ Teaspoon Garlic Powder
Directions
Cut cauliflower into medium bite size pieces
Pinch of White
Pepper
1 ¼ Cup Sharp Cheddar Cheese
1 ¼ Smoked Gouda Cheese
¾ Cup Whipped Cream Cheese
¾ Cup Parmesan Cheese
Boil water and add the cauliflower (cook for 3-5 minutes)
Remove cauliflower with a slotted spoon and immediately place in ice water (drain water once cool)
Melt butter in a saucepan. Add flour and cook for 1-2 minutes.
Add milk a small amount at a time, whisking smooth after each addition.
Add onion powder, garlic powder, and white pepper.
Continue to cook over medium heat, whisking continually until slightly thick.
Fun Fact/ Did You Know??
Remove from heat, and add cheeses (set aside ¼ c cheddar and ¼ c gouda for topping). Stir until melted.
Place cauliflower in a baking pan, cover with cheese sauce, and stir Top with cheddar and gouda
Bake at 375° F for 15 minutes, or until cheese is melted and slightly browned.

Directions
Ingredients
1/2 c. unsalted butter, softened
1 c. sugar
1 egg
1 tsp. vanilla
1 c. buttermilk
2 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
CinnamonSugarTopping
1/3 c. sugar mixed with 1 tsp. cinnamon
Preheat oven to 350 degrees.
Cream together butter and sugar.
Add the egg and vanilla and mix to combine.
Add the buttermilk, flour, baking soda and salt and mix until just combined.
Spread half of the batter into a greased 9x5-inch loaf pan.
Sprinkle 3/4 of the cinnamon sugar mixture over the top.
Gently spread remaining batter over the top and sprinkle with remaining cinnamon sugar mixture.
Bake for 48-50 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool in loaf pan for 15-20 minutes, then run a knife around the edge of the pan and invert to a wire rack and cool.

OATMEAL SUNBUTTER CHOCOLATE CHIP COOKIES

DIRECTIONS
INGREDIENTS
1 1/2 c Bob's Red Mill
1 to 1 Gluten Free Flour
1 t Baking Powder
1 t Baking Soda
1 t Salt
1 c (2 sticks) Butter
1 c Sugar
1/2 c Light or Dark Brown Sugar
2 Eggs (room temp)
1 c SunButter
2 t Vanilla Extract
2 c Old Fashioned Oats
2 1/2 c Chocolate Chips
Whisktheflour,bakingpowder,bakingsoda,andsalttogetherinamediumbowl.Setaside.Inalarge bowlusingahandmixerorastandmixerfittedwithapaddleattachment,beatthebutteronmediumhighspeeduntilsmooth,about1minute.
Addthegranulatedsugarandbrownsugarandbeatonmedium-highspeeduntilcreamed,about2 minutes.Addtheeggs,SunButter,andvanillaandbeatonhighspeeduntilcombined,about1minute. Scrapedownthesidesandupthebottomofthebowlandbeatagainasneededtocombine.Addthe dryingredientstothewetingredientsandmixonlowuntilcombined.Withthemixerrunningonlow speed,addtheoats.Oncecombined,beatinthechocolatechips.Doughwillbethickandsticky. Coverandchillthedoughforatleast20minutesintherefrigerator(andupto4days).Ifchillingfor longerthan1hour,allowtositatroomtemperatureforatleast30minutesbeforerollingandbaking becausethedoughwillbequitehard.Preheatovento350°F. Linebakingsheetswithparchmentpaperorsiliconebakingmats.Setaside.Scoopballsofdough,2 Tablespoonsofdoughpercookie,andarrange3inchesapartonthebakingsheets.Bakefor12-14 minutesuntillightlybrownedonthesides.Thecenterswilllookverysoft. Removefromtheovenandallowtocoolonbakingsheetfor5minutesbeforetransferringtoawire racktocoolcompletely.Whilethecookiesarestillwarm,Iliketopressafewmorechocolatechipsinto thetops–thisisonlyforlooks!Cookiesstayfreshcoveredatroomtemperatureforupto1week.
